I territori interessati alla produzione di questa leguminosa sono gli altopiani<br />
e le vallate interne della Provincia di L’Aquila. I semi della leguminosa Cicer<br />
arietinum hanno ottime caratteristiche organolettiche. La tecnica di produzione<br />
prevede, normalmente, la semina primaverile su terreno già preparato<br />
e affinato prima dell’inverno.<br />
La semina viene effettuata in corrispondenza della luna mancante di marzo,<br />
altrimenti la pianta continua a fiorire, rimane verde tutta l’estate e non chiude<br />
il ciclo. I semi conservano la loro vitalità per due o più anni. Dopo la trebbiatura,<br />
il cece viene raccolto (di solito nella prima metà di agosto) e conservato<br />
in sacchi di juta posti in locali asciutti.<br />
Un riferimento sulla coltivazione di legumi di vario tipo nella Provincia di<br />
L’Aquila, si trova nel libro di Teodoro Bonanni Le antiche industrie della provincia<br />
di Aquila (1888) che parla di numerose “civaie” coltivate in tutta la provincia.<br />
Nel periodo di impianto del catasto, 1923-1928, si annoverano 32 ettari<br />
di ceci coltivati nella zona di Navelli, con una produzione di 395 quintali.<br />
La resa per ettaro era di 12-13 quintali, e da allora è rimasta praticamente<br />
invariata. Le recenti ricerche effettuate dall’ARSSA, nell’ambito del “Programma<br />
regionale di recupero del germoplasma di specie di interesse agrario”<br />
(POM 3.2), dimostrano l’antica radicazione dalla coltura sul territorio, e<br />
hanno fatto rinvenire diverse accessioni di cece autoctono oltre che a Navelli,<br />
a Collepietro, Castelvecchio Subequo e Pacentro (dove era pervenuto da<br />
Castel di Ieri). Si hanno notizie di coltivazioni rimarchevoli, in passato, nella<br />
Marsica, sui terreni asciutti che costeggiavano il lago Fucino.<br />
DESCRIZIONE DEL PRODOTTO<br />
Semi della leguminosa Cicer arietinum, di diametro medio-piccolo (7/8 mm), a superficie<br />
rugosa, peso 1000 semi pari a 260-300 g, altezza della pianta 50-60 cm, ottime caratteristiche<br />
organolettiche, di facile cottura. Facilmente conservabile, risente di minimi<br />
attacchi di tonchio.<br />
METODICHE DI LAVORAZIONE E CONSERVAZIONE<br />
Materiali e attrezzature usate per la preparazione e il condizionamento: se la<br />
trebbiatura avviene a mano si impiegano crivelli di piccolo diametro o crivelli sospesi<br />
del diametro di 120 cm.<br />
Locali di lavorazione, conservazione e stagionatura: si conserva in locali asciutti.<br />

CHICKPEA<br />
This legume is cultivated on the plateaus and inland valleys of the Province<br />
of L’Aquila. The seeds of Cicer arietinum have excellent sensorial characteristics<br />
The cultivation technique normally involves sowing in the spring in soil<br />
that was ploughed and harrowed before the winter.<br />
Sowing is performed during March’s waning moon, otherwise the plant will<br />
continue to flower, remain green all summer and fail to complete the growth<br />
cycle. The pulses retain their nutritional properties for two or more years. The<br />
chickpeas are harvested after threshing (usually during the first half of August)<br />
and stored in a dry place in jute sacks.<br />
Teodoro Bonanni’s book Le antiche industrie della provincia di Aquila (1888)<br />
refers to the cultivation of various types of legumes in the Province of L’Aquila,<br />
and mentions many “civaie” (leguminous crops) grown throughout the province.<br />
During the period in which the land registry was being established (1923-28),<br />
32 hectares of land cultivated with chickpeas were recorded in the Navelli<br />
area, which produced a yield of 395 quintals. Yield per hectare was 12-13<br />
quintals and this figure has remained practically unchanged. Recent research<br />
carried out by ARSSA, as part of the Regional Program to Save the Germoplasm<br />
of Species of Agricultural Interest (POM 3.2), revealed that the crop<br />
has been cultivated in the area since ancient times, and various cultivars of<br />
native chickpeas have been discovered not only in Navelli but also in Collepietro,<br />
Castelvecchio Subequo and Pacentro (brought from Castel di Ieri). Evidence<br />
found shows that chickpeas were extensively cultivated in Marsica<br />
in the past, on the dry soil skirting where Lake Fucino once stood.<br />
PRODUCT DESCRIPTION<br />
Seeds of the leguminous Cicer arietinum, small-medium diameter (7-8mm), wrinkled<br />
surface, 1,000 seeds weigh 260-300g, plant height is 50-60cm, with excellent sensorial<br />
characteristics; chickpeas are very easy to cook. Easy to store but can be subject to<br />
weevil infestation.<br />
PROCESSING AND CONSERVATION METHODS<br />
Materials, specific equipment used in preparation and cooling: if threshing is<br />
performed by hand, then small-diameter or suspended 120-cm diameter sieves are used.<br />
