I tried to find the right balance of contrasts: hot/cold, sweet/savoury, soft/crispy”.BREAD, BLACK PEPPER, MARSALA AND RICEINGREDIENTS FOR 4 PREPARATIONPERSONSFOR THE RICE:FOR RICE:Toast the rice in a casserole dish,• 320 g aged Carnaroli baste occasionally with saltedricewater and cook.• 160 g sweet butter Remove from heat and cream• 80 g grated Grana with butter, Grana Padano andPadanovinegar, salt to taste and keep• 1.5 l hot salted water creamy.• 10 ml white wine vinegarFOR THE BREAD:• fine saltMelt butter in a pan, add breadcrumbsand toast until golden.FOR BREAD:Remove from heat and let cool.• 200 g breadcrumbs• 5 g sweet butter FOR THE MARSALA SAUCE:Bring reduced Marsala to a boil,FOR MARSALA SAUCE: remove from heat and combine• 100 g reduced Marsala with butter cut in pieces, then• 120 g sweet butter whip with a whisk. Keep hot.TO FINISH:TO FINISH:• 5 g black pepper Arrange the rice in a soup dish,mignonettegently pour the sauce on thesides, and place bread and blackpepper mignonette in the middle.PANE, PEPE NERO, MARSALAE RISOINGREDIENTI PER 4PERSONEPER IL RISO:• 320 g riso Carnaroli stagionato• 160 g burro dolce• 80 g Grana Padano grattugiato• 1,5 l acqua calda e salata• 10 ml aceto di vino bianco• sale finoPER IL PANE:• 200 g pan grattato• 5 g burro dolcePER LA SALSA AL MARSALA:• 100 g Marsala ridotto• 20 g burro dolcePER LA FINITURA:• 5 g pepe nero mignonettePREPARAZIONEPER IL RISO:In una casseruola fare tostareil riso, bagnare poco per voltacon l’acqua saltata, e portarea cottura. Togliere dal fuoco emantecare con il burro, il GranaPadano, l’aceto, regolare disale, tenendolo cremoso.PER IL PANE:In una padella far sciogliere ilburro, unire il pan grattato e tostarefino a ottenere un coloredorato togliere dal fuoco e farraffreddare.PER LA SALSA AL MARSALA:Portare il Marsala ridotto aebollizione, togliere dal fuocoe unire il burro tagliato a pezzi,con l’aiuto di una frusta montareil composto.
