Seven Science-Backed Ways to 

Maintain Healthy Mature Skin 

More often than not, your skin is most people’s 

metric for estimating your age. Genes play a part, 

but lifestyle choices make a huge difference to how 

we look. There are no “secrets” to youthful skin, 

but hydration, sleep, nutrition, and exercise are all 

important. Here’s some science and a few tips to help 

keep your skin looking and feeling its best. 

WHY YOUR SKIN MATTERS 

Made of water, protein, fats and minerals, your skin 

is your largest organ, weighing about eight pounds 

(3.6 kilograms). It protects you against harmful 

chemicals and disease-causing microbes. Your skin 

also helps regulate body temperature. 

Collagen and elastin are the two critical proteins 

of human skin. Collagen is essential for preserving 

your skin’s firmness and elasticity. Plus, it has 

antioxidant and reparative properties, which is crucial 

for repairing damaged or wrinkled skin. Collagen 

production decreases by 1% every year after the age 

of 25. 

Elastin, which is about 2% of skin protein, is 

essential for your skin to stretch and recoil. As you 

age, your body produces less elastin, which can result 

in common age-related skin issues, such as fine lines, 

sagging, and wrinkles. Studies show that the most 

severe damage to elastin occurs in photodamaged 

skin – that is skin damaged by Ultraviolet sunlight 

causing DNA changes at a cellular level. 

There are a number of lifestyle factors that can delay 

or accelerate skin ageing. 

1. SLEEP AND SKIN 

Your skin cells produce collagen when you are 

asleep. Good sleepers typically look younger than

Dry skin is notoriously prevalent in older adults. The 

NHS Eatwell Guide suggests we should drink six to 

eight cups of water a day, others suggest two litres. 


However, your individual needs may vary depending 

on your overall health, the medications/supplements 

you take and your level of activity. 

Another way to improve your skin hydration is 

to apply a moisturiser. Moisturisers trap water in 

your skin’s outermost layer, giving it a youthful 

appearance. 

3. EXERCISE AND SKIN 

Exercise nourishes your skin cells, clears toxins 

from the skin and reduces stress. Aerobic exercise 

(including walking, jogging, swimming, and cycling) 

has been shown to increase the skin’s collagen 

content in previously sedentary older adults. 

Exercise not only keeps your skin youthful but can 

also help improve or reverse the signs of ageing. That 

is even the case when you start exercising later in 

life. Engage in aerobic activity for 30 minutes a day 

to start looking younger, recommend experts at the

4. ALCOHOL AND SKIN AGEING 

Alcohol increases inflammatory chemicals in the 

skin, and drinking too much alcohol causes dry skin 

– alcohol is a diuretic (i.e., a substance that increases 

urine output). Consuming more than eight alcoholic 

drinks per week is associated with increased upper 

facial lines, under-eye puffiness, oral commissures, 

midface volume loss, and visible blood vessels. If you 

do want to indulge now and again, make sure not to 

go overboard. 

5. SMOKING AND SKIN AGEING 

Smoking is bad for you in so many ways, including 

negatively impacting skin health and accelerating 

skin ageing. Nicotine—the main addictive substance 

in tobacco products—promotes skin cell death and 

impairs blood flow to the skin. Smoking a pack of 

cigarettes for approximately one year can increase 

wrinkling three-fold, that’s according to a study in 

the journal JAMA Dermatology. 

Vaping, which is often considered a safer alternative 

to cigarette smoking, can actually be just as 

detrimental to your skin as smoking cigarettes – 

vapes contain nicotine. According to a 2021 study, 

e-cigarettes contain as much nicotine as conventional 

cigarettes. 

Similarly, solvents and vape flavourings, such as 

propylene glycol and cinnamaldehyde, can cause skin 

irritation, inflammation and dryness. All these can 

accelerate age-related skin ageing. 

