Seven Science-Backed Ways to<br />

More often than not, your skin is most people’s<br />

metric for estimating your age. Genes play a part,<br />

but lifestyle choices make a huge difference to how<br />

we look. There are no “secrets” to youthful skin,<br />

but hydration, sleep, nutrition, and exercise are all<br />

important. Here’s some science and a few tips to help<br />

keep your skin looking and feeling its best.<br />

WHY YOUR SKIN MATTERS<br />

Made of water, protein, fats and minerals, your skin<br />

is your largest organ, weighing about eight pounds<br />

(3.6 kilograms). It protects you against harmful<br />

chemicals and disease-causing microbes. Your skin<br />

also helps regulate body temperature.<br />

Collagen and elastin are the two critical proteins<br />

of human skin. Collagen is essential for preserving<br />

your skin’s firmness and elasticity. Plus, it has<br />

antioxidant and reparative properties, which is crucial<br />

for repairing damaged or wrinkled skin. Collagen<br />

production decreases by 1% every year after the age<br />

of 25.<br />

Elastin, which is about 2% of skin protein, is<br />

essential for your skin to stretch and recoil. As you<br />

age, your body produces less elastin, which can result<br />

in common age-related skin issues, such as fine lines,<br />

sagging, and wrinkles. Studies show that the most<br />

severe damage to elastin occurs in photodamaged<br />

skin – that is skin damaged by Ultraviolet sunlight<br />

causing DNA changes at a cellular level.<br />

There are a number of lifestyle factors that can delay<br />

or accelerate skin ageing.<br />

1. SLEEP AND SKIN<br />

Your skin cells produce collagen when you are<br />

asleep. Good sleepers typically look younger than<br />

water from their skin. Interestingly, those who get<br />

enough sleep daily also have a better perception of<br />

how they look.<br />

Chronic sleep deprivation is detrimental to your skin<br />

health. According to the National Institute on Aging,<br />

older adults need seven to nine hours of sleep each<br />

night.<br />

2. HYDRATION AND SKIN<br />

Dry skin is notoriously prevalent in older adults. The<br />

NHS Eatwell Guide suggests we should drink six to<br />

eight cups of water a day, others suggest two litres.<br />

However, your individual needs may vary depending<br />

on your overall health, the medications/supplements<br />

you take and your level of activity.<br />

Another way to improve your skin hydration is<br />

to apply a moisturiser. Moisturisers trap water in<br />

3. EXERCISE AND SKIN<br />

Exercise nourishes your skin cells, clears toxins<br />

from the skin and reduces stress. Aerobic exercise<br />

content in previously sedentary older adults.<br />

also help improve or reverse the signs of ageing. That<br />

is even the case when you start exercising later in<br />

4. ALCOHOL AND SKIN AGEING<br />

Alcohol increases inflammatory chemicals in the<br />

skin, and drinking too much alcohol causes dry skin<br />

– alcohol is a diuretic (i.e., a substance that increases<br />

urine output). Consuming more than eight alcoholic<br />

drinks per week is associated with increased upper<br />

facial lines, under-eye puffiness, oral commissures,<br />

midface volume loss, and visible blood vessels. If you<br />

do want to indulge now and again, make sure not to<br />

go overboard.<br />

5. SMOKING AND SKIN AGEING<br />

Smoking is bad for you in so many ways, including<br />

negatively impacting skin health and accelerating<br />

skin ageing. Nicotine—the main addictive substance<br />

in tobacco products—promotes skin cell death and<br />

impairs blood flow to the skin. Smoking a pack of<br />

cigarettes for approximately one year can increase<br />

wrinkling three-fold, that’s according to a study in<br />

the journal JAMA Dermatology.<br />

Vaping, which is often considered a safer alternative<br />

to cigarette smoking, can actually be just as<br />

detrimental to your skin as smoking cigarettes –<br />

vapes contain nicotine. According to a 2021 study,<br />

e-cigarettes contain as much nicotine as conventional<br />

cigarettes.<br />

Similarly, solvents and vape flavourings, such as<br />

propylene glycol and cinnamaldehyde, can cause skin<br />

irritation, inflammation and dryness. All these can<br />

accelerate age-related skin ageing.<br />

6. ENVIRONMENTAL POLLUTION AND SKIN<br />

AGEING<br />

Chronic exposure to polluted air can promote skin<br />

inflammation, leading to wrinkles and pigment spots.<br />

Air pollution can also change your skin’s natural<br />

microbiome – the millions of microbes, particularly<br />

bacteria, that help maintain the skin’s health.<br />

Particles released from automobile exhausts, fire,<br />

tobacco smoke, smog and power plants can penetrate<br />

the skin and increase inflammation. Consequently,<br />

long-term inflammation can accelerate ageing by<br />

decreasing collagen and elastin. Some studies have<br />

linked air pollution to eczema and skin allergies.<br />

Additionally, exposure to heavy metals, such as lead,<br />

mercury, and cadmium, affects your skin’s immunity,<br />

resulting in inflamed skin and other signs of ageing.<br />

7. COLLAGEN SUPPLEMENTS<br />

A growing body of evidence supports the use of<br />

oral supplements to reduce signs of (or delay) skin<br />

ageing. In a 2018 randomised trial of females aged<br />

at least 40 years old), the women were divided into<br />

two groups. The first group received 1000mg of low<br />

molecular weight collagen peptide once daily for 12<br />

weeks, while the second group received an identical<br />

formulation but with no collagen.<br />

Assessment at baseline and after six weeks and 12<br />

weeks revealed that skin hydration and improvement<br />

in wrinkles were significantly higher in the group<br />

receiving collagen.<br />

Another study (on Chinese women aged least 35<br />

years old) concluded that collagen hydrolysate with<br />

a higher content of Pro-Hyp and Hyp-Gly resulted<br />

in increased improvement in facial skin moisture<br />

and elasticity, with a reduction in wrinkles and<br />

roughness. And according to a 2022 review, oral<br />

collagen supplements improve skin elasticity and<br />

hydration and decrease wrinkling and roughness.<br />

Many tablet supplements contain small quantities of<br />

collagen. Liquid supplements such as Cutizana from<br />

collagen per serving, which provides the essential<br />

amino acids for the production of collagen, elastin<br />

and keratin.<br />

Healthy skin can be considered a signpost for overall<br />

<strong>Preneur</strong> <strong>World</strong> why he made a documentary about<br />

