bunches can be withered after harvesting<br />

There are no secrets in the production of<br />

Passito, for nothing else is added. It is a<br />

simple product of nature, made from the<br />

island’s Zibibbo grapes and protected and<br />

made known by a Consortium which has<br />

also completed a scientific study aimed at a<br />

proper appreciation of the aromatic heritage<br />

Passito di Pantelleria is a golden-yellow<br />

wine, sometimes tending towards amber,<br />

with a typical Muscat bouquet<br />

and a sweet, aromatic<br />

and pleasing flavour.<br />

stipulating inter-professional agreements.<br />

The result has been a substantial increase<br />

in the minimum revenue from the grapes<br />

harvested in Pantelleria, which has<br />

increased as much as threefold compared<br />

with the past. An important step for the<br />

island’s economy.<br />
