DIJON MUST’ART
FRANÇOIS REBSAMEN, senator – mayor of Dijon
La Gazette "New York Special Edition" - March 1-4, 2010 2
The senator – mayor of Dijon, to whom we owe the Dijon Must’Art project, and who will be of
course present during the week when the Mourners will arrive at the MET, explains the reasons
behind this ambitious, groundbreaking initiative.
a Gazette : Where did the
idea of Dijon Must’Art
come from
Having given its past luster
back to this masterpiece
of our heritage made up of the Dukes’
tombs, four years ago, it is the showcase
containing them, Dijon’s Museum of Fine
Art, that we’ll be now renovating. For part
of the renovation time, the Dukes’ tombs
will be placed in sarcophagi for protection,
while the Mourners, which are movable,
will be available for presentation to the
public. What may have seemed like a problem
at the beginning has turned out to be
a unique opportunity to present to the Dijon
public and to our visitors the original series
of Philip the Bold’s tomb Mourners in an
original stage design, which will be set up
in another museum room, and which will
allow people to discover, for the first time,
the hitherto non-visible parts of the alabaster
statuettes.
So why send them outside the country
It’s all about sharing, when it comes to
culture. Along with Sophie Jugie, I wanted
our collections to be seen by a new public.
Ever since my
election, I’ve
been committed
to making
Dijon shine
and to fostering
its
activities
That’s why the procession of the tombs of
John the Fearless and those of Margaret of
Bavaria will cross the Atlantic for a large
American tour.
How was this tour organized
Thanks to an audacious and voluntary loaning
policy, a number of temporary exhibitions
will take place in the greatest American
museums that are part of the FRAME
(French Regional and American Exchange)
network. There will also be, to kick off
this tour, a presentation at the prestigious
Metropolitan Museum of Art.
For more than two years, and throughout
the United States, Dijon and its Museum
of Fine Art will shine at every step of this
tour, which will also go through the cities
of Saint-Louis, Dallas, Minneapolis, Los
Angeles, San Francisco and Richmond. The
Mourners will then return to France, first at
the Cluny Museum in Paris, in Spring 2012,
then back to the Dijon Museum of Fine Art,
where they’ll stay for a long time.
I imagine this whole operation costs some

This series of major exhibitions is completely
financed by the FRAME network and
the patrons of the arts therein. I’d like to
really thank them, because they have made
it possible for the American public to better
know our rich historical heritage. Moreover,
every museum receiving the works will be
also presenting the city of Dijon using films,
books and local products.
What brought about this initiative
Ever since my election, I’ve been committed
to making Dijon shine and to fostering
its activities. We must be actively involved
in enhancing our past and present historical
heritage, in promoting our classic and
contemporary culture, and also in sharing
our way of life. That’s the meaning I wanted
to give to this operation, in New York,
which we’re undertaking with our partners.
We’ve called it Dijon Must Art as a hint
for Americans, who know us especially for
our Dijon Mustard. This original concept
consists in presenting in one or several
cities receiving this exhibition the best of
Dijon’s art, culture and gastronomy. It’s
an opportunity to show that, in addition to
its exceptional historical heritage, today’s
Dijon also has a cultural wealth expressed in
various areas .

Gazette "New York Special Edition" - March 1-4, 2010
>
qu’innovante.
DIJON MUST’ART
du réseau FRAME (French Regional and
American Exchange) et pour inaugurer cette
tournée, une présentation dans le prestigieux
Metropolitan Museum of Art.
Dallas, Mineapolis, Los Angeles, San Francisco

New York, conjointement avec nos partenaires.
historique exceptionnel, Dijon compte
aujourd’hui une véritable richesse culturelle
dans des expressions diverses .
our industry’s history. That’s why, it gives
me great pleasure to send you this selection
of our product, that is the result of a long
will convince you, if ever need be, that there
is no mustard but Dijon mustard.” .
DIJON MUST’ART
La Gazette "New York Special Edition" - March 1-4, 2010 4
Dijon Must’Art
ijon has taken the opportunity given it this year, thanks to the renovation work on its Museum of Fine Art, in order to
have other people discover its exceptional collections. The Guards’ Room, which is the most famous of the museum’s,
will indeed be inaccessible to visitors during the renovation of the northern façade and the interior of the Dukes’ Palace.
The tombs, which will be protected inside solid boxes, will no longer be visible. But since the Mourners can be unmounted,
it’s a wonderful opportunity to see them in a different way, outside their architectural frame.
Dijon’s residents will be able, from 2011 to 2013, to see more closely and admire those of Phillip the Bold.
As for the figures from the tomb of John the Fearless they are leaving their arcature a bit earlier than planned (in order to have
the best environmental conditions for the museum, studies are being made, which have delayed the beginning of renovation work
a little...).
Indeed, the museum took advantage of its belonging to the FRAME (French Regional and American Museum Exchange) network
and suggested to American Museums to house them, which the museums enthusiastically accepted. The Mourners will then be
our ambassadors in New York, Saint-Louis, Dallas, Minneapolis, Los Angeles, San Francisco and Richmond, before crossing the
Atlantic again in 2012 for a final presentation in Paris at the Cluny Museum. The city of Dijon, the tourist office, artists, musicians,
master-chefs and economic actors have all been mobilized to turn this exceptional trip into an opportunity for Dijon, Burgundy and
France to shine in the United States. Dijon’s name is known in the United States, as it is associated with mustard and gastronomy,
while the name of Burgundy is known in its wine association. But such familiarity with these names does not mean that we have a
solid reputation. Hence, the exhibition will offer the opportunity to organize in New York, this week, a series of events, which will
enhance the rich historical heritage, social diversity and artistic vitality of Dijon as well as the quality of its gastronomy.
Contemporary artists, such as Yan Pei Ming, and musicians, such as Thierry Caens, Daniel Fernandez, Yves Jamait and Vitalic
have been mobilized. Our best master-chefs are also part of this trip. The entire operation is called Dijon Must Art, hinting at what
Americans know best about us: Dijon mustard. There will be, in addition to things associated with the museums’ “opening events”
(FRAME’s official dinner and the Met’s inaugural cocktail, prepared by our chefs), public tastings (at Central Station) and inside and
outside concerts given by Dijon musicians. This operation is supported by companies from the food-processing industry wishing to
develop their exports to the United States: Amora, Maille, Seb, prestigious wine estates, the BIVB (the Inter-professional Office of
Burgundy Wines), Boudier blackcurrant liqueurs, Flavigny aniseed candy makers, Dijon Cereals and the Vitagora competitiveness
organism, which best represent our gastronomic, culinary and wine heritage.
The United States are the third nationality represented in Dijon. The Dijon tourist office and the regional tourism committee are
actively involved in this operation. A short clip presenting Dijon has been made by the tourist office to be presented at the exhibitions
or the FRAME and museums’ Internet sites. Road shows have been organized in association with Atout France in the USA, meant
for the American press and tour operators, as well as press exchanges between France and the United States .
Dijon Must’Art

