Ilgiai during storage of plantings and the variation of organic substances duringflowering induction and evocation periods were investigated. Beet plantings were grownin experimental fields of LIH according to the technologies applied at the Institute.Beet root-crops were stored in storage at the temperature of +1 – +4°C. The samplesfor analyses were taken each month (from October up till April). Plantings were plantedin field in May and the samples for analyses were taken every 10 days. The processes ofbeet flowering induction continue during all the period of watering, and when beetplantings are planted in field evocation processes start up. During transitional periodfrom flowering induction to evocation, hydrolysis of reserve substances, decrease of theamount of saccharose and total sugar and synthesis of inverted sugar and nitric substancesoccur. The ratio of the total sugar and nitrogen during transition from flowering inductionto evocation decreases.Key words: evocation periods, flowering induction, nitric substances, red beet,sugars.109
