CUI TASTE 70 Copenhague y los fogones del restaurante Llama fueron nuestra tercera parada. Uno de los retos para el chef Jorge en este viaje era mostrar el uso que le dan en Quintonil a aquellos ingredientes poco comunes. Los insectos no faltaron en sus propuestas y los comensales pudieron descubrir que, más que llamar la atención, aportan sabores únicos a cada plato. El sando de langostino con mayonesa de langostino, aceite ahumado y salsa bruja; el pescado a la veracruzana con on t de tomate y olivas kalamata y el sorbete de cereza con mezcal y hormigas chicatanas fueron algunas de las propuestas. Un nuevo día y un nuevo viaje nos llevó a la ciudad de Helsinki en Finlandia, a la cocina del restaurante Pastor. Allí el emplatado se hizo a la vista de los comensales mientras que el chef narraba historias, y hablaba de técnicas e ingredientes. Se sirvió un menú de cinco platos hechos por Quintonil y acompañados de snacks de Pastor entre los que estaban de nuevo la remolacha nixtamalizada y el cerdo en chile pasado y, de postre, el helado de buttermilk con crema de alcachofa y manzana. La última parada fue por todo lo alto. El chef Igor Grishechkin, del restaurante Cococo ubicado en San Petersburgo, Rusia, fue el encargado de acompañar a Jorge Vallejo. ienso que el men que hicimos refl eja muy bien los sabores que tratamos de transmitir en Quintonil. Si bien se basa en la tradición de la cocina mexicana, creo que también representa una manera muy contemporánea de ver cómo se come y cómo se vive actualmente en la Ciudad de Mxico, comentó el chef mientras refl exionaba sobre este inmenso reto, uno que lo alejó de sus zonas de confort: su familia y su cocina. One of the challenges of Chef Jorge was to show how Quintonil uses uncommon ingredients to the rest of the world: Insects, to name a few, did not miss any dish and guests found that more than a trick designed to draw for attention they provided unique fl avors to every dish. The fi rst night their diners enjoyed a degustation menu, with dishes like shrimp Sando with shrimp mayonnaise, smoked oil, and witch dip eracruzana fi sh with tomato confit and alamata olives and cherry sorbet with mezcal and Chicatanas ants. A new day and a new journey, this is how Quintonil Quest felt, next stop took the crew to Helsinki, Finland, where Pastor’s kitchen stood ready to be the stage of three nights of special dinners. In this stop, the encounters had an extra challenge: the plating was performed in front of the diners at the same time the chef was narrating stories, explaining techniques and ingredients through a mic. A five dishes menu made by Quintonil was served with snacks from Pastor, among them the nixtamalized beet, pork in chile pasado, and as dessert, buttermilk ice cream with artichoke and apple cream. The last stop was the most important: Accompanied by Chef Igor Grishechkin from Cococo retaurant, located in St. Petersburg, Russia. “I think that this menu represents properly the fl avors that we try to transmit in uintonil. Even though is based on traditional Mexican cuisine, I think it also represents a contemporary way to see how we eat and how we live right now in Mexico City”, confessed the chef when asked about this huge challenge, a challenge that got him away from his comfort zones: his family and his restaurant’s kitchen, two things that he does not enjoy being away from for long periods of time. / PRINT SERIES