DIJON MUST’ART
The Dukes of Burgundy
(1363 – 1477)
n 1361, the family line of
Burgundy’s Capetian dukes
came to an end. The dukedom
then fell to the king
of France John the Good,
who offered it as an exclusive possession
to his son. Philip the Bold ruled from
1364 to 1404. His marriage to Margaret of
Flanders laid the foundations to the States
of Burgundy.
He was a fine politician as well as a great
amateur of art. He was a patron of the arts
who threw lavish receptions and ordered
artistic works on a large scale from the best
artists of the time.
His son, John the Fearless tried to keep the
dukedom’s influence on the king of France.
But that led him to a confrontation with his
cousin Louis of Orleans, brother of Charles
VI, who in turn led the kingdom into civil
war: John the Fearless ordered the death of
Louis of Orleans in 1407, and that death
was in turn avenged in 1419 when John the
Fearless was assassinated by order of the
future Charles VII.
Philip the Good, the only son of John the
Fearless, ruled from 1419 to 1467. He tried
to make an alliance with England against
France in order to avenge his father’s
murder. His policy was geared toward
increasing his estates and so led the dukedom
of Burgundy to the peak of its power.
The northern part of the dukedom became
the political center of the States and the
locus of exceptional artistic blossoming.
But the duke did not forget Dijon: he had
an elegant ducal dwelling erected. He
also established at Dijon’s Sainte-Chapelle
(Holy Chapel) the headquarters of the
order of the Golden Fleece created in 1430
to revive chivalric values and the idea of
crusading.
The last duke, Charles the Bold, ruled for
ten years.
Like his predecessors, he used art lavishly
to enhance his prestige. While trying to
conquer new territories to ensure the dukedom’s
almighty power, he was killed
before the city of Nancy in 1477. The king
of France took advantage of that death to
incorporate Burgundy into France, thus
putting an end to the existence of the
dukedom of Burgundy .
Les Ducs de
Bourgogne
(1363-1477)
n 1361 la lignée des ducs capétiens
de Bourgogne s’éteignit.
Le duché revint alors au roi de
France Jean le Bon qui l’offrit
en apanage à son fils. Philippe
The Dukes’ tombs,
the Mourners’ cradle
hilip the Bold’s tomb
was commissioned in
1381, made under the
successive supervisions
of the figurine
sculptors Jean de Marville, Claus
Sluter and Claus de Werve and set
up at the Champmol Charterhouse in
1410. That of John the Fearless, who
wanted his tomb to be modeled after
his father’s, was made between 1443
and 1470 by John of Huerta then by
Antoine le Moiturier.
The tombs of the Dukes of Burgundy,
particularly that of Philip the Bold,
are considered among the most
remarkable funerary monuments.
They constitute a renewal of traditional
tomb compositions, which had
consisted, from the middle of the
XIIIth century on, in a recumbent
figure with a procession of Mourners.
At the base, the mourners were no
longer isolated, in semi-relief, in their
arcature, but seemed to slide into the
galleries of a cloister. All of them
express pain in their traits, a gesture
towards the one next to them or the
eloquence of their garments’ folds.
The angels became more prominent,
as they were now shown kneeling on
the tombstone, watching at the duke’s
bedside, at the same time afflicted
and serene. The recumbent figure was
no longer a vertical laid figure but a
truly recumbent, stretched-out body,
as is highlighted by the cloak’s folds
spread over it. But just as unusual are
the tomb’s monumental size, making
the prince’s face almost inaccessible
to the viewer, and its sumptuousness:
fine precious marble and alabaster,
exquisite polychrome colors, vibrant
gold.
1791-1799: Destruction
The two monuments stayed in the choir
of the Champmol Charterhouse’s
church until the Revolution. When
the Charterhouse was sold as a national
possession, the tombs were very
carefully brought up into the old
Saint-Bénigne Abbey-church, which
had become a cathedral. But in the
following year, a decision was made
to destroy “the tyrants’ monuments”.
The dukes’ and duchess’ recumbent
figures were destroyed, and the other
part were unmounted and placed in
the old Saint-Bénigne Abbey palace.
Some elements disappeared at that
time, including some architectural
fragments and ten mourners, which
were later found with collectors.
1819-1827: Restoration
In 1819, the architect Claude Saint-
Père took the initiative of restoring
the tombs. With the help of Févret
of Saint-Mémin, curator of the Dijon
museum, he brought together the
pieces stored away and looked for
the fragments which were with
various individuals. He completed
the missing parts with the sculptor
Joseph Moreau, for the statues,
and the ornamentalist sculptor Louis
Marion, for the architecture. The first
restorers did not have all the illustrated
documents that have been discovered
since, and so the recumbent
figures’ reconstitution was not very
accurate. However, the work done
on the arcatures – decorative arcades
– was so good that we can’t tell
the difference just by looking. The
modern painted and gold highlights,
sometimes laid on older traces of
paint, give a very revealing image of
the original colors.
The two tombs were brought up
to the Gards’ Room of the Dukes’
Palace, which had been connected
to the museum for a few years. The
new presentation was inaugurated
in 1827.
It immediately made an impression,
for at that time people were starting
to rediscover the Middle Ages .

