PVPP and silica hydrogelbasedbeer stabilizerPOLYGEL ® PS is a group of technological aids with combinedstabilizing action, obtained by utilizing the PVPPand hydrogel actions.They are employed as sole treatment for beer stabilization.Stabilizing actionExcess polyphenolic substances in beers lead to unstableclarity and a marked degradation of flavour.POLYGEL ® PS 30 forms highly stable complexes withpolyphenolic substances in beer and also adsorbs proteinsubstances.The stabilizing action of POLYGEL ® PS 30 is manifestedon the one hand (thanks to the presence of PVPP) throughthe adsorption of the simple polyphenols (protoanthocyaninsand anthocyanins), while on the other hand, thesilica component exerts a selective adsorption of the lowand medium molecular weight proteins, thus completingthe stabilizing effect.BenefitsPOLYGEL ® PS 30 is highly effective even with limitedcontact time;- it is formulated according to the specific stabilizationneeds with 30% of PVPP and 70% of SiO2 under controlledhumidity because of a larger polyphenol contentin the malt;- it can be easily dispersed;- it preserves the colloidal stability and has a neutraleffect on colour, aroma, flavour and foam;- the admissible volume of the filter can be optimisedin comparison with traditional use of PVPP or a silicagel.DOSES OF APPLICATION30-70 g/hL according to the type of stabilizationrequired and the quality of the raw materials. A lowtemperature 0°C/-2°C is suggested to optimise theadsorbtion of colloids.DIRECTIONS FOR USEIN FILTRATION: it is used as a normal filter aid, bymixing it in the filter dosing unit and applying asuspension in de-aerated water of at least 1:5-1:10.IN MATURATION TANK: it is used before filtration.The clearer the beer, the higher will be the effectivenessof POLYGEL ® PS 30. Contact time can varyfrom half an hour to several days. Long periods ofcontact do not cause any drawbacks.
