Fare vacanze alpine dove l’animo ‘eco’ è di casa.

Questa scenografica piana che si fa spazio tra le Alpi
confinanti con la vicina Austria, racchiude tutti i pregi
dell’eccellenza che da anni cerca e ottiene la provincia di
Bolzano. Vigono, infatti, in questa zona, un’alta qualità
della vita, l’attenzione all’ecosistema e un uso intelligente dell’energia
come lo sfruttamento delle spettacolari cascate presenti nel
territorio. Di recente il Touring Club ha assegnato l’ambita Bandiera
Arancione a questo piccolo comune, che si anima di migliaia
di vacanzieri sia in estate che nel periodo invernale. La filosofia di
coloro che abitano qui, è riassumibile nelle parole di Stefan Fauster,
il proprietario del centrale Hotel Drumlerhof: «Che spiri il foehn
in inverno, che piova a lungo in estate, c’è sempre un disegno della
natura dietro a questi eventi che non segue l’esigente calendario
delle nostre vacanze». Stefan ha il carattere fermo, tipico di chi abita
qui, e da lui si dorme e si mangia divinamente, seguendo la “matrice
del bene comune”; una sorta di ‘pallottoliere’ che assegna punti seguendo
valori come equità sociale, trasparenza ed eco sostenibilità.
Adottano il metodo anche altri albergatori, all’Hotel Feldmilla e al
Perla. Dopo una giornata di sci, con le ciaspole o al ritorno dalla
visita nel dominante Castel Taufers, irto su un colle, vale la pena
di rilassarsi nella Spa Cascade con le sue numerose vasche e l’idilliaco
laghetto naturale. Il cibo è ovunque gustoso, nelle malghe che
vi accolgono dopo una mattina di sport o all’Arcana (all’interno
dell’Hotel Moosmair), dove gli insegnamenti del medico naturalista
Paracelso diventano fonte ispiratrice per ricette favolose. Il
legame con la Natura, è dunque pervasivo, basta guardare le contadine
mentre preparano il formaggio Graukäse che da cibo povero
è diventato un presidio Slow Food; a loro brillano gli occhi mentre
parlano di mucche e procedimenti tradizionali da non sgarrare.

This scenic plain, in the Alps bordering nearby Austria, embodies
all the qualities of excellence the province of Bolzano has
been pursuing and achieving for years. The area boasts a high
quality of life, attention to the ecosystem and intelligent use of
energy, including exploitation of the area’s spectacular waterfalls.
Recently, the Touring Club awarded the coveted Orange
Flag to this small municipality, which bustles with thousands of
holidaymakers both summer and winter. The local philosophy is
summed up by Stefan Fauster, the owner of the centrally located
Hotel Drumlerhof: “Whether it’s the warm, dry wind in winter
or long rainy spells in summer, nature’s ever-present design
doesn’t follow the demands of our holiday schedule”. Stefan has
a strong character, typical of those who live here, and provides
divine food and lodgings, following the “matrix of the common
good”; a sort of “abacus” that assigns points for values like
social equity, transparency and environmental sustainability.
Other hoteliers also adopt this method, at Hotel Feldmilla and
the Perla. After a day of skiing, snowshoeing, or a visit to Castel
Taufers towering on a hilltop, relax in the Cascade spa, with
its many pools and idyllic natural pond. The food is delicious
everywhere, in Alpine huts after a morning of sports, or at the
Arcana (in Hotel Moosmair), where the teachings of the naturalist
doctor Paracelsus inspire fabulous recipes. The link with
nature is pervasive. Watch farmers as they prepare Graukäse
cheese, poor food that has become a Slow Food staple; their
eyes shine as they talk of cattle and traditional procedures to be
followed with precision.
