I’m delighted to share our final Special Offers

The warm spell in September and October has 

been a welcome extension to an otherwise 

unpredictable summer and our focus is now on 

maximising a busy festive period.

was created by our recently graduated brewing 

apprentices – be sure to place your order early as 

this limited-edition brew isn’t going to be around

In our ‘meet the team’ section we hear from Aaron 

Cotton who heads up our design team as Design 

Manager here at St Austell Brewery. For those of 

you who have a wine list created by our St Austell 

Wines team, this will have been designed and 

produced by one of our designers in Aaron’s team.

TEAM... 

This month, meet Aaron Cotton. Aaron 

is based at brewery HQ and heads up 

the Design Team as Design Manager. 

AARON COTTON 

AC: 

Tell us about your role in St Austell 

Brewery. How long have you worked for the 

business? 

I’ve worked for the company for just over ten 

years now, starting off as a graphic designer 

after leaving university and have worked 

my way up through the team and its many 

changes in size and shape over the years. I’ve 

been in my role of Design Manager since the 

start of 2023 after leading our Beer & Brands 

Design team for the past 3 years. As Design 

Manager I head up our in-house creative team, 

which is made up of 4 graphic designers and 

one photographer & videographer. We look 

after all physical & digital visual assets within 

the company. From managed estate menus & 

in-site POS to beer branding & packaging, as 

well as this brochure you’re reading. We also 

provide design support to our tenants and 

wholesale customers. 

AC: 

Can you tell us something interesting that 

not many people know about you? 

When I was 15, I represented Team GB at the 

Fire Service Cadets Games in Croatia. 

AC: 

What does a typical day look like for you? 

Because we work across all aspects of the 

business, it could be almost anything from the 

list above. 

AC: 

What’s your favourite part of the job? 

I really love working on our beer brands and on 

any new product development. I’m all about 

working smarter, so I enjoy the challenge of 

trying to constantly improve our offering as a 

support function. 

AC: 

Tell us a bit about what you like to do in 

your spare time? 

I love to play golf and go walking (if there’s a 

pub on route that’s always preferable). 

AC: 

What’s your go to drink of choice? 

During the winter, I’d go for a pint of Hicks, 

but during the summer I’ve been enjoying Big 

Wednesday.

Cornish stout, Mena Dhu, which is flying with

Your step-by-step guide to serving 

great quality pints of beer... 

When it comes to cask beer, cellar 

management is key to achieving top 

quality taste. Once brewers have worked 

their magic and the beer has been 

successfully transported to pubs, it’s 

what happens next that make all the 

difference. 

Cask beer should always be enjoyed 

within a three-day-window, while its at 

its freshest. That’s why communication 

between pub team members working on 

shift is so important. 

Achieving and maintaining cellar quality 

is crucial for cask ale because it directly 

affects the taste, aroma, and overall 

experience of the beer. Here are some key 

factors that contribute to cellar quality in 

cask ale. 



1. HYGIENE 

1. Clean up any beer spillages immediately. 

2. Ensure the cellar is cleaned thoroughly once 

a week with food safe, odourless sterilising 

spray or sanitiser. 

3. Wash all cask equipment after use and allow 

to air dry. 

4. Scrub shives and keystones with hot water 

before venting and tapping. 

5. Don’t store food in the cellar. 

2. TEMPERATURE 

1. Ensure the cellar is kept at a constant 11 - 

13°C. 

2. Keep the cellar door and drop closed at all 

times, other than to ventilate for 10 minutes 

each day. 

3. DELIVERIES 

1. Check the Best Before End dates. 

14 days ahead of the date on cask, 

20 days ahead of the date on keg. 

2. Ensure the correct size container has been 

delivered. 

3. Check there are no damaged or leaking 

containers. 

4. Operate a ‘First-In-First-Out’ system of stock 

rotation. 

4. EQUIPMENT CHECKS 

1. Top up remote ice bank coolers once a week. 

2. Brush any debris from the grills of coolers 

and fans. 

3. Clean auto tilts with hot water once a week. 

4. Top up Ale Python Control Units with water 

once a week. 

5. Clean keg couplers at the same time as 

line cleaning. 

6. Secure gas cylinders upright with chains 

or straps. 

5. LINE CLEANING 

1. Clean all cask and keg lines every 7 days. 

2. Switch off glycol coolers 1 hour before cleaning. 

3. Always flush beer from the lines with clean 

cold water before line cleaning solution. 

4. Use a good quality line cleaning solution and 

make solution according to the instructions. 

5. Agitate through the lines at 10 min intervals. 

6. Don’t leave the solution in the lines for longer 

than an hour before flushing with water. 

