accendono in inverno sulla buona tavola<br />
e su selezionati nettari di Bacco.<br />
Di questi ultimi, la nostra Cantina offre<br />
una scelta di oltre 500 etichette che<br />
spaziano tra proposte ticinesi, italiane,<br />
francesi e di Paesi emergenti di grande<br />
pregio, mettendo in risalto vini importanti<br />

nero e <strong>da</strong>ll’oro. I colori più a<strong>da</strong>tti ad<br />
esprimere ciò che a parole si chiama<br />
passione per l’eccellenza e il bello, conoscenza<br />

Per Recchia, nominato nel 2006 Gran<br />
Maestro della Ristorazione, nell’ambito<br />

Ristoranti Alberghi), impegno, continuità<br />
e l’attenzione al dettaglio sono il<br />
cardine del proprio lavoro, mentre è la<br />
curiosità a contraddistinguere l’attività<br />
di Gabriele Speziale, nella sistematica<br />
ricerca dei migliori vini, per una Cantina<br />
che, con le sue oltre 500 etichette,<br />
offre vini ticinesi, francesi, italiani e di<br />
altri Paesi ancora.<br />
L’ultima novità ticinese è il Merlot<br />
‘Trentasei’ della Cantina Gialdi che,<br />
con i suoi 36 mesi di affinamento in<br />
barrique, esprime al meglio tutte le<br />
potenzialità e i pregi del Merlot del<br />
Ticino.<br />
Ad arricchire la già grande offerta dei<br />
Super Tuscan è l’ultimo nettare di casa<br />
Antinori: il Lodovico 2007 proveniente<br />
<strong>da</strong>lle Tenute di Biserno. Produzione<br />

twenty years have steadfastly forged<br />

With a very special menu, the evening event<br />
celebrates the exclusive - and decidedly original<br />
- encounter between Lugano’s Boutique Les<br />
Ambassadeurs watches and the Azien<strong>da</strong><br />
Fattorie Marchesi Torregiani wines.<br />
Between them, these two have played<br />
a vital role ensuring that the outstanding<br />
level of service at the <strong>Principe</strong><br />
<strong>Leopoldo</strong> Restaurant has been maintained.<br />
They are the Maître d’Hôtel,<br />
Claudio Recchia, and the Maître Sommelier,<br />
Gabriele Speziale.<br />
For Recchia, who in 2006 was appointed<br />
Grand Restaurant Master, under the<br />
aegis of Amira (the Italian Association<br />
of Restaurant and Hotel Maîtres),<br />
commitment, continuity and attention<br />
to detail are the cornerstones of his<br />
profession, whilst Gabriele Speziale’s<br />
work is distinguished by his systematic<br />
search for the very finest wines for<br />
our cellar that, with over 500 labels,<br />
boasts bottles from Ticino, France,<br />
Italy and many other Countries.<br />
The latest development in Ticino is the<br />
‘Trentasei’ Merlot from the Gialdi winery<br />
which has been aged 36 months<br />
in oaks casks, and thus fulfils the<br />
potential perfectly and expresses the<br />
qualities of Ticino Merlot.<br />
What really enhances the wide range<br />
of Super Tuscans is the latest wine<br />
from the Antinori winery: the Lodovico<br />
2007 from the Biserno Estate. Production<br />
is limited to 4,000 bottles<br />
divided into stan<strong>da</strong>rd, Magnum and<br />
Double Magnum (just 50 of the latter<br />
are produced, two of which<br />
are in the <strong>Villa</strong> <strong>Principe</strong> <strong>Leopoldo</strong><br />

