Garen im Schongang<br />
Damit Sie zu Hause das Prinzip auf dem Herd anwenden<br />
können, hat Johann Lafer zusammen mit <strong>WMF</strong> den <strong>Vitalis</strong><br />
Dampfgarer entwickelt.<br />
Im <strong>WMF</strong> <strong>Vitalis</strong> garen die Lebensmittel auf dem durchlässigen<br />
Garblech und kommen nicht mit Wasser in Berührung.<br />
Im Dampf gegartes Gemüse enthält bis zu 50 % mehr<br />
Nährstoffe als herkömmlich gekochtes und Fleisch wird<br />
bekömmlicher, weil beim Garen schwer verdauliche Fettstoffe<br />
austreten.<br />
Garen im Dampf eignet sich für alles, was nicht scharf<br />
angebraten oder knusprig werden muss. Die hervorragende<br />
Wärmeübertragung von Dampf sorgt dafür, dass Lebensmittel<br />
auch im Inneren gleichmäßig gar werden. So bleibt<br />
Gemüse zart und bissig, Geflügel saftig und Fisch zerfällt<br />
nicht. Im Dampf trocknet nichts aus und brennt nichts an.<br />
Alle Speisen behalten ihren intensiven Eigengeschmack.<br />
Hinweise für die Zubereitung<br />
Dampfgaren ist ein geschlossenes System, bei dem während<br />
des gesamten Garvorgangs der Deckel nicht abgenommen<br />
werden sollte.<br />
Wasser wird zum Kochen gebracht. Die Lebensmittel garen<br />
auf dem durchlässigen Garblech im aufsteigenden Dampf.<br />
Dieser schlägt sich als Flüssigkeit am Gargut nieder und<br />
vermischt sich mit den austretenden Aromastoffen.<br />
Dabei ist es wichtig, dass während des gesamten Garvorgangs<br />
ausreichend Flüssigkeit vorhanden ist. Statt Wasser<br />
können Sie auch Fond oder mit Gewürzen verfeinerte<br />
Brühe verwenden.<br />
Das Garsystem ist vielseitig. Außer dämpfen können Sie<br />
aufwärmen, warm halten und auftauen.<br />
Auch wenn beim Garen nichts überkochen oder anbrennen<br />
kann, sollten Sie auf die richtige Temperatur achten.<br />
Im Glasdeckel ist ein Thermometer integriert, das die Innentemperatur<br />
zeigt. So können Sie während der gesamten<br />
Garzeit die Temperatur kontrollieren,<br />
ohne den Deckel abzuheben.<br />
Bitte verwenden Sie Topflappen, wenn<br />
Sie das Garblech herausnehmen.<br />

Hinweise zu den Rezepten<br />
Die Rezepte sind einfach nachzukochen. Was Sie dafür<br />
brauchen sind ausgewählt frische Zutaten, Spaß am Kochen<br />
und Lust Neues zu probieren.<br />
Je nach Volumen und Menge sind nicht alle Rezepte für<br />
die Zubereitung im <strong>WMF</strong> <strong>Vitalis</strong> Compact geeignet.<br />
Gegebenenfalls können Sie die Menge reduzieren oder große<br />
Stücke zerteilen.<br />
Auf die Zugabe von gesundheitlich bedenklichem Kochsalz<br />
haben wir weitgehend verzichtet, da Sie je nach individuellem<br />
Geschmack auch noch bei Tisch nachwürzen können.<br />

Steam-cooking – the choice of professionals<br />
All over the world, steaming is considered the most healthy<br />
cooking method. Professional chefs have been using steam<br />
cookers for many years. Celebrity chef Johann Lafer is among<br />
the converted.<br />

Gentle cooking<br />
To make steam-cooking an option for people cooking at home,<br />
Johann Lafer has teamed up with <strong>WMF</strong> to develop the <strong>Vitalis</strong><br />
steaming system.<br />
In the <strong>WMF</strong> <strong>Vitalis</strong>, food is cooked on a perforated steaming rack<br />
without ever being in contact with the water bath at the bottom<br />
of the cooker. Steamed vegetables contain up to 50 per cent more<br />
nutrients than conventionally cooked products. Meat becomes<br />
easier to digest, as steaming removes some of the stodgy fats.<br />
Steaming is thus the ideal cooking method for all food that does<br />
not need to be fried, grilled or made crispy. The excellent heat<br />
dissipation properties of steam ensure that the food is cooked<br />
evenly throughout. Vegetables remain tender yet firm. Poultry<br />
retains its juices, rice is always fluffy and fish does not disintegrate<br />
into pieces. Steamed food cannot dry out or become burnt.<br />
All products retain their natural flavour.<br />
General instructions for steam-cooking<br />
To cook food in steam, it must be placed in a sealed system. It is<br />
therefore important that the lid of the steamer is not removed<br />
during the cooking process.<br />
Water is brought to the boil. The food placed on the perforated<br />
steaming rack is cooked in the rising steam. During the process,<br />
the liquid condensates on the product and absorbs its flavours.<br />
It is important that there is at all times sufficient liquid in the<br />
steamer. Instead of water, you can use stock or broth, flavoured<br />
with spices and herbs.<br />
The steaming system is very versatile. Apart from steam-cooking,<br />
you can use it to heat up food, keep dishes warm or defrost<br />
products.<br />
Although food prepared in the steamer cannot be overcooked or<br />
burnt, you should cook it at the right temperature. For this<br />
purpose, the glass lid is equipped with a built-in thermometer,<br />
indicating the temperature inside the system. You can thus keep an<br />
eye on the temperature during the entire cooking time without<br />
once lifting the lid.To remove the steaming rack, always wear oven<br />
gloves.<br />
General notes regarding our recipes<br />
Our recipes are very easy to follow. All you need are selected fresh<br />
ingredients, basic cooking skills and a desire to try out something<br />

new. Depending on the volume and quantity of the food you wish<br />
to cook, not all recipes are suitable for preparation in the <strong>WMF</strong><br />
<strong>Vitalis</strong> Compact model. You might therefore need to reduce the<br />
quantity or cut large ingredients into smaller pieces. We have<br />
deliberately refrained from adding salt to our steaming liquids, as<br />
there are possible health implications. You can of course season the<br />
food to meet your taste after preparation or at the table.<br />

La cocción al vapor: el método de los profesionales<br />
Cocer al vapor se considera la forma de cocinar más sana en todo<br />
el mundo. Hace mucho tiempo que las cocinas profesionales emplean<br />
fuentes de cocción vapor. El chef Johann Lafer (galardonado<br />
con estrellas Michelín) está completamente convencido de ello.<br />
“La cocina al vapor es sana y aromática. Este cuidadoso método<br />
mantiene las vitaminas y los minerales. Todos los ingredientes<br />
conservan su color, aroma y sabor".<br />
Cocer a buen ritmo<br />
Para que también usted pueda poner este principio en práctica en<br />
su casa, Johann Lafer ha diseñado, junto con <strong>WMF</strong>, la fuente<br />
cocción vapor <strong>Vitalis</strong>.<br />
En <strong>WMF</strong> <strong>Vitalis</strong> los alimentos se cuecen en la rejilla perforada y no<br />
entran en contacto con el agua. La verdura cocida al vapor contiene<br />
hasta un 50% más nutrientes que los alimentos cocinados del<br />
modo convencional, y la carne se digiere mejor porque, al cocerse,<br />
se eliminan las grasas difíciles de digerir.<br />
La cocción al vapor se adecua a todos aquellos alimentos que no<br />
sea necesario rehogar a fuego fuerte o que tengan que quedar<br />
crujientes. La excelente transmisión del vapor garantiza que los<br />
alimentos también quedan hechos por dentro uniformemente. Así,<br />
la verdura queda suave y consistente, el pollo<br />
jugoso, el arroz suelto y el pescado no se deshace.<br />
Al vapor nada se seca ni se quema. Todos los<br />
platos conservan un intenso sabor propio.<br />
Indicaciones para la preparación<br />
La cocción al vapor es un sistema cerrado, por lo que durante todo<br />
el proceso, la tapa deberá permanecer cerrada.<br />
Se hierve el agua. Los alimentos, que están colocados en la rejilla<br />
perforada, se cuecen con el vapor que se eleva. Éste se condensa en<br />
forma de líquido sobre los alimentos y se mezcla con las sustancias<br />
aromáticas despedidas.<br />
Así pues, es importante que durante todo el proceso de cocción se<br />
disponga de suficiente líquido. En lugar de agua, también podrá<br />
utilizar caldo o consomé aderezado con especias.<br />
Este sistema tiene numerosas aplicaciones. Además de cocinar al<br />
vapor, también puede calentar, mantener caliente y descongelar.<br />
A pesar de que al cocer de este modo, no puede rebosar el agua, ni<br />
tampoco se pueden quemar los alimentos, deberá asegurarse de que<br />
la temperatura es correcta. En la tapa de cristal se ha integrado un<br />
termómetro que indica la temperatura del interior. Así podrá controlar<br />
la temperatura durante todo el tiempo de cocción sin tener<br />
que levantar la tapa.<br />
Utilice manoplas para retirar la rejilla.<br />
Indicaciones sobre las recetas<br />
Las recetas son fáciles de seguir. Lo único que necesita son<br />
ingredientes seleccionados frescos, gusto por la cocina y ganas de<br />
probar cosas nuevas.<br />
Dependiendo del volumen y la cantidad, no todas las recetas se<br />
pueden preparar en la <strong>WMF</strong> <strong>Vitalis</strong> Compact. En su caso, reduzca la<br />
cantidad o trocee las porciones grandes.<br />
Hemos decidido no añadir sal, cuyos beneficios para la salud<br />
humana son muy dudosos, porque siempre podrá añadirla al gusto<br />
una vez que la comida esté en el plato.<br />

