SiembidaThe reason for the variety of fructans structures in plants is unknown, however,summing up the results of many studies, it was assumed that the central role is playedby factors such as: plant species, plant part, stage of development (mature) and environmentalconditions, including temperature (especially during the growth of rootsand shoots), the intensity of insolation and its time, and the availability of food and waterstatus.Characteristic fructans for Asteraceae DUM., formerly Compositae GIS. family arelinear inulin type fructan. Two enzymes are responsible for inulintype fructan synthesislike 1-SST, 1-FFT - for plants, and only one enzyme – fructosyltransferase – formost bacteria. Among the members of this family are: chicory, Jerusalem artichoke,bananas, common dandelion (medical), larger burdock, dahlia, daisy wormwood,tropical mangrove trees.Characteristic fructans for Liliaceae JUSS. family are linear neo inulin-typefructan. There is one enzyme responsible for neo inulin synthesis. This is 6G-FFT.Among members of this family are: garlic, onion, pore, asparagus.Characteristic fructans for Poaceace family are linear levane and neo levane andmixed fructans (graminan). Three enzymes are responsible for their synthesis: 1-SST,1-FFT, levansucrase. Among the members of this family are: wheat, rye, barley,oat, timothy, perennial ryegrass, wheatgrass, orchardgrass and bromegrass.The chemical composition of all species of agaves from the family Agavaceace isfolded and still not completely understood. To this family belong: Agave tequilanaWEBER var. azul., Agava forucroydes LEM., Agave salmiana, Agava Americana, inwhich found mixed fructans group (graminan) and agavins and not inulin, as it waspreviously thought. Of these, the economically important species for Mexican agroindustryis Agave tequilana WEBER var. azul not only because it is only one plant allowingto production of Mexico’s most famous vodka – tequila, but it is also becauseof a high content of fructans.
