It might be cheesy to talk about healthy recipes in <strong>January</strong>, but<br />
there’s probably a good reason for it: in the dark midwinter<br />
days we need the boost that raw and simply prepared foods<br />
can give us. These healthy dishes are flavoursome, packed<br />
with mood lifting antioxidants – and barely any cheese.<br />

Griddled Harissa Chicken<br />
Serves 4 Prep time: 5-30 mins<br />
Cooking time: 20-30 mins<br />
This is literally chicken coated in harissa seasoning and simply griddled.<br />
To make the harissa paste, see the ingredients below, or buy ready made.<br />
• 4 chicken breasts<br />
• 2 small roasted peppers (from a jar)<br />
• 4 garlic cloves, crushed<br />
• 4-5 small red chillies, finely chopped<br />
• 2 tsp cumin seeds<br />
• 2 tsp coriander<br />
• 1 tsp caraway<br />
• 1 tsp fennel<br />
• 1 tbsp tomato paste<br />
• juice of 1 lemon<br />
• 1 tbsp olive oil<br />
Place all the harissa ingredients in a blender and blitz to a paste.<br />
Spread over chicken and leave to marinate for 30 minutes. Heat<br />
griddle pan and cook the coated chicken for 5-10 minutes on<br />
each side, until chicken is cooked through. Serve either hot<br />
with mixed seasonal vegetables, or cooled with salad.<br />
