Vittoria DOC<br />

Vittoria DOC includes red and white wines<br />

produced in a broad area of the Province<br />

of Ragusa and part of the Provinces of<br />

Caltanissetta and Catania. It is a zone with an<br />

ancient history of winemaking, as can be seen<br />

from numerous documents reaching back as<br />

far as the 3rd century B.C. The DOC includes<br />

five typologies: Vittoria rosso, Vittoria Calabrese<br />

(or Nero d’Avola), Vittoria Frappato, Vittoria<br />

Ansonica (or Inzolia or Insolia) and Vittoria<br />

Novello. They are mainly red wines with a red<br />

cherry colour and delicate aromas of redberried<br />

fruit that enhance the sensorial features.<br />

It is a wine that goes well with red and white<br />

meat dishes and highly seasoned hot-flavoured<br />

cheeses. The ideal serving temperature is<br />

16°/20° C. It is best consumed when just<br />

bottled or else conserved for 2-3 years.<br />

In order to exploit fully and<br />

guarantee the production, the<br />

companies in the zone have created<br />

the Consorzio Dop Monti Iblei,<br />

which protects and publicizes<br />

the quality of the oil.<br />

This extra-virgin olive oil is produced in a<br />

territory consisting of the Monti Iblei area,<br />

surrounded by the Provinces of Ragusa,<br />

Siracusa and Catania. In this select zone,<br />

olive cultivation is based on traditional<br />

systems, as is revealed by the presence<br />

of thousands of hectares of olive groves<br />

and hundreds of small presses, which use<br />

centrifugal oil-extraction processes, or even<br />

more traditional ones, such as pressure<br />

mechanisms. The extent of the area under<br />

cultivation has led to the birth of scores<br />

of companies bottling the product and<br />

commercializing it with an eye towards<br />

national and foreign markets.<br />

It is an important economic resource for<br />

the territory. The olives are spread over hilly<br />

terrains, or else combined with the other<br />

three crops typical of the Iblei: carobs,<br />

almonds and vines. Sometimes they are<br />
