Tengo amigos en el Reino Unido que tienen estos hornos y me han dicho que es un gran horno. Es genial. Se tiene que aprender a utilizarlo correctamente. Yo soy relativamente inexperto todavía. Pero cocinamos todo tipo de verduras, carne, piñas, pargo rosa escalfado con mejillones y caldo de puerro. Con el JOSPER queda todo muy sabroso, genial y muy sencillo. Eso es lo mejor, que es muy sencillo. Una de mis recetas favoritas ahora mismo es la que hacemos con los puerros. Partimos los puerros por la mitad y los escalivamos en el JOSPER. Quedan con muy buen aspecto, tostados. Los ponemos en una bolsa de vacío. Hacemos un caldo de pollo que infusionamos con alga “kombu”, laurel y mantequilla. Luego lo ponemos todo junto, con los puerros, y lo cocinamos al vapor en el horno mixto Rational. Básicamente todos los sabores de la brasa se funden en el caldo. Finalmente montamos el plato con unos mejillones, los puerros al JOSPER, el caldo y un bacalo negro, que le da un sabor profundo, exquisito y muy sencillo, realmente muy sencillo. So I love having a barbecue in the kitchen. I have friends in the United Kingdom who have these ovens and they’ve told me it is a great oven. It’s marvellous. You have to learn how to use it properly. I’m still relatively inexperienced. But we cook all kinds of vegetables, meat, pineapples, pink snapper poached with mussels and leek soup. With the JOSPER it all comes out very tasty, it’s great and very simple. That’s the best thing, it’s very simple. One of my favourite recipes at the moment is what we do with leeks. We cut the leeks down the middle and roast them in the JOSPER. They end up toasted, and look great. We put them in a vacuum bag. We make a chicken broth which we infuse with “Kombu” seaweed, bay leaves and butter. Then we put it all together, along with the leeks, and steam it in the Rational mixed oven. Basically, all the flavours of the grill melt in the broth. Finally, we put the dish together with mussels, the leeks cooked in the JOSPER, the broth and a black cod, which gives it a wonderful deep flavour, and it’s very simple, really very simple.
