Making a mark<br />

The South African Hall of Fame, in collaboration with Tsogo<br />

Sun, hosted an evening celebrating the induction of Kaizer<br />

Motaung, paying tribute to his remarkable journey and the<br />

profound influence he has had on South African sports and<br />

society as a whole. His dedication and vision have left an<br />

indelible mark on South African sports history. The Montecasino<br />

Ballroom made a beautiful backdrop for this prestige gala<br />

event, where guests from the world of sports, entertainment<br />

and government gathered in his honour.<br />

A foodie affair<br />

What a buzz there was at Jacksons Real Food Market in<br />

Bryanston, when the community gathered for a Food<br />

and Wine Tasting Evening. Walking through stalls and<br />

discovering new wines to taste is always such a taste<br />

bud tease. The Bon Courage Estate’s The Gooseberry<br />

Bush Sauvignon Blanc 20<strong>23</strong> proved to be a great summer<br />

sipping wine, as was the De Krans A Twist of Fate 2021 -<br />

lovely bright cherry red in colour with hints of berries in<br />

flavour … bound to be a festive hit on your drinks trolley.<br />

While some came for the wine, others enjoyed the food<br />

tastings, which included Mar canned fish range, Irene’s<br />

dairy-free cheese and Herbi Vohr plant-based biltong<br />

bites, along with plenty of other good-for-you foods.<br />

Familiar local faces supported this sold-out event, with<br />

a portion of the proceeds going to the local residents’<br />

associations for upkeep.<br />

Marion may only have established<br />

her consultancy, Home With<br />

Marion Interior Design, in 2020,<br />

but she was playing around<br />

with design elements long<br />

before that – even as a child, she<br />

would change her room around<br />

regularly, and it became a habit to<br />

mentally rearrange the furniture<br />

of any house she visited.<br />

Her decision to switch her<br />

background in business for this<br />

creative space came about when<br />

she could no longer ignore her<br />

fascination with how people<br />

interact with their spaces – and,<br />

since the Covid-19 pandemic<br />

forced us to spend so much<br />

more time in those spaces, it<br />

was a fortuitous move. Marion<br />

completed a diploma and took<br />

the plunge, turning her hobby<br />

into a profession at a time when<br />

most people were deliberately<br />

playing it safe. “It was scary to<br />

launch myself into this new space,<br />

but then again, it was exciting to<br />

do something that allowed me to<br />

combine my business experience<br />

with my love of creativity. Besides,<br />

people were ready for this type<br />

of service – because we were all<br />

at home, many of us were hungry<br />

for ideas about how to refresh<br />

our spaces.”<br />

This is where Marion excels: she is a<br />

big believer in tweaking what you<br />

already have, which can often carry<br />

just as much impact as a costly,<br />

disruptive renovation. “Although I<br />

love working from a blank canvas,<br />

I also relish the challenge of taking<br />

a tired space and, by applying<br />

thought and creativity, changing it<br />

into something fresh and exciting.<br />

The look of delight on my clients’<br />

face when they see the change<br />

is priceless.” ‘<br />

‘Careful thought’ is a key phrase<br />

here. Although Marion’s approach<br />

to design is rooted in her belief<br />

that it’s human nature to desire<br />

to be surrounded by beauty and<br />

style, she is also keenly aware<br />

that there is a scientific aspect<br />

to design. “It’s about bringing<br />

the different elements together<br />

in a calculated way so that you<br />

end up with a flow, rather than a<br />

mishmash,” she explains. That’s why<br />

her designs are influenced not<br />

only by the space she’s designing,<br />

but also its context. it’s a good idea<br />

to ‘keep the house in its shoes’, as<br />

a French saying goes, and take<br />

cues from the style and feel of the<br />

