EXPERIENCE
With Nimman Thai Cooking School
Attending a Thai Cooking Class is one of the best and most
authentic experience you can have in Chiang Mai. Newly
opened, Nimman Thai Cooking School is the only school located
in the heart of Nimmanhaemin area. This school offers an ideal
home-style learning environment.
At Nimman Thai Cooking School, there are two cooking sessions
in a day: mornings from 9 am. to 2 pm. and evenings from 4 pm.
to 8 pm. The morning class starts with a visit to a local market with
the teacher introducing fresh ingredients. The walk in the market
is an experience itself with teacher explaining all the various
Thai herbs and spices in perfect English language.
Back from the market, you then start the course with an
introduction to fundamental ingredients and techniques of
Thai cooking. You also have hands-on experience to
prepare and cook five dishes, chosen by yourself.
Small class size with no more than 8 students
promisse to be committed to giving you a friendly
and fun cooking experience. If you only have
limited time, the evening course is as much
interesting as the morning class but shorter
as there is no visit at the market. Meanwhile,
you can enjoy your dishes for dinner at the

Elephantastique animals
大 象 —“ 温 柔 巨 人 ”
One of the first letters of the Thai alphabet is
“Chor”, the same letter as for “chang” which means
elephant in Thai language. In every school book,
this letter is called the elephant letter, though
Thai children have a close bond with elephants
from an early age.
The nation itself is closely related to elephants:
the animal plays a special role in Thai culture and
they are highly revered. In the past, Thai kings
rode on them to fight the Burmese and today,
the Royal Thai Navy features the white elephant
on its flag. Meanwhile, Thailand’s most popular
brew is call the elephant (“chang” in Thai).
To honor this most gentle, yet powerful animal,
March 13th was selected as “National Thai
Elephant Day”: it is also the day that the white
elephant was chosen to be “National Animal and
Symbol of Thailand”. We would like to dedicate
this March issue of Chang Puak Magazine
(which means the White Elephant Magazine in
Thai) to this kind, intelligent and loving animal.
Moreover, we wish to raise public awareness to
protect and conserve the elephant population for
our next generations.

Habitat Loss
The main threat facing Asian wild elephants is loss of habitat,
which then results in human-elephant conflict. In South East
Asia, an ever-increasing human population has led to many
illegal encroachments in elephant habitats. Many infrastructure
developments like roads and railway tracks also fragment
habitat. Elephants become confined to “islands” as their
ancient migratory routes are cut off. Unable to mix with other
herds, they run the risk of inbreeding.
Habitat loss also forces elephants into close quarters
with humans. In their quest for food, a single elephant can
devastate a small farmer’s crop holding in a single feeding raid.
This leaves elephants vulnerable to retaliatory killings,
especially when people are injured or killed
Facts about elephants :
Asian elephants are extremely sociable, forming groups of six
to seven related females that are led by the oldest female, the
matriarch. Like African elephants, these groups occasionally
join others to form herds, although these associations are
relatively transient.
When you look at elephants, the first thing that strikes you
may be their large floppy ears. Actually, this is how you identify
an African elephant from an Asian elephant, whose ears are
a bit smaller and rounded. Elephants’ears provide more than
hearing: they are equipped to provide heat relief. A network of
tiny veins carries blood to the rest of the body. When they are
hot, they flap their ears and the blood running through the ears
is cooled in the process.
The elephant’s trunk is the second thing that brings up many
questions. An elephant’s trunk is actually a long nose with many
functions. It is used for smelling, breathing, trumpeting, drinking
and also for grabbing things -especially a potential meal. The
trunk alone contains about 100,000 different muscles. Next to the
trunk are the tusks, which have them brought a lot of problems
because of the ivory. All Africans elephants grow tusks, but only
some male Asian elephants have tusks. Some female Asian
elephants have very tiny tusks called tushes but no longer tusks.
The trade of ivory is illegal today, but it has not been completely
eliminated.
The perfect day for an elephant should be spent feeding
on grasses, but large amounts of tree bark, roots, leaves and
small stems are also eaten. Cultivated crops like bananas, rice
and sugar cane are favorite foods. Elephants always need to
be close to a source of fresh water because they need to drink
a lot.
Being the largest land animals on earth, elephants can weight
up to four tonnes and reach more than three metres tall. But
this impressive size hasn’t prevented us from bending them to
our will. Despite having some protection in Thailand, elephant
populations have vastly declined over the past 100 years due
to many factors such as habitat destruction, poaching, climate
change, human action, etc... Nowadays, there are only about
3,000 to 4,000 elephants remaining in Thailand. The notion of
extinction is no longer just a concern, it is the new reality.
As Graydon Carter said: “We admire elephants in part
because they demonstrate what we consider the finest human
traits: empathy, self-awareness and social intelligence. But the
way we treat them puts on display the very worst of human
behavior.”

