SHERRY<br />

Sherry, like Port wine, is fortified, but unlike Port it is allowed to mature as a “table wine” until shortly before bottling, at which moment<br />

grape brandy is added to increase its alcoholic strength. Like Port, it lives in the bottle for many years but, once opened, it loses freshness<br />

and should be consumed within a few days.<br />

Two complete departures from the way in which Port is made are used for the production of Sherry. First, unlike almost all other wines,<br />

Sherry is intentionally oxidized by storage in casks that are only partially filled. Second, during the reductive storage in wooden casks,<br />

a number of butts (traditional name for a Sherry cask) develop a layer of yeast on top of the liquid that progressively uses up all of the<br />

elements of residual sugar, ensuring that the wines with this growth of yeast become entirely free of any natural fruit sugar sweetness.<br />