From the world’s new wine regions,<br />
our Wine Cellar offers three<br />
wines bearing the Domaine Burnier<br />
label (1 white and 2 reds) from Natouhaevskaya,<br />
on the Black Sea.<br />
These are significant,<br />
elegant wines that<br />
have been highly<br />
acclaimed by Western<br />
Europe’s most<br />
refined palates.<br />
With class<br />
in the service<br />
of good taste
<strong>Una</strong> gioia per i palati raffinati, il Tuber<br />
magnatum, chiamato Tartufo bianco,<br />
è sulle tavole <strong>da</strong> inizio ottobre a<br />
fine anno. Ne sono terra di produzione<br />
Alba, e il Sud del Piemonte, ma anche<br />
la Toscana e il centro Italia. Si ritiene<br />
quello piemontese il più profumato,<br />
<strong>tutta</strong>via il profumo dipende <strong>da</strong>lle piante<br />
con le quali il tartufo vive in simbiosi,<br />
e <strong>da</strong>l suo grado di maturità.<br />
L’aroma che emana deve essere naturale<br />
con leggeri sentori di ‘gas’. La<br />
grandezza, che può variare <strong>da</strong> pochi<br />
grammi a oltre un chilo è determinante<br />
per il prezzo (più è grande, più costa!),<br />
ma non lo è per il profumo.<br />
Si usa solitamente ‘grattato’ con un’ap-<br />
posita lama su un alimento cotto o crudo.<br />
Servito rigorosamente crudo, in quanto<br />
la cottura ne farebbe perdere il sapore.<br />
AL RiStoRAntE PRinCiPE<br />
LEoPoLdo<br />
Il tartufo bianco viene servito in abbinamenti<br />
tradizionali con pasta, risotto,<br />
fonduta, uova, oppure con carne cru<strong>da</strong><br />
di vitello, o a profumare una delicata<br />
crema di zucca con formaggino fresco.<br />
Ma anche su una bruschetta ricoperta<br />
<strong>da</strong> un velo di lardo al miele di tiglio o<br />
con un flan di patate al tuorlo crudo e<br />
fonduta; oppure, ancora, con un filetto<br />
di vitello farcito con fontina e arrostito<br />
in un manto di crudo.<br />
Bianche prelibatezze d’autunno<br />
La fleur de sel<br />
È un sale <strong>da</strong>lla fragranza unica, <strong>da</strong>l sapore delicato<br />
ma deciso. Si fa apprezzare anche per<br />
la friabilità dei suoi cristalli che <strong>da</strong>nno la sensazione<br />
di croccante. Con il concorso di mare,<br />
sole e vento, in condizioni ottimali, si forma<br />
sulla superficie della salina uno strato bianco di<br />
cristalli, che vengono poi delicatamente tolti e<br />
messi a essiccare per circa un anno.<br />
Prodotto in molti luoghi, è particolarmente noto<br />
il sale di Guérande, Noirmoutier, la Camargue,<br />
per non dimenticare Sicilia, Portogallo, Irlan<strong>da</strong>.<br />
Sali con caratteristiche diverse, a dipendenza<br />
di quelle dell’acqua: colore più o meno chiaro,<br />
cristallo più o meno grosso e, se sottoposto a<br />
trattamenti particolari, può essere affumicato o<br />
aromatizzato con spezie. Alcuni hanno un sapore<br />
di mare e iodio marcato, altri di alghe, alcuni<br />
sono più delicati, ma <strong>da</strong>nno sempre grandi<br />
sensazioni, oltre a valorizzare con i loro cristalli<br />
anche la presentazione dei piatti.<br />
Come si usa<br />
<strong>Una</strong> presa di sale su un pesce cotto a vapore,<br />
su una carne arrosto oppure su una fetta di pomodoro<br />
maturo, su una patata lessa, ed ecco<br />
che il prodotto cambia, non viene snaturato né<br />
sovrastato, anzi valorizzato.<br />
Anche su carne cru<strong>da</strong>, ma ancora meglio sul<br />
pesce crudo, dà il meglio di sé. Infatti quando<br />
arriva alle papille gustative determina una<br />
reazione istantanea di salivazione... <strong>da</strong> leccarsi<br />
i baffi.