children’s social care<br />

Can you tell me what the documentary<br />

is about?<br />

In 2019 the Government commissioned<br />

J<br />

the Independent Review of Children’s<br />

Social Care in England. The report was<br />

published last year and according to it<br />

the children’s social care in England is at<br />

breaking point.<br />

Following this review the documentary<br />

looks at the care system with a focus on<br />

teenagers over the age of 16 who are at<br />

different stages of their lives in care.<br />

The idea is to show what growing up as a<br />

teenager in care is like and highlight the<br />

challenges these teenagers face, where the<br />

system is going wrong and where it could<br />

be made better. And to raise awareness that<br />

the system is failing these young people and<br />

something needs to happen and the system<br />

needs to change. As a society we owe it to<br />

them.<br />

Why did you want to get involved<br />

P<br />

and why do you think the care system<br />

is such an important subject to bring to<br />

viewers’ attention?<br />

This is a subject very close to my<br />

J<br />

heart. My mum’s been fostering for<br />

about 15 years. We’ve been involved with<br />

the care system as a family and we’ve seen<br />

the good and bad sides. It’s been a big<br />

part of my life growing up. Daniel, one<br />

of the kids my mum fostered, is at an age<br />

when young people leave the care system<br />

and my mum has just helped him get into<br />

University. He’s thriving but I’m aware<br />

that not all teenagers in care have the same<br />

positive experience and opportunities. So<br />

this documentary felt like a perfect fit. I<br />

don’t know the ins and outs of the system<br />

and I think it’s important to shine a light on<br />

it and for viewers to find out more. These<br />

youngsters go through so much while in the<br />

system and from what I saw, don’t always<br />

get support.<br />

Also, I lost my dad when I was young.<br />

I always used to worry about my mum<br />

passing away and becoming an orphan. It<br />

was a real anxiety for me growing up. With<br />

this in mind I still can’t begin to imagine<br />

how these kids must feel and what they go<br />

through. I thought it was important to give<br />

them a voice.<br />

In the documentary you meet a number<br />

P<br />

of teens at different stages of their<br />

lives in the system. From making this<br />

documentary what surprised you the most<br />

about their different experiences?<br />

In the documentary I meet a group<br />

J<br />

of young people who have all grown<br />

up in the care system. And the majority of<br />

them have not had a positive experience.<br />

They have not been supported greatly, they<br />

don’t feel they’ve been loved and they feel<br />

like they are slightly neglected. We did<br />

meet one teenager who has had a positive<br />

outcome and he’s doing amazing. He’s<br />

found a permanent placement, an amazing<br />

family. He’s settled. He feels comfortable.<br />

There’s no anxiety there.<br />

It was night and day between seeing him<br />

and seeing some of the other kids that<br />

haven’t had that luck. And it just seems a<br />

little bit unfair that not everyone gets the<br />

same opportunity. I want to know why they<br />

don’t get the same opportunity and why so<br />

many of these youngsters slip through the<br />

net. The one thing that they kept saying<br />

every time I met them was that there is no<br />

support network around them.<br />

The independent review says that every<br />

person in the care system should have at<br />

least two people that care for them, that<br />

they love.<br />

And you know, these kids haven’t got that,<br />

and that really hit home with me. I’m so<br />

lucky that I have so many people I can<br />

fall back on, friends and family. I couldn’t<br />

imagine a life without anybody. And<br />

unfortunately, some of these kids have been<br />

moved from one side of the country to the<br />

other, and they’ve got no friends, no family,<br />

and it’s such a sad, isolated life. There must<br />

be a better way we can get these kids ready<br />

for adulthood.<br />

P<br />

In your opinion, what do you think<br />

these kids need the most?<br />

Whenever you can give some sort of<br />

J<br />

consistency in a young person’s life -<br />

