Purpose of study:<br />
Istrian tourist offer represents the Istrian prosciutto as<br />
one of the most appreciated Istrian delicacies. Breeding,<br />
slaughtering of pigs and the production of traditional<br />
products in the Istrian rural tradition is one of the most<br />
important activities of every rural household. This article<br />
presents the experiences in the protection of the<br />
Istrian prosciutto designation of origin.<br />
Methodology/Approach:<br />
The article discussed the procedure for registration of<br />
designation of origin for Istrian ham, which is the holder<br />
of a manufacturer’s Association of producers the Istrian<br />
prosciutto established with the aim of evaluation and<br />
protection of all Istrian products of pork origin label.<br />
The process of care began in 1997., and was supported<br />
by the Department for Agriculture, forestry, hunting,<br />
fishing and waterpower engineering of County of Istria.<br />
Istrian ham became the first registered product protected<br />
by designation of origin in the Republic of Croatia.<br />

Structured abstract<br />
Findings:<br />
After the procedure, the Association filed the Specification<br />
and application for registration of designation<br />
of origin to the Ministry of Agriculture, Fisheries and<br />
Rural Development, whose committee has preformed<br />
the evaluation of the Specification. As a positive experience,<br />
it should be noted that, through the process of<br />
preparation of the Specification, complete system of<br />
traceability from farm to table was successfully applied,<br />
which was not easy because many pig producers had<br />
not introduced a system of breed selection. As a negative<br />
experience, relating the previous problem, costs of<br />
traceability control should be mentioned.<br />
Originality/Value:<br />
The benefits of protection of typical local products of<br />
Istria in the preservation of traditional knowledge and<br />
application of modern production technologies, standardization<br />
of production, protection from abuse of Istrian<br />
producers, consumer protection, creation of new<br />
value and high quality products were highlighted. Increasing<br />
of producers income, encouragement of their<br />
organization and common marketing will be achieved,<br />
with the goal of keeping population in rural areas, creating<br />
of identity and evaluation of region.<br />
Research limitations/Implications:<br />
Key limitations of the research process were lack of financial<br />
resources.<br />
Practical implications:<br />
The protection of authenticity of the Istrian ham has<br />
created conditions for a dynamic and sustainable development<br />
of agricultural sector and rural areas in the<br />
County of Istria, especially in the context of tourism development<br />
in rural areas.<br />
