ABSTRAKT<br />
Cílem <strong>bak</strong>alářské <strong>práce</strong> bylo studium produkce biogenních aminů (histaminu, tyraminu,<br />
kadaverinu, putrescinu, spermidinu, sperminu, agmatinu a fenyletylaminu) <strong>bak</strong>teriemi<br />
izolovanými z masných výrobků, produktů studené kuchyně a pitné vody. Celkem bylo<br />
izolováno 69 <strong>bak</strong>terií. Z vybraných masných výrobků bylo izolováno 21 <strong>bak</strong>terií, z lahůdek<br />
24 <strong>bak</strong>terií a z pitné vody 24 <strong>bak</strong>terií. Produkce biogenních aminů byla u těchto <strong>bak</strong>terií<br />
zjišťována pomocí kultivační metody a iontově-výměnné chromatografie. U žádné<br />
z testovaných <strong>bak</strong>terií nebyla zjištěna schopnost produkce histaminu, spermidinu, sperminu<br />
a agmatinu. U <strong>bak</strong>terií izolovaných z masných výrobků byla detekována produkce fenyletylaminu.<br />
Schopnost produkce tyraminu byla zjištěna u 1 izolátu. Největšími producenti<br />
putrescinu a kadaverinu byly <strong>bak</strong>terie izolované z pitné vody. U <strong>bak</strong>terií izolovaných<br />
z lahůdek nebyla zjištěna schopnost produkce stanovovaných biogenních aminů.<br />

ABSTRACT<br />
The aim of this work was to explore the production of biogenic amines (histamine,<br />
tyramine, cadaverine, putrescine, spermidine, spermine, agmatine and phenylethylamine)<br />
on bacteria isolated from meat products, delicatessen products and drinking water. A total<br />
of 69 bacteria were isolated. From meat products were isolated 21 bacteria, 24 isolates<br />
were from selected delicatessens and from drinking water 24 bacteria. Production of<br />
biogenic amines in these bacteria were investigated by cultivation methods and ionexchange<br />
chromatography. None of the tested bacteria produced histamine, spermidine,<br />
spermine and agmatine. In bacteria isolated from meat products were detected production<br />
of phenylethylamine. The ability of tyramine production was detected in 1 isolate. The<br />
highest producers of putrescine and cadaverine were bacteria isolated from drinking water.<br />
Bacteria isolated from the delicatessen was found unable to produce the determined<br />
biogenic amines.<br />