7. Check no traces of solution are left in the lines 

by using litmus paper. 

6. GLASSWARE 

1. Use a clean, cold, dry branded glass. 

2. Only use the glasswasher for glasses. 

3. Use good quality detergent and rinse aid. 

4. Clean the glasswasher thoroughly at the end 

of the night - drain and leave the door open. 

5. Renovate glassware regularly. 

6. Ensure detergent and rinse aid are topped up 

in the machine. 

7. Use a Quash sponge to to remove lipstick and 

grease from the rims of glasses. 

7. CASK CONDITIONING 

9. SERVE TEMP 

1. Allow casks to settle for 24 hours after delivery 

before venting/tapping. 

2. If using auto tilts, vent with a hard peg, replace 

with a soft peg, tap at the same time. 

3. If using vertical extraction, drive the 

conditioning tap through the keystone with 

a rubber mallet and turn the vent valve to the 

open position 

4. Check Clarity, Aroma and Taste (CAT) 24 hours 

after venting. If not fully conditioned, leave the 

soft peg in, or the vent valve open. 

5. When CAT sample passes the CAT test, hard 

peg or close the vent valve until ready to serve. 

6. When on sale, use a soft peg, or open valve 

during service, and hard peg or close the valve 

after service.

sample of the draught beer with a probe.

1. Always hold the glass by the bottom half. 

2. Keg: tilt the glass at 45 degrees, open tap 

fully and straighten as the liquid rises up the 

glass, and keep the nozzle out of the beer. 

3. Cask using a bottom fill spout with 

sparkler: hold the glass straight, sparkler at 

base of glass, and create head with first pull. 

Keep the sparkler beneath the surface of the 

head. 

4. Cask using a top fill spout with no sparkler: 

hold glass at 45 degrees, spout above surface 

of beer and straighten the glass as it fills. 

5. Bottles / cans: hold the glass at 45 degrees 

and keep the neck of the bottle/can away 

from the rim of the glass. 

6. Always aim for 95% liquid and a 5% head. 

1. Always wash your hands before coming on 

shift, after smoking or eating and after visiting 

the toilet. 

2. Don’t wear heavy perfume, aftershave or 

handcream. 

3. Tie back any long hair. 

4. Cover any cuts or abrasions with a coloured

Welcome 

A very warm welcome to our final edition for 2023. I don’t 

know where the time has gone this year, it’s flown by and 

it’s been eventful, much like the preceding few years! 

That said, it feels like optimism is creeping back slowly 

and there is a sliver of light at the end of the tunnel with 

inflation slowing for two consecutive months to August. It 

might not be the time for outright celebration but we’re 

certainly looking forward to the festivities in our house! 

Whilst there is no getting away from falling transaction 

numbers, this is not cause for despair. We need to make the 

most of every sale and upselling with wine is an excellent 

way to drive profitability. 

Here are my top tips for the next few months and beyond… 

Approach your drinks orders as you do your food orders. A 

starter, main and dessert option should always be on offer. 

An aperitif is a great way to start a meal and as it’s 

Christmas a glass of fizz is perfect. Check out page 19 for a 

few options. 

With main courses, food matching is your friend. Instead of 

ever popular and good value Merlot, offer a premium and 

versatile alternative such as Primitivo (page 5), Cotes du 

Rhone (page 15) or a juicy and rich Pinotage (page 7). 

With dessert, I can never turn down pudding wine and our 

Muscat de St Jean de Minervois at £3.99 per half bottle is a 

bargain (page 15). You may even have room for a little glass 

of port to finish off the evening. 

Encourage trading up by offering premium alternatives 

of old favourites. For Sauvignon Blanc, offer one from New 

Zealand or France and for Pinot Grigio, look to Sicily for 

inspiration, Miopasso is my pick. Go to page 9 and consider 

a French Merlot such as Berticot as an upgrade from Chile. 

Finally, add value, offer festive additions such as mulled 

wine, port and sherry as the nights draw in.

World Vegan 

Month: November 

With 5-7% of the UK population following a 

vegetarian diet and 2-3% a vegan one, the wine 

world is fast adapting to ensure that all dietary 

requirements are catered for. Amongst cries of 

‘surely all wine is vegan?’ the simple answer 

is no! 

Whilst wine is grape juice that has gone through 

fermentation, it is production techniques that can 

make some wine unsuitable for vegans. Products 

derived from animals can be used as fining and 

filtering agents which can include isinglass (fish 

derived), albumen (egg whites) casein (milk protein) 

and gelatine. To eliminate these from production, 

they are being replaced with plant and mineral 

derived products such as bentonite, kaolin (clay 

mineral) pea gelatine and kieselguhr (sedimentary 

rock). Rest assured that the resulting wine tastes 

no different so you’re still in for enjoyable imbibing.