Everyone who visits Thailand wants to ride an
elephant. However, there’s a dark side to elephant
tourism that many people aren’t aware of. For
example, an elephant’s spine cannot support the
weight of people. Carrying people on their backs all
day leads to permanent spinal injuries and the chair
placed on their backs causes rubbing and then blisters
which can be infected.
Fortunately, times and attitudes are changing.
If you are heading to Thailand and meeting with
elephants is on your bucket list, you don’t have to
scratch it off. But do your research and be selective.
“No Saddle Programs” are starting in Thailand,
allowing you to interact with the gentle giants in
a meaningful way. This is really the right way to go
for an unforgettable up-close elephant experience,
without riding them.
If you would rather walk beside an elephant than
ride on top of one, Elephant Nature Park-Chiang

rescued elephants who are now free to roam, eat
and play to their hearts’content. They can wander
down to the river for a splash or a roll in the mud or

The Ordination of the Beloved Sons
傣 龙 小 男 孩 升 和 尚 仪 式
The Poy Sang Long Ceremony takes place every year between March 20
and mid-April. This year it will be celebrated from the 4th to the 6th of April, in
Chiang Mai and other northern Thai towns, but the Mae Hong Son’s version is
given a unique flavour.
This colorful festival is an ordination ceremony celebrated according to Shan
or Tai Yai‘s beliefs. Its name means “ordaining the beloved sons”. Young boys
from 7 to 14 years old go to Shan temples to be ordained as novices. They will
learn the tenets of Buddhist teaching and the self-discipline required of a monk.
After being ordained they will stay in the monastery for a period of time that can
vary from one week to many months.
On the first day of the festival, the boys have their heads shaved and are
anointed with turmeric and dressed up in the colours of a Thai Yai prince, with
traditional accessories: long white socks, plenty of jewellery, a head cloth
decorated with fresh flowers, a golden umbrella and heavy face make-up.
They are then announced to the guardian spirit of the town and taken around
the temples. The second day brings general merry-making and a spectacular
parade, headed by a drummer and a richly decorated riderless horse, which is
believed to carry the town’s guardian spirit. The boys, still in their finery, are each
carried on the shoulders of a chaperone, accompanied by musicians and bearers
of traditional offerings. In the evening, the novices tuck into a sumptuous
meal, waited on by their parents and relatives, before the ordination ceremony
in the temple on the third day.

“ 傣 龙 小 男 孩 升 和 尚 仪 式 ” 是 一 个 丰 富 多 彩 的 节 日 , 这 个 每 年 一 度 的 盛 大 仪 式 源

HOW TO GET THERE:
There is no airport in Koh Lanta, so
those looking to escape in this beautiful
world must fly to Krabi first (daily direct
flights from Chiang Mai with Air Asia
- see schedule page 54). From Krabi
there are a number of private tour
companies that can arrange for mini-bus
or boat travel to Koh Lanta and include
fees for ferries and other transfers. The
journey takes between 1 to 2 hours.

