Cheese Straws (makes 50)
100g (4 oz) Self Raising Flour
Pinch Salt
Pinch Mustard Powder
50g (2 oz) Margarine
75 g (3 oz) Mature Cheddar or Red Leicester Cheese grated
1 Egg (size 3) beaten
Method
Heat oven to 180°C / 350°F / Gas mark 4
Grease baking trays
Mix together Flour, Salt, Mustard Powder and rub in the Margarine
Stir in the Cheese and add sufficient Egg to make a stiff dough
Roll out very thinly and cut into strips
Place on a baking tray
Bake for 10-15 minutes
------------------------------------------------------------------------------------------------------------
Maids of Honour (makes 12)
For the pastry cases
125 g plain flour
30 g lard or any vegetable shortening such as Trex
30 g butter softened
2 tbsp cold water
12 teaspoons jam whatever flavour you prefer.
For the filling
Jam of your choice
50 g sugar caster
50 g butter soft
1 egg medium
50 g self-raising flour sifted
Preheat oven to 190º C / gas 5
Make the pastry
Sift the flour into a roomy bowl and rub in the butter and shortening using your fingers until
it looks like breadcrumbs.
Sprinkle over the cold water and bring the dough together either with a wooden spoon or
your hands. Add a tiny bit more water if it appears dry, if it cracks easily, it should feel
slightly damp but not wet. Wrap in clingfilm and rest in the fridge for 20 minutes or so.
Once rested roll out on a floured surface to about 2-3 mm thick. Cut out circles to line your
tart tins, press in gently then pop a teaspoon of jam into each one. Just as if you were
making Jam Tarts. Don’t overdo the jam or you’ll get boiling out during the baking.
13

Make the topping
Simply put everything into a bowl and beat with an electric mixer for a minute or so into a
batter.
Drop a scant tablespoon of the batter into each jam tart then bake for 15 – 20 minutes until
the sponge is golden.
When cool enough to handle, remove from the pans onto a wire cooling rack.
GENERAL HINTS FOR EXHIBITORS
Always read the Schedule rules and note the timetable. Allow sufficient time for staging
exhibits.
In the Preserves classes, all entries should be labelled naming the contents. All entries in
these classes must have been made within one year of the date of the exhibition.
All fruits should be displayed with stalks intact and should have been carefully handled so
the natural “bloom” is retained.
In the vegetable section judges always look for good condition, size and uniformity; and in
some cases colour, e.g. Beetroot, Carrots and Red Cabbage.
Ideal sizes when exhibiting the following: -
Culinary Apples - No size limit, as large as possible.
Dessert Apples - skin in natural condition.
Potatoes - 200-250g each. Shallow eyes, good shape, clean skins.
Beetroot - No larger than a tennis ball.
Tomatoes – 40 - 80mm dia. with calyx intact.
Onions dressed – stalks trimmed, folded over and tied with string.
