impastare lasciare riposare 8/10 ore<br />

riprendere la pasta aggiungere 1Kg <strong>di</strong> farina, 40 gr <strong>di</strong> sale, 20/30 gr<br />

<strong>di</strong> lievito a seconda della stagione, 6 hg <strong>di</strong> acqua.<br />

Impastare lasciare riposare 40/50 minuti formare pagnotte lasciare<br />

lievitare 45/60 minuti infornare a temperatura me<strong>di</strong>a 35/40 minuti.<br />
