Carrot and Ginger Soup<br />

Serves 4 Prep time: 5-10mins<br />

Cooking time: 20 mins<br />

This is a zingy carrot soup that can<br />

be made really quickly and from a<br />

few simple ingredients. Carrots are<br />

naturally high in carotene and ginger<br />

is soothing, anti-inflammatory and<br />

will even help you fight a cold.<br />

• 1 onion, chopped<br />

• 300g carrots, roughly chopped<br />

• 4cm chunk fresh ginger<br />

root, peeled and chopped<br />

• 900ml vegetable stock (I used<br />

bouillon vegetable stock powder)<br />

• 100ml white wine<br />

• 100g chopped coriander<br />

to garnish (optional)<br />

• salt and pepper, to taste<br />

Sauté the onion gently in butter (or<br />

oil) for 5 minutes until soft. Transfer<br />

to a large saucepan, add all the rest<br />

of the ingredients bar the coriander<br />

and seasoning, bring to the boil and<br />

simmer gently for 20 minutes. Blitz<br />

with a stick blender until smooth,<br />

season, garnish and serve – either on<br />

its own if you’re being ultra healthy,<br />

or with warm crusty bread. <br />