home and its environment. Add in<br />

pattern and texture, and you have<br />

a sanctuary that speaks to each<br />

sense. “I like to layer as I go – you<br />

don’t want to have a room that<br />

makes you feel like you’ve fallen<br />

into a catalogue,” she adds.<br />

Marion embraces projects that<br />

challenge her in more than one<br />

way – where she has to source<br />

soft furnishings that add the<br />

perfect finishing touch while also<br />

overseeing joinery, for instance<br />

– and she’s looking forward to<br />

applying her skills to commercial<br />

spaces in the future. “I love the<br />

thought of being able to bring<br />

people joy by giving them the<br />

advice and insight they need to<br />

change their space.”<br />

• Enjoy the festive season! We tend to get stressed<br />

by worrying about every detail, so remove the angst<br />

by preparing as far as you can and then going with<br />

the flow. Remember that your guests aren’t the<br />

entertainment police – they love you and they’ve<br />

come to have a good time with you.<br />

• Forego the traditional Christmas meal. South Africa<br />

is just too hot! Instead, dish up something light and<br />

colourful – think salads, prawns, a braai and beautiful<br />

platters laden with fruit.<br />

• Get outdoors. Set up a buffet; you can add a touch<br />

of glamour by adding an outdoor bar and serving<br />

decadent cocktails. Don’t forget to add a playlist that<br />

sets the mood.<br />

• Keep your décor simple. A bit of greenery from<br />

your garden, like ivy, is highly effective. Candles add<br />

The cherry season is short, but it’s gloriously<br />

delicious. Besides being so scrumptious,<br />

cherries are also packed with antioxidants<br />

and contain melatonin (aids sleep), potassium<br />

(helps prevent hypertension) and B-vitamins<br />

(boosts the metabolism). Cherry Time cherries<br />

CHERRY-INFUSED PANNA COTTA WITH TOASTED<br />

COCONUT AND CHERRY-TOFFEE SHARD<br />

The delicate essence of cherries is on fine display<br />

in this sophisticated dessert, created by Saadiyah<br />

Hendricks. Understated and subtle, the luscious<br />

custard is a perfect base for the explosion of<br />

sweet, nutty texture on top.<br />

For the cherry-infused panna cotta, you will need:<br />

1 cup pitted and halved Cherry Time cherries,<br />

3 cups cream, 1 cup full-cream milk, 3/4 cups<br />

caster sugar, 1 tsp vanilla essence or the seeds<br />

from 1 vanilla pod, 1 Tbsp gelatine dissolved in<br />

1/3 cup boiling water<br />

For the topping, you will need: 1/4 cup pitted and<br />

halved Cherry Time cherries, 1/4 cup desiccated<br />

coconut, 200g caster sugar<br />

To garnish: Fresh cherries<br />

To make: For the panna cotta, place all the<br />

ingredients except the gelatine and cherries in<br />

a medium saucepan and bring to the boil on<br />

medium heat. Remove from heat, whisk in the<br />

dissolved gelatine and then 1 cup of cherries,<br />

gently pounding the cherries for two to three<br />

minutes, allowing the fruit to infuse into the<br />

milk. Strain to remove cherry pieces and pour<br />

into individual dishes or moulds and allow to<br />

cool completely before placing in the fridge<br />

overnight to set.<br />

To make the topping, preheat the oven to<br />

180°C. Spread the coconut on a baking tray<br />

and place in the oven for five minutes or until<br />

lightly toasted. Remove and allow to cool while<br />

preparing the toffee.<br />

For the toffee, place the sugar in a saucepan<br />

on medium heat and allow to melt, stirring<br />

to distribute the heat evenly. Once the sugar<br />

has dissolved and turned amber, remove from<br />

the heat and stir in the quarter cup of cherries.<br />

Quickly pour the cherry toffee onto a silicone<br />

mat and spread it out using an offset spatula.<br />

Sprinkle the coconut over the spread toffee and<br />

allow to cool completely. Once cool, break the<br />

toffee into shards by tapping with a sharp knife.<br />

When ready to serve, decorate the panna cotta<br />