Flüssigkeit mit passenden Kräutern und Gewürzen<br />
anzureichern.<br />
So wird Fisch intensiver, wenn der Dampf nach Weißwein<br />
und Kräutern riecht, und Fleisch schmeckt kräftiger, wenn<br />
es im Dampf aus Fleischfond gart.<br />
Zum Probieren haben wir drei Fond Varianten für Sie<br />
ausgewählt.<br />
Nach dem Garen enthalten Fonds die vollen Geschmacksstoffe.<br />
Zum Wegschütten sind sie viel zu schade. Wir<br />
geben Ihnen Anregungen für die Weiterverwertung.<br />

Cooking Food in Aroma Steam<br />
To steam food, all you need to do is boil water. If you are however<br />
looking for real taste and flavour, add herbs and spices to the liquid.<br />
The flavour of fish can for example be intensified with white wine<br />
and fresh herbs added to the steaming stock. Meat is best cooked in<br />
the steam of meat stock.<br />
To try this out for yourself, we have chosen three stock recipes for<br />
you. After the food has been cooked, the stock still contains lots of<br />
flavour and nutrients. As it would be wasteful to throw it away, we<br />
have compiled a few ideas how you can use it in the kitchen.<br />
Cocción en Vapor Aromático<br />
El principio de la cocción al vapor consiste básicamente en hervir<br />
el agua. Pero el sabor de los alimentos cocinados será mucho más<br />
intenso si el líquido se enriquece con las especias y hierbas<br />
aromáticas adecuadas. Así, el sabor del pescado se intensificará si<br />
se enriquece el caldo con vino blanco y hierbas, y la carne será<br />
mucho más sabrosa si se cuece con vapor de caldo de carne.<br />
Para que haga la prueba, hemos seleccionado tres variantes de<br />
caldo para usted.<br />
Tras la cocción, los caldos mantienen todo su sabor. Sería una pena<br />
tirarlos. Le damos algunas ideas para reutilizarlos.

Pour the vegetable broth and the white wine into the steamer.<br />
Add all other ingredients and bring to the boil. Place steaming<br />
rack with the food to be cooked in the steamer and close lid.<br />
To vary the flavour of the dish, choose different herbs according<br />
to season and taste.<br />

300 ml de caldo de verduras<br />
150 ml de vino blanco<br />
Ralladura de 1 limón (sin tratar)<br />

½ cucharadita de pimienta en grano<br />
Preparación<br />
Ponga al fuego el caldo de verduras con el vino blanco y los<br />
demás ingredientes hasta que hierva. Coloque los alimentos<br />
en la rejilla y tápelos con la tapa.<br />

30 ml olive oil<br />
3 shallots, cut into strips<br />
2 cloves of garlic, quartered<br />
150 ml white wine<br />
80 ml vermouth<br />
250 ml stock<br />
1 bunch of herbs<br />
½ tablespoon whole pepper corns<br />
Cooking instructions<br />
Heat olive oil, roast shallots and garlic slightly, add white<br />
wine and vermouth and bring to the boil to reduce slightly.<br />
Add stock (depending on the food to be cooked, use stock<br />
of fish, chicken, vegetable, veal, etc.) and bring to the boil.<br />
Add herbs and pepper corns.<br />
Place steaming rack with the food to be cooked in the<br />
steamer and close lid.<br />
To vary the flavour of the dish, choose different herbs<br />

Caldo – a la Mediterránea<br />
Ingredientes para 4 personas<br />
30 ml de aceite de oliva<br />
3 escalonias cortadas en tiras<br />
2 dientes de ajos partidos en cuartos<br />
150 ml de vino blanco<br />
80 ml de vermú<br />
250 ml de caldo<br />
1 manojo de hierbas aromáticas<br />
½ cucharadita de pimienta en grano<br />
Preparación<br />
Caliente el aceite de oliva y rehogue en él las escalonias<br />
y el ajo sin que lleguen a dorarse, añada el vino blanco<br />
y el vermú y reduzca la mezcla.<br />
Añada el caldo (según el plato: caldo de pescado, de ave,<br />
de verduras, de ternera, etc.) y espere a que rompa a hervir.<br />
Añada las hierbas y la pimienta en grano.<br />
Coloque los alimentos en la rejilla y tápelos con la tapa.<br />
Las hierbas pueden variar dependiendo de la temporada,<br />
los gustos y el plato.

Mit Weißweinessig, Zitronensaft, Salz und Pfeffer abschmecken. Schnittlauchröllchen zugeben. Das Olivenöl<br />
unter ständigem Rühren langsam einlaufen lassen. Die Vinaigrette kann mit Tomatenwürfeln, gehackten<br />

Beim Anbraten in der Pfanne zerfällt er leicht.<br />
Im Dampf aber wird er besonders zart und schmackhaft.<br />
Er bleibt saftig und behält seine Form. Da im Dampfgarer<br />
kein Wenden notwendig ist, kann Fisch auch nicht<br />
zerfallen.<br />

damit sie gleichmäßig garen und das Aroma<br />

Fish is a very delicate food. If prepared incorrectly, it can<br />
become dry, tasteless or even unpalatable. Fish fried in a pan<br />
tends to disintegrate into pieces.<br />
Fish cooked in steam is however always tender and tasty.<br />
The pieces retain their shape and remain juicy. As there is no<br />
need to turn the fish over in the steamer, it cannot fall apart.<br />
For cooking whole fish, we recommend making diagonal<br />
incisions on both sides so that it is cooked through equally<br />
and the flavour of the stock can enter the meat.<br />
Pescado – Cocina Cuidada<br />
El pescado es muy delicado. Si no se prepara bien, puede<br />
quedar seco y poco apetecible.<br />
Si se fríe en la sartén, se deshace con facilidad, pero al vapor<br />
queda muy suave y sabroso. Se mantiene jugoso<br />

Karotten und Sellerie schälen und in sehr feine Streifen schneiden. Frühlingszwiebeln schräg in ca. 2 – 3 cm lange Stücke<br />
schneiden. Karotten- und Selleriestreifen auf dem Garblech verteilen. Die Frühlingszwiebeln darüber legen und nach<br />
Geschmack würzen. Lachsfilet in 4 gleiche Stücke teilen und auf das Gemüse setzen.<br />
Kurz bevor Sie das Garblech auf den Aromadampf setzen, Kräuter in den Fond geben. Hitze reduzieren. <strong>WMF</strong> <strong>Vitalis</strong><br />
verschließen und bei 75° - 80 °C ca. 12 Minuten dämpfen (der Lachs sollte innen noch glasig sein). Abschmecken.<br />