whether it’s a nan, an auntie, or a sister who<br />

stays in contact with them while in care - it really<br />

makes a big difference. In the documentary I met two<br />

sisters who got separated when they were quite small,<br />

they went to two different families. That was their<br />

only connection to their old life and it was taken away<br />

from them. I think the more we can keep, in any way<br />

possible, any sort of consistency and relationships in<br />

these people’s lives the better because these kids will<br />

go through the care system just craving to be loved.<br />

And then in adulthood some of them unfortunately<br />

are going to meet people that are going to offer them<br />

unhealthy love and unhealthy relationships. But they<br />

just crave anything, any sort of feeling of love.<br />

I feel that there needs to be a much better way<br />

of organizing and getting these kids ready for<br />

adulthood.<br />

P<br />

What did you struggle with the most when<br />

making the documentary?<br />

I was moved by the personal stories of the young<br />

J<br />

people I met. I found it difficult leaving them<br />

in that situation they’re in, and then coming home to<br />

my family, and having a laugh and feeling the love<br />

and the warmth of my house. I felt really guilty about<br />

that. I’ve been taking it for granted for so long, and<br />

they haven’t had it at all.<br />

Also because of my kids, I really struggled with it. I<br />

had to stop myself from putting my children in their<br />

situation because that was tearing me apart as well.<br />

But I’d definitely argue that anyone who met these<br />

teenagers would come away and feel guilty and feel<br />

like they’ve let them down in some way. I just felt like<br />

I wanted to do more for them. There’s not much I can<br />

do apart from shining a light on the situation and that<br />

was a real struggle for me. I just wanted to take them<br />

all home with me, I just wanted to parent them but I<br />

couldn’t which was sad.<br />

You’ve met the current Children’s Minister who<br />

P<br />

explained the plan to reform the system. What<br />

did you make of that encounter?<br />

The independent review was commissioned by<br />

J<br />

the Government because the system needed<br />

to be looked at. It’s taken years for the review to<br />

be made because it’s really in depth. And they<br />

spoke to thousands and thousands young people in<br />

the system to find out their opinions. And what it<br />

found is that the care system is absolutely falling<br />

apart at the seams, and it’s been falling apart for<br />

the last 10 to 15 years. And you know, as well as<br />

highlighting where the system is going wrong and<br />

where it needs to be fixed, it also highlights how<br />

we can fix it and the way we should go about doing<br />

that. Unfortunately it involves money. So whenever<br />

something involves money you’ve always got a fight<br />

in your hands. The independent review suggests that<br />

if you put in 2.6 billion pound worth of investment<br />

now it will completely transform the care system<br />

and that will save us billions down the line. The<br />

Government has looked at it and said they’re putting<br />

in 200 million which I thought it was way under<br />

what the independent review had asked for. I just<br />

wonder what’s the point of an independent review<br />

if you’re not going to do what it recommends?<br />

The Government are starting a range of initiatives<br />

but unfortunately the money is not going to be<br />

available. Basically I feel it causes a false economy<br />

because what we don’t pay for now, we’re going<br />

to pay for down the line and pay a lot more for it.<br />

It is frustrating. I do wish that everyone could just<br />

bang their heads together and realise this is an issue<br />

that needs to be looked at quickly and it is a very<br />

important cause.<br />

Why people should be watching the<br />

P<br />

documentary and what do you hope viewers will<br />

take away from it?<br />

This documentary is hard hitting, it’s reality, it’s<br />

J<br />

what’s happening right now in society. We need<br />

to make a change. We need to do it now. I don’t think<br />

everyone realises how bad and how much disarray the<br />

care system is in. Hopefully it’ll open people’s eyes to<br />