with toffee shards and fresh cherries.<br />

A few years ago, Julian Naik was happily<br />

ensconced in a corporate career,<br />

sipping on beer and the occasional<br />

big brand wine. Now, as co-founder of<br />

Spirits & Bubbles, he’s become an eager<br />

advocate for South Africa’s heritage<br />

estates – and he’s eager to share both<br />

his learnings and his passion with other<br />

would-be vinophiles.<br />

Don’t know your merlot from your<br />

malbec? Here’s a little secret. You’re not<br />

alone. True, our wines might be highly<br />

regarded throughout the world, but<br />

for every person who likes to sniff and<br />

twirl their glass, commenting on the<br />

fragrance of leather and old couch,<br />

there’s another whose knowledge stops<br />

at the fact that they prefer red to white.<br />

The problem, says Julian, is that those<br />

of us who don’t know much are so<br />

intimidated by those who do, that<br />

we’re reluctant to ask the questions<br />

that will get us ordering the perfect<br />

wine, every time. That’s why he loves<br />

setting up private tasting functions –<br />

so that he can educate wine lovers, just<br />

as his own palate has been schooled.<br />

Julian’s journey started back in 2014,<br />

when he received a call from a friend<br />

he’d met during a work experience<br />

stint in London. “He was working for a<br />

company that exported drinks to Africa,<br />

and was looking for someone who<br />

could open a door to the South African<br />

market,” he recalls.<br />

Although Julian didn’t know much<br />

about the industry at the time, he was<br />

quick to accept the challenge. Leaving<br />

his job in risk management, he set<br />

up Spirits & Bubbles to import and<br />

distribute premier drinks to a market<br />

looking for new experiences. The<br />

company’s first product was a tequila.<br />

Then, it added Masottina, known to<br />

produce the world’s best Prosecco, to<br />

the portfolio.<br />

It was when Cape Site Specific –<br />

a conglomerate of winemakers<br />

specialising in small batch, site specific<br />

wines – joined Spirits & Bubbles that<br />

Julian’s imagination was truly ignited.<br />

“There is something incredibly special<br />

about these wines. It’s not just that<br />

they’re delicious – that’s a given. You<br />

can taste the love in every bottle<br />

– and the heritage, too, as some of<br />

these wines are made by families<br />

who have lived on the same farm<br />

since the 1600s.” Each sip is redolent<br />

of the hospitality of the winelands,<br />

Julian adds: “I always joke that I’ll be in<br />

trouble if I visit Durban and I don’t pop<br />

in on my relatives – but that’s nothing<br />

compared to the grief I receive if I go<br />

to the winelands and don’t visit our<br />

winemakers.” Nor is a visit just a few<br />

hours of chatting and tasting – often, it<br />

turns into an all-day affair.<br />

This is the spirit which Julian hopes<br />

to convey through his wine tastings.<br />

He explains that these became<br />

more popular during the Covid-19<br />

pandemic ... as lockdowns eased,<br />

people were reluctant to mix in large<br />

groups, but still wanted to enjoy a<br />

social occasion. Initially, the company<br />

teamed up with restaurants to host<br />

small groups, but as word spread,<br />

many people started asking if they<br />

could host their own tastings at home.<br />

Julian says that the popularity of the<br />

events is on the up, as Joburgers<br />

are enthusiastically embracing wine<br />

culture. “Once, we would have stuck<br />

to the names we knew. But with<br />

restaurants like Acid and Proud Mary<br />

creating a platform for smaller, lesser<br />

known estates, we’re becoming more<br />

willing to try different estates and<br />

different varietals.” That’s good news,<br />

he adds. “One of our winemakers<br />

reckons that although South African<br />

wines are very well-priced at present<br />

– you’d pay around double for a wine<br />

of the same quality in, say Napa – we<br />

