The receipt for<br />

Sweet cous cous<br />

Ingredients for 12 people:<br />

500 g of durum wheat seed (semolina) for<br />

couscous, 100 ml of water, 1 flat teaspoon<br />

of salt, 200 g of chopped pistacchio, 100<br />

ml of Biancolilla quality extra-virgin olive<br />

oil, 25 g of melted butter, 2 teaspoons<br />

of icing sugar, 2 imperatore apples, 100<br />

g of black chocolate, 100 g of chopped<br />

toasted almonds, 50 g of zuccata (or other<br />

candied fruit), 1 orange, ½ lemon, 50 g of<br />

raisins, 1 imperatore apple, 1 full glass of<br />

almond milk, 1 clove, 10 dates, powdered<br />

cinnamon, cassia bark, ½ glass of raisin<br />

wine of Pantelleria.<br />

Pour 100 ml of water in a cup and dissolve<br />

the salt. Pour a teaspoonful of semolina<br />

in a large flat dish, dampen it with a<br />

teaspoonful of water and blend it with the<br />

semolina (‘nucciate), rolling it with your<br />

open hand. 2-3 complete rotations are<br />

enough. You will thereby form little balls,<br />

about 2 millimetres in diameter. Dry them<br />

on a wooden board. When all the couscous<br />

has been made into ‘ncucciatu, pour on<br />

a thin stream of oil,. rubbing it delicately<br />

between your hands joined as if in prayer.