de l’or.
Innovative mourners as
a sign of artistic novelty
n artistic and technical
feat:
Just like at the door
to the Charterhouse’s
church, Claus Sluter
had to adapt his
sculptures to an architectural frame
(arcades, small loggias and Marville
bays) which he had not himself made.
Comparing this row of arcades to a
cloister’s galleries, were the mourners
could freely move, would give a wrong
idea on the problem facing Sluter. The
statuettes needed only be moved by
a few centimeters to hit the pillars or
capitals. For indeed the architecture
there was not of human size. It limited
the space available. So Sluter had
to meet such demands and adapt his
sculpted figures to such dimensions.
Some difficulty also came from the
alternating double bays and triangular
recesses. He also had to work around
the pillars which half-hid twelve of the
mourners. Moreover, it’s not correct to
say that with Sluter, sculpture left the
architectural framework and became
independent.
The procession or the forty mourners:
The clergy’s presence before the
mourning figures indicates the procession’s
direction.
New iconographic development:
Never had the mourners theme, where
most often figures repeated the same
gestures, known such iconographic
development, nor such diversity of
expression, from the most silent to the
most emotional, to translate mournful
feelings.
Each of the figures – facing each
other to exchange some words about
the deceased or making a consoling
gesture, or staying aloof in a reflexive,
meditative position or praying in exaltation
– shows its own pain in an astonishing
variety of attitudes.
Mourning is expressed less through
the faces’ expression, which are often
completely hidden under the hood
flaps than through the cloaks’ folds,
the interplay between the big rolls and
the deeper folds of thick material. Such
volume effects give the figures a new
build.

Des pleurants
novateurs et synonymes
de nouveauté artistique
ne prouesse artistique et technique
:
DIJON MUST’ART

without Mourners
As the Mourners’ tour in America gets underway, the Dijon Museum of Fine Art to which they
belong is starting to renovate the room containing the tombs of the Dukes of Burgundy. The

a Gazette : Is the restoration
of the Museum of
Fine Art really necessary
Sophie Jugie :Yes! To start,
we were faced with a terrible
lack of space. Up till now we’ve had
7500 m², while we actually need double
that surface! We cannot receive people properly
because of a lack of space, we have
no conference hall and too many objects
in our reserve stock... The space dedicated
to the works of our permanent collection
will increase from 3500 to 5200 m². Also,
the buildings need an overall renovation...
Moreover, we’re planning to make adjustments
in order to better serve people with
reduced walking capacities.
This museum has high potential and a very
important collection. It is very attractive,
since it is based in a historical monument:
the palace of the Dukes of Burgundy.
How long will this renovation work last,
and how will it proceed
Studies began in 2003 and renovation in
2008. It’s expected to go on till 2018. Work
is done on two levels: renovation of the historical
monuments and construction of new
reserves. We have planned three renovation
steps which allow us to treat one part after
the other, thus never closing the museum.
Are the Mourners, in your opinion, worthy
representatives of Dijon
My concern was to make the museum’s
renovation visible. It seemed interesting to
me to keep one of the two Mourners series
in Dijon and to send the other one out,
since this work is representative of Dijon.
This
museum
has high
potential
and a very
important
collection
With that in mind, I got in touch with the
FRAME (French Regional and American
Museum Exchange) network, as our city is
twinned with Dallas.
Is there any planned exhibition of an
American collection
Yes, it’s planned, but as long as renovation
work is not finished, the dates remain
uncertain. However, we do have some possibilities
already.
How is the Mourners’ tour organised
We will start at the MET. It’s a great present
from the FRAME network. It will be
a great way to enhance the presence of
our works, the museum and the city... We
will then exhibit at Saint-Louis, Dallas,
Minneapolis, Los Angeles, San Francisco
and Richmond... We will send a learning
kits case to Dallas with Mourners costumes
for children.
Are you anxious about the statuettes’
transport
Yes, it’s always very stressful. We have
to be anxious! It’s a kind of preventive
measure. I follow them everywhere: on the
plane, in the truck... everywhere! We’re
trying to anticipate things, while using
different procedures and ensuring security.
We’re working with the Dallas museum
management, which will allow us also to
reinvigorate our twinning. I need to go to
Dallas to set up the collection and visit the
museum. We’re trying to be open to the
city, because in so doing we’ll be able to
establish contacts with artists, university
scholars, etc.
We’re also considering different possibilities
concerning work on the mourning
and death of great princes with American
museums, as their collections comprise
many more civilisations .
Gisants sans
Pleurants

Je me
suis donc adressée au réseau FRAME (French
Regional and American Museum Exchange),
Richmond…
.

Chanel to thank them. We realized that one
of our designer friends had the track on his
iPod. Afterwards, we were told that Karl
wanted to meet us. He suggested we composed
music for his Venice fashion show
and played live on stage during the show.
It was a magical moment. We suggested
adding his voice. Later, we asked him if we
could keep it on the album, and he accepted.
That’s how Ronda Parisiano was born.

Generally, people say that it’s a mix of
classical and electronic music, but that’s
not how we meant it to be. At first, it was
just electronic music. Then later we started
using our instruments – violin and cello.
Apart from the track Schubert à la mode
there isn’t really any mixing with classical
music. We our original because we do everything
ourselves.