have only 10 years or so until the<br />

industry catches up to the rest of the<br />

world.”<br />

The beauty of our market is that “most<br />

South African wines are good – you<br />

actually have to look quite hard to<br />

find a bad wine”. But, of course, when<br />

you know more, you can make better<br />

choices. That’s why Spirits & Bubbles<br />

tastings concentrate on getting you<br />

to try wines you might otherwise<br />

overlook, explaining what makes<br />

them taste unique (think terroir,<br />

climate and all of those professional<br />

sounding things), and giving you a<br />

basis of comparison. For example,<br />

your tasting usually includes around<br />

five different wines (any more than<br />

that, and your palate will get too<br />

tired to pick up the differences<br />

between them), so you can choose<br />

different wines from a single estate,<br />

or the same varietal from different<br />

estates. The choice is yours – which is<br />

kind of the point, Julian explains. “Our<br />

events are entirely customisable. You<br />

can host your tasting at a restaurant,<br />

which is great because we’ll work<br />

with the team to create a great<br />

food pairing, or you can have it at<br />

your house, where it might be more<br />

intimate and comfortable.” If that’s<br />

your go-to, Spirits & Bubbles can<br />

provide the glassware (important,<br />

because the wrong glass can change<br />

the taste of the wine) and even<br />

advise on food – did you know,<br />

for instance, that garlic and chililaced<br />

dishes are a no-no, because<br />

these flavours drown out the wine’s<br />

properties, while pizza is actually a<br />

great pairing food?<br />

Eventually, Julian would love to<br />

establish his own venue to educate<br />

wine lovers – not an academy,<br />

exactly, but a place where people<br />

who appreciate what goes into each<br />

bottle have the chance to meet,<br />

mingle and toast. Cheers to that!<br />

A recent R2-million revamp breathes new life into the Lords Bar watering<br />

hole … walking through the big blue door marked First Lord of Consumption,<br />

resembling 10 Dowing Street, London, you immediately pick up on the royal<br />

touches and vintage appeal. Leather couches, hanging chandeliers and gold<br />

framed historic newspaper clippings on the walls. The venue sits on a piece of<br />

land that once housed a unique tearoom in the 1950s, welcoming travellers<br />

into Sandton for trade and was one of the first ladies’ bars in the area, and you<br />

really appreciate its 74 years of legacy. While the wine, cocktail and bar list is<br />

comprehensive, Mixologists will whip up off-menu cocktails in minutes, and<br />

on the food side, it’s all very Jozi bar scene … from tapas to jaffels to seafood<br />

platters to share. And they are not shy on portions or flavour. There’s always<br />

FRUITY FESTIVE<br />

Turn the festive season into a feast with stone fruit.<br />

Spiced Roast Chicken with Roast Peaches and Yoghurt Dressing<br />

A fruity take on roast chicken by Caro Gardner for Juicy Delicious<br />

You’ll need: 2-3 garlic cloves, crushed, 1/3 cup (80ml) raisins, finely chopped,<br />

2 Tbsp (15ml) mild curry powder, 1 tsp (5ml) turmeric, ¼ cup (60ml) peach<br />

chutney, 1/3 cup olive oil, salt and milled pepper, juice and grated zest of<br />

1 lemon, 1 lemon cut in wedges, 1 whole chicken, 2 medium red onions,<br />

sliced in wedges, 4-6 peaches, sliced, 4-6 baby fennel, washed and halved<br />

For the dressing: 1/2 cup yoghurt, 3 Tbsp (45ml) mayonnaise, 20g<br />

coriander, 20g basil, 50g walnuts, toasted, salt and milled pepper, juice of ½<br />

lemon or limes<br />

To make: Preheat the oven to 200C.<br />

Mix garlic, raisins, curry powder, turmeric, cumin, chutney, olive oil,<br />

seasoning and lemon. Rub seasoned oil all over the chicken. Fill cavity with<br />

lemon wedges. Season and place on a baking tray. Add onion wedges and<br />

roast for 45 minutes before adding peaches and fennel, add an extra drizzle<br />

