ABSTRACT<br />
In the dairy plant “ Seis <strong>de</strong> Enero”, located in the pre parish Las Merce<strong>de</strong>s in the<br />
province of Santo Domingo <strong>de</strong> los Tsáchilas, Process Diagrams were<br />
implemented in or<strong>de</strong>r to reduce unnecessary time and optimize physical resources<br />
and human talent to increase productivity; Physical-Chemical analyses for raw<br />
milk and yogurt were carried out, taking into account serial samples before and 30<br />
days respectively after, times were taken from the reception of milk to packaging<br />
of yogurt before and after the proposal implementation. On physic- chemical<br />
analysis of yogurt, and improvement in the acidity present values 0.666 and<br />
1.019% respectively. The time in the processes were significantly reduced in the<br />
following stages: in the incubate 61.6 min, cooled 790.8 min, resulting in a<br />
reduction of time in the whole process of 908.6 minutes; productivity increased<br />
from 61.43 liters / day per laborer to 71.43 liters / day. It is recommen<strong>de</strong>d to use<br />
the Process Diagrams, maintain a constant training and broadcast the results to<br />
obtain significant savings in processing times, lower cost of production and<br />
therefore it rising economic profitability and improving productivity.<br />
