RUM / RHUM
the West Indies in the late 1990’s,
he noticed that white rum was
more extensively produced and
consumed locally. In the hopes of
conquering global markets in order
to promote his island, he realized
that aged amber rums were more
seductive to international aficionados.
With this in mind, he decided to
establish Rhumerie Karukera in
2006 in Capesterre-Belle-Eau. “We
wanted to offer high-quality products
to the Guadeloupeans and
the entire world,” he recalls. What
made the Karukera rums different
was going against the grain of
popular practice; by using barrels
of French pedunculate oak rather
than American Ex-Bourbon. The forest
terroirs of French pedunculate
oak produce a dry rum with a lot of
volume and powerful aromas.
il constate que c’est essentiellement le
rhum blanc qui est consommé et produit
localement.
The choice of sugar cane is also a
major factor in the quality of the
rum: for the Karukera rums, the
cane comes from the clay-rich-soil
in the north of Grande Terre and
Marie Galante, which produces
a very rich cane. Grégoire Hayot,
a pioneer who became a Cellar
Master, has continued experimenting
in the aging of eau-de-vie to
add rums with a distinctive profile
on the market. These have won
the highest honors in the various
competitions where they were featured.
“We certainly have specific vintages,
but above all we strive to
make rum for drinking not for collecting,”
explains Grégoire Hayot.
He considers himself an inventor
of rum, of aromatic experiences
born from the almost alchemic interactions
between the eau-de-vie,
the different essences of oak, and
toasting techniques.
Today, Karukera rums represent
17% of local sales in Guadeloupe.
At the most recent Caribbean Rum
Awards, Karukera rums won three
medals, including a double gold
medal for its 50° white rum and a
gold medal for its new vintage, L’Insolite.
And at the Concours Mondial
de Bruxelles, which was held in Trévise
this year, no fewer than four
gold medals, including one for its
Black Edition Alligator rum, as well
as a silver medal for the Special
Reserve aged rum.
L’Insolite.