the problem and they’ll watch it and come away with<br />

the same feeling I got, that we need to do something.<br />

I really hope that people who watch it have an opinion<br />

and they voice it, and together we can try and make a<br />

change and make things move a bit faster.<br />

P<br />

Did you learn anything about yourself during the<br />

process of making the documentary?<br />

I’ve learned I’m very lucky. All those times that<br />

J<br />

I think things are not fair, this documentary has<br />

shown me how lucky I am, how lucky my kids are<br />

and not everyone is as lucky. I think sometimes I<br />

take things for granted and meeting these teenagers<br />

in the system, it just hit me hard, that there are young<br />

people out there really struggling.<br />

Stacey and I, when the kids are old enough and<br />

they’ll be semi-independent, will sit down and think<br />

about fostering. We love kids and Stacey is on the<br />

same sort of page as me. I’m not saying that it’s<br />

something we’ll definitely do but if circumstances are<br />

right I think it’s something we will definitely think<br />

about doing.<br />

Has filming this documentary opened up a<br />

desire to explore and learn more about this<br />

particular topic?<br />

This documentary focuses on teens in care<br />

J<br />

over the age of 16. There are so many different<br />

elements and sides to the system that we haven’t<br />

explored. And I’d love to maybe go back and explore<br />

more of the care system and a have a catch up with<br />

these young people I met to find out how they are<br />

doing. For some of them this will be their first year of<br />

independent living as an adult.<br />

1. UNIQUE VENUE<br />

Choose a unique venue,<br />

something a little unusual like a<br />

1920’s jazz afternoon tea aboard<br />

a steam train, or a recreated<br />

New York night club in an urban<br />

warehouse. This will bring the<br />

immediate wow factor.<br />

Start with the best raw materials<br />

in terms of a ‘must see’ venue,<br />

and you won’t go far wrong.<br />

2. GRAND ENTRANCE<br />

Make a grand entrance or ensure<br />

your guests do. You could go<br />

traditional by adding a red<br />

carpet and arranging paparazzi<br />

photographers with flash lenses<br />

to snap guests as they arrive.<br />

Create a flower or twinkling<br />

archway for guests – to mark the<br />

entrance to a garden party. Have<br />

How did the job presenting Bake Off:<br />

The Professionals come about?<br />

They said: ‘Would you like the job?’<br />

E<br />

I said: ‘Is there cake? Can I eat it?<br />

Yes, please.’ It was a no-brainer. It’s a<br />

dream gig. Me and my husband watch the<br />

main Bake Off together and, although I<br />

hadn’t regularly watched Bake Off: The<br />

Professionals, I’d seen bits. I knew it’d be a<br />

pleasure to work on and it was. Cherish and<br />

Benoit are lovely, Liam’s a delight and the<br />

chefs are brilliant. And I’ve never got to go<br />

to work with a Tupperware I could fill up<br />

with nice food before. That was a real treat.<br />

P<br />

Tell us about working with Liam<br />

Charles.<br />

I love Liam. He’s an absolute delight of<br />

E<br />

a human and so much fun. We brought<br />

out a very silly side of one another. We’re<br />

like children. There was a lot of pretending<br />

to be Power Rangers.<br />

P<br />

Did you start carrying a spoon in your<br />

pocket at all times?<br />

Oh my God. I didn’t carry a spoon,<br />

E<br />

but I learned where all the spoons<br />

were! As soon as I could, I’d be digging<br />

into everything. My favourite bit was when<br />

a producer would say: ‘Can you ask to<br />

try something?’ I’d be like: ‘Oh, this is an<br />

absolute nightmare. I have to try something<br />

delicious…’<br />

Even if you just have a little of everything,<br />

that’s quite a lot overall. You think: ‘Crikey,<br />

that was a lot of sugar.’ I don’t know how<br />

Benoit and Cherish do it. They do have to<br />

eat a lot of cake, but, you know, it’s cake…<br />

there are worse jobs, hey? I tried to get<br />

out on a walk every lunchtime because I<br />

did eat all the nice food and then I made<br />

friends with the home economics ladies.<br />

They’d give me jars of my favourite<br />

chocolate. Thank God, I only found where<br />

the chocolate was hidden on my last day.<br />

It could’ve been a disaster. Oh, it was<br />

