Third Edition of the Guide, <strong>in</strong> honour of<br />

specialities<br />

We have reached the third edition of the Guide to Certified Restaurants<br />

Traditional Cuis<strong>in</strong>e of Piacenza. The job done so far has been very<br />

satisfy<strong>in</strong>g for us and the result has awoken a lot of <strong>in</strong>terest, sometimes<br />

competion <strong>in</strong> other regions and prov<strong>in</strong>ces, among associations and circuits.<br />

Why?<br />

Because <strong>in</strong> spite of a widespread talk<strong>in</strong>g about promotion and protection<br />

of local values and traditions - gastronomic traditions also - only few p<strong>la</strong>ces<br />

can c<strong>la</strong>im to have made a “guide” to the typical local gastronomy up to now.<br />

This guide is about traditional eat<strong>in</strong>g and dr<strong>in</strong>k<strong>in</strong>g <strong>in</strong> Piacenza go<strong>in</strong>g<br />

through its own makers; through those who work <strong>in</strong> the d<strong>in</strong><strong>in</strong>g room and<br />

<strong>in</strong> the kitchen, those who choose and select products, use them to prepare<br />

dishes of the past and revisit them; go<strong>in</strong>g through p<strong>la</strong>ces which house it all.<br />

With this third edition we cont<strong>in</strong>ue a project that <strong>in</strong>tends to support the<br />

gastronomic tradition of Piacenza. We believe the guide can give rise to<br />

the touristic appeal of our territory and become at the same time a preciuos<br />

source of <strong>in</strong>formation for people liv<strong>in</strong>g <strong>in</strong> Piacenza about their cul<strong>in</strong>ary<br />

history.<br />

How did this project start?<br />

In 2002 Fipe - General Federation of National Trade made a proposal <strong>in</strong><br />

order to certify typical restaurants of each territory; we agreed to it<br />

immediately and, at a distance of about a year, <strong>in</strong> June 2003, we released<br />

the first Guide to Certified Restaurants Traditional Cuis<strong>in</strong>e of Piacenza;<br />

57 restaurants were certified and described <strong>in</strong> the guide that year.<br />

The second edition - cover<strong>in</strong>g the period 2004/2005 - saw a considerable<br />