100 ml white wine, 200 ml fish stock<br />
4 cloves of garlic, crushed; 2 shallots, sliced<br />
8 pepper corns, fresh herbs of the season<br />
2 medium-sized carrots<br />
¼ celeriac, 4 spring onions<br />
600 g salmon, skinned and filleted<br />
Cooking instructions<br />
Bring white wine, fish stock, garlic, shallots and pepper corns to<br />
the boil. Peel carrots and celeriac and cut into fine strips.<br />
Cut spring onions diagonally into slices of 2 to 4 cm. Place carrot<br />
and celeriac strips on the steaming rack. Distribute spring onions<br />
on the vegetables and season.<br />
Cut salmon fillets into 4 equal pieces and place them on the<br />
vegetable bed. Just before placing steaming rack in the steamer,<br />
add herbs to the stock. Reduce heat. Close <strong>WMF</strong> <strong>Vitalis</strong> steaming<br />
system and cook for approx. 12 minutes at 75 – 80 °C (salmon<br />
should just flake). Season. Arrange vegetables on the plates and<br />
place the salmon fillets on the vegetable beds.<br />
Filete de Salmón Sobre Base de Verduras<br />
Ingredientes para 4 personas<br />
100 ml de vino blanco, 200 ml de caldo de pescado<br />
4 dientes de ajo machacados; 2 escalonias cortadas en tiras<br />
8 granos de pimienta, hierbas aromáticas de la temporada<br />
2 zanahorias medianas<br />
¼ de bulbo de apio, 4 cebolletas<br />
600 g de filetes de salmón, sin piel ni espinas<br />
Preparación<br />
Ponga a hervir el vino blanco con el caldo de pescado, el ajo, las<br />
escalonias y los granos de pimienta. Pele las zanahorias y los apios,<br />
y córtelos en tiras muy finas. Corte las cebolletas en tiras oblicuas<br />
de entre 2 y 3 cm de longitud aproximadamente. Distribuya las<br />
tiras de zanahoria y de apio en la rejilla. Coloque las cebolletas<br />
encima y sazónelas al gusto.<br />
Divida el filete de salmón en cuatro trozos iguales y colóquelos<br />
sobre las verduras. Poco antes de colocar la rejilla en la fuente de<br />
cocción al vapor aromático, introduzca las hierbas en la base.<br />
Reduzca el calor. Cierre la fuente <strong>WMF</strong> <strong>Vitalis</strong> y cocine los alimentos<br />
al vapor a 75 °C – 80 °C durante aprox. 12 minutos (el salmón<br />
debería estar todavía glaseado por dentro). Sazónelo. Reparta la<br />

Cooking instructions<br />
Heat olive oil. Peel carrots, celeriac and shallots and cut into fine<br />
strips. Peel garlic cloves and dice finely. Lightly roast vegetable<br />
strips and garlic and caramelise in sugar. Add white wine and let<br />
boil away. Add fish fond, mustard and saffron and bring to the boil.<br />

Season fish fillet and place on steaming rack. Insert steaming rack<br />

Take fish fillet from steaming rack and keep warm. Pass liquid<br />
through a strainer, place vegetables in a dish and keep warm.<br />
Add vermouth to liquid, season with salt and pepper and beat to a<br />
foam, using a hand-held blender.<br />
Arrange vegetables on the plates, place fish fillet pieces on the<br />
vegetable bed and top with Bouillabaisse sauce. Garnish with fresh<br />
herbs.<br />

Place marinated prawns and salmon fillets on steaming rack and<br />
place in steamer. Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for approx. 8 min.<br />
at 75 – 80 °C. Season. Remove salmon fillets and prawns from<br />
rack and keep warm. Steam sea fruit without shells for approx. 8<br />
minutes at 75 – 80 °C in the <strong>WMF</strong> <strong>Vitalis</strong> steamer. Place in a bowl.<br />
Season steaming stock. Slowly add oil while stirring to produce a<br />
homogeneous vinaigrette. Add tomato cubes and chives. Marinate<br />
sea fruit in warm vinaigrette. Arrange salmon fillets and<br />
king prawns on the plates. Add sea fruit, top with a little vinaigrette<br />
and serve with frisee and rocket salad.<br />
Ensalada de Mariscos y Salmón<br />
Ingredientes para 4 personas<br />
2 escalonias, 4 dientes de ajo, 1 chili rojo y 1 chili verde, 8 langostinos,<br />
4 trozos de filete de salmón, sin piel y sin espinas (de 80 g aprox.), el<br />
zumo de 1 lima, ralladura de 1 lima (sin tratar), 2 escalonias, 4 dientes<br />
de ajo 30 ml de aceite de oliva, 100 ml de vino blanco, 50 ml de vermú<br />
seco, la ralladura de 1 lima (sin tratar), el zumo de 1 lima, 200 ml de<br />

Preparación<br />
Pele las escalonias y el ajo y córtelos en daditos. Quite las pepitas a<br />
los chilis y córtelos muy finos. Mézclelos con el zumo de lima y añada<br />
la ralladura. Marine los langostinos y el filete de salmón con la mezcla.<br />
Corte las escalonias y el ajo en daditos. Rehóguelos en aceite de oliva<br />
sin que lleguen a dorarse. Reduzca la mezcla con vino blanco y vermú<br />
y deje que se espese. Añada la ralladura y el zumo de la lima y complete<br />
la mezcla con el caldo de pescado. Coloque la rejilla con el filete de<br />
salmón y los langostinos marinados. Cierre la <strong>WMF</strong> <strong>Vitalis</strong> y deje que<br />
la mezcla se cocine al vapor a una temperatura de entre 75 °C y 80 °C<br />
durante unos 8 minutos. Aderece al gusto. Ponga a calentar el salmón y<br />
los langostinos. Ponga al vapor el marisco sin concha también a una<br />
temperatura de entre 75°C y 80°C en la <strong>WMF</strong> <strong>Vitalis</strong> durante 8 minutos<br />
aprox. A continuación, colóquelo en una fuente. Aderece el caldo al<br />
gusto. Revuelva el aceite de oliva lentamente hasta obtener una vinagreta<br />
homogénea. Añada el tomate en tacos y el cebollino. Marine el<br />
marisco en la vinagreta caliente. Coloque el filete de salmón y los<br />
langostinos en los platos. Aderece con los mariscos y la vinagreta y<br />
sirva con lechuga y rúcola.

GB Char Fish Fillets on bed of Spinach Leaves<br />

200 g spinach leaves, 2 shallots<br />
6 char fish fillets, approx. 80 g each<br />

2 cloves of garlic, peeled and finely diced<br />

Cooking instructions<br />
Wash spinach leaves. Place leaves on steaming rack and season.<br />

bring to the boil. Place steaming rack with spinach and fish in<br />

Add fresh cream to the steaming stock, season and beat to a foam,<br />
using a hand-held blender. Arrange spinach and char fillets on<br />
the plates and top with a little white wine sauce.<br />

Filete de Salvelino Sobre Hojas de Espinaca<br />
Ingredientes para 4 personas<br />
200 g de hojas de espinaca, 2 escalonias<br />

Preparación<br />
Limpie y lave las espinacas. Coloque las hojas en la rejilla y aderécelas<br />

salvelino cocidos. Añada nata al caldo, sazónelo y bata la mezcla<br />
con una batidora hasta que quede espumosa. Coloque las espinacas<br />
con los filetes de salvelino en los platos, y vierta por encima la<br />
espuma de vino blanco. Recomendamos acompañar este plato<br />

Cooking instructions<br />
Place fish fillets skin up on a dish, distribute green pesto on smooth<br />
side, roll fillets and secure with toothpicks. Wash pepper, remove<br />
seeds, peel and cut into approx. 1.5 cm thick slices. Peel shallots<br />
and cut into fine strips. Chop garlic cloves.<br />
Butter steaming rack. Place pepper strips, shallots and garlic on<br />
steaming rack and season. Add a little olive oil and lemon. Place<br />
fish rolls on pepper bed. In the <strong>WMF</strong> <strong>Vitalis</strong>, bring white wine and<br />
fish stock with shallots and garlic to the boil. Place steaming rack<br />

Ingredientes para 4 personas<br />
8 filetes de pescado (lenguado o similar)<br />
6 cucharadas de pesto de albahaca, 2 pimientos rojos, 1 pimiento<br />
amarillo, 1 escalonia, 2 dientes de ajo pelados, 10 g de mantequilla,<br />
20 ml de aceite de oliva con limón, 200 ml de vino blanco, 200 ml<br />

Schalotten und Knoblauch ebenfalls schälen und klein schneiden. Gemüsewürfel im Olivenöl ohne Farbe anbraten, mit<br />
Essig und Weißwein ablöschen und etwas einkochen lassen. Mit dem Fischfond und dem Wasser auffüllen, würzen und<br />
alles einmal aufkochen lassen.<br />

