hhe 5155 foundations of holistic nutrition 2<br />
This course introduces students to essential issues and principles in<br />
the field of nutrition today and to the effects food has on health<br />
promotion, disease prevention, and recovery from illness and injury.<br />
A whole foods based model of eating is presented along with a<br />
holistic model of wellness that centers around whole food nutrition.<br />
The basics of macro and micronutrients, anti-oxidants and food<br />
issues faced in modern nutrition will be covered. Students will learn<br />
how to formulate a personal dietary plan based on health status,<br />
metabolic tendencies and levels of commitment to improve their<br />
dietary habits and choices. Each class member will also develop<br />
educational materials to include in their personalized nutrition<br />
program. Prerequisite: HHE 5001.<br />
hhe 5156 Comparative dietary approaches 2<br />
Approaches to nutrition in the U.S. are so varied and so often<br />
conflicting; most everyone is confused and overwhelmed about what<br />
to eat. We analyze the most current, popular, classic, and cutting<br />
edge dietary approaches to provide a basis to resolve the confusion.<br />
The approaches are analyzed based on the following: metabolic<br />
health and hormone balance; insulin sensitivity, blood typing and<br />
other biochemical characteristics; carbohydrate, protein, and fat<br />
proportions; food features; and food combining. We discuss which<br />
approaches might be best for overweight, Syndrome X, fatigue,<br />
mood, digestive and elimination problems, cravings and addictions,<br />
skin conditions, disease prevention and other areas of student<br />
interest. Prerequisite: HHE 5155.<br />
hhe 5158 The Challenge of Change 2<br />
This course explores Integral concepts and approaches that prepare<br />
practitioners to promote health, well-being and healthy human<br />
development in diverse settings. With Ken Wilber’s integral model<br />
as our guide, we take a metasystemic look at the determinants that<br />
influence health and well-being, exploring practical ways to support<br />
positive change in individuals and in organizational and community<br />
contexts. We look at personal and social transformation through the<br />
lens of human development, and explore the role that development<br />
plays in fostering healthy individuals in healthy communities. This<br />
course is especially helpful to practitioners whose work will take<br />
them into group and community settings, and into public spheres<br />
such as community-based research and evaluation, program and<br />
service delivery, multidisciplinary and intersectoral partnerships,<br />
education, organizational development, governance, and healthy<br />
public policy. Prerequisite: HHE 5225.<br />

The ultimate goal of a spiritual practice is awakening, but other gifts<br />
are received as well, including psychological, intellectual, and<br />
physical benefits and a greater sense of joy in living, purpose, and a<br />
feeling of belonging and community. Abundant research shows a<br />
strong link between health and spirituality. This course helps<br />
students to develop or deepen a spiritual practice by offering<br />
concepts and practices designed to embody and make more apparent<br />
the essential quality of spirit in health and wellness.<br />

In this course, students learn about analyzing the nutrient content<br />
of foods and meal plans using the most efficient, up-to-date methods.<br />
The main course focus is on the goals of nutrition<br />
counseling—effective rapport building, listening, and interviewing;<br />
keys to motivation; the stages of change (trans-theoretical model);<br />
behavior change strategies; barriers to change; goal setting and<br />
evaluation; effective documentation; and non-food interventions to<br />
improve health. Prerequisite: HHE 5156.<br />

This course introduces the foods, ways of eating, and nutritional<br />
therapies that help to bring about and maintain the most vibrant<br />
health and also introduces the nutritional deficiencies that contribute<br />
to ill health and lack of well-being. nutrition for men’s and women’s<br />
health, a healthy immune system, cardiovascular health,<br />
gastrointestinal health, and adrenal stress syndrome are covered.<br />
Emphasis is on preventing illness and maintaining wellness.<br />
Prerequisites: SCI 3110, HHE 5010, HHE 5155.<br />
hhe 5171 healing foods B 2<br />
Complementing HHE 5169, this course provides the foundation for<br />
working with specific and diagnosed “medical conditions” such as<br />
diabetes, irritable bowel syndrome and disease, allergies (especially<br />
food allergies), heart disease, and cancer. Prerequisite: HHE 5169.<br />
hhe 5172 healing foods C 2<br />
This course introduces the foods, ways of eating and nutritional<br />
therapies that help to bring about and maintain the most vibrant<br />
health throughout the lifecycle, highlighting pediatric health,<br />
geriatric health and holistic sports nutrition. Preventing childhood<br />
obesity and its sequela (liver disease, diabetes, cardiac disease) is a<br />
focus of this course. Ways to reverse the trend of the overfed but<br />
undernourished child are explored. Special dietary needs of elders<br />
are also a focus of this course. nutritional recommendations for<br />
physical and mental vibrancy in the elder years are identified<br />
through a holistic approach for preventing illness and maintaining<br />
wellness. The nutritional needs of the athlete ware also be examined<br />
through the lens of holistic nutrition and specific nutritional<br />
recommendations for athletes are discussed. Prerequisite:<br />
HHE 5171.<br />

In this course, students analyze how the production, harvesting,<br />
marketing and distribution, shopping, cooking, serving, and enjoying<br />
of food determine a wide variety of social processes with profound<br />
consequences for the earth and its populations. The role of health<br />
educators as advocates of healthier approaches is considered, one<br />
that will benefit earth communities, families, and every individual.<br />
Socially transformative programs involving sustainable gardens,<br />
programs in schools and communities, and other innovations are<br />
examined.<br />
hhe 5175 holistic approaches to Weight Management 3<br />
Approaches to weight management are examined, including an<br />
alternative model of looking at weight and size – Health At Every<br />
Size. Working to include a holistic perspective, specific weight<br />
management situations are a focus. Weight and fitness issues and the<br />
connection between diet, exercise, self-esteem, and social support<br />
are presented as essential components of sound, healthy, weight<br />