Yes, be it in a professional or a private
capacity. But it couldn’t happen at any better
time, since our album was released in
Europe in 2009 and will be out this year in
the USA, Japan and England... Apart from
this, I did have the opportunity to go the
Unite States many times with friends, but
I’ve always wanted my first trip to NYC
to be professional. I’m making this dream
come true. Moreover, I’ll be returning there
again with the Philharmonic orchestra of
France Radio, with an opera I composed
called Cellar Door... .
a Gazette :Vous
avez enregistré un
morceau intitulé
Rondo Parisiano,
dans lequel on peut
entendre Karl Lagerfeld. C’est assez
improbable, non
Thomas Roussel : C’est un vieux pote
d’enfance !
Ensuite, on
nous a dit que Karl souhaitait nous
rencontrer.
musique
En général les gens en parlent
comme d’un mélange de classique
et d’électro, mais nous ne
l’avons pas conceptualisée comme
cela. Au départ, c’était juste de
l’électro. Ensuite on s’est mis à
jouer de nos instruments qui sont
le violon et le violoncelle. A part
dans Schubert à la mode il n’y a
pas vraiment de mélange avec le
classique. L’originalité vient du
fait que nous faisons tout nousmêmes.
C’est votre première fois aux USA
Oui, que ce soit pour le professionnel
ou le personnel. Mais cela
tombe très bien puisque notre
album est sorti en 2009 en Europe
et qu’il sort cette année aux
USA, au Japon et en Angleterre...
Au-delà de ça, j’ai eu de multiples
occasions d’aller aux États-Unis
avec des amis, mais j’ai toujours
voulu que mon premier voyage à
NYC soit professionnel. C’est un
rêve que je concrétise. J’y retourne
d’ailleurs avec l’Orchestre
Philharmonique de Radio France
dans le cadre d’un opéra que j’ai
composé, Cellar Door… .

I started singing at the age
myself. Using my severance
pay (I was a workman), I released
my first record which obtained the golden
nothing was premeditated. My reputation
came from my concerts. I’m interested in
mixing things, just like, for example, what
I’ll be doing with Daniel Fernandez and
Thierry Caens.
For professional reasons,
yes. But I’ve already been
there for personal reasons.
Almost exactly a year ago to the day, I
was invited by Moroccan acrobats from
Tangiers to attend their Broadway show.
It’s funny how it was Morocco that made
me go to New York. I have good memories
of that trip, as I played with some gypsies
whom I ran into.

I’m a Spanish expatriate. I grew up in a
neighborhood where there were expatriates
from all kinds of origins. Obviously, that’s
why my music is very colorful, because I
don’t particularly have a French culture. I
sing in French and Spanish. Thanks to my
music I managed to work in several African
countries, and that’s how I’ve brought back
so many travel stories... I don’t write any
Arab-Andalusian music, since I hear it
quite often. I write music about traveling
and meeting people. I feel more human than
French or Spanish. What I like about New
York is that it’s a microcosm of the whole
world. I was moved by that.
New York is a
microcosm of
the whole world.

by that

I’m working on a DVD retracing the last ten
years I’ve spent with the band, as well as a
live CD. I’m also going on a four or five
month tour with Yves Jamait, Jamait meets
Fernandez. I’m also planning a project with
Thierry Caens which will be called Quartier
Latin.
Thierry CAENS
«From Dijon
to New York»
hierry Caens was born
in Dijon and followed
a classical training at the
Conservatoire. He then
embarked on a career with
prestigious orchestras, most notably the
Paris Opera. Finally he went solo. That’s
when it all started... “My ambition is to
extend the trumpet’s musical field”, he
declared. Quite a program! He thus opened
himself up to all musical areas and
even composed for the cinema (Cyrano de
Bergerac).
He then met, in Dijon, Yves Jamait and
Daniel Fernandez. “That meeting allowed
us to create instrumental and song mixes
that functioned quite well.”
Moreover, the trio played in New York for
the Mourners tour.
But those new affinities he discovered
with Dijon artists did not mean that Caens
would forget his training and attachment to
classical music, which he has managed to
associate very well with the most modern
instrument arrangements.
“I’ve written music for a big band: the Must
Art Band, which is made up of one hundred
brass players from New York. This brass
band is inspired by Guillaume Dufay’s
themes – he was the Dukes of Burgundy’s
composer – and by Broadway musicals. We
mixed medieval music and musicals. The
work is called From Dufay to Broadway. It
was really fun to write. It was also a lot of
work but a very interesting adventure. I had
never done anything like that and never at
that scale.” .

Why have you decided to be part of
something like the Dijon Must’Art event
The city of Dijon is promoting itself and
its museum in a very beautiful way. We
thought it was very important then to accept
the mayor’s invitation and to promote our
respective establishments. We have centralized
our efforts, so that each business
could represent its dishes, its city and its
establishment. It’ll be the first time I cook
in New York.
It’s an international city, so I think cuisine
is very important there. We’ll try to acquire
a reputation by offering little portions to
sample. The brands that will be there will
also bring along their know-how and their
materials which will create a kind of osmosis
with Dijon.
Is the cohesion between the various chefs
real
Yes. Each one is bringing along ideas and
knowledge. We have centralized all our
recipes at Guy Rebsamen’s, and we have
a contact in New York who’s in charge of
buying things. He’s actually a French cook,
Luc Pasquier, who worked at the Pré aux
Clercs twenty years ago.
Are the ingredients bought in Dijon or
will you buy them there
Flour is the only food ingredient we’re
bringing with us. It’ll be sent over by Dijon
Céréales. It’s very complicated to send over
food. Blackcurrant liqueur and gin will be
supplied there on-site by Boudier .
a Gazette : What is your
role in this delegation
I was invited to this trip
to support the tour’s winemakers
and to talk about
Burgundy. Our American clients are very
événement tel que Dijon Must’Art
Partice Gillard is a wine expert and maître
d’hôtel. He is in charge of selecting the wines
that will be offered for tasting. He has worked
alongside the chef Jean-Pierre Billoux for

Gare in Digoin, at the Hôtel de la Cloche or at

alliance for excellence is quite a long time...
sensitive to the soil and environment that
make up our wines. For them Burgundy is
magical, because all the Burgundy wines
they have in their cellars are expensive
and prestigious and they cannot easily find
them. There will be a few cocktails served
cuisine à New York.
as well as a wine tasting.
How did you make your choice
There are several of us working on selecting
wines: Guy Rebsamen, a wine merchant
from the Faiveley estate, and two winemakers,
Humbert and Gallois. We knew
we could not bring anything with us, as
delivery time is too long and transport is too
costly. So we’ve got a Gevrey-Chambertin
importer on site, which will help us avoid
customs problems.

