ENOGASTRONOMIA<br />
IL GELATO ZOLDANO,<br />
una prelibatezza per<br />
grandi e piccini<br />
il gelato artigianale zoldano è oggi conosciuto in tutto<br />
il mondo; forse non tutti sanno però che dietro alla<br />
favola della valle dei gelati si nasconde una storia di<br />
povertà, sofferenze ed emigrazione. Fu verso la fine<br />
dell’800, quando l’industria del chiodo industriale iniziò<br />
a soppiantare quella artigianale che costituiva la fonte<br />
principale di sostentamento della valle, che gli Zoldani<br />
dovettero “inventarsi” una nuova attività. Tentarono di<br />
riciclarsi dapprima come venditori di ghiaccio, soprattutto<br />
nei paesi dell’ex impero Austro Ungarico (in primis,<br />
nelle città di vienna e Budapest).<br />
Non si sa precisamente chi sia stato l’artefice del passaggio<br />
da venditori di ghiaccio a maestri gelatieri, ma<br />
sappiamo con certezza che già ai primi del ‘900 nelle<br />
principali città dell’impero Austro Ungarico e dell’italia<br />
Settentrionale si contavano numerose gelaterie Zoldane.<br />
il lavoro era massacrante, poteva prolungarsi anche per<br />
18- 20 ore al giorno. Spinti da spirito di emulazione,<br />
molti Zoldani tentano la sorte di imprenditori del gelato:<br />
una seconda ondata di emigranti si dirige dunque, alla<br />
fine della seconda guerra mondiale, verso la Germania.<br />
Negli anni le tecniche e gli strumenti per la produzione<br />
del gelato si sono notevolmente modernizzati ed hanno<br />
reso il lavoro meno disumano, ma sono rimaste intatte<br />
la genuinità e la bontà del gelato zoldano che, a partire<br />
da ingredienti genuini quali latte, panna, uova, burro e<br />
zucchero, è mantecato scrupolosamente con motogelatiera<br />
verticale e non contiene coloranti, additivi o<br />
conservanti. Una tradizione sapiente, che si rinnova di<br />
giorno in giorno nelle numerose gelaterie della val di<br />
Zoldo.<br />

MINESTRA DI FAGIOLI<br />
È la regina indiscussa della tavola invernale e primaverile nel<br />
bellunese, anzi nel feltrino dove il “Consorzio per la tutela<br />
del fagiolo di Lamon” garantisce che i fagioli usati non siano<br />
fagioli qualunque, ma proprio i celeberrimi fagioli di Lamon.<br />
Un autentico piatto popolare, che anche la spiritualità feltrina<br />
ha saputo onorare nella ricorrenza della distribuzione della<br />
“menestra de San Dordi” (pag. 34-35); ma pur presentandosi<br />
oggi in mille sfumature diverse, una per ogni cuciniere, la<br />
minestra di fagioli possiede ancora basi comuni indiscutibili:<br />
fagioli borlotti nelle varietà “spagnolit” o “caloneghe”,<br />
condimento fatto solo di lardo, pancetta, cotenne, ossa e<br />
carne di maiale, aromatizzati da cipolla, sedano e alloro, poca<br />
pasta semplice non all’uovo. Lo smembramento di una parte<br />
al passaverdura e la bollitura lenta dona alla minestra quella<br />
cremosità vellutata, quella densità da cucchiaio in piedi, quell’equilibrio e quella<br />
completezza di profumo-tatto-gusto che la fanno indimenticabile. va servita calda o<br />
tiepida (ottima riscaldata), con qualche aggiunta di pepe e pane, senza aggiungere<br />
olio, che servirebbe solo a mortificare le fragranze nobili del grasso di maiale nel suo<br />
matrimonio d’amore con i fagioli di Lamon.<br />

