Smoked salmon and herb quiche

Ingredients: (serves 6)

• 30 g butter

• 200 g leek

• 8 large eggs

• small bunch of baby spinach leaves

• small bunch of parsley

• small bunch of dill

• 250 g sour cream

• 1 ripe avocado

• 100 g smoked salmon

• salt and pepper

• fresh lemon wedges

Preparation:

Preheat the oven to 220°C. Heat half the butter in a pan and

fry the sliced leek until soft. Mix the vegetables with the eggs,

spinach, parsley and dill to form a thick batter. Season with a

generous pinch of salt and pepper. Heat the remaining butter

in a frying pan and add the batter. Stir with a spatula for

about two minutes so that the mixture is lumpy but still liquid.

Bake the batter in the oven for 8 to 10 minutes until it

has set, then leave to cool at room temperature. Spread the

sour cream over the quiche, slice the avocado and arrange

on top with the salmon. Season, garnish with fresh lemon

wedges and serve.

The railway line in Franschhoek was originally built in 1904 so that farmers no longer had to transport

their goods to market by ox-cart - it was also a completely new way to discover the Franschhoek Valley.

120 years later, wine connoisseurs from all over the world travel through the valley at 32 km/h. They can

visit seven to nine wineries on the hop-on hop-off tours in the historically modelled double-decker coaches

on a total of five different lines. A perfect way to enjoy both the incomparable, breathtaking views

and the excellent wines.
