PREPAREZ LE CRUMBLE<br />
- Dans un bol mélangez tous les ingrédients secs.<br />
- Ajoutez le beurre coupé en petits morceaux et sablez la pâte<br />
du bout des doigts pour obtenir de grosses miettes.<br />
- Réservez au réfrigérateur.<br />
PREPAREZ L’ANANAS<br />
- Épluchez l’ananas et coupez-le en 4 dans le sens de la longueur.<br />
Enlevez le cœur qui est un peu dur.<br />
- Émincez chaque quartier en 2 puis détaillez les tranches<br />
obtenues en petits dés.<br />
- Laissez cuire l’ananas pendant environ 15 min dans une grande<br />
casserole avec 40 g de sucre roux, la cannelle, la muscade et le<br />
bâton de vanille fendu et gratté.<br />
- Une fois cuit passez-le au chinois et récupérez le jus.<br />
- Faites réduire le jus environ 10 minutes avec 20g de sucre et le<br />
jus du citron vert, jusqu’à ce que vous obteniez un sirop léger.<br />
GETTING THE CRUMBLE READY<br />
- Mix all the dry ingredients in a bowl.<br />
- Add the butter cut into small pieces and work the dough<br />
with your fingertips to get large crumbs.<br />
- Keep in the fridge.<br />
PREPARING THE PINEAPPLE<br />
- Peel the pineapple and cut it in 4 lengthwise. Remove the<br />
heart that is a bit hard.<br />
- Slice each quarter in 2 then dice the slices obtained.<br />
- Let the pineapple cook for about 15 minutes in a large<br />
saucepan with 40 g of brown sugar, cinnamon, nutmeg and<br />
the vanilla stick once split and grated.<br />
- Once it is cooked, pass it through a sieve and collect the<br />
juice.<br />
- Reduce the juice for about 10 minutes with 20g of sugar and<br />
the lime juice, until you get a light syrup.<br />
CUISS<strong>ON</strong> DU CRUMBLE<br />
- Préchauffez le four à 180°C.<br />
- Déposez l’ananas dans un plat à gratin.<br />
- Râpez un peu de zeste de citron vert sur les fruits, 2 ou 3<br />
copeaux de beurre.<br />
- Ajoutez le sirop, puis disposez le crumble généreusement sur<br />
les fruits.<br />
- Finissez par quelques copeaux de beurre doux sur le crumble.<br />
- Enfournez pour 35 minutes.<br />
A la sortie du four, le crumble est doré et parfois, si vous avez de<br />
la chance, un caramel bien parfumé se sera formé sur les bords<br />
du moule.<br />
Patientez encore le temps qu’il refroidisse…<br />
On y est : pour le Miaaaam, c’est maintenant!!!<br />
BAKING THE CRUMBLE<br />
- Preheat the oven to 180°C.<br />
- Place the pineapple in a gratin dish.<br />
- Grate a little lime zest on the fruit, 2 or 3 thin slices of butter.<br />
- Add the syrup, then arrange the crumble generously on the<br />
fruit.<br />
- Finish with a few thin slices of soft butter on the crumble.<br />
- Bake for 35 minutes.<br />
When it comes out of the oven, the crumble is golden and<br />
sometimes, if you are lucky, a flavored caramelization will<br />
have formed on the edges of the mold.<br />
Wait until it cools down…<br />