We would have probably done things differently
had we been free to import as we
wished, because there are very few vintages
that are older than 2007 on site. However,
2007 is still a charming wine, and it thus
represents well the elegance and finesse of
Burgundy reds.
consultant à New York.
maison Boudier .
We’re also working with the Boudier blackcurrant
products. We won’t be making real
kirs, because Americans are not big on the
aligoté grape variety. So we’ll be replacing
it with a Chardonnay with blackcurrant
cream.
Have you worked abroad alongside Jean-
Pierre Billoux before
I’ve been working with Jean-Pierre Billoux
for thirty-five years now. He’s been everywhere,
but it’s the first time I travel with
him. We’re aware of the work involved,
but we want to show on-site the extent of
the things we’d like to do. We hope it’ll be
a success .

On travaille

si on avait pu importer à
order to represent everything about a city.
Traveling alone is not as interesting. This trip
will allow us to create different links and to
and we rarely have the opportunity to work
collectively in this way. We did that eight
years ago at the London embassy.”
téphane Derbord was born
in 1960 and studied in 1976
at the Simone Weil hotel
school in Dijon. Afterwards,
he had twenty-five years of
experience in various restaurants, some
unknown, others renowned. He went from
the family company that is the Hôtel de
Paris in Moulins to, among others, the very
famous Fouquet’s in Paris, always going
from one establishment to another, seeking
culinary know-how and new flavours. In
1991, he became owner of the Le Sévigné
restaurant in the Nièvre (Burgundy), which
received a Michelin star in 1993. He then
left the Nièvre in 2001 and took over the
Jean-Paul Thibert establishment in Dijon.
The restaurant then took on his name,
Stéphane Derbord, and received a Michelin
DOMAINE FAIVELEY
Estates – those endless
family stories...
he Faiveley estate was
founded in 1825 by Pierre
Faiveley.
Joseph Faiveley, who,
although he came from a
family that was passionate about wine, was
not himself meant to work in that field (he
was a doctor), saved the estate from phylloxera,
which cost him his life. He died in
1918 at the age of 59.
As the 1929 crisis crossed the Atlantic
and eventually hit Burgundy, wine was
overstocked in cellars and lost all its value.
Georges Faiveley did not give up, and he
founded, with his friend Camille Rodier,
the Confrérie des Chevaliers du Tastevin
(Brotherhood of the Knights of Wine-
Tasting Cups) with one main objective:
“Since our wines are not getting sold, let’s
invite our friends to drink them!” That
incredibly simple idea gave Burgundy a big
new push forward.
Then Guy succeeded to him. He was especially
intellectual and would manage the
estate like a businessman, making it double
in size.
Then came François in 1975. He gave
the estate a new impulse, in line with that
period of time and the modern dimensions
it brought with it. He’s now passed over the
estate’s responsibility to Erwan, who, at the
age of 25, has become the representative
of the seventh generation to manage the
Faiveley estate.
The Faiveley estate (present essentially
in the Côte de Nuits and the Côte chalonnaise),
Les domaines,
ces histoires de famille…
a Maison Faiveley fut fondée
- Bâtard-montrachet grand cru
- Bienvenues-bâtard- montrachet grand cru
- Puligny-montrachet 1er cru « la garenne »
DOMAINE HUMBERT
The best of
Gevrey Chambertin
Wine in New York
DIJON MUST TASTE
t’s in the heart wineyards where we find the most often emmanuel humbert
wine-maker of the winhouse of the same name. Famous wines of
Gevrey Chambertin, the Domain Humbert offers during the entire week
of Dijon must’art the chance to taste their best Pinots noirs.
Le meilleur des vins de
Gevrey Chambertin de
New York
pinots noirs.
DOMAINE GALLOIS
n 1901 M. Bizot,
Dominique Gallois’ greatgrandfather,
built his cellar
and house in Gevrey
Chambertin. At that time, the estate had
vine lots up to Volnay. As family descendants
multiplied the inherited estate was
divided among several families. M. Bizot’s
daughter, Charlotte Gallois, inherited vines
in Gevrey, which his son, Jean Gallois,
started farming.
That same year, Dominique Gallois decided
to bottle and market his wine.
The estate’s philosophy can be summarized
in two words: respect and modesty.
Respect for the soil, which is the envy of
so many. Sensible control and plowing are
as efficient as the overuse of pesticides and
weeders.
A wine’s quality depends first and foremost
on the soil and climate, the vines’ age
and weather conditions.
Modesty is also a key word, because even
the best wine-maker would be unable to
produce great wines if he did not help
nature give him good grapes.
The estate now covers 2.5 acres for making
Gevrey-Chambertin village wines, 2.5 acres
for Gevrey Chambertin 1st cru (Combes
aux Moines, Petits Cazetiers, Goulots),
and 0.75 acres for grand cru “Charmes
Chambertin”.
’est en 1901 que Monsieur
Bizot, l’arrière grand-père de
Dominique Gallois, construisit
sa cave ainsi qu’une maison
d’habitation à Gevrey
Chambertin.
DIJON MUST TASTE
MAILLE
Only Maille
La Gazette "New York Special Edition" - March 1-4, 2010 20
suits my taste...
The Maille company could not decline Dijon Must Art’s invitation and is thus traveling with its
draft mustard tap to offer a tasting of its mustard, the product that is so connected with Dijon,
to New York. It’s the perfect opportunity to stimulate your curiosity with a little bit of history.
aille, which has nearly two
centuries of history behind
it, is one of the oldest and
most prestigious French
brands.
Indeed, in 1720, while the city of Marseilles’
population, hit by the plague, was being
decimated, Antoine Claude Maille invented
the Quatre Voleurs (Four Thieves) vinegar,
whose antiseptic properties would save
the life of millions of people by protecting
them from contagious diseases.
In 1742, his son, also called Antoine Claude
Maille, received the title of Master Mustard
Maker and Master Vinegar Maker and laid
the foundations of the brand’s solid reputation.
Five years later, he founded the Maille
business, a mustard and vinegar shop in
Paris.
Then, as soon as 1752, he became the official
supplier of all European royal courts:
Hungary, Austria, Russia...
Antoine Maille opened his first Dijon shop
in 1945, where he served his mustards in
ladlefuls. The china, wooden shelves and
other porcelain taps seen in the shop today
seem to have kept the same atmosphere as
the old shop’s.
In 1930, when the last Maille descendant
died (at the age of 102), Philippe
de Rothschild bought over the brand and
modernized everything while keeping the
same know-how.
In 1952, the brand merged with that of
Grey-Poupon, founded in 1777.
Today, a second shop has been opened in
Paris, and products are now also available
on the Internet.
Since values and know-how are part of this
long heritage, they are transferred from one
successor to the other .