a treat for young and old<br />
These days, Zoldo’s handmade ice-cream is famous throughout the world; but perhaps not everyone<br />
is aware that behind the fairytale of the “valley of ice-cream” lies a sadder story of poverty, suffering<br />
and emigration. Towards the end of the 19th century, the rise of industrial nail production began to<br />
take over from the practice of making nails by hand, which until then had been the main economic<br />
activity in the valley; so the people of Zoldo had to “invent” something else to make a living. initially<br />
they tried selling ice, particularly in the countries of the former Austro-Hungarian empire (especially<br />
in the cities of vienna and Budapest). We do not know exactly who came up with idea of moving<br />
on from selling ice to becoming master ice-cream makers; what we do know for sure is that as<br />
early as the beginning of the 20th century a large number of ice-cream makers from Zoldo had<br />
set up business in the main cities of the Austro-Hungarian empire and in Northern italy. in these<br />
ice-cream parlours, the people worked their fingers to the bone, for up to 18 or 20 hours a day.<br />
The spirit of emulation led many others from the Zoldo valley to try their hand at the business, and<br />
thus a second wave of emigrants headed for Germany at the end of the Second World War. Over the<br />
years, the techniques and equipment used for making ice-cream have improved leaps and bounds,<br />
thus rendering the work involved less arduous; but what has remained unchanged is the delicious,<br />
authentic taste of Zoldo ice-cream, made from genuine ingredients such as milk, cream, eggs, butter<br />
and sugar and meticulously whipped in a vertical electrical ice-cream making machine, without the<br />
addition of artificial colourings, additives or preservatives. The traditional craft of ice-cream making is<br />
recreated and improved upon daily in the numerous ice-cream parlours in the valley.<br />

This dish reigns supreme on the menu in winter and spring in <strong>Belluno</strong>, or rather<br />
in the Feltrino area, to be precise, where there is an “Agency for the protection<br />
of the Lamon bean” to guarantee that the beans used are not just any old<br />
beans, but the world-famous Lamon variety. Bean soup is a popular dish in<br />
every sense of the word, and is even an expression of the spirituality of the<br />
people of Feltre, who, every year, pay tribute to the bean by distributing the<br />
traditional “menestra de San Dordi” to the poor (see pages 34-35). every cook<br />
has his or her own individual, unique recipe, on which there are a huge number<br />
of variations, but the basic ingredients of the soup are always the same: borlotti<br />
beans (spagnolit or caloneghe varieties), seasoned with lard, bacon, rind,<br />
pork meat and bones, aromatized with onions, celery and laurel, and a little<br />
ordinary pasta (not made with eggs) added.<br />
part of the mixture is puréed in a food mill, and the soup is then boiled slowly,<br />
which gives it its characteristic velvety-smooth texture, renders it so thick you<br />
can almost stand your spoon up in it and assures a full, rounded flavour; this<br />
soup is an unforgettable experience for the senses. it should be served hot or<br />
warm (it is delicious when re-heated), with the addition of a little pepper and<br />
some bread. Oil should not be added to the soup, as this would only obscure<br />
the noble fragrance of the pork fat which combines so tenderly with the Lamon<br />
beans.<br />

per gli appassionati del piacere enogastronomico si svolgeranno fino a maggio le rassegne gastronomiche D’inverno a tavola, AltoGusto la grande cucina<br />
delle <strong>Dolomiti</strong> Bellunesi e, con un unico incontro, la Rassegna Gastronomica Agordina. Un invito a riscoprire i piatti della tradizione bellunese, lasciando<br />
travolgere i propri sensi dai sapienti abbinamenti di sapore che caratterizzano le innovative proposte dei ristoratori locali.<br />
È giunta oramai alle ultime tappe la Xvii edizione di D’inverno a tavola, la rassegna che, a partire dal 19 gennaio 2007, ha consentito agli amanti<br />

Demonstration”). All three are an invitation to rediscover traditional local dishes, and let the talented local<br />

This year sees the 17th edition of D’inverno a tavola, the series of demonstrations which, since it began<br />
