Purpose of study:<br />
Purpose of the study is the acceptance of modeling of<br />
business processes in rural tourism enterprises, which<br />
should become more quality-based in the future. This<br />
is especially true on behalf of the Food and Beverage<br />
sector.<br />
Methodology/Approach:<br />
Approach is given to the study as the Comparative Case<br />
study of the BPM applications towards the unification<br />
of the service process of the Food and Beverage<br />
sector in the rural tourism. The process modeling for<br />
production and service operations should standardize<br />
and modulate them for rural tourism as well as for other<br />
service operations, thus homogenizing the quality of<br />
such services and products. The method of research is<br />
the comparation of two case study examples of business<br />
process modeling implementation in rural tourism<br />
sector of food and beverage management.<br />
Structured abstract<br />
Findings:<br />
Findings are surprising as it is not only possible, but<br />
it produces a tactical and documentable approach<br />
towards the standardization of the rural tourism’s Food<br />
and Beverage sector. It also improves the controllability<br />
of the process in which the products are produced and<br />
served for tourists that enjoy benefits of the rural tourism.<br />
It is also possible to improve the technique of Food and<br />
Beverage production. It has few other improvement<br />
consequences (exit of staff, change in groceries quality,<br />
etc.). The article is showing the two different ways of<br />
implementing the BPM system in food and beverage<br />
sector of the rural tourism establishments.<br />
Originality/Value:<br />
Up to this point the BPM is used as management tool<br />
all over the World, but in the terms of the rural tourism<br />
standardization are not applied thoroughly enough.<br />
Also, the value of this part of the way towards the<br />
complete standardization of the Food and Beverage<br />
sector in the Hospitality industry is invaluable.<br />
Research limitations/Implications:<br />
The BPM application in the Food and Beverage sector<br />
is limited by up-to-date knowledge of the processes.<br />
Limitations are also derived from diversified industry<br />
and infrastructure of the F’n’B sectors around the<br />
industry.<br />
Practical implications:<br />
Practical application of the process modeling is attractive<br />
to all the managers in the field. By practical application<br />
of the BPM system, managers and scientists will be able<br />
to come to easier understanding and controlling of the<br />
production and service processes in F’n’B sector in rural<br />
tourism establishments.<br />