2 fresh trout<br />
½ celery stick, ¼ leek, 1 parsley root, 2 shallots, 3 cloves of garlic<br />
20 ml olive oil, 50 ml white balsamic vinegar (or white wine vinegar)<br />
300 ml white wine, 500 ml fish stock, 2 l water<br />
3 twigs of thyme, 1 bay leave, crunched, 1 twig of parsley and of dill<br />
Cooking instructions<br />
Clean trout. Avoid damaging outer skin (to achieve nice blue colour).<br />
Wash vegetables, peel, if necessary and cut into small cubes. Peel<br />
shallots and garlic and dice finely.<br />
Roast vegetable cubes slightly in olive oil. Add vinegar and white<br />
wine and bring to the boil to reduce slightly.<br />
Add fish stock and water, season and bring again to the boil.<br />
Add herbs to liquid. Insert steaming rack with trout in steamer.<br />
Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for approx. 15 – 20 minutes at<br />

Trucha Azulada<br />
Ingredientes para 4 personas<br />
2 truchas frescas<br />
½ apio en rama, ¼ de puerro, 1 raíz de perejil, 2 escalonias<br />
3 dientes de ajo, 20 ml de aceite de oliva, 50 ml de vinagre balsámico<br />
blanco (o vinagre de vino blanco), 300 ml de vino blanco<br />
500 ml de caldo de pescado, 2 l de agua, 3 ramas de tomillo<br />

Preparación<br />
Limpie bien las truchas por dentro. Tenga cuidado al hacerlo para<br />
no dañar la mucosa del exterior (de esta forma se conservará mejor<br />
posteriormente el color azulado).<br />
Limpie las verduras, en su caso, pélelas y córtelas en daditos. Pele<br />
y corte igualmente las escalonias y el ajo. Rehogue las verduras<br />
cortadas en dados en el aceite de oliva, sin que lleguen a dorarse,<br />
añada el vinagre y el vino blanco y reduzca la mezcla. Añada el<br />
caldo de pescado y el agua, sazone la mezcla y deje que hierva.<br />
Por último, añada las hierbas. Coloque la rejilla con las truchas,<br />
cierre la <strong>WMF</strong> <strong>Vitalis</strong> y cueza los alimentos a entre 80 °C y 85 °C<br />
durante aprox. 15 ó 20 minutos (dependiendo del tamaño de las<br />

saftiges Gulasch können Sie im Bräter ohne Garblech<br />
zubereiten.<br />
Fleisch insbesondere Geflügel, das auf dem Garblech<br />
im Aromadampf gegart wird, bleibt zart und saftig –<br />
auch ohne die Zugabe von zusätzlichem Fett.<br />
Außerdem ist im Dampf gegartes Fleisch bekömmlicher,<br />
weil schwer verdauliche Fettstoffe austreten und die<br />
Fleischfasern weicher werden.<br />

Meat – Tender and Juicy<br />
Traditional roasts with dark gravy and juicy goulash can<br />
be prepared in the roaster without steaming rack.<br />
When cooked in aroma steam, meat, and in particularly<br />
poultry, remains tender and juicy – even if you do not<br />
add butter or oil. Steamed meat is also easier to digest,<br />
as stodgy fats are removed and the fibes become more<br />
tender.<br />
Carne – Tierna y Jugosa<br />
En la fuente sin rejilla podrá preparar el tradicional<br />
asado con salsa oscura o un jugoso gulasch.<br />
La carne al vapor aromático, en especial el pollo, queda<br />
tierna y jugosa, sin necesidad de añadirle grasa. Además,<br />
la digestión de la carne hecha al vapor es más fácil, porque<br />
se eliminan las grasas más difíciles de digerir y las fibras<br />
se ablandan.
Zubereitung<br />
Paprikaschoten putzen, schälen, in ca. 1 cm dicke Streifen schneiden und auf dem Garblech<br />
verteilen. Nach Geschmack würzen. Den Kalbstafelspitz von Fett und Sehnen befreien und in<br />
Olivenöl von allen Seiten goldbraun anbraten. Nach Geschmack würzen und auf die Paprikastreifen<br />
legen. Schalotten und Knoblauch schälen, in Streifen schneiden und in dem Bratensatz<br />
anbraten. Das Tomatenmark zugeben, kurz mitrösten lassen und mit Weißwein ablöschen.<br />
Etwas einkochen lassen und mit dem Kalbsfond auffüllen. Garblech mit Gemüse und Kalbstafelspitz<br />
einsetzen. Die Kräuter auf dem Tafelspitz verteilen. <strong>WMF</strong> <strong>Vitalis</strong> verschließen und<br />

Kalbstafelspitz mit Tomaten-Paprika-Ragout<br />
bei 75° - 80 °C ca. 20 Minuten dämpfen. Anschließend die Kräuter entfernen, den Kalbstafelspitz in Alufolie wickeln und<br />
etwas ruhen lassen. Den Dämpffond auf ca. 250 ml einkochen, gedämpfte Paprikastreifen und Tomatenstücke zugeben.<br />
Mit Paprikapulver, Salz und Pfeffer abschmecken und einmal aufkochen.<br />
Den Kalbstafelspitz in Scheiben schneiden, auf dem Tomaten-Paprika-Ragout anrichten und mit Kerbelblättchen garnieren.<br />
Dazu empfehlen wir gebratene Polentascheiben.<br />
GB Veal Tri-Tip with Tomato and Paprika Ragout<br />
ES<br />
Ingredients for 4 portions<br />
1 red and 1 yellow paprika pepper, 800 g veal tri-tip, 30 ml olive oil,<br />
3 shallots, 2 cloves of garlic, 2 tablespoons tomato paste, 200 ml<br />
white wine, 400 ml veal stock, 1 twig of rosemary, 2 twigs of thyme,<br />
3 tomatoes, with out seeds, peeled, cut into 8 pieces, 1 teaspoon<br />
paprika powder, chervil leaves for garnish<br />
Cooking instructions<br />
Wash paprika peppers, remove seeds and peel. Cut into 1 cm thick<br />
strips and distribute on steaming rack. Season. Remove excess fat<br />
and sinew from tri-tip and sear in olive oil until all sides are golden<br />
brown. Season and place on paprika pepper strips.<br />
Peel shallots and garlic, cut into fine strips and roast in the rasting<br />
juices. Add tomato paste, continue roasting and add white<br />
wine. Reduce slightly and pour in veal stock. Place steaming rack<br />
with vegetables and tri-tip in <strong>WMF</strong> <strong>Vitalis</strong> steamer.<br />
Distribute herbs on tri-tip. Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for<br />
approx. 20 minutes at 75° – 80 °C. Remove herbs, wrap tri-tip in<br />
aluminium foil and let rest. Reduce steaming stock to approx.<br />
250 ml.<br />
Add steamed paprika pepper strips and tomato slices. Season<br />
with paprika powder, salt and pepper and bring to the boil.<br />
Slice tri-tip, place on tomato and paprika ragout and garnish<br />
with chervil leaves. Serve with fried polenta slices.<br />
Bistec de Ternera con Ragú de Tomates y Pimientos<br />
Ingredientes para 4 personas<br />
2 pimientos: uno rojo y uno amarillo, 800 g de ternera, 30 ml de<br />
aceite de oliva, 3 escalonias, 2 dientes de ajo, 2 cucharadas de pasta<br />
de tomate, 200 ml de vino blanco, 400 ml de caldo de ternera,<br />
1 rama de romero, 2 ramas de tomillo, 3 tomates, pelados, cortados<br />
en ocho trozos y sin pepitas, 1 cucharadita de pimentón, hojitas<br />
de perifollo para la guarnición<br />
Preparación<br />
Limpie los pimientos, pélelos, córtelos en tiras de 1 cm de grosor<br />
aproximadamente, y distribúyalos sobre la rejilla de cocción al vapor.<br />
Aderece al gusto. Retire la grasa y los tendones de la carne y fríala<br />
en aceite de oliva hasta que se dore por todas partes. Aderécela al<br />
gusto y colóquela sobre los pimientos.<br />
Pele las escalonias y el ajo, córtelos en tiras y sofríalos en el jugo.<br />
Añada la pasta de tomate, deje que se haga con el resto de los alimentos,<br />
y reduzca la mezcla con vino blanco. Deje que espese y añada<br />
el caldo de ternera. Coloque la rejilla con las verduras y la carne.<br />
Aderece la carne con las hierbas aromáticas. Cierre la <strong>WMF</strong> <strong>Vitalis</strong><br />
y deje que los alimentos se cocinen al vapor durante aprox. 20<br />
minutos a entre 75 °C y 80 °C. A continuación retire las hierbas,<br />
envuelva la carne en papel de aluminio y deje que repose.<br />
Reduzca el caldo a 250 ml aproximadamente, añada los trozos de<br />
tomate y las tiras de pimientos cocinadas al vapor. Condimente con<br />
el pimentón, la sal y la pimienta, y deje que hierva. Corte la carne en<br />
rodajas, colóquela sobre el ragú de tomates y pimientos y aderécela<br />
con las hojitas de perifollo. Recomendamos servir este plato con<br />
rodajas de polenta asada.
Zubereitung<br />
Die Hähnchenbrustfilets von den Knochen lösen und die Haut entfernen. Das Fleisch mit<br />
Zitronensaft und –schale sowie grobem Pfeffer und Zitronenthymian marinieren.<br />
Schalotten schälen, in Streifen schneiden und in heißem Olivenöl ohne Farbe anschwitzen.<br />
Mit Weißwein ablöschen, auf die Hälfte einkochen lassen und mit Geflügelfond auffüllen.<br />
Die Zitrone gut mit heißem Wasser waschen, mit der Schale in Scheiben schneiden und mit<br />
dem Zitronenthymian in den Dämpffond geben.<br />

