Terras d’el Rei Tinto
CLIMA:
fermentação alcoólica ocorre a “fermentação” maloláctica,
carnes e queijos.

CLIMATE:
Mediterranean climate, with a very hot, dry summer. Cold
winters with heavy rainy spells (600mm/yr.). Temperatures
range widely in the summer, and the sun shines for more than
3,000 hours a year.
SOIL:
Largely derived from volcanic rock, mostly quartz-bearing
diorite, some layers of schist derivates and a small deposit of
soils derived from a rana-type formation.
GRAPE VARIETIES:
Castelão, Aragonês, Moreto and Trincadeira.
VITICULTURE:
Grapes hand-picked by our growers are unloaded and immediately
de-stemmed and crushed. The addition of choice yeast initiates
fermentation at controlled temperatures (28ºC). The maceration,
or joint fermentation of grapes and skins, occurs during this
period through a cyclical upward pumping of the must at the
bottom of the vats for the purpose of obtaining a greater
extraction of colours and tannins (responsible for the body of the
wine). This maceration process continues for around five days,
while the fermentation proceeds until all the sugar has been
converted into alcohol. There follows the malolactic "fermentation"
basic to the mellowing of our wines. The wine ages in vats and is
stabilized and filtered prior to bottling, which takes place within
one year.
ORGANOLEPTIC TEST:
Crystal-clear, crimson-coloured wine, with a nose full of ripe
fruit, mellow and medium-bodied on the palate.
CELLARING AND CONSUMPTION:
Bottles should be cellared on their sides, with the wine in
contact with the cork in a cool, dry place (around 12ºC). This
wine may be drunk young, so it is suggested it be consumed
within a short period of time. Should be drunk at a temperature
of 14º-16ºC. A fine accompaniment to roasts and cheeses.

queduracercade2a3semanas. Finda a fermentação é feita a
VITICULTURE:
After the grapes are selected among the vineyards of our
growers, they are picked by hand. They are then unloaded at
our cellar and immediately de-stemmed and crushed.
Extracting enzymes are added, while the must is cooled to a
temperature of 10ºC. They settle for eight hours in order to
derive greater aroma from the skins. After this period, they
are pressed, with the must drawn off and filtered for
decanting. The must's temperature is then kept at 15ºC,
choice yeast is added, and the fermentation process, which
may last for two to three weeks, begins. Once the
fermentation phase is finished, the wine is immediately
transferred in order to initiate the stabilization and
clarification process.
ORGANOLEPTIC TEST:
Crystal-clear wine with a slight straw colour; a fresh, fruity
nose, balanced on the palate, reflective of the assortment of
grapes that go into making it.
CELLARING AND CONSUMPTION:
This wine should be drunk immediately at a temperature of
12ºC. A fine accompaniment to salads, seafood, and fish and
egg dishes.