6. ENVIRONMENTAL POLLUTION AND SKIN 

AGEING 

Chronic exposure to polluted air can promote skin 

inflammation, leading to wrinkles and pigment spots. 

Air pollution can also change your skin’s natural 

microbiome – the millions of microbes, particularly 

bacteria, that help maintain the skin’s health. 

Particles released from automobile exhausts, fire, 

tobacco smoke, smog and power plants can penetrate 

the skin and increase inflammation. Consequently, 

long-term inflammation can accelerate ageing by 

decreasing collagen and elastin. Some studies have 

linked air pollution to eczema and skin allergies. 

Additionally, exposure to heavy metals, such as lead, 

mercury, and cadmium, affects your skin’s immunity, 

resulting in inflamed skin and other signs of ageing. 

7. COLLAGEN SUPPLEMENTS 

A growing body of evidence supports the use of 

oral supplements to reduce signs of (or delay) skin 

ageing. In a 2018 randomised trial of females aged 

at least 40 years old), the women were divided into 

two groups. The first group received 1000mg of low 

molecular weight collagen peptide once daily for 12 

weeks, while the second group received an identical 

formulation but with no collagen. 

Assessment at baseline and after six weeks and 12 

weeks revealed that skin hydration and improvement 

in wrinkles were significantly higher in the group 

receiving collagen. 

Another study (on Chinese women aged least 35 

years old) concluded that collagen hydrolysate with 

a higher content of Pro-Hyp and Hyp-Gly resulted 

in increased improvement in facial skin moisture 

and elasticity, with a reduction in wrinkles and 

roughness. And according to a 2022 review, oral 

collagen supplements improve skin elasticity and 

hydration and decrease wrinkling and roughness. 

Many tablet supplements contain small quantities of 

collagen. Liquid supplements such as Cutizana from

Healthy skin can be considered a signpost for overall

children’s social care

Can you tell me what the documentary 

is about? 

In 2019 the Government commissioned 

J 

the Independent Review of Children’s 

Social Care in England. The report was 

published last year and according to it 

the children’s social care in England is at 

breaking point. 

Following this review the documentary 

looks at the care system with a focus on 

teenagers over the age of 16 who are at 

different stages of their lives in care. 

The idea is to show what growing up as a 

teenager in care is like and highlight the 

challenges these teenagers face, where the 

system is going wrong and where it could 

be made better. And to raise awareness that 

the system is failing these young people and 

something needs to happen and the system 

needs to change. As a society we owe it to 

them. 

Why did you want to get involved 

P 

and why do you think the care system 

is such an important subject to bring to 

viewers’ attention? 

This is a subject very close to my 

J 

heart. My mum’s been fostering for 

about 15 years. We’ve been involved with 

the care system as a family and we’ve seen 

the good and bad sides. It’s been a big 

part of my life growing up. Daniel, one 

of the kids my mum fostered, is at an age 

when young people leave the care system 

and my mum has just helped him get into 

University. He’s thriving but I’m aware 

that not all teenagers in care have the same 

positive experience and opportunities. So 

this documentary felt like a perfect fit. I 

don’t know the ins and outs of the system 

and I think it’s important to shine a light on 

it and for viewers to find out more. These 

youngsters go through so much while in the 

system and from what I saw, don’t always 

get support. 

Also, I lost my dad when I was young. 

I always used to worry about my mum 

passing away and becoming an orphan. It 

was a real anxiety for me growing up. With 

this in mind I still can’t begin to imagine 

how these kids must feel and what they go 

through. I thought it was important to give 

them a voice. 

In the documentary you meet a number 

P 

of teens at different stages of their 

lives in the system. From making this 

documentary what surprised you the most 

about their different experiences? 

In the documentary I meet a group 

J 

of young people who have all grown 

up in the care system. And the majority of 

them have not had a positive experience. 

They have not been supported greatly, they 

don’t feel they’ve been loved and they feel 

like they are slightly neglected. We did 

meet one teenager who has had a positive 

outcome and he’s doing amazing. He’s 

found a permanent placement, an amazing 

family. He’s settled. He feels comfortable. 