DIJON MUST TASTE
PHILIPPE CREVOIZIER, Culinary-Electric Director
SEB is all about
healthier eating.
The SEB company, known in the USA under the name T-fal, is more than 150 years old and
will probably endure as many years more. In 1857, Antoine Lescure created his company
in Selongey, 30 kms from Dijon. The tinware company he created passed from father to son
for more than a century, in which many a revolution occurred, such as the production of the
odor-free fryer (invented in 1967) or even the coffee-maker... In 1944, The company took on
the name SEB, Société d’Emboutissage de Bourgogne (The Burgundy Stamping Company).
Then, in 1968, it took over Tefal, the inventor of non-stick frying pans. SEB now, in 2010, has
subsidiaries on all 5 continents and, with its acquisition of great brands such as Moulinex/
Krups and Rowenta, what was once a Dijon small family company has become one of the
world leaders in the industry. In 1975, SEB shares went on the Stock-Market. Philippe
Crevoizier is the company’s Culinary-Electric Director.
a Gazette : How do
you apply your commitment
to healthier
eating
Our position lies in
believing that our
main focus is the end result – what
the consumer has on their plate - and
since he expects to have healthy food,
it’s our job to make that happen. We
were inspired by this kind of spirit
when we designed the Actifry.
French fries with no oil... not eve-

The figures speak for themselves.
Yesterday we made the two-millionth
fryer of this type, which means that
there are people out there who want
it. Actifry is number one in fryer
sales in more than twenty countries.
Moreover, we’ll be given this weekend,
the award for industrial innovation
in Germany. It’s a very important
award.
You have been in the United States
for quite some time now. Do you
think the Actifry will be as successful
as it is in Europe
We have indeed been present for
Consumers
expect to
have
healthy
food in their
plates, it’s
our job to
make that
happen

quite some time in the USA under the
name T-fal, and we’re launching our
fryer there. I believe it’s quite suitable
for that country and is well-adapted
to the French fry consumption
patterns of Americans. As a matter
of fact, Americans call our “frites”
French-fries, and we’re offering them
the opportunity to eat healthy French
fries.
How do you view your presence in
this Dijon delegation
Well SEB is a Burgundian company,
and Burgundy, and more precisely
Dijon, will be offering, apart from its
wines, its gastronomy. And beyond
the dishes, the gastronomy, the cuisine,
there are also the utensils which
make cooking possible, hence what I
said about the Actifry. Once we can
see the link between SEB and Dijon,
with its long history, and once we
know that such products as fryers are
made here, the picture becomes clear.
A product like this one must be displayed
and explained, and so we will
.
be part of a number of events. We are
extremely enthusiastic to take part

ETIENNE GENET, General Manager of Dijon Céréales
Mr Miller, your mill
is turning too fast!
Étienne Genet is General Manager of Dijon Céréales. This company, with its 400 million Euros
of turnover in 2007-2008 and its over 4000 members from the agricultural sector, is a major
player in the food-processing industry in Burgundy and, to a wider extent, in France.
a Gazette : What are Dijon
Céréales’ main activities
We are a French-style cooperative
of farmers, which
means that we have shareholding
farmers who wish to make the best
possible products and to promote them in
the best possible way. Our members want
to make sure they have a market, and a quality
one, for that. We are currently working
on an organic mill project. It’s a market that
is growing in an interesting way.
How many industry sectors are present
in Dijon Céréales
Our cooperative brings in a lot of cereals
and has other activities such as those of milling,
bringing in vegetables, onions, lettuce,
etc. It’s an important cooperative even at
the national level.
Why have you decided to support the
city
First of all, of course, we wanted to support
a cultural initiative. Then we also wanted
to take advantage of the Mourners’ tour to
promote our food-processing industry in
the USA, especially French bread and flour,
which go together. We work with a number
of bakers, in the USA, who promote
French bread. We have the best of French
bread-making as represented by Paul for
example, which is already well-established
in the main capital-cities. Bread has developed,
and we’ve gone from the traditional
baguette to a lot more elaborate types of
bread with more taste, better nutritional
value and easier conservation.
It seems to me that you’re particularly
We try to
anticipate
things and to
enjoy what
we do by
working
for the
planet and
for our
children.”
attached to notions of traceability and
security, am I right
Yes, indeed. But it’s more than a question
of traceability. The idea, with the creation
of the next high-tech research and development
facilities near Dijon, is to start
from the field and go all the way to the
consumer’s plate. We must continue the
work we started, through research and new
technologies.
Do your activities extend beyond
Burgundy
DC sells its cereals between the Ardennes
and Marseilles, thus covering a large area
of the French territory. We have a mill,
(Decollogne) near Paris, that is a leader in
the organic flour industry and that we wish
to further develop, as it is currently overloaded
with work.
We also export a lot. Indeed, we’re opening
or rather enlarging a terminal we have, in
order to export over the Mediterranean.
tiennent particulièrement à cœur il me semble
techniques nouvelles.
You seem to be very involved in questions
of sustainable development...
Yes, sustainable development has been one
of our objectives for two years now. It’s
important for us, first because we believe
in it, and second because it’s part of a good
citizen’s duties. This position translates into
actions our members take. We encourage
them, we help them work with less fertilizers
and pesticides. Therefore we have
field technicians who work with them, and
advise and guide them the best they can.
We try to anticipate things and to enjoy
what we do by working for the planet and
for our children, because that’s what it’s
all about. Many mistakes were made in the
past, and it is of little import to know who
was responsible for them. I believe that
we now have techniques and knowledge
allowing us to work better and to correct
our mistakes. And we should also democratize
all of this to make it more accessible .
erreurs. Et puis il faut démocratiser tout cela
pour le rendre plus accessible .

