RubinskienėSummaryInvestigations of berry freezing are being carried out at the Lithuanian Institute ofHorticulture (LIH), Laboratory of Biochemistry and Technology since 1996. During 10 yearsapplying physical-chemical methods there was investigated and evaluated 29 strawberry, 28raspberry and 16 black currant fresh and frozen berry quality and there was carried out the selectionof cultivars suitable for freezing. There were applied two methods for berry freezing: deepfreezing in freezer and freezing in liquid nitrogen. There was established the influence of cultivarproperties and methods of berry preparation on product sensational properties and chemicalcomposition. There was established and recommended to production black currant, strawberryand raspberry cultivars, the most suitable for freezing.Key words: biochemical composition, preparation, freezing, thawing, technologicalproperties, berries, cultivar.312