There’s no anxiety there. 

It was night and day between seeing him 

and seeing some of the other kids that 

haven’t had that luck. And it just seems a 

little bit unfair that not everyone gets the 

same opportunity. I want to know why they 

don’t get the same opportunity and why so 

many of these youngsters slip through the 

net. The one thing that they kept saying 

every time I met them was that there is no 

support network around them. 

The independent review says that every 

person in the care system should have at 

least two people that care for them, that 

they love. 

And you know, these kids haven’t got that, 

and that really hit home with me. I’m so 

lucky that I have so many people I can 

fall back on, friends and family. I couldn’t 

imagine a life without anybody. And 

unfortunately, some of these kids have been 

moved from one side of the country to the 

other, and they’ve got no friends, no family, 

and it’s such a sad, isolated life. There must 

be a better way we can get these kids ready 

for adulthood. 

P 

In your opinion, what do you think 

these kids need the most? 

Whenever you can give some sort of

consistency in a young person’s life - 

whether it’s a nan, an auntie, or a sister who

stays in contact with them while in care - it really 

makes a big difference. In the documentary I met two 

sisters who got separated when they were quite small, 

they went to two different families. That was their 

only connection to their old life and it was taken away 

from them. I think the more we can keep, in any way 

possible, any sort of consistency and relationships in 

these people’s lives the better because these kids will 

go through the care system just craving to be loved. 

And then in adulthood some of them unfortunately 

are going to meet people that are going to offer them 

unhealthy love and unhealthy relationships. But they 

just crave anything, any sort of feeling of love. 

I feel that there needs to be a much better way 

of organizing and getting these kids ready for 

adulthood. 

P 

What did you struggle with the most when 

making the documentary? 

I was moved by the personal stories of the young 

J 

people I met. I found it difficult leaving them 

in that situation they’re in, and then coming home to 

my family, and having a laugh and feeling the love 

and the warmth of my house. I felt really guilty about 

that. I’ve been taking it for granted for so long, and 

they haven’t had it at all. 

Also because of my kids, I really struggled with it. I 

had to stop myself from putting my children in their 

situation because that was tearing me apart as well. 

But I’d definitely argue that anyone who met these 

teenagers would come away and feel guilty and feel 

like they’ve let them down in some way. I just felt like 

I wanted to do more for them. There’s not much I can 

do apart from shining a light on the situation and that 

was a real struggle for me. I just wanted to take them 

all home with me, I just wanted to parent them but I 

couldn’t which was sad. 

You’ve met the current Children’s Minister who

explained the plan to reform the system. What 

did you make of that encounter? 

The independent review was commissioned by 

J 

the Government because the system needed 

to be looked at. It’s taken years for the review to 

be made because it’s really in depth. And they 

spoke to thousands and thousands young people in 

the system to find out their opinions. And what it 

found is that the care system is absolutely falling 

apart at the seams, and it’s been falling apart for 

the last 10 to 15 years. And you know, as well as 

highlighting where the system is going wrong and 

where it needs to be fixed, it also highlights how 

we can fix it and the way we should go about doing 

that. Unfortunately it involves money. So whenever 

something involves money you’ve always got a fight 

in your hands. The independent review suggests that 

if you put in 2.6 billion pound worth of investment 

now it will completely transform the care system 

and that will save us billions down the line. The 

Government has looked at it and said they’re putting 

in 200 million which I thought it was way under 

what the independent review had asked for. I just 

wonder what’s the point of an independent review 

if you’re not going to do what it recommends? 

The Government are starting a range of initiatives 

but unfortunately the money is not going to be 

available. Basically I feel it causes a false economy 

because what we don’t pay for now, we’re going 

to pay for down the line and pay a lot more for it. 