gorgeous… big discs of dulce de leche<br />

chocolate. It was like I’d wandered into the<br />

Wonka factory.<br />

You burned more than your fair share<br />

P<br />

of calories during Strictly, though. You<br />

were just stocking up…<br />

Yeah, I did that very well. It was the<br />

E<br />

perfect antidote really, wasn’t it?<br />

Workout, workout, workout. Then… eat<br />

cake, eat cake, eat cake.<br />

P<br />

Has it changed the way you eat or<br />

appreciate food?<br />

Yes. While we were filming, actually,<br />

E<br />

I went for afternoon tea with my mum<br />

and was more mindful of the skill and<br />

work involved. Rather than just shoving<br />

everything in my mouth, I was noticing<br />

what it was, what the flavours were meant<br />

to be, where the textures were. You get to<br />

grips with the terminology. You can’t say<br />

it tastes nice, you’ve got to say: ‘I like that<br />

flavour profile…’ I found my language<br />

changing. ‘What flavour profile have I gone<br />

for on my pizza? Cheese and tomato.’ It<br />

was so interesting to hear what Benoit and<br />

Cherish look for when they critique stuff.<br />

And I was constantly astonished by what<br />

the chefs made. The things they create out<br />

of chocolate and sugar are amazing. The<br />

imagination! They’re so talented.<br />

Did you taste anything and think, ‘Oh,<br />

P<br />

this is amazing. I want to make this at<br />

home…’<br />

I don’t want to make anything. I’d<br />

E<br />

like to eat them at home. I’d like them<br />

to Deliveroo it to me. Every episode, I’d<br />

get out my Tupperware and take some for<br />

me and my husband to dissect. One of my<br />

friends had a baby during filming. I went<br />

to see her and hadn’t had time to buy a<br />

present, so I took cakes I’d nicked from set.<br />

I took some round to Mum and Dad, too. I<br />

was sharing the joy. Everyone loved it.<br />

P<br />

Did it surprise you how exacting<br />

Benoit and Cherish are?<br />

Oh yeah, Cherish’s ruler… I love the<br />

E<br />

ruler! They don’t mince their words,<br />

they don’t patronise, they are quite hard<br />

taskmasters, but that’s because they know<br />

the chefs are really good.<br />

It was quite nice to see them not holding<br />

back and being really brutal at times, but<br />

– in so many cases – you could see the<br />

development that brought out in the chefs.<br />

They’d really listen to the feedback and<br />

grow week after week.<br />

P<br />

Were there many meltdowns or collapses?<br />

There were a few collapses, a few tears, but lots<br />

E<br />

of moments of triumph. When things didn’t go to<br />

plan, more often than not, there’d be a Plan B. They’d<br />

adapt and respond, trying not to crumble. It’s really<br />

impressive.<br />

P<br />

Your job is partly to support the chefs when<br />

things aren’t going well…<br />

Yeah. I don’t know how much of a support I am<br />

E<br />

when I come in during a moment of crisis and<br />

say: ‘Are you alright? Tell me what’s happening…’<br />

The last thing they want to bloody do is tell me<br />

what’s happening. The last thing they want to do is<br />

talk to me. I feel bad sometimes, but that’s my job: to<br />

annoy them at their most stressed. I do always try to<br />

do it in a supportive and encouraging way, though. I<br />

come from an enthusiastic place of ignorance and just<br />

watch on in awe. They were a lovely, lovely bunch.<br />

P<br />

Have you picked up any skills?<br />

I made a cake the other day and, from doing the<br />

E<br />

show, I knew I should weigh out the sponges<br />

so both tins had the same amount of batter. I never<br />

would’ve thought to do that before. I felt quite<br />

professional putting my tins on the scales. It was a<br />

basic Victoria Sponge and it wasn’t very good – it<br />

was so heavy – but, you know, I showed willing. I<br />

learned what yuzu was, too. I’d heard of it, but didn’t<br />

know what it was. They love a bit of yuzu. Yuzu and<br />

bergamot. They love both of those guys.<br />

P<br />

What were your favourite challenges?<br />

I liked the suspended showpieces. As if building<br />

E<br />

them on a table isn’t hard enough, let’s get a<br />

ladder involved. Ridiculous. I mean, the drama of<br />

that. The Safari challenge was good – there was a<br />