Fleur de sel<br />
This is a type of salt with a truly unique fragrance<br />
and a delicate, but distinctive flavour. It is<br />
appreciated for the brittleness of its crystals and<br />
the crunchy feeling they give rise to. Under the<br />
right conditions, and with the help of sea, sun and<br />
wind, on the surface of the salt a layer of crystals<br />
is formed which are then carefully removed and<br />
left to dry for up to a year. Although it is produced<br />
in many parts of the world, including Sicily,<br />

The white truffle is found in Alba, and<br />
South Piemonte, Tuscany and central<br />
Italy, but the most fragrant specimens<br />
are reckoned to come from Piemonte.<br />
The fragrance depends, not only on<br />
the degree of maturity of the truffles,<br />
but on the plants with which truffles<br />
live in symbiosis. The aroma emanat-<br />
Portugal, the Camargue and Ireland, Guérande<br />
and Noirmoutier in France are especially noted<br />
for their fleur de sel. The characteristics of the<br />
salt can vary according to the characteristics of<br />
the sea from which it is harvested: the colour<br />
may exhibit varying degrees of clarity and the<br />
size of the crystals too may vary. In addition, the<br />
product may be subjected to such treatments as<br />
smoking or flavouring with spices. Some fleur<br />
de sel has a pronounced taste of the sea and<br />
iodine or seaweed, some is more delicate, but<br />
ing from the truffles should be natural,<br />
with a hint of ‘gas’. The weight of the<br />
specimens, which can vary from a few<br />
grams to over a kilo, is the key factor<br />
determining the price (the bigger the<br />
truffle, the greater the cost!), but this<br />
does not affect the aroma.<br />
Truffles are usually grated onto raw<br />
or cooked food using a special blade.<br />
Ideally they are served raw as cooking<br />
can make them lose flavour.<br />

presentation of meals with their crystals.<br />
How it is used<br />
Add a pinch of fleur de sel to steamed fish, roast<br />
meat, sliced tomatoes or boiled potatoes and,<br />
although the flavour of the dish subtly changes,<br />
the taste is neither lost nor overpowered, but<br />
enhanced. On raw meat, but even better on raw<br />
fish, it comes into its own. Indeed, it creates an<br />
instantaneous mouth-watering effect.<br />
At thE PRinCiPE<br />

The white truffle is traditionally paired<br />
with pasta, risotto, fondue, eggs or raw<br />
veal, or to give a delicate fragrance<br />
to a pumpkin soup with fresh cream<br />
cheese. However it is equally delicious<br />
on bruschetta covered in slices<br />
of lime-honey flavoured lardo or with<br />
an egg yolk potato flan and fondue; or,<br />
alternatively, with a veal fillet stuffed<br />
with fontina cheese and roasted in a<br />
raw ham wrapping.

appassionare i commensali che ne sperimentano<br />
il gusto per la prima volta.<br />

PER 10 PERSONE<br />
Ingredienti<br />
0,1 kg di purea asciutta di zucca ben matura;<br />
0,6 kg di polpa di patate cotte a vapore con<br />
pelle (Bintje);<br />
sale, pepe e noce moscata;<br />
0,05 kg di grana grattugiato;<br />
mischiare le due polpe, lasciare intiepidire<br />
e incorporare;<br />
1 albume montato a neve con una presa<br />
di sale.<br />
Preparazione<br />
Imburrare riccamente con burro crudo gli<br />
anelli del diametro di 7 cm.<br />
Riempire a fontana con la massa e appoggiare<br />
al centro di ognuno 1 tuorlo intero.<br />
Chiudere con la massa.<br />
Coprire e cuocere 9 minuti a vapore a 90°<br />
(se il forno è pieno, prevedere 1-2 minuti<br />
in più).<br />
Lasciar riposare 3 minuti. Sformare e nappare<br />
con una fonduta leggera al Taleggio.<br />
Aggiungere una grattata di tartufo bianco.<br />
Decorare con chips di zucca.