It is frustrating. I do wish that everyone could just 

bang their heads together and realise this is an issue 

that needs to be looked at quickly and it is a very 

important cause. 

Why people should be watching the 

P 

documentary and what do you hope viewers will 

take away from it? 

This documentary is hard hitting, it’s reality, it’s 

J 

what’s happening right now in society. We need 

to make a change. We need to do it now. I don’t think 

everyone realises how bad and how much disarray the 

care system is in. Hopefully it’ll open people’s eyes to 

the problem and they’ll watch it and come away with 

the same feeling I got, that we need to do something. 

I really hope that people who watch it have an opinion 

and they voice it, and together we can try and make a 

change and make things move a bit faster.

Did you learn anything about yourself during the 

process of making the documentary? 

I’ve learned I’m very lucky. All those times that

I think things are not fair, this documentary has 

shown me how lucky I am, how lucky my kids are 

and not everyone is as lucky. I think sometimes I 

take things for granted and meeting these teenagers 

in the system, it just hit me hard, that there are young 

people out there really struggling. 

Stacey and I, when the kids are old enough and 

they’ll be semi-independent, will sit down and think 

about fostering. We love kids and Stacey is on the 

same sort of page as me. I’m not saying that it’s 

something we’ll definitely do but if circumstances are 

right I think it’s something we will definitely think 

about doing. 

Has filming this documentary opened up a

desire to explore and learn more about this 

particular topic? 

This documentary focuses on teens in care

over the age of 16. There are so many different 

elements and sides to the system that we haven’t 

explored. And I’d love to maybe go back and explore 

more of the care system and a have a catch up with 

these young people I met to find out how they are 

doing. For some of them this will be their first year of 

independent living as an adult.

They said: ‘Would you like the job?’

I said: ‘Is there cake? Can I eat it? 

Yes, please.’ It was a no-brainer. It’s a 

dream gig. Me and my husband watch the 

main Bake Off together and, although I 

hadn’t regularly watched Bake Off: The 

Professionals, I’d seen bits. I knew it’d be a 

pleasure to work on and it was. Cherish and 

Benoit are lovely, Liam’s a delight and the 

chefs are brilliant. And I’ve never got to go 

to work with a Tupperware I could fill up 

with nice food before. That was a real treat.

Tell us about working with Liam 

Charles. 

I love Liam. He’s an absolute delight of

a human and so much fun. We brought 

out a very silly side of one another. We’re 

like children. There was a lot of pretending 

to be Power Rangers. 

P 

Did you start carrying a spoon in your 

pocket at all times? 

Oh my God. I didn’t carry a spoon, 

E 

but I learned where all the spoons 

were! As soon as I could, I’d be digging 

into everything. My favourite bit was when 

a producer would say: ‘Can you ask to 

try something?’ I’d be like: ‘Oh, this is an 

absolute nightmare. I have to try something 

delicious…’ 

Even if you just have a little of everything, 

that’s quite a lot overall. You think: ‘Crikey, 

that was a lot of sugar.’ I don’t know how 

Benoit and Cherish do it. They do have to 

eat a lot of cake, but, you know, it’s cake… 

there are worse jobs, hey? I tried to get 

out on a walk every lunchtime because I 

did eat all the nice food and then I made 

friends with the home economics ladies. 

They’d give me jars of my favourite 

chocolate. Thank God, I only found where 

the chocolate was hidden on my last day. 

It could’ve been a disaster. Oh, it was 

gorgeous… big discs of dulce de leche 

chocolate. It was like I’d wandered into the 

Wonka factory. 

You burned more than your fair share 

P 

of calories during Strictly, though. You 

were just stocking up… 

Yeah, I did that very well. It was the 

E 

perfect antidote really, wasn’t it? 

Workout, workout, workout. Then… eat 

cake, eat cake, eat cake. 

P 

Has it changed the way you eat or 

appreciate food? 

