The designed mathematical model is suitableto predict the falling number value not only of wheatbut of other grain too.Conclusions1. The research proved that optimal grainbiological activation parameters are:φ = 80±1%, t = +34±1 o C, and τ = 24±1 h.2. The quality of gluten in wheat grain becomesunsatisfactory during grain activation for up to 36h due to the occurrence of intensive dissimilationprocesses during the activation time. As a result,the content of total protein decreases. Gluten isfound neither in activated nor in inactivated ryeand hull-less barley grain.3. Intensive biochemical processes occur duringgrain activation time, as a result of which grainbiological value increases – the content ofvitamins B 2, E and niacin, of total sugars, dietaryfibre and of glycosamin increases, vitamin Cis synthesized, and the content of irreplaceableamino acids decreases.4. Патент 21019999959, MKU6: A21D13/02, Россия.AnotācijaGraudaugu produkti ir cilvēku uztura pamats, jo ar ogļhidrātiem un olbaltumvielām, ko tie satur, tiek uzņemtasgandrīz divas trešdaļas dienā nepieciešamo kaloriju, turklāt tie ir svarīgs vitamīnu un šķiedrvielu avots.Diedzētas sēklas, graudi un graudu dīglīši uzturā tiek izmantoti jau kopš seniem laikiem. Bioloģiski aktivētugraudu piedeva kviešu mīklai paaugstina tās kvalitāti un tādējādi iespējams iegūt bioloģiski augstvērtīguproduktu. Darba mērķis bija izpētīt rudzu, kviešu un kailgraudu miežu graudu izmaiņas bioloģiskās aktivēšanaslaikā un noteikt graudu aktivēšanas optimālos apstākļus. Pētījumos tika noteikts, ka graudu optimāliebioloģiskās aktivēšanas apstākļi ir: relatīvais gaisa mitrums – 80±1%, temperatūra – +34±1 o C, laiks – 24±1h. Turpinot graudu aktivēšanu līdz 36 h, kviešiem lipekļa kvalitāte intensīvi notiekošo disimilācijas procesudēļ pasliktinājās. No rudziem un kailgraudu miežiem lipekli iegūt neizdevās. Bioloģiskās aktivēšanās laikāgraudos palielinājās šķiedrvielu, vitamīnu B 2, E un niacīna daudzums, un sintezējās C vitamīns. Salīdzinot arneaktivētiem graudiem, glikozamīna saturs visstraujāk, t.i., 4.7 reizes, palielinājās aktivētos kailgraudu miežos,bet rudzos un kviešos – tikai 1.7 reizes. Izstrādātais matemātiskais modelis raksturo krišanas skaitļa vērtībasizmaiņas graudu bioloģiskās aktivēšanas laikā atkarībā no aktivēšanas ilguma.LLU Raksti <strong>18</strong> (<strong>313</strong>), <strong>2007</strong>; 25-3333
