TONDINO DEL TAVO<br />
FAGIOLO DI LORETO APRUTINO<br />
Nella vallata del Tavo, da Farindola a Cappelle sul Tavo, si coltivano questi<br />
fagioli dalla colorazione che va dal bianco latte all’avorio e dalla forma tondeggiante,<br />
con tegumento esterno sottile e lucido, che tende però a imbrunire<br />
qualora si verifichino piogge eccessive durante la fase di maturazione.<br />
Il baccello ha forma allungata, dimensioni medio-piccole (8mm x 6mm in media)<br />
e consistenza dura. La pianta, per le sue caratteristiche di portamento,<br />
necessita di sostegno e di un terreno poco profondo e povero di sostanza organica:<br />
terreni d’elezione sono infatti quelli sabbiosi e/o ciottolosi, perché,<br />
se coltivato in terreni particolarmente ricchi di calcare, il Tondino del Tavo risulta<br />
di difficile cottura. Il fabbisogno idrico è elevato ed è necessaria la concimazione<br />
fosfatica.<br />
In passato si seminava, dopo la mietitura del cereale, direttamente sulle stoppie.<br />
La semina avviene dopo il 15 giugno e la fioritura mediamente intorno<br />
alla seconda decade di agosto. Il momento della semina è molto importante<br />
in quanto, come riportato da alcuni produttori, semine anticipate ad aprile<br />
portano ad avere piante rigogliose, ma non produttive. Il periodo di maturazione<br />
coincide con l’ultima decade di ottobre.<br />

These beans are cultivated in the Tavo Valley, from Farindola to Cappelle sul<br />
Tavo: they are white and round, with a thin, shiny, external integument,<br />
which will tend to turn brown if there is excessive rain during the ripening<br />
phase. The elongated pod is small-medium (8mm x 6mm on average) and is<br />
hard in consistency. The plant’s bearing characteristics means it requires<br />
support and should be rooted in shallow earth without excessive organic<br />
matter: the perfect soil is sandy and/or pebbly, because land particularly<br />
rich in limestone will make this “Tondino del Tavo” difficult to cook. The<br />
plant needs plenty of water and fertilisation with phosphates.<br />
Traditionally the Tavo bean was sown after cereals were harvested, directly<br />
on the stubble. Sowing takes place after 15 June and the plant usually<br />
blooms around the second ten days of August. Sowing is a crucial moment<br />
and some producers have reported that sowing early in April has meant<br />
flourishing plants but poor yield. The “Tondino del Tavo” ripens in the last<br />
ten days of October.<br />