Yes. While we were filming, actually, 

E 

I went for afternoon tea with my mum 

and was more mindful of the skill and 

work involved. Rather than just shoving 

everything in my mouth, I was noticing 

what it was, what the flavours were meant 

to be, where the textures were. You get to 

grips with the terminology. You can’t say 

it tastes nice, you’ve got to say: ‘I like that 

flavour profile…’ I found my language 

changing. ‘What flavour profile have I gone 

for on my pizza? Cheese and tomato.’ It 

was so interesting to hear what Benoit and 

Cherish look for when they critique stuff. 

And I was constantly astonished by what 

the chefs made. The things they create out 

of chocolate and sugar are amazing. The 

imagination! They’re so talented. 

Did you taste anything and think, ‘Oh, 

P 

this is amazing. I want to make this at 

home…’ 

I don’t want to make anything. I’d 

E 

like to eat them at home. I’d like them 

to Deliveroo it to me. Every episode, I’d 

get out my Tupperware and take some for 

me and my husband to dissect. One of my 

friends had a baby during filming. I went 

to see her and hadn’t had time to buy a 

present, so I took cakes I’d nicked from set. 

I took some round to Mum and Dad, too. I 

was sharing the joy. Everyone loved it.

Did it surprise you how exacting 

Benoit and Cherish are? 

Oh yeah, Cherish’s ruler… I love the 

E 

ruler! They don’t mince their words, 

they don’t patronise, they are quite hard 

taskmasters, but that’s because they know 

the chefs are really good. 

It was quite nice to see them not holding 

back and being really brutal at times, but 

– in so many cases – you could see the 

development that brought out in the chefs. 

They’d really listen to the feedback and 

grow week after week.

Were there many meltdowns or collapses? 

There were a few collapses, a few tears, but lots 

E 

of moments of triumph. When things didn’t go to 

plan, more often than not, there’d be a Plan B. They’d 

adapt and respond, trying not to crumble. It’s really 

impressive.

Your job is partly to support the chefs when 

things aren’t going well… 

Yeah. I don’t know how much of a support I am 

E 

when I come in during a moment of crisis and 

say: ‘Are you alright? Tell me what’s happening…’ 

The last thing they want to bloody do is tell me 

what’s happening. The last thing they want to do is 

talk to me. I feel bad sometimes, but that’s my job: to 

annoy them at their most stressed. I do always try to 

do it in a supportive and encouraging way, though. I 

come from an enthusiastic place of ignorance and just 

watch on in awe. They were a lovely, lovely bunch.

Have you picked up any skills? 

I made a cake the other day and, from doing the 

E 

show, I knew I should weigh out the sponges 

so both tins had the same amount of batter. I never 

would’ve thought to do that before. I felt quite 

professional putting my tins on the scales. It was a 

basic Victoria Sponge and it wasn’t very good – it 

was so heavy – but, you know, I showed willing. I 

learned what yuzu was, too. I’d heard of it, but didn’t 

know what it was. They love a bit of yuzu. Yuzu and 

bergamot. They love both of those guys. 

P 

What were your favourite challenges? 

I liked the suspended showpieces. As if building 

E 

them on a table isn’t hard enough, let’s get a 

ladder involved. Ridiculous. I mean, the drama of 

that. The Safari challenge was good – there was a 

massive chocolate giraffe head. Anything rhubarb 

floats my boat and there was something rhubarb 

in the shape of a pig. Delightful. I really liked 

challenges where they told a story and took Benoit 

and Cherish on a journey. 

Like Liam, you found fame competing in

a reality show – Show Me The Funny. Did 

knowing how hard it is to take part in a contest when 

you’re not used to TV help you with your Bake Off 

role? 

Yeah, I’d hope it gives me a bit more empathy. 

E 

I really do know what it’s like. It really is 

intimidating – especially if you don’t like public 

speaking or you’re not the loudest person in the 

room. It’s a big ask to not only do your job to a high 

professional standard, but also deal with people 

talking to you and the camera being on you when 

you’re doing intricate work. It’s a really big ask to 

hold your nerve. During filming, it’s hard to take it 

all in, but I really hope the chefs are chuffed with 

how they did and how they conducted themselves. 