Saft von 2 Zitronen<br />

Hähnchenbrustfilet<br />
mit Bandnudeln und Zitronenschaum<br />
Die marinierten Hähnchenbrustfilets im Garblech auf den Dämpffond setzen. <strong>WMF</strong> <strong>Vitalis</strong> verschließen und bei 80° - 85 °C<br />
ca. 15 Minuten garen. Nach der Garzeit die Hähnchenbrustfilets warm halten. Die Sahne zu dem Dämpffond geben und auf<br />
ca. 200 ml einkochen lassen. Abschmecken, durch ein feines Sieb passieren und die Sauce mit einem Stabmixer schaumig<br />
aufschlagen. Die Hähnchenbrustfilets in Scheiben schneiden und mit dem Zitronenschaum anrichten.<br />
Dazu passen grüne Bandnudeln oder Bandnudeln tricolore (grün, weiß, rot).<br />
GB Chicken Breasts with Tagliatelle and Lemon Froth<br />
ES<br />
Ingredients for 4 portions<br />
4 chicken breasts, juice of 2 lemons, grated peel of 2 lemons (unwaxed),<br />
coarsely ground pepper, ½ tablespoon lemon thyme leaves,<br />
2 shallots, 30 ml olive oil, 300 ml white wine, 300 ml chicken<br />
stock, 1 lemon, 2 twigs of lemon thyme, 100 ml fresh cream<br />
Cooking instructions<br />
Debone chicken breasts and remove skin. Marinate in lemon<br />
juice, adding lemon peel, coarsely ground pepper and lemon<br />
thyme leaves.<br />
Peel shallots, cut into strips and sauté in hot olive oil. Add white<br />
wine, reduce by half and pour in chicken stock.<br />
Wash lemon with hot water, cut into slices. Add lemon slices and<br />
twig of lemon thyme to steaming stock.<br />
Place marinated chicken breasts on steaming rack and place in<br />
steamer. Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for approx. 15 minutes at<br />
80° – 85°C. Remove chicken breasts and keep warm.<br />
Add fresh cream to steaming stock and reduce to approx. 200 ml.<br />
Season stock and pass through fine strainer. Beat to a froth, using<br />
a hand-held blender.<br />
Slice chicken breasts, place slices on the plates and top with lemon<br />
froth. Serve with green or tricolour (green, white, red) tagliatelle.<br />
Filete de Pechuga de Pollo con Tallarines y Espuma de Limón<br />
Ingredientes para 4 personas<br />
4 filetes de pechuga de pollo, zumo de 2 limones, ralladura de<br />
2 limones (sin tratar), pimienta molida gruesa ½ cucharada de<br />
hojitas de tomillo de limón, 2 escalonias, 30 ml de aceite de oliva,<br />
300 ml de vino blanco, 300 ml de caldo de gallina, 1 limón, 2 ramas<br />
de tomillo de limón, 100 ml de nata<br />
Preparación<br />
Separe los huesos de los filetes de pechuga de pollo y retire la piel.<br />
Marine la carne con el zumo de limón y la ralladura, la pimienta<br />
molida gruesa y el tomillo de limón.<br />
Pele las escalonias, córtelas en tiras y dórelas en aceite de oliva<br />
caliente. Reduzca con vino blanco, deje que se espese hasta la mitad,<br />
y añada el caldo de gallina. Lave bien el limón con agua caliente,<br />
córtelo con la monda en rodajas y añádalo al caldo con el tomillo<br />
de limón. Coloque los filetes de pechuga de pollo marinados en la<br />
rejilla sobre el caldo. Cierre la <strong>WMF</strong> <strong>Vitalis</strong> y deje que la mezcla se<br />
haga al vapor durante aproximadamente 15 minutos a entre 80 °C y<br />
85 °C. Tras finalizar el tiempo de cocción, mantenga calientes los<br />
filetes. Añada la nata al caldo y redúzcalo hasta aproximadamente<br />
200 ml. Aderécelo, páselo por un colador fino, y bata la salsa con<br />
una batidora hasta que quede espumosa. Corte los filetes en rodajas<br />
y sírvalos con la espuma de limón. Recomendamos acompañar<br />
este plato con tallarines verdes o tricolor (verde, blanco, rojo).

Rinderfilet mit Rotweinsauce<br />
Die Kräuter beigeben und alles einmal aufkochen. Garblech mit dem Rinderfilet einsetzen.<br />
<strong>WMF</strong> <strong>Vitalis</strong> verschließen und bei 80° - 85 °C ca. 40 – 50 Minuten langsam garen. Anschließend das Rinderfilet in Alufolie<br />
einwickeln und ruhen lassen. Den Fond passieren und auf ca. 200 ml einkochen. Abschmecken und gegebenenfalls mit<br />
Speisestärke oder kalter Butter binden. Das Rinderfilet in Scheiben schneiden, nach Geschmack würzen und mit der<br />
Rotweinsauce beträufeln.<br />
Dazu empfehlen wir Kartoffelmousseline (eventuell getrüffelt) und Gemüse der Saison.<br />
GB Fillet of Beef with Red Wine Sauce<br />
ES<br />
Ingredients for 4 portions<br />
700 g beef fillet, ready for cooking<br />
40 ml olive oil, 3 cloves of garlic, quartered, 2 shallots, cut into<br />
strips, 2 tablespoons sugar, 200 ml red wine, 100 ml port, 300 ml<br />
brown stock, 4 twigs of thyme, ½ twig of rosemary, 3 sage leaves<br />
Little corn flour, dissolved in cold water or 40 g cold butter<br />
Cooking instructions<br />
Remove sinews from fillet and tie it up with kitchen string.<br />
Sear on all sides in olive oil, season and place on steaming rack.<br />
Sauté garlic and shallots. Caramelise in sugar. Add red wine and<br />
port, reduce slightly and pour in brown stock. Add herbs and<br />
bring to the boil. Insert steaming rack with fillet in steamer.<br />
Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for approx. 40 – 50 minutes at 80° –<br />
85°C. Wrap fillet in tinfoil and let rest.<br />
Pass stock through strainer and reduce to approx. 200 ml. Season<br />
and thicken by adding corn flour or cold butter.<br />
Cut fillet into slices, season and top with red wine sauce. Serve with<br />
potato mousseline (plain or truffled) and vegetables of the season.<br />
Carne de Ternera con Salsa al Vino Tinto<br />
Ingredientes para 4 personas<br />
700 g de filete de ternera, listo para cocinar<br />
40 ml de aceite de oliva, 3 dientes de ajo cortados en cuartos,<br />
2 escalonias cortadas en tiras, 2 cucharadas de azúcar, 200 ml de<br />
vino tinto, 100 ml de vino de Oporto, 300 ml de caldo oscuro,<br />
4 ramas de tomillo, ½ de rama de romero, 3 hojas de salvia, un<br />
poco de maicena, disuelta en agua fría o 40 g de mantequilla fría<br />
Preparación<br />
Quite la piel y los nervios a la carne y átela con hilo de cocina.<br />
Dórela bien por todas partes en aceite de oliva, aderécela y colóquela<br />
en la rejilla.<br />
Dore el ajo y las escalonias, y caramelícelas en azúcar. Reduzca la<br />
mezcla con vino tinto y vino de Oporto, deje que se espese y añada<br />
el caldo oscuro. Añada las hierbas y deje que hierva todo.<br />
Coloque la rejilla con el filete de ternera. Cierre la <strong>WMF</strong> <strong>Vitalis</strong> y<br />
deje que la mezcla se haga al vapor durante aproximadamente<br />
40 ó 50 minutos a entre 80 °C y 85 °C. A continuación, enrolle el<br />
filete de ternera en papel de aluminio y déjelo a un lado.<br />
Cuele el caldo y redúzcalo a 200 ml aproximadamente. Aderécelo<br />
y en su caso, espéselo con la maicena o la mantequilla fría.<br />
Corte el filete de ternera en rodajas, aderécelo al gusto y añada la<br />
salsa de vino tinto. Recomendamos que acompañe este plato con<br />
muselina de patata (podría ser trufada) y verduras de la temporada.
Zubereitung<br />
Schalotten und Knoblauch schälen und in kleine Würfel schneiden. Das Hackfleisch in eine<br />
Schüssel geben und mit Schalotten, Knoblauch, den Gewürzen, Eiern und Semmelbrösel gut<br />
durchkneten. Die Hackmasse ca. 30 Minuten durchziehen lassen. Kleine Bällchen formen.<br />
Garblech mit Sesamöl bestreichen, Korianderzweige und Hackfleischbällchen daraufsetzen.<br />
Weißwein mit Curry und Ingwer aufkochen. Garblech mit den Hackfleischbällchen einsetzen.<br />
<strong>WMF</strong> <strong>Vitalis</strong> verschließen und bei 80°- 85 °C ca. 10 –15 Minuten dämpfen (je nach Größe der<br />
Bällchen). Für die Glasnudeln im Topf ca. 4 Liter Wasser mit Salz aufkochen. Die Glasnudeln in<br />
das Salz- wasser legen, von der Flamme nehmen und ca. 10 Minuten einweichen. Abseihen, kalt<br />
abspülen und in ca. 3 cm lange Stücke schneiden. Sesamöl mit den Saucen gut verrühren.<br />

