With this edition we have gone beyond all expectations: we certified 86<br />
among restaurants, trattorias, osterias and, as <strong>in</strong> previous editions, we<br />
had to leave some applicants out.<br />
What does the designation Certified Restaurants Traditional Cuis<strong>in</strong>e<br />
of Piacenza mean?<br />
As you will see, the thread runn<strong>in</strong>g through this guide is the local<br />
gastronomic tradition so there is no surprise if beside a fashionable top<br />
restaurant appears an unsophisticated small country restaurant with a<br />
menu which is written every morn<strong>in</strong>g <strong>in</strong> longhand.<br />
On the contrary the simultaneous presence of different levels of cater<strong>in</strong>g<br />
confirms strong rooted gastronomic traditions <strong>in</strong> our territory; traditions<br />
that deal with various styles and approaches but equally of great worth.<br />
It is a fact that, <strong>in</strong> order to obta<strong>in</strong> the certification, we considered these<br />
essential requirements:<br />
-mmenu with a good selection of typical dishes and products of the local<br />
gastronomic tradition<br />
-mw<strong>in</strong>e list that adequatly represents local v<strong>in</strong>e-growers’ <strong>la</strong>bels<br />
How did we proceed?<br />
We sent the agreement forms for this project to those who own a licence<br />
to carry on cater<strong>in</strong>g, around 650 <strong>in</strong> the whole prov<strong>in</strong>ce. A fair amount of<br />
them provided the committee <strong>in</strong> charge of the assessment with the necessary<br />
documentation stated by strict criteria to enter “the elects’ club”.<br />
Among the essential requirements to be a member of the “Guide to Certified<br />
Restaurants Traditional Cuis<strong>in</strong>e of Piacenza” we demanded the possession<br />
of a menu and a w<strong>in</strong>e list, a prevalent presence of traditional dishes of<br />
Piacenza cover<strong>in</strong>g a whole menu (from starters to dessert, <strong>in</strong>clusive of<br />
w<strong>in</strong>es), an explicit vocation for tradition supported by home cook<strong>in</strong>g, by<br />
good reception and k<strong>in</strong>dness to the guests.<br />
Presentation of the restaurants <strong>in</strong> the Guide<br />
The profile of every s<strong>in</strong>gle restaurant presents briefly the service at<br />
customers’ disposal and gives a general idea about the cost of a typical<br />
meal of Piacenza, w<strong>in</strong>es excepted.<br />
Each restaurant is described by a short text referr<strong>in</strong>g to history, to premises<br />
and owners of the cater<strong>in</strong>g bus<strong>in</strong>ess.<br />
With this third edition we have changed slightly the profile of each<br />
restaurant to receive a recipe, a suggestion, a tip from those who are<br />