DIJON MUST TASTE
JEAN BATTAULT, Chief Executive Officer of Cassis Boudier
La Gazette "New York Special Edition" - March 1-4, 2010 24
The Boudier company was created in 1874 by Gabriel Boudier and, with its large range of

crème de cassis (blackcurrant cream), indispensable for kir making (a mix of white aligoté-variety
wine and blackcurrant cream), that made its renown. In 1936, Marcel Battault
bought over the company. Since then, the Boudier blackcurrant liqueur has become a family
business, which of course respects tradition, but which also takes present situations into
account.
a Gazette : Your motto
is “Quality is a principle
that accepts no compromise”.
How do you apply
this in your company
We can be 120 years old yet remain very
demanding when it comes to quality. In our
type of industry, we were the first to obtain
the ISO standard certification for making,
conditioning, commercializing, and delivery.
We’ve forced ourselves to respect all
standards. Three elements are involved in
this: suppliers, industrialists and clients. We
can’t do anything if one of them is missing.
We must also add to this people’s security,
quality and productivity, which are all inseparable
factors. You know, there were fiftyfour
blackcurrant liqueur makers before the
First World War. Today, we are six. And
among these remaining six we are the only
ones who are at the same time significant
and independent. All of our colleagues have
been bought over by large groups, which
I don’t mean to criticize: the more we are
to defend a product the more it’s got the
chance to survive. I refuse to place myself
in a kind of stupid competition system, I
don’t like jealousy.
Your new baby is the Saffron Gin. It’s
quite surprising coming from a Dijon
blackcurrant liqueur maker, isn’t it
There is little or no good quality French
gin. During the Second World War, the
American army based in France drank as
much gin as we drink wine, they thus organized
a kind of competition with the aim of
finding the best French gin producer. My
Quality is
a principle
that accepts
no
compromise
uncle had a friend who was a general in
the American army, and who gave him the
Gin recipe. This ensured the survival of the
company at that time, and it became very
prosperous for the two or three following
years, until the Americans left the French
territories. And then, recently, an English
friend asked me to make gin for England.
And I found this saffron gin recipe. It’s very
different, but it’s delicious. Moreover, it’s
been quite successful abroad.
You seem very attached to traditional
and historical heritage values...
My daughter,
who works
with me, is
part of our
fourth generation.
We
pass over
our family
values,
because
we’re doing
what we like
to do. Our
approach to
things is a
little bit elitist,
we’re
present in
the most chic
places in the
world.
Every time
Boudier
appears in
Singapore,
London
or Russia,
people are reminded of Dijon. It’s the same
case as mustard, except that mustard does
not have to be made in Dijon to be called
Dijon mustard.
And why must blackurrant cream (crème
de cassis) be made exclusively in Dijon
We know that Dijon’s soil gives the plant
its typical characteristics, which vary enormously
depending on the land. So from one
city to another, blackcurrant liqueur is not
monde.
soutenir l’événement Dijon Must Art
the same, and it’s in Dijon that quality is
highest.
You’re already renowned everywhere in
the world, so why support this event
Because we need to give a beautiful image
of Dijon. The Boudier company is very
interested in this initiative which we’re
gladly supporting. For indeed Boudier’s
exports are very well-known, and we’re
happy to work with our city .

PIERRE GUEZ, CEO OF VITAGORA
DIJON MUST TASTE
Dijon and its suburbs have become a competitive activity pole gathering many industrial premises
and actors in research and training around an ambitious project to “contribute on a
worldwide scale to the development of quality foods.”
Observing worldwide nutrition reveals a mitigated situation with 840 million people suffering
from malnutrition, while in the Western world, many fall victim to problems affecting their

itself in a perspective combining quality food, taste and health.
a Gazette : Why are you
accompanying Dijon
Must Art
We’re accompanying this
mission because many of
the brands represented therein are part
of the competitive activity pole, which
will allow us to demonstrate our knowhow.
I consider this to be a very good
initiative. We’re taking the cultural road,
which is a good way to go.
What is your philosophy
Vitagora’s aim is to help people get to
know the activities involved in food,
from the soil to the consumer’s plate.
Thanks to the chefs present, we’ll be
able to turn people’s attention toward
Burgundy’s soil and climate. We can
take Seb (T-fal)’s example, while keeping
in mind Vittagora’s set of themes, which
are health protection through healthy

to Chicago about one month ago and
was shocked when I found out that one
out of two people suffered from obesity.
That’s where, in Seb’s case, the Actifry
can play a major role. When we know
that Americans are big French fry consumers,
a fryer that does not use oil will
And what is Vitagora’s mission
The competitive industrial pole connects
companies with research and development.
It also takes care of labeling projects.
This pole works with more than
one hundred and thirty companies in
the region. We’re always looking for new

years, we’ve had a large yearly event
Vitagora’s
a Gazette : Pourquoi accompagner
Dijon Must Art
D’ailleurs
chaque année depuis cinq ans, a lieu une grande
manifestation à Dijon. Il s’agit du grand congrès
international Goût-Nutrition-Santé qui est organisé
avec Merk .

