There are three keys to this: they have the weight and texture of Chardonnay, the piercing acidity of Chenin Blanc, and the intense minerality of Vouvray’s soils. At Huët, winemaking is deeply embedded in history. In fact, little has changed in the more than eighty years that wine has been made here. All of Huët’s wines are fermented with indigenous yeasts in large, ancient wooden barrels. Because of Chenin Blanc’s naturally high acidity, the wines rarely undergo malolactic fermentation, which allows for their remarkable ageability. Aged bottles of Domaine Huët’s Moelleux are among the wine world’s greatest treasures.