dUmPLinG, RAW EGG,<br />
FondUE And tRUFFLE<br />
FOR 10 PERSONS<br />
Ingredients<br />
0.1 kg of dried, ripe pumpkin puree<br />
0.6 kg of Bintje potatoes steamed in their<br />
skins<br />
salt, pepper, nutmeg<br />
0.05 kg of grated parmesan cheese<br />
mix the puree and the potato flesh together,<br />
allow to cool, and stir in<br />
1 beaten egg white and a pinch of salt.<br />
Preparation<br />
Grease lavishly with butter 7 cm diameter<br />
pans. Fill the round mould with the mixture,<br />
make a well in the centre of each one and<br />
insert 1 egg yolk.<br />
Cover over with the mixture.<br />
Cover and cook in a steam oven for 9<br />
minutes at a temperature of 90 degrees (if<br />
the oven is full, allow 1-2 minutes longer).<br />
Allow to stand for 3 minutes.<br />
Turn out and smear with a mild Taleggio<br />
fondue. Grate white truffle on top.<br />
Garnish with small slices of pumpkin.<br />

Un’accurata scelta delle opere conservate<br />
nelle collezioni della Città e del Cantone<br />
collega le due più importanti sedi espositive<br />
cittadine: il Museo d’Arte e il Museo<br />

Le collezioni presenti nei due musei contano<br />
su un corpus di oltre diecimila opere,<br />

season is a highly-rated double<br />
exhibition.<br />
Carefully selected works from the City<br />
and the Canton’s collections link the two<br />
most important exhibition venues in the<br />
city: the Art Museum and the Canton Art<br />
Museum.<br />
The collections in the two museums can<br />
count on a corpus of over ten thousand<br />
works, covering seven centuries of art<br />
history; these works are presented in two<br />
parallel, complementary sections, distinguished<br />
by two different conceptions and<br />
interpretations of art and two different approaches<br />
to displaying art: chronological<br />
in the case of the ‘From Baroque to the<br />
Threshold of Modernity 1600-1880’ exhibition<br />
at the Cantonal Art Museum, and<br />
thematic in the case of ‘Consonances -<br />
Dialogues in Time’ at the Art Museum.<br />
‘From Baroque to the Threshold of<br />
Modernity’ boasts a number of masterpieces<br />
from the collections from the period<br />
between 1600 and 1880, organized<br />
according to the great pictorial themes of<br />
history, religion, portrait and landscape.<br />
It pays particular attention to the relation-<br />
ship with the local area, focusing particularly<br />
on the theme of artistic emigration,<br />
an area which features such highly acclaimed<br />
figures as Pier Francesco Mola<br />
(1612-1666), who is represented in the<br />
collections by important paintings and<br />
drawings. The exhibition also offers the<br />
chance to directly compare two masterpieces<br />
by Giovanni Serodine (1600-<br />
1630), Saint Peter in Prison, and the extraordinary<br />
Portrait of his Father.<br />
‘Consonances - Dialogues in Time’<br />
encourages the visitor to embark on an<br />
intense journey through the history of art,<br />

present, in an arrangement that transcends<br />

Unusual, astonishing juxtapositions emphasise<br />

Da prerogativa femminile, la passione<br />
per lo shopping – ormai è ufficiale! – ha<br />
contagiato anche i signori. Che a Lugano<br />
trovano molti indirizzi di alto livello per<br />
l’acquisto di brand eccellenti.<br />
Marchi di respiro mondiale che, per l’abbigliamento,<br />
gli accessori e i gioielli (orologi<br />
in primis, gioiello maschile per definizione),<br />
offrono prodotti classici o realizzati<br />
secondo i dettami ciclici della mo<strong>da</strong>,<br />
accomunati <strong>da</strong>lla sicurezza e <strong>da</strong>lla piacevolezza<br />
di una scelta di materiali, design e<br />
tecnica che non temono concorrenza.<br />
La maggior parte delle migliori boutique<br />
cittadine è concentrata in una piccola<br />
porzione di territorio, compresa tra la<br />