Yes, indeed. I started working
in my position on the 1st of January
1996, and I’ve made quite a few changes
since then. It’s a mid- and long-term policy.
When I took over in 1996, I decided to
The headquarters for research, development
How would you explain this constant
development
It’s the combination of several talents. A
company that works well is a company
that works in unison. Cycling involves
passionate people. We emphasize education
and training, and the people we hire carry
Yes, as well. The mounting process is entirely
assembled in Dijon by individual mounters,
who sign a specification sheet for each product.
This method has proved efficient for

a Gazette : What do small
and medium-size companies
represent in France
There are in France about
two million small and
medium-size companies, including traditional,
retail and service companies. They
contribute 60 % to the national wealth
(Gross National Product) and include 70
% of the nation’s salaried employees.
Knowing that, quantitatively speaking, 97.5
% of French companies have less than
twenty salaried employees, we can easily
imagine how important small and mediumsize
companies are to elected officials, state
services and administrations, considering
the important issues linked to their activities
and their socio-economic well-being:
they create, among other things, wealth and
employment.
What is the role of the CGPME (General
Confederation of Small and Medium-size
Companies’ Employers’ Syndicate), the
employers’ syndicate of reference
While MEDEF (The Movement of French
Companies) has traditionally represented
larger groups (CAC 40), their salaried
bosses and management employers, the
CGPME has for its part, since 1946, ensured
a positive image of “real employers”
who are public-spirited and responsible and
defend, within the framework of controlled
free enterprise, the cause, interests and legitimate
demands of patrimonial, independent
and family companies. As president of
this confederation in the Burgundy region,
I cannot forget that the major economic and
financial crisis which we’ve been going
through for now almost two years in the
United States, as well as in France, finds its
origin in a ruthless search for profit and for
excessive investment return rates. This has
been the case for decades now. It has had
to stop, and globalisation, inevitable as it
may be, has had to be more controlled by
the great powers.
How important are you, in terms of
representation
The CGPME in Burgundy holds 550 representation
mandates in four departments,
mainly in chambers of commerce and
industry, commercial courts, labor relations
boards, collecting agencies for training,
housing, and a large number of authorities
where company directors may be useful.
In Côte-d’Or, 800 company directors are
effective members of CGPME (with, in
all, 30 000 salaried employees). There are
2000 of them in Burgundy. The CGPME
is an operative employers’ organisation
that can’t be overlooked and that is present,
defending its members’ interests, on
all fronts: training, employment, company
handover and takeover, international assistance,
event organisation, lobbying...
You’re talking about an international
dimension...
About 1500 companies in Burgundy export,
1/3rd of them regularly. In 2008, their
exports to the USA were valued at 630
million Euros (mainly from the foodprocessing
and wine industries). Thanks
to the talents they possess, their wealth,
their obvious know-how in so many fields
(industry health, nuclear, industrial subcontracting
fields... ), Burgundy and Dijon
can do more and better.
What about Dijon...
As quasi-mythical capital of the Dukes of
Burgundy, fraught with art, culture and an
unequalled historical heritage, Dijon has,
for a few years now, acquired all, or nearly
all, the advantages of a modern city, resolutely
looking ahead to the future. Having
wilfully embraced sustainable development
and possessing modern infrastructures and
first-rate highway and train links, Dijon,
beyond the fact that it has become a reference
in ecology, has emphasized its ambition
to be further open to Europe and the
world.
And what about this American “Weeping
Figures” tour
It is part of this same ambition and fervor.
It is not often that we have a delegation of
70 people – comprising elected officials,
company directors, artists, and great chefs,
all united in their ambition to enhance their
city and region – go to an international
capital. They want to meet Americans, to
show and help them discover our products,
as well as convince them that the centuries-old
friendship uniting us may also be
extended to various avenues of business
exchange.
What is your view of the United States
And of New York
For people of my generation, the United
States is the quintessential great country,
where everything is possible. I can mention
the Far West, the industrial revolution,
Hollywood with its stars, Gable, Pacino,
De Niro, Eastwood, and great writers such
as Steinbeck, Tennessee Williams, then
country music, blues and rock... to name
but a few. I believe that New York, which
I’ve visited several times, is more of an
international than an American major city.
New York, with its eclectic neighborhoods,
its high-rise buildings, its yellow taxis, its
various activities, is a true melting-pot. It
is a creative city which continues to contribute
to the mixing of cultures and origins
– a city that never sleeps. It was a must
for Dijon to get there, to a city where the
“Weeping Figures” could very well start
smiling again .
Glazed roof – The shiny polychrome tiled roofs, usually called “glazed
roofs”, have been part of Burgundy’s landscape since the beginning of
the XIVth century and are especially numerous in Dijon. They’re made
up of patterns of golden V-shapes on black background, green, red
or golden lozenges, with many variations, thus giving the city a very
specific color.
Elithis Tower – This positive energy tower, the first in France, which has become a
Burgundian beacon, is full of hope. It symbolizes the city of Dijon’s commitment to
carrying out an urban ecology policy for years to come.
Bareuzai Square – It’s the popular
name given to the François Rude
fountain decorated with the sculpture
of a young man treading on
grapes kept in a vat. This “bareuzai”
(pink-colored socks) reminds
us that up till the XIXth century,
wine-makers were numerous in
Dijon itself.
