farmed in selected operations in Europe since 1996: at the Altembrouck Castle in Belgium, at the Voelas Estate in North Wales, at the Auvergne at Chateau de la Pouvrier and at Gut Heimkreit, Tölzer Land. At Heimkreit the focus has always been on livestock farming. “We have always worked in an animal and nature friendly way to produce high quality meat, but over ten years ago we decided to differentiate even more significantly from mass livestock farming”, explains organic farmer, Christine Müller-Gut. The farm was converted to a certified organic operating business. “In 2007 we decided to produce the best beef in the world and began breeding organic Wagyu cattle. In 2008, the first purebred Wagyu (Kobe) cattle were born and we are proud that many of our animals are now sought after as coveted breeding animals worldwide today.” Direct Sale to Insiders and Connoisseurs 184 Christine Müller-Gut emphasises that each year only two to three animals are slaughtered – only oxen, that are at least three years old. The valuable meat matures four weeks long in a dry ageing process before it is sold either from the farm or vacuumed-packed fresh per express delivery in special coolers. Christine Müller-Gut: “It is our wish, to offer our Wagyu meat to culinary enthusiasts, who, along with us, have decided on having the absolute best. We hope that with the help of their enthusiastic reactions we will be able to advance the further introduction of the Wagyu meat.