Merlot is often described as ‘soft and plummy’ 

which is partly the reason it remains so popular with 

consumers. It is the easy-going red alternative to 

Pinot Grigio. A safe choice for people and as such, 

a top performer on most wine lists. But Merlot is 

actually quite a chameleon and can provide varying 

styles, suiting a wide range of circumstances. 

Like most grape varieties, the climate where the 

fruit is grown, along with the techniques used by 

the winemaking team, play a large part in the style 

that ends up in the bottle. Weather and winemaking 

aside, Merlot will reliably give a smooth, fruity glass of 

deliciousness.

The estate has been in the same family since time 

immemorial and has always been handed down 

by women. The current owner, Jean-Hubert Delon,

My best festive sparkling match; Prosecco Divici Organic 

Spumante. 100% Glera Grape from the Veneto region of 

Italy. This organic offering has a delicate but complex 

bouquet with fruity notes of peach, green apple and 

lemon interlaced with floral hints of acacia and rose. 

So well suited to partner the fresh prawns in the creamy 

sauce.

Laurent Miquel Chardonnay Viognier 

South of France 

My choice for this dish is the beautifully structured 

Laurent Miquel, Chardonnay 65%, Viognier 35%. 

Languedoc, South of France. It’s a delicious introduction 

to the unique flavours of the Viognier. The influence of 

the early-picked unoaked Chardonnay element is evident 

on the palate – citrus with clean white fruit flavours and 

finishes with rich apricot fruit.

Festive food 

pairings 

If all of the rich festive fare is leaving you a 

little sluggish this Christmas, perhaps it’s time 

to share a lighter meal with your nearest and 

dearest. Lighter of course doesn’t mean any less 

delicious! 

Starter 

The good old, prawn cocktail. If you don’t know what 

it is, where have you been? It was the most popular 

hors d'œuvre in Great Britain, as well as in the United 

States, from the 1960s to the late 1980’s! Not to be 

condemned to the history books, if you want to try it 

yourself mix shelled, cooked prawns in a Marie Rose 

sauce and serve in a glass. 

Main Course 

The wonderful main course - pan seared salmon with 

a punchy lemon, garlic butter. Simple, with minimal 

ingredients and maximum taste. You really can’t go 

wrong with this accompanied by vegetables of your 

choice or the Christmas left overs! 

Cornish Yarg cheese 

Port | Portugal 

A perfect finish with a wonderful full-bodied and firm 

glass of our very own Western Hunt Ruby Port. This 

stylish, fruity, fortified wine is made in the Duero region 

of Portugal from 6 grape varieties. It is aged in Taylor's 

cellars for a minimum of 2 years in large oak vats, thus 

giving it intensely concentrated blackcurrant and cherry 

aromas. It makes a perfect accompaniment with Yarg's 

savoury saltiness and creamy flavour. 

Cheese 

Yarg is a semi-hard cow's milk cheese made near 

Truro in Cornwall. Before being left to mature, the 

cheese is wrapped in nettle leaves to form an edible 

rind. Nettled Yarg is fresh, lemony and creamy 

under its beautiful rind, with an irresistible crumble 

in the core. A perfect finish to a meal matched 

with a wonderful full-bodied glass of our very own 

Western Hunt Ruby Port. This fruity fortified wine, 

full of intense concentrated blackcurrant and cherry 

aromas, makes a perfect accompaniment with Yarg’s 

savoury saltiness and rich flavour. 

Festive Fact – Bodmin Moor farmer, Alan Gray first 

produced the cheese in the 1980s after finding a 17th 

century recipe for nettle wrapped cheese in his attic. 

Spell Gray backwards and you have the answer as to how 

Yarg was named.

Pol Roger is one of the true original Champagne 

houses and is still family owned today. Rosé is 

salmon-pink in colour with orange tints set off by 

the mesmerising display of fine bubbles. 

At the outset the nose presents a beautifully fresh 

expression dominated by cherry, raspberry and 

delicate rose petals. As it warms, notes of candied 

cherries and sweet berries bring a wonderful 

complexity that is continued in the palate. 

Simonnet-Febvre have produced sparkling wines 

in the Chablis region since their foundation in 1845. 

Crémant de Bourgogne is produced using the 

traditional method where the bubbles are created 

by an in-bottle secondary fermentation. Once in 

bottle it is matured for a minimum of 24 months 

before it is released. 

A harmoniously balanced wine with fine bubbles 

and a persistent foam. It is fresh and powerful on 

the nose with aromas of citrus.
