LAPTELUI CRUD<br />

Laptele reprezint„ lichidul biologic secretat <strong>de</strong> glanda mamar„ a<br />

mamiferelor femele dup„ parturi˛ie i este <strong>de</strong>stinat, Ón primul r‚nd, pentru<br />

satisfacerea necesit„˛ilor noului n„scut Ón substan˛e nutritive i energie.<br />

Laptele, ca produs alimentar, se ob˛ine <strong>de</strong> la unele animale domestice<br />

(vaci, capre, oi, bivoli˛e etc.) prin procesul <strong>de</strong> mulgere manual„ sau<br />

mecanic„, Óncep‚nd cu a 7... 10-a zi dup„ f„tare i termin‚nd cu perioad„ <strong>de</strong><br />

Ón˛„rcare.<br />

Laptele normal, ob˛inut <strong>de</strong> la animale s„n„toase, bine hr„nite i<br />

ad„postite, reprezint„ un lichid mat, <strong>de</strong>. culoare alb„ sau alb-g„lbuie, cu gust<br />

dulce i miros pl„cut specific.<br />

Œntruc‚t masa principal„ <strong>de</strong> lapte, ca produs alimentar, se ob˛ine <strong>de</strong> la<br />

vaci, no˛iunea <strong>de</strong> "lapte" se refer„ la laptele <strong>de</strong> vac„, iar dac„ se<br />

caracterizeaz„ laptele altor specii <strong>de</strong> animale, se adaug„ <strong>de</strong>numirea speciei -<br />

lapte <strong>de</strong> oaie, lapte <strong>de</strong> capr„ etc.<br />

El poate fi consi<strong>de</strong>rat o emulsie sau suspensie <strong>de</strong> gr„simi Óntr-o solu˛ie<br />

apoas„ <strong>de</strong> substan˛e, care se g„sesc at‚t Ón stare coloidal„ (majoritatea<br />

proteinelor), c‚t i sub form„ <strong>de</strong> solu˛ie a<strong>de</strong>v„rat„ (gluci<strong>de</strong>, s„ruri minerale<br />

etc).<br />

Ón componen˛a <strong>laptelui</strong> au fost <strong>de</strong>pista˛i mai bine <strong>de</strong> 200 <strong>de</strong> compu i<br />

(tabelul 1.1) unii Ón cantit„˛i mari (ap„, gr„simi, gluci<strong>de</strong>, proteine) i al˛ii Ón<br />

cantit„˛i foarte mici, dar to˛i componen˛ii <strong>laptelui</strong> sunt Óntr-o corela˛ie<br />

reciproc„ i au un rol important Ón tehnologia produselor lactate.