Hackbällchen auf marinierten Glasnudeln<br />
Paprikaschoten schälen und in kleine Würfel schneiden. Die Korianderblätter abzupfen und grob hacken.<br />
Die Cashewnüsse ebenfalls grob hacken. Paprikawürfel, Koriander, Cashewnüsse und die Marinade zu den Glasnudeln geben<br />
und gut vermischen. Auf Tellern verteilen, die Hackbällchen darauf anrichten und mit Koriander dekorativ garnieren.<br />
GB Meat Balls on Marinated Glass Noodles<br />
ES<br />
Ingredients for 4 portions<br />
3 shallots, 2 cloves of garlic, 400 g mixed minced meat<br />
2 tablespoons coriander leaves, finely chopped, freshly ground<br />
chilli, freshly ground curry, 5 tablespoons sweet chilli sauce, ½ tablespoon<br />
paprika powder, 2 eggs, 70 g bread crumbs, 20 ml sesame<br />
oil, 6 twigs of coriander, 400 ml white wine, 40 g ginger, diced<br />
120 g glass noodles, 50 ml sesame oil, 2 tablespoons soy sauce,<br />
5 tablespoons sweet chilli sauce, 3 tablespoons oyster sauce, 1 red<br />
pepper, 1 yellow pepper, 1 handful of coriander, 3 tablespoons<br />
cashew nuts Fresh coriander leaves for garnish<br />
Cooking instructions<br />
Peel shallots and garlic and cut into small cubes. Place minced meat<br />
in a bowl, add shallots, garlic, spices, herbs, eggs and bread crumbs<br />
and kneed thoroughly. Let meat rest for approx. 30 minutes.<br />
Form into small balls. Brush steaming rack with sesame oil and<br />
place coriander twigs and meatballs on rack.<br />
Add curry and ginger to white wine and bring to the boil. Insert<br />
steaming rack with meatballs in steamer. Close <strong>WMF</strong> <strong>Vitalis</strong> and<br />
cook for approx. 10 – 15 minutes (depending on size of meatballs)<br />
at 80° – 85° C.<br />
Bring approx. 4 litres of water with salt to the boil (for glass<br />
noodles). Place glass noodles in water, remove pot from hob and<br />
let stand for approx. 10 minutes. Strain, rinse noodles with cold<br />
water and cut into pieces of approx. 3 cm length. Blend sauces<br />
with sesame oil. Peel peppers and cut into small cubes. Remove<br />
coriander leaves from stems and chop. Chop cashew nuts.<br />
Add pepper cubes, coriander, cashew nuts and marinade to glass<br />
noodles and mix thoroughly. Place noodles on plates, top with<br />
meatballs and garnish with coriander.<br />
Albóndigas sobre Base de Fideos Chinos Marinados<br />
Ingredientes para 4 personas<br />
3 escalonias, 2 dientes de ajo, 400 g de carne picada, mezclado,<br />
2 cucharadas de hojitas de cilantro picadas finas, chili molido, curry<br />
molido, 5 cucharadas de salsa dulce de chili, ½ cucharadita de pimentón,<br />
2 huevos, 70 g de pan rallado, 20 ml de aceite de sésamo, 6 ramas de<br />
cilantro, 400 ml de vino blanco, 40 g de jengibre cortado en rodajas<br />
120 g de fideos chinos, 50 ml de aceite de sésamo, 2 cucharadas de<br />
salsa de soja, 5 cucharadas de salsa dulce de chili, 3 cucharadas de salsa<br />
de ostras, 1 pimiento rojo y 1 pimiento amarillo, 1 manojo de cilantro,<br />
3 cucharadas de anacardos, Hojas frescas de cilantro para la guarnición<br />
Preparación<br />
Pele las escalonias y el ajo y córtelos en daditos. Introduzca la carne<br />
picada en un bol y amásela bien junto con las escalonias, el ajo, las<br />
especias, los huevos y el pan rallado. Deje que la masa repose unos<br />
30 minutos. Forme bolitas pequeñas. Unte la rejilla de aceite de<br />
sésamo y coloque encima las ramas de cilantro y las albóndigas.<br />
Ponga a hervir el vino blanco con curry y jengibre.<br />
Coloque la rejilla con las albóndigas. Cierre la <strong>WMF</strong> <strong>Vitalis</strong> y cueza los<br />
alimentos al vapor a entre 80° y 85 °C durante aproximadamente<br />
10 ó 15 minutos (dependiendo del tamaño de las albóndigas).<br />
Para los fideos chinos, ponga a hervir aprox. 4 litros de agua con sal<br />
en una olla. Introduzca los fideos en el agua con sal, retírelos del<br />
fuego y déjelos a remojo unos 10 minutos.<br />
Cuélelos, páselos por agua fría y córtelos en trozos de 3 cm aprox.<br />
Mezcle bien el aceite de sésamo con la salsa. Pele los pimientos y<br />
córtelos en daditos. Arranque las hojas de cilantro y córtelas en<br />
trozos grandes. Corte también los anacardos en trozos grandes.<br />
Añada los dados de pimiento, el cilantro, los anacardos y el marinado<br />
a los fideos y mézclelos bien. Distribúyalos en los platos, coloque las<br />

Steaming is also the ideal cooking method for any type<br />
of dumpling.<br />

Las verduras cocidas al vapor conservan todo su sabor<br />
original. Compare los espárragos hechos al vapor con<br />
los espárragos cocidos en agua del modo habitual.<br />
El color de las verduras es incluso más intenso porque se<br />

Cualquier tipo de knödel (bolas de patata rellenas) queda<br />
perfecto en la fuente de cocción al vapor.
Zubereitung<br />
Die Spargelstangen schälen, die Enden abschneiden und schräg in ca. 3 cm große Stücke<br />
schneiden. Auf das Garblech geben und würzen. Schalotten schälen und fein würfeln, im<br />
Olivenöl ohne Farbe anbraten und im Zucker karamellisieren. Orangenschale zugeben und<br />
mit Orangensaft, weißem Balsamico und Weißwein ablöschen.<br />