L’offerta francese di Hermès (la griffe<br />
che ha fatto della lavorazione artigianale,<br />
della qualità dei tessuti e del pregio dei<br />
propri pellami il proprio punto di forza)<br />
e Cartier (con le sue creazioni che, <strong>da</strong>l<br />
1847, sorprendono e affascinano personaggi<br />
illustri e ‘comuni mortali’) ben<br />
si sposa con quella tradizionalmente<br />
italiana di Bulgari (che <strong>da</strong> oltre 125 anni<br />
si distingue per il suo stile inconfondibile<br />
che va oltre le mode e il tempo) e di Pino<br />
Mo<strong>da</strong> (vasta scelta di pellicce, abbigliamento<br />
uomo con Brioni e non solo). Da<br />
poco anche a Lugano dopo Napoli, Milano,<br />
Londra e Tokyo, Marinella, con le sue<br />
cravatte che, <strong>da</strong>l 1914, non hanno mai<br />
smesso di ‘far gola’ agli uomini eleganti<br />
di ogni generazione; Luchino Visconti ne<br />
ordinava a bizzeffe. Aristotele Onassis ne<br />
comprava dodici alla volta, tutte nere per<br />
non far mai capire di che umore era. Ancora<br />
oggi, le cravatte di Marinella sono al<br />
collo degli uomini più eleganti e famosi:<br />
teste coronate e presidenti di stato, alti<br />
esponenti della politica e dell’imprenditoria,<br />
della cultura e dello spettacolo.<br />
Accanto a queste Boutique monomarca,<br />
le prestigiose gioiellerie Les Ambassadeurs,<br />
veri e propri ambasciatori del<br />
lusso (con 27 marche sotto un unico<br />
tetto), Tourbillon (del Gruppo Swatch) e<br />
Bucherer (con una tradizione cominciata<br />
nel 1888) dispongono di una selezione<br />
vasta e interessantissima di marche<br />

of women, the passion for shopping<br />
has now officially infected men! In<br />
Lugano, men too can now find the most<br />
highly-rated stores and the top brands.<br />
World-class brands covering clothing,<br />
accessories and jewellery (first and<br />
foremost watches, the masculine jewel<br />
par excellence) come in the shape of<br />
classic items as well as items designed<br />
in accor<strong>da</strong>nce with fashion’s cyclical<br />
dictates. What all these products have in<br />
common is the certainty that all materials<br />
used are safe as well as unsurpassed<br />
stan<strong>da</strong>rds of design and manufacturing<br />
techniques.<br />
Most of Lugano’s top boutiques are concentrated<br />
in quite a small area between<br />
the luxurious Via Nassa and the Maghetti<br />
district, taking in the city’s main squares<br />
and the lake-front.<br />
In the course of a short stroll, mostly along<br />
pedestrian routes, one after another, you<br />
will come across spectacularly designed<br />
stores, often boasting a long heritage,<br />
where you can buy clothes and items<br />
recommended by experts.<br />
Articles crafted by Hermès (the French<br />
brand that has made craftsmanship and<br />
the quality of its fabrics and leathers its<br />
raison d’être) and Cartier (with its creations<br />
which, since 1847, have fascinated<br />
celebrities and ‘mere mortals’ alike) sit<br />
well with Bulgari’s Italian traditions (which<br />
for over 125 years has been renowned for<br />
its truly unique style transcending both<br />
fashion and time) and Pino Mo<strong>da</strong> (wide<br />
choice of furs, men’s clothes by Brioni and<br />
much more). After Naples, Milan, London<br />
and Tokyo, Marinella has recently set up<br />
a store in Lugano to stock its ties which,<br />
since 1914, have tempted generations<br />
of stylish men; Luchino Visconti ordered<br />
ties galore, foulard-style. Aristotle Onassis<br />
bought a dozen at a time, all black so<br />
that nobody could guess what mood he<br />
was in. Marinella ties can still be found<br />
around the necks of the best-dressed,<br />
most famous men such as kings and<br />
princes, presidents, senior politicians<br />
and entrepreneurs, as well as important<br />
figures from the world of culture and entertainment.<br />
Along with these single-brand names, the<br />
celebrated jewellers, Les Ambassadeurs,<br />
a veritable ambassador of luxury (with 27<br />
brands under one roof), Tourbillon (Swatch<br />
Group) and Bucherer, (with a tradition <strong>da</strong>ting<br />
back to 1888) have a wide selection of<br />