of seasoned oil and roast for an extra 30 minutes or until cooked through.<br />

Blend dressing ingredients together. Serve roast chicken with roast peach<br />

and fennel drizzled with herby yoghurt dressing.<br />

Cook twist: Serve leftover chicken shredded and tossed through butter<br />

lettuce, cucumber ribbons, roast peaches and fennel and drizzled<br />

with dressing.<br />

Pickled Plum and Zucchini Carpaccio<br />

A lovely light and fruity starter or side by Mokgadi Itsweng for<br />

Juicy Delicious<br />

Serves 4 to 6<br />

You’ll need: 180ml white wine vinegar, 125g castor sugar, 3<br />

sprigs rosemary, 3 sprigs thyme, 3 bay leaves, 2 garlic cloves,<br />

sliced, 1 Tbsp grated ginger, ¼ tsp salt, ¼ tsp peppercorns, 3<br />

plums sliced into wedges, 1 red onion thinly sliced, 3 plums<br />

thinly sliced, using a peeler or a mandolin slicer, 4 medium<br />

sized Zucchini, thinly sliced into circles, using peeler or<br />

mandolin slicer, 20g wild rocket leaves, 20g sunflower seeds,<br />

lightly toasted<br />

Sunflower seed dressing: 100g raw sunflower seeds, juice and<br />

zest of 1 lemon; 1Tbsp chopped mint, 1Tbsp chopped basil, 1<br />

Tbsp chopped parsley, 2 garlic cloves, 60ml water, 20ml olive<br />

oil, 1Tbsp honey, 1tsp salt<br />

To make: In a saucepan, bring to the boil the vinegar, sugar,<br />

rosemary, thyme, and bay leaves. Cook for 5minutes, remove<br />

from heat, and allow to cool slightly.<br />

In a separate bowl, place the garlic, ginger, plum wedges and<br />

red onion, and mix them together before pouring the hot<br />

pickling vinegar mixture over the plums and onions. Mix well,<br />

cover, and leave to marinade for 2 hours.<br />

While the plums marinate, make the dressing by blending<br />

all the ingredients for the dressing until smooth and creamy.<br />

Cover and set aside.<br />

To plate, neatly arrange the zucchini and the thinly sliced<br />

plums on a platter, then top with rocket leaves.<br />

Scoop the plums and onions from the pickling solution and<br />

place in top of the rocket leaves.<br />

Serve dressed in sunflower seed dressing.<br />

Whole Smoked Cauliflower Roast with Plum sauce<br />

Fruity, smokey cauli ... yum. By Mokgadi Itsweng for<br />

Juicy Delicious<br />

You’ll need: 1 Whole med-large cauliflower, 1 litre<br />

water, 1 tsp salt, 100g smoking wood chips<br />

Plum Sauce: 500g red plums, halved, pitted, and<br />

roughly chopped, 100g brown sugar, 200ml rice<br />

vinegar, juice of 1 lemon, 100ml water, 1 tsp five spice<br />

powder, 1 Tbsp fresh grated ginger, 1 onion chopped,<br />

1 tsp cayenne, 40ml soya sauce<br />

To make: Bring a salted litre of water to a boil, then<br />

add the whole cauliflower. Boil for 20 minutes, then<br />

drain and set aside.<br />

Smoke the cauliflower by placing a hot charcoal disk<br />

into a small foil container, then adding the wood<br />

chips. When the chips start smoking, place the foil<br />

container with the wood chips inside the bottom rack<br />

of the oven. Place the cauliflower on the rack, directly<br />

above the smoking chips. Close the oven and allow<br />

to smoke for 10-15minutes.<br />

While the cauliflower smokes, make the sauce by<br />

placing all the sauce ingredients in a saucepan.<br />

Simmer at medium heat for 25minutes. Blend all the<br />

ingredients to a smooth sauce.<br />

Pre heat the oven to 200°C.<br />

Place the cauliflower on an oven baking tray, then<br />

baste with half the sauce. Bake for 15minutes, then<br />

baste with sauce and bake for a further 10 minutes,<br />

until the cauliflower is nicely browned.<br />

Serve sliced into steaks with extra plum sauce and<br />

fresh herbs on top.<br />

A jolly garden ... masses of vivid leaves, gorgeous<br />

Christmas roses (which make great gifts) and a herb that packs in flavour<br />