They did themselves proud, not only as chefs, but as 

people. 

P 

Did you learn any lessons competing on Strictly, 

too? 

When you’re in the show, it feels like it’s never 

E 

going to end, but it is finite. It isn’t going to be 

forever. You can just dig a little deeper and, before 

you know, it’ll be over and you’ll say: ‘Oh, gosh, that 

was amazing, wasn’t it? Wish I could have another 

go.’ Just try to gobble up the experience. Throw 

yourself into it as much as you can and enjoy it… 

which is a hard request when you’re so stressed. 

You’ve done Strictly, Mastermind, Celeb Bake 

P 

Off. Are you a feel-the-fear-and-do-it-anyway 

person? 

Yeah, increasingly, it’s about filling your pot 

E 

with exciting experiences… things you won’t 

get chance to do again. If it’s an opportunity to do 

something a bit weird and wacky you wouldn’t have 

previously imagined yourself doing, then I think: 

‘Take it!’ Why not? What’s the worst that could 

happen? That you’re rubbish? That’s alright. I’m 

rubbish at most things anyway.

Were you terrified going into the Bake Off tent 

for Stand Up 2 Cancer? 

No, but I should’ve been. I was a bit too 

E 

confident. I went in thinking: ‘Well, I know how 

to make a roux. I’m sure I’ve got this sorted…’ But, 

no, it was a lot harder. I crumbled under pressure 

in a way I didn’t think I would. I’m a flappy person 

anyway, but crikey, in that tent, everything went 

tits-up. It was really good fun, but very stressful with 

people talking to you all the bloody time. Go away! I 

found an extra level of panic, chaos and mess. At one 

point, I put cooling trays on the floor because I’d run 

out of space. I had cake on the floor. I was like, ‘This 

is what all professional bakers do, right? They cool 

stuff on the floor…’ It was not my finest hour. But 

what an experience – to have a go in the Bake Off 

tent and for a brilliant cause. 

P 

Do you do much cooking and baking at home? 

Not loads. I like cooking, but I don’t have super 

E 

amounts of time, so I don’t do a lot. I like having 

people over. Making pudding, that’s my favourite. I’d 

rather make a pudding than the main course. I’ve got 

a very sweet tooth. I had people over yesterday and 

made a chocolate pavlova. Choccy Pav… delicious! 

I did GCSE Home Economics. I got an A, thank you 

very much. I made a focaccia, I remember.

What would Cherish and Benoit have thought of 

it? Was it good? 

Probably. Any homemade bread is delicious,

isn’t it? Home-baking is different from 

professional patisserie. I made that cake recently for 

my mum’s birthday and it was so heavy. If you’d had 

it in a shop, you wouldn’t have been impressed, but 

because it’d been made with love at home, it’s the

Do you bake with your little girl? 

Yes. She loves baking, but mostly because she

likes licking everything: the bowl, the whisks,

cupboard and she’s saying: ‘Can I lick the spoon?’ 

She was helping me make the pavlova and I had to 

physically wrestle the sugar off her. She’s got a sweet 

tooth like her mama. We’re cake and biscuit mad in 

this household. 

You’re back as Sassy in Ted Lasso. Ted famously

brings biscuits for the boss. Can Jason Sudeikis 

bake? 

I have no idea. I’ve never tried a biscuit, so I

don’t know what they’re like. I’m sure he can 

whip up a biccie or a cookie as they’d say in America. 

He’s a multi-talented man. I’ve no idea who actually 

bakes them.

If you could have tea and cake with anyone, who 

would you choose? 

Oh, Victoria Wood. That would’ve been lovely.

