As a pioneer in the freeze-drying of coffee,<br />

The raw beans are carefully selected in the<br />

world, and are processed by means of complex<br />

aroma management during extraction<br />

roasting and to be retained right through to<br />

we awaken the typical aroma of each<br />

CAP: The Coffee Aroma Protection System<br />

Throughout the entire production process we are constantly striving<br />

for one goal: to retain the full aroma of each freshly roasted coffee<br />

bean. This results in our freeze-dried coffee specialities, which are<br />

among the best coffees on the market.<br />

The unique Coffee Aroma Protection System (CAP), developed by the engineers of <strong>Dr</strong>. <strong>Suwelack</strong>,<br />

is the gentlest and most innovative process for coffee extraction worldwide. Only with the aid<br />

of this technology is it possible to ensure the exceptionally high quality as well as the multi -<br />

farious diversity of the various flavours of the coffee. In the technical department of <strong>Dr</strong>. <strong>Suwelack</strong>,<br />

work constantly continues on the development and optimisation of new blends and processes.<br />

Roasting<br />

We mix our blends from high-quality raw<br />

beans, which are subsequently specially<br />

roasted according to the desired result,<br />

type of bean and origin.<br />

Ex t r action<br />

As the roasted and ground coffee goes<br />

through a series of extraction percolators, the<br />

extracted aroma substances are carefully<br />

selected and preserved.<br />

The desired taste of the freeze-dried coffee<br />

is achieved through the appropriate selection<br />

of the parameters – temperature, pressure,<br />

time – in the extraction process.<br />

The selected preserved aroma substances<br />

are added back to our soluble coffee at the<br />

end of the refinement process just before<br />

the gentle freeze-drying process.<br />

Freeze-drying<br />

The liquid coffee extract is deep-frozen in<br />

a matter of seconds to -45 °C.<br />

In a vacuum the now frozen water – the ice –<br />

is sublimed.<br />

What remains are premium-quality goldenbrown<br />

coffee granules.<br />

AMATA products are origin coffees, which offer the typical flavour<br />

of the particular region, e.g. Colombia, Ethiopia, Tanzania or Brazil.<br />

BENITA products are the speciality coffees from <strong>Dr</strong>. <strong>Suwelack</strong>, such<br />

as espresso, decaffeinated coffee, full dark roast or certified Fairtrade<br />

and organic coffee.<br />

CONCERTO products combine the interaction of various provenances<br />

within a unique blend. They represent the harmony of the aromas,<br />

the balance of acidity and mildness as well as the symmetry of flavour.<br />

CALIDA products are exclusively developed for and with individual<br />

customers. These are strategic products that depend on minimum<br />

production quantities, require a long-term partnership, and also<br />

include trend products like the latest flavoured coffees.<br />
