Sensibilitatea termica a solutiilor<br />

o Majoritatea produselor alimentare se<br />

degradeaza (denatureaza) la temp. ridicate;<br />

o Degradarea creste cu cresterea temp. si a<br />

timpului de incalzire;<br />

o Produsele termolabile se concentreaza:<br />

– La temperaturi reduse (sub depresiune);<br />

– La timpi de stationare redusi in aparat (evaporare in<br />

film);<br />

– In instalatii cu un numar mic de efecte de<br />

concentrare;<br />

o Concentrarea unor produse (sucuri de fructe<br />

etc.) necesita recuperarea aromelor.
