Erice: The ancient town of Erice. The legend<br />
tells that it was fundata by the ancient Trojans<br />
fleeing in the Mediterranean Sea would have<br />
found the ideal place to settle here.<br />

imaginary figures, is famous throughout the<br />
world. In Erice the sweets have the form of<br />
flowers rather than of fruit.<br />
All around are the splendid nature reserves<br />
present in the territory of the Province of<br />
Trapani: close to the city is the Riserva delle<br />
Saline di Trapani e Pacco, and then there<br />
is the Riserva Monte Bonifato, the Riserva<br />
dello Stagnone at Marsala, the Area Marina<br />
Protetta delle Egadi, the Riserva di Monte<br />
Cofano, the Riserva Bosco d’Alcamo,<br />
the Riserva Lago Preola e Gorghi Tondi<br />
and the Riserva dello Zingaro.<br />
This natural environment of pure<br />
excellence now includes many Wine and<br />
Flavours Routes, such as the Strada del<br />
Vino di Marsala Terre d'Occidente, the<br />
Strada del Vino Alcamo Doc and the Strada<br />
del Vino di Erice.<br />
The best tuna fish<br />
in the world<br />
Perfumes and colours are the most obvious features of the<br />
products of the Province of Trapani. Traditional tuna fishing goes<br />
back to the Arab domination of Sicily. Various types of tuna are<br />
fished. The largest is the “thunnus thynnus”, or red tuna, typical of<br />
the Mediterranean but at risk of extinction. The various parts of the<br />
tuna fish (belly, fillets, roe, loins, milt, heart, marrow) are used to<br />
prepare dishes for which they are used raw, as in sushi or sashimi,<br />
or cooked. Lastly, tuna fish is conserved, in oil or brine.<br />