30 g Zucker<br />

Spargel-Orangen-Salat<br />
Garblech mit den Spargelstücken einsetzen. <strong>WMF</strong> <strong>Vitalis</strong> verschließen und bei 75° - 80 °C ca. 10 Minuten garen.<br />
Spargelstücke in eine Schüssel geben, Orangenfilets und Estragonblättchen dazu geben und vermischen.<br />
Den Dämpffond auf 150 ml einkochen lassen. Vom Herd nehmen. Das Olivenöl unter ständigem Rühren einlaufen lassen.<br />
Die Sauce abschmecken und mit den Spargelstücken gut vermischen.<br />
Den Salat lauwarm servieren. Dazu empfehlen wir gebratene Fischfilets, gebratene Entenbrust und ähnliches.<br />
GB Asparagus and Orange Salad<br />
ES<br />
Ingredients for 4 portions<br />
750 g asparagus<br />
3 shallots, 30 g sugar, grated peel of 2 oranges (unwaxed), juice<br />
of 2 oranges, 100 ml orange juice, 20 ml white balsamic vinegar<br />
150 ml white wine, slices of 1 orange, leaves of 1 twig of tarragon<br />
60 ml olive oil<br />
Cooking instructions<br />
Peel asparagus, remove bottom ends and cut diagonally into pieces<br />
of approx. 3 cm. Place on steaming rack and season.<br />
Peel shallots, dice finely, sauté in olive oil and caramelise in sugar.<br />
Add orange peel, orange juice, balsamic vinegar and white wine.<br />
Insert steaming rack with asparagus in steamer. Close <strong>WMF</strong> <strong>Vitalis</strong><br />
and steam for approx. 10 minutes at 75° – 80°C. Place asparagus<br />
in a bowl, add orange slices and tarragon leaves and mix.<br />
Reduce steaming stock to 150 ml. Remove steamer from hob.<br />
Slowly add olive oil while stirring. Season sauce and mix with<br />
asparagus pieces. Serve salad warm with grilled fish fillet, pan-fried<br />
duck breast or similar dish.<br />
Ensalada de Espárragos y Naranjas<br />
Ingredientes para 4 personas<br />
750 g de espárragos<br />
3 escalonias, 30 g de azúcar, ralladura de 2 naranjas (sin tratar)<br />
Zumo de 2 naranjas, 100 ml de zumo de naranja, 20 ml de vinagre<br />
de balsámico blanco, 150 ml de vino blanco, Gajos de 1 naranja<br />
Hojitas de 1 rama de estragón, 60 ml de aceite de oliva<br />
Preparación<br />
Pele los espárragos, córteles las puntas y corte los espárragos en<br />
diagonal en trozos de 3 cm aproximadamente. Colóquelos en la<br />
rejilla y aderécelos.<br />
Pele las escalonias y córtelas en daditos, rehóguelas en aceite de<br />
oliva sin que lleguen a dorarse completamente y caramelícelas en<br />
el azúcar. Añada la ralladura de la naranja, y reduzca la mezcla con<br />
el zumo de naranja, el vinagre balsámico blanco y el vino blanco.<br />
Coloque la rejilla con los trozos de espárrago.<br />
Cierre la <strong>WMF</strong> <strong>Vitalis</strong> y deje que la mezcla se haga al vapor durante<br />
aprox. 10 minutos a entre 75 °C y 80 °C. Introduzca los trozos de<br />
espárragos en un bol, añada los gajos de naranja y las hojitas de<br />
estragón y mezcle todo. Reduzca el caldo hasta 150 ml. Retírelo<br />
del fuego.<br />
Añada el aceite de oliva sin dejar de revolver. Aderece la salsa y<br />
mézclela bien con los trozos de espárragos.<br />
Sirva la ensalada templada. Recomendamos que acompañe este<br />
plato con filetes de pescado a la plancha, pechuga de pollo a la<br />
plancha y similares.

ca. 15 Minuten garen. Stangenspargel warm halten. Spargel lässt sich vielseitig variieren.<br />

Diese Vinaigrette oder Hollandaise mit dem Spargel servieren. Dazu passt Fisch oder auch kurz gebratene Fleischgerichte.<br />
2. Variante - mediterran<br />
Garblech mit Spargel herausnehmen. 120 ml Olivenöl zu dem Fond geben, einmal aufkochen und abschmecken.<br />
Die Spargelstangen in den Fond geben und darin abkühlen lassen. Kalt oder lauwarm servieren z. B. mit Räucherfischen<br />
oder gebeizten Fischen, Terrinen und ähnlichem. Als Vorspeise auch mit gebratenen Garnelen etc.<br />
GB Asparagus in Herb Stock<br />

Ingredients for 4 portions<br />
1 kg asparagus, 40 ml olive oil, 3 shallots, 2 cloves of garlic<br />
200 ml white wine, 250 ml clear vegetable stock, 5 twigs of thyme,<br />
2 twigs of tarragon, 4 sage leaves, ½ teaspoon whole pepper corns<br />
Cooking instructions<br />
Peel asparagus spears and cut off bottom ends. Roast on all sides<br />
in olive oil until golden, season and place on steaming rack.<br />
Peel shallots and garlic, cut into fine strips and roast in roaster.<br />
Add white wine and bring to the boil. Add vegetable stock, herbs<br />
and pepper corns and bring again to the boil. Insert steaming rack<br />
with asparagus spears in steamer. Close <strong>WMF</strong> <strong>Vitalis</strong> and steam<br />
for approx. 15 minutes at 75° – 80°C. Keep asparagus spears warm.<br />
This dish can be modified in many different ways.<br />
1. Classic: Reduce steaming stock to 150 ml, pass through fine<br />
strainer and use as base for vinaigrette or hollandaise sauce (see<br />
steaming stocks). Serve vinaigrette or hollandaise sauce with the<br />
asparagus spears. This dish goes well with fish or quick-fried meat.<br />
2. Mediterranean: Remove steaming rack with asparagus from<br />
steamer. Add 120 ml olive oil to stock, bring to the boil and season.<br />
Place asparagus spears in the stock and let cool down.<br />
Serve cold or warm to complement for example smoked or marinated<br />
fish, terrines, etc.<br />
Also recommended as starter with fried shrimps, etc.<br />
Espárragos en Caldo de Hierbas Aromáticas<br />
Ingredientes para 4 personas<br />
1 kg de espárragos, 40 ml de aceite de oliva, 3 escalonias, 2 dientes<br />
de ajo, 200 ml de vino blanco, 250 ml de caldo limpio, 5 ramas de<br />
tomillo, 2 ramas de estragón, 2 hojitas de salvia, ½ cucharadita<br />
de pimienta en grano<br />
Preparación<br />
Pele los espárragos, y quíteles las puntas. Dórelos bien por todas<br />
partes en aceite de oliva, y colóquelos en la rejilla.<br />
Pele las escalonias y el ajo, córtelos en tiras y sofríalos un poco.<br />
Reduzca con vino blanco, deje que se hagan. Añada el caldo de<br />
verduras, las hierbas aromáticas y la pimienta en grano, y deje que<br />
hierva. Coloque la rejilla con los espárragos. Cierre la <strong>WMF</strong> <strong>Vitalis</strong><br />
y deje que la mezcla se haga al vapor durante aproximadamente<br />
15 minutos a entre 75 °C y 80 °C. Mantenga calientes los espárragos.<br />
Los espárragos se pueden cocinar de muchas formas.<br />
1. variante – clásica: Reduzca el caldo a 150 ml, páselo por un<br />
colador fino y haga una vinagreta o salsa holandesa (véase caldos).<br />
Sirva esta vinagreta o salsa holandesa con los espárragos.<br />
Recomendamos que acompañe este plato con pescado<br />
o también con carne rehogada.<br />
2. variante – mediterránea: Retire la rejilla con los espárragos.<br />
Añada 120 ml de aceite de oliva al caldo, y espere a que hierva.<br />
Luego sazone. Añada los espárragos al caldo y deje que se enfríen<br />
dentro. Sírvalos fríos o templados, por ejemplo, con pescados<br />
ahumados o macerados, patés y similares. Como aperitivo, también<br />
se puede servir con gambas a la plancha, etc.