Indoor plant of the month<br />

Don’t be surprised to see<br />

hydrangeas standing in as indoor plants<br />

for the festive season. Also known as Christmas<br />

roses, pot hydrangeas are perfect for decoration,<br />

as a thank-you gift or for under the tree. Once it has<br />

paid its dues indoors, a pot hydrangea can be planted<br />

out into a patio pot or in the garden to continue growing<br />

and flowering. The variety being used as an indoor starter<br />

is Hydrangea ‘Magical Revolution’ that blooms for up to<br />

six months, from summer through to autumn. It is compact<br />

with a mature height of 80cm and large flower heads that<br />

change colour as they age. Cut off the old flowers directly<br />

under the flower head. As an indoor plant it needs<br />

bright, indirect light, a cool room and consistently<br />

moist soil. Feed with a liquid fertiliser once a<br />

month. When planting out, choose a position<br />

with semi-shade and plant in composted<br />

soil that drains well.<br />

Herb of the month<br />

Thai Basil Siam Queen is spicier than<br />

normal sweet basil, with a strong clove<br />

scent. Use it to flavour Thai cuisine,<br />

curries and stir fries. It is also a beautiful<br />

bushy plant, growing 40 to 50cm<br />

tall, with large green leaves, purple<br />

flowers and stems. Like other basils,<br />

however, it grows easily from seed and<br />

likes the same conditions - fertile soil<br />

that drains easily and up to six hours<br />

of sun, preferably morning sun and<br />

afternoon shade. Seed can be sown<br />

directly into the soil where the basil is<br />

to grow or germinated in a seed tray<br />

which is easier to manage. Mist the<br />

seed trays until the seeds sprout then<br />

feed the newly germinated seedlings<br />

and micronutrients. Transplant when<br />

the plants are large enough to handle<br />

and space 20cm apart. You can start<br />

harvesting when the plants have six to<br />

We’re planting ... Coleus TrailBlazer, which is a first of its kind trailing coleus for<br />

cascading out of containers and hanging baskets or as a spreading filler for garden<br />

beds in semi-shade. Glory Road has vivid red and burgundy leaves in the shape<br />

of a maple leaf with a bright green edge. Road Trip has rounded velvety leaves in<br />

deep burgundy with a glowing pink centre and scalloped green edging. It flowers<br />

very late in the season, or not at all, which allows the plant to put all its energy into<br />

producing masses of colourful leaves that can spread up to 60cm. These easy to<br />

grow, low maintenance plant adapts to different light levels from full sun to<br />

semi-shade and needs only regular watering. Plants in containers or baskets do<br />

Garden tasks for the festive season<br />

• If you are going away, move plants<br />

in pots and hanging baskets out of<br />

the direct sun if possible. Place the<br />

pots in saucers filled with gravel so<br />

that water doesn’t drain away.<br />

• Fertilise flowering plants to give<br />

them oomph to keep on flowering<br />

during the midsummer heat.<br />

• During hot, dry spells water deeply<br />

and regularly. Renew mulch to keep<br />

beds cool.<br />

• There is still time to sow marigolds,<br />

alyssum, bedding dahlias, California<br />

poppies portulaca and nasturtiums.<br />

• Don’t fertilise the lawn if you are<br />

going away. When returning from<br />

holiday, reduce the height of the<br />

lawn gradually.<br />

• Continue with succession planting<br />

of tomatoes, beans, carrots, beetroot,<br />

lettuce, and spinach or Swiss chard.<br />

• <strong>Dec</strong>ember is peak time for pests. Use<br />

organic or biological sprays to control<br />

aphids, white fly and red spider.