She was a huge inspiration growing up… not 

that I knew it at the time, but looking back. She was 

one of the only women on TV who was silly and she 

liked playing with words. I really love playing with 

language in my stand-up and writing and being a 

wally…

Victoria showed you could make a living out of 

those things… 

Yeah. I loved Dinnerladies. At University, I 

E 

was studying English Literature and writing 

and performance and remember buying all the 

Dinnerladies scripts. It was lovely to pore over them 

and see how they were constructed. They’re perfectly 

crafted. Her precision with language! I didn’t get to 

meet her, but I was in the same room as her once in 

Edinburgh. I wasn’t brave enough to say hello and I 

wish I had. She was amazing.

What are your plans for the rest of the year? 

I’m doing some more acting at the moment. It’s 

E 

sort of a comedy, but it’s action. There’s a lot 

more stunt work than Bake Off needed. I didn’t need 

a stand-in for tasting. I’m happy to eat all my own 

cake. I’ve got fight scenes. I’m learning all that, I 

don’t know how I’ve managed to start doing action 

roles when I’m getting on for 40, but I just thought: 

‘Oh, why bloody not?’

improved by great food and wine 

pairings. The general rule is that 

foods high in salt and acidity are 

a good match with most wines. 

They’re great for enhancing the 

flavours of wines as they temper 

the acidity and give them more 

roundness. If handed a dubious 

glass of wine, a good tip is to 

search out some crisps! But the 

most important thing to consider 

is to match like with like, a 

delicate dish needs a delicate 

wine and most important of all 

is personal preference. If you 

don’t like something, the chances 

of you suddenly becoming a 

fan of it because it’s paired with 

something else is highly unlikely. 

There are a lot of classic pairings 

out there that work well; big, fullbodied 

red wines and steak, or 

Port and stilton cheese. Yet there 

are many fantastic and slightly 

less conventional pairings that 

work equally well. Here are some 

of my favourites: 

SHERRY 

As a sherry fan, I would happily 

pair the Spanish wine with lots of 

dishes. Perhaps to many people’s 

surprise sherry is one of the 

world’s most gourmand wines 

with more molecular compounds 

in common with food than any 

other wine! A simple, yet very 

satisfying pairing is a very dry 

and savoury Fino or Manzanilla 

with sushi. This style of sherry 

is one of the most umami styles 

of wine and pairs extremely well 

because of its tangy and salty 

nature. Mushroom based dishes 

also compliment sherry due to 

their umami nature. 

CHAMPAGNE 

Champagne or other dry 

sparkling wines are often seen 

as something to sip and savour 

by themselves, but this is a big 

mistake. That’s because the very 

high acidity of the drink is great 

for cutting through grease and 

fat. Salty, deep fried chicken 

with chips is an incredible 

pairing with Champagne. The 

salt really brings out the flavours 

of the wine, some of which tend 

to be a touch savoury which 

compliments the food. Fish and 

chips also work really well with 

the likes of English sparkling 

wine. 

ORANGE WINES 

For something seriously unusual 

you could try an orange wine 

with a dish that has a touch of 

heat and fragrance. Thai red 

curries or sizzling plates with a 

dash of chilli heat pair very well. 

Orange wines are more textured 

than most white wines and 

tend to have a slightly aromatic 

quality, which both compliments 

and enhances the flavours in 

spicy foods. 

MADEIRA 

Madeira is one of the finest 

fortified wines out there and 

desperately overlooked. It’s 

often seen as something to 

cook with rather than to drink 

alongside food, or as a digestive. 

The grape varieties Sercial and 

Verdelho, which are displayed 

on the bottles, will give you a 

touch of sweetness, fresh bright 

acidity and complex flavours of 

walnuts, citrus peel, caramel and 

fruit cake. These flavours pair 

so beautifully with hard nutty 

cheeses, such as more mature 

Comté, cheddars and Gouda. The 

high acidity breaks through the 

fat of the cheese and the salty 

quality of the cheese enhances 

the wine’s flavours on the palate.