Fenchel Safran-Salat<br />
Zubereitung<br />
Den Fenchel waschen, putzen und in dünne Scheiben schneiden. Das Fenchelgrün fein schneiden und zur Seite stellen. Die Fenchelscheiben<br />
und Schalottenstreifen auf dem Garblech verteilen. Schalotten schälen und in Streifen schneiden.<br />
Schalotten im Olivenöl ohne Farbe anschwitzen. Mit Orangensaft und Weißwein ablöschen und etwas einkochen lassen. Orangenschale<br />
und die Gewürze beigeben und einmal aufkochen. Garblech einsetzen.<br />
<strong>WMF</strong> <strong>Vitalis</strong> verschließen und bei 85 °C ca. 8 Minuten garen. Anschließend die Fenchelscheiben in eine Schüssel geben.<br />
Den Sud auf ca. 150 ml einkochen lassen, durch ein Sieb passieren und das Olivenöl unter ständigem Mixen mit einem Stabmixer<br />
einlaufen lassen. Fenchelgrün zugeben, Marinade über den gegarten Fenchel gießen und alles gut vermengen.<br />
Dazu passen gebratene Fischfilets, Garnelen oder Jakobsmuscheln.<br />
GB French Fennel Saffron Salad<br />
ES<br />
Ingredients for 4 portions<br />
3 French fennels, 1 shallot, peeled, cut into fine strips<br />
2 shallots, 30 ml olive oil, juice of 1 orange, grated peel of 1<br />
orange (unwaxed), 200 ml white wine, 2 twigs of thyme<br />
1 g saffron, freshly ground chilli, 60 ml olive oil<br />
Cooking instructions<br />
Wash French fennel and cut into thin slices. Finely chop green<br />
fennel leaves. Place French fennel slices and shallot strips on<br />
steaming rack. Peel shallots and cut into strips.<br />
Sauté shallots in olive oil. Add orange juice and white<br />
wine and bring to the boil to reduce slightly.<br />
Add orange peel, herbs and spices and bring again to the boil.<br />
Insert steaming rack in steamer. Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for<br />
approx. 8 minutes at 85°C. Place French fennel slices in a bowl.<br />
Reduce stock to approx. 150 ml and pass through strainer.<br />
Add olive oil while stirring the stock constantly with a hand-held<br />
blender. Add fennel leaves, pour marinade over French fennel slices<br />
and mix thoroughly.<br />
Serve with fried fish fillets, shrimps or scallops.<br />
Ensalada de Hinojo y Azafrán<br />
Ingredientes para 4 personas<br />
3 bulbos de hinojo, 1 escalonia, pelada y cortada en tiras finas<br />
2 escalonias, 30 ml de aceite de oliva, zumo de 1 naranja, ralladura<br />
de 1 naranja (sin tratar), 200 ml de vino blanco, 2 ramas de<br />
tomillo, 1 g de azafrán, chili molido, 60 ml de aceite de oliva<br />
Preparación<br />
Lave el hinojo, límpielo y córtelo en rodajas finas. Corte las hojas<br />
del hinojo y déjelas a un lado. Distribuya las rodajas de hinojo y<br />
las tiras de escalonia sobre la rejilla. Pele las escalonias y córtelas<br />
en tiras. Rehogue las escalonias en aceite de oliva sin que lleguen<br />
a dorarse completamente. Reduzca la mezcla con zumo de naranja<br />
y vino blanco y deje que espese. Añada la ralladura de naranja y<br />
las especias y ponga la mezcla a hervir. Coloque la rejilla. Cierre la<br />
<strong>WMF</strong> <strong>Vitalis</strong> y deje que la mezcla se haga al vapor durante aprox.<br />
8 minutos a 85 °C. A continuación, introduzca las rodajas de hinojo<br />
en un bol. Reduzca el caldo a 150 ml aproximadamente, páselo<br />
por un colador, y vaya añadiendo poco a poco el aceite de oliva<br />
sin dejar de mezclar con una batidora. Añada las hojas del hinojo,<br />
vierta el marinado sobre el hinojo cocido y mezcle todo a fondo.<br />
Recomendamos que acompañe este plato con vieiras, gambas o<br />
filetes de pescado a la plancha.

Zubereitung<br />
Schalotten und Knoblauch schälen und fein würfeln. Schalotten- und Knoblauchwürfel in der Butter ohne Farbe anbraten.<br />
Petersilie untermischen, mit der Milch aufgießen und einmal aufkochen lassen.<br />
Die Laugenbretzel in kleine Würfel schneiden und mit heißer Milch begießen. Eier, Eigelb und Bergkäse gut untermengen.<br />
Die Masse abgedeckt ca. 30 Minuten ziehen lassen. Klarsichtfolie ca. 45 cm lang abschneiden und flach auflegen.<br />
Die Knödelmasse in Form einer Rolle darauf verteilen. Das Ganze fest einrollen und links und rechts gut verschließen.<br />
Die Rolle nochmals fest in Alufolie eindrehen. Ca. 1,5 Liter Wasser in den <strong>Vitalis</strong> geben. Garblech mit der Bretz’nknödelrolle<br />
einsetzen. <strong>WMF</strong> <strong>Vitalis</strong> verschließen und bei 90° - 95 °C ca. 25 Minuten garen.<br />
Die Bretz’nknödelroulade vorsichtig auswickeln und in Scheiben schneiden. Dazu passen Pilze in Sahnesauce.<br />
GB Pretzel dumplings<br />
ES<br />
Ingredients for 4 portions<br />
2 shallots, 1 clove of garlic, 50 g butter, 2 tablespoons parsley,<br />
finely chopped, 120 ml milk, 250 g pretzel, 2 eggs, 1 egg yolk<br />
80 g mountain cheese, cut into cubes, parsley leaves for garnish<br />
Cooking instructions<br />
Peel shallots and garlic and dice finely. Sauté shallots and<br />
garlic in butter. Add parsley and milk and bring to the boil.<br />
Cut pretzels into small cubes, place in a bowl and cover with<br />
hot milk. Mix in eggs, egg yolk and mountain cheese. Let rest<br />
for approx. 30 minutes. Place 45 cm piece of clear film on kitchen<br />
top. Form a pretzel dough roll and place it on the film.<br />
Roll tightly in film and close both ends. Wrap dough roll in<br />
aluminium foil.<br />
Fill <strong>WMF</strong> <strong>Vitalis</strong> with approx. 1.5 litres of water. Insert steaming<br />
rack with pretzel dumpling roll.<br />
Close <strong>WMF</strong> <strong>Vitalis</strong> and steam for approx. 25 minutes at 90°– 95°C.<br />
Carefully unwrap pretzel roll and cut into slices. Serve with<br />
mushrooms in cream sauce.<br />
Bretz’nknödel<br />
Ingredientes para 4 personas<br />
2 escalonias, 1 diente de ajo, 50 g de mantequilla, 2 cucharadas<br />
de perejil picado, 120 ml de leche, 250 g de pretzel, 2 huevos,<br />
1 yema de huevo, 80 g de queso alpino, cortado en daditos hojas<br />
de perejil para la guarnición<br />
Preparación<br />
Pele y corte en daditos las escalonias y el ajo. Sofría el ajo y las<br />
escalonias en la mantequilla sin que lleguen a dorarse completamente.<br />
Añada el perejil, la leche y deje que hierva.<br />
Corte el pretzel en daditos, y vierta leche caliente por encima.<br />
Mezcle los huevos, la yema de huevo y el queso alpino hasta conseguir<br />
una masa. Cubra la masa y déjela reposar unos 30 minutos.<br />
Corte papel transparente (aprox. 45 cm de longitud) y colóquelo<br />
estirado sobre una superficie. Distribuya encima la masa de Knödel<br />
en forma de rollo. Enrolle toda la masa hasta que quede compacta<br />
y ciérrela bien a derecha e izquierda. Vuelva a enroscar el rollo en<br />
papel de aluminio. Introduzca 1,5 litros de agua aprox. en la<br />
<strong>WMF</strong> <strong>Vitalis</strong>. Coloque la rejilla con el rollo de Bretz’nknödel. Cierre<br />
la <strong>WMF</strong> <strong>Vitalis</strong> y deje que la mezcla se haga al vapor durante aprox.<br />
25 minutos a entre 90 °C y 95 °C. Desenrolle con cuidado el rollo<br />
de Bretz’nknödel y córtelo en rodajas.<br />
Recomendamos que sirva este plato con setas con nata.