GOURMANDS
Beaux volumes, cadre épuré, salle intérieure climatisée et terrasse
accueillante pour vivre l’ambiance du quartier Nimman. Au restaurant
Italics, de l’hôtel Akyra, l’atmosphère est zen, parfaite pour se ressourcer
le temps d’un déjeuner, et même s’il est pris sur le pouce. D’autant que
le restaurant met à votre service une armée de serveurs rapides et
attentionnés.
Le sandwich gastronomique
La carte, élaborée par le Chef Phubase “Base” Chuprakong est très variée. La nouveauté
ce mois-ci, c’est son menu sandwiches pour le déjeuner. L’idée est de proposer aux clients
de déguster des produits de qualité, savoureux, dans un joli cadre, sans toutefois payer
trop cher. Pari lancé ! Ce nouveau menu risque de faire rapidement de l’Italics le nouveau
spot gourmand du midi. Car lorsqu’il est bien fait, un sandwich peut être la perfection
incarnée, à l’instar d’un délicieux repas qui fait apparaitre un large sourire de satisfaction
sur notre visage et nous rend heureux pour le reste de la journée. Le chef Base s’est ainsi
lancé dans la confection de sandwiches gourmands, à emporter ou à déguster sur place.
5 sandwiches « sur mesure »
La carte des sandwiches de l’Italics est courte mais variée. Les cinq sandwiches proposés
sont accompagnés d’une salade et de frites et sont servit dans de la baguette artisanale.
Au menu : le Beef Pastrami avec sa laitue et ses cornichons ; le Prosciutto Club, avec du
poulet grillé, du jambon Proscuitto et un oeuf au plat ; le BBLT, fait à base de lard à l’Italics,
de mozzarella, de buffle, de laitue et de sauce tomate. Les amoureux de fruits de mer n’ont
pas été oubliés puisque l’un des sandwiches est fait avec des crevettes relevées d’une
sauce pistou et de citron. Pour les affamés, le Just a Minute Steak, comprend un petit steak,
de l’aïoli, des oignons et du fromage chaud. Et pour les aventuriers, pourquoi ne pas
vous laisser tenter par le sandwich de Chiang Mai, créé avec de la saucisse traditionnelle,
une purée d‘oignons, de la mayonnaise relevée et de l’ail croustillant? Le restaurant
propose aussi de croustillants burgers. Demandez la Carte Résident du restaurant et vous
bénéficierez de 15% de réduction. L’hôtel propose aussi un parking avec un service valet

Malgré une carrière de professeur d’histoire à l’université de
Payap, Jumm est un passionné de cuisine Thaie, c’est aussi un
créateur dans l’âme. Sa bibliothèque privée contient désormais
autant de livres d’histoire que de livres de cuisine. Dans son
restaurant Mix, créé il y a une dizaine d’années, il délivre une
très belle carte inspirée par la Thailande dans son ensemble
et sublimée par des produits d’une qualité irréprochable. La
carte du Mix propose également de nombreux plats chinois,
Japonais et Européens, réécrits avec goût.
La discrète Khun View est elle passionnée de
pâtisserie. Destinée à des études d’économie,
elle a depuis toujours confectionné desserts
et gourmandises depuis sa chambre
d’étudiante. C’est par passion et en
parallèle de ses études, qu’elle postula il
y a sept ans, pour un emploi d’assistante
pâtissière au restaurant Mix, et travailla

chacun deux de leurs plats préférés ainsi qu’un plat faisant
partie du menu de l’autre. Pour View, le plat préféré qui porte
la signature de son époux est le curry de côtes de porc
à la Haeng Lae. Ses deux desserts préférés sont le
gâteau chocolat-orange et le Global Warming,
une pâtisserie-surprise très spéciale. Pour
Jumm, le plat signature de son épouse est
l’assortiment de perles colorées dans son
lait de coco ; son plat préféré est la salade
de queues de lotus aux crevettes. Un plat
légèrement relevé mais pratiquement
introuvable de nos jours.
Aujourd’hui, le restaurant Mix séduit autant par
ses saveurs atypiques que par son ambiance
et la diversité de ses plats. Une dizaine de
succursales a vu naissance dans le pays,
ainsi qu’au Laos et en Birmanie. Etoiles
montantes de la gastronomie Thailandaise
ainsi que de la cuisine Européenne, View et
Jumm se sont vus remettre le prix du “Meilleur
Restaurant 2014-2015” par les lecteurs du
magazine Thailand Tatler, ainsi que par le
magazine Travel Asia et le site internet
thailandais “Best of Wongnai”. Le résultat
de leur travail est un véritable succès
et chaque bouchée est non seulement un
délice mais un voyage gustatif, léger et
savoureux.

Since 1998, the National Thai Elephant Day takes place every year on the 13th
of March. The aim of this day is to draw attention to this majestic animal.
In Chiang Mai, Elephant Nature Park will be celebrating this day by raising its
voice for the pachyderms’future. The Elephant Conservation Center in Lampang
will organize an all-you-can-eat fruit buffet held in their honor. Visitors are welcome

This annual festival boasts a vast array of colourful kites in a multitude of
shapes and sizes. Some kites are as tall as a 4 storey building, others take
on forms of animals and yet others are built in strange and wonderful shapes.
Cha Am Kite Festival takes place in mid-March, but you can see people playing
kites on Cha Am beach all month long. (to go to Cha Am from Chiang Mai, fly to
