L'Albergo Ristorante Centrale dei Fratelli Salini si trova a 1000 m s.l.m., a
Groppallo. Il locale, un tempo locanda-negozio, è sorto a metà Ottocento.
Negli ultimi anni il ristorante e l'albergo sono stati trasformati - anche
strutturalmente - mantenendo le caratteristiche tipiche della gestione familiare:
cucina tradizionale, paste, salse, sott'oli e torte fatte in casa. Le carni sono allevate
in zona, i salumi sono di produzione propria.
Ad occuparsi di cucina, negozio e salumificio, i fratelli Vittorio, Renzo e Domenico
Salini con Annamaria (cuoca) ed il giovanissimo Mauro Salini, e con l'aiuto,
quando serve, del resto della famiglia.

Fratelli Salini's Albergo Ristorante Centrale is at 1000 m altitude, in Groppallo. A
former inn-shop, it was built at the beginning of the 19th century. The restaurant
and hotel have been transformed recently – even structurally – though keeping
the characteristics of a family business: traditional cuisine, home-made pasta,
sauces, vegetables pickled in oil and cakes. Meat is from cattle bred in the area,
cured meats are home-made.
Kitchen, shop and factory are managed by the brothers Vittorio, Renzo and
Domenico Salini, with Annamaria (chef) and the young Mauro Salini, with the
help, if necessary, of the rest of the family.