massive chocolate giraffe head. Anything rhubarb<br />

floats my boat and there was something rhubarb<br />

in the shape of a pig. Delightful. I really liked<br />

challenges where they told a story and took Benoit<br />

and Cherish on a journey.<br />

Like Liam, you found fame competing in<br />

P<br />

a reality show – Show Me The Funny. Did<br />

knowing how hard it is to take part in a contest when<br />

you’re not used to TV help you with your Bake Off<br />

role?<br />

Yeah, I’d hope it gives me a bit more empathy.<br />

E<br />

I really do know what it’s like. It really is<br />

intimidating – especially if you don’t like public<br />

speaking or you’re not the loudest person in the<br />

room. It’s a big ask to not only do your job to a high<br />

professional standard, but also deal with people<br />

talking to you and the camera being on you when<br />

you’re doing intricate work. It’s a really big ask to<br />

hold your nerve. During filming, it’s hard to take it<br />

all in, but I really hope the chefs are chuffed with<br />

how they did and how they conducted themselves.<br />

They did themselves proud, not only as chefs, but as<br />

people.<br />

P<br />

Did you learn any lessons competing on Strictly,<br />

too?<br />

When you’re in the show, it feels like it’s never<br />

E<br />

going to end, but it is finite. It isn’t going to be<br />

forever. You can just dig a little deeper and, before<br />

you know, it’ll be over and you’ll say: ‘Oh, gosh, that<br />

was amazing, wasn’t it? Wish I could have another<br />

go.’ Just try to gobble up the experience. Throw<br />

yourself into it as much as you can and enjoy it…<br />

which is a hard request when you’re so stressed.<br />

You’ve done Strictly, Mastermind, Celeb Bake<br />

P<br />

Off. Are you a feel-the-fear-and-do-it-anyway<br />

person?<br />

Yeah, increasingly, it’s about filling your pot<br />

E<br />

with exciting experiences… things you won’t<br />

get chance to do again. If it’s an opportunity to do<br />

something a bit weird and wacky you wouldn’t have<br />

previously imagined yourself doing, then I think:<br />

‘Take it!’ Why not? What’s the worst that could<br />

happen? That you’re rubbish? That’s alright. I’m<br />

rubbish at most things anyway.<br />

P<br />

Were you terrified going into the Bake Off tent<br />

for Stand Up 2 Cancer?<br />

No, but I should’ve been. I was a bit too<br />

E<br />

confident. I went in thinking: ‘Well, I know how<br />

to make a roux. I’m sure I’ve got this sorted…’ But,<br />

no, it was a lot harder. I crumbled under pressure<br />

in a way I didn’t think I would. I’m a flappy person<br />

anyway, but crikey, in that tent, everything went<br />

tits-up. It was really good fun, but very stressful with<br />

people talking to you all the bloody time. Go away! I<br />

found an extra level of panic, chaos and mess. At one<br />

point, I put cooling trays on the floor because I’d run<br />

out of space. I had cake on the floor. I was like, ‘This<br />

is what all professional bakers do, right? They cool<br />

stuff on the floor…’ It was not my finest hour. But<br />

what an experience – to have a go in the Bake Off<br />

tent and for a brilliant cause.<br />

P<br />

Do you do much cooking and baking at home?<br />

Not loads. I like cooking, but I don’t have super<br />

E<br />

amounts of time, so I don’t do a lot. I like having<br />

people over. Making pudding, that’s my favourite. I’d<br />

rather make a pudding than the main course. I’ve got<br />

a very sweet tooth. I had people over yesterday and<br />

made a chocolate pavlova. Choccy Pav… delicious!<br />

I did GCSE Home Economics. I got an A, thank you<br />

very much. I made a focaccia, I remember.<br />

P<br />

What would Cherish and Benoit have thought of<br />

it? Was it good?<br />

Probably. Any homemade bread is delicious,<br />

E<br />

isn’t it? Home-baking is different from<br />

professional patisserie. I made that cake recently for<br />

my mum’s birthday and it was so heavy. If you’d had<br />

it in a shop, you wouldn’t have been impressed, but<br />

because it’d been made with love at home, it’s the<br />

Do you bake with your little girl?<br />

Yes. She loves baking, but mostly because she<br />

likes licking everything: the bowl, the whisks,<br />

the spatula. I’d have barely got the flour out of the<br />

cupboard and she’s saying: ‘Can I lick the spoon?’<br />

She was helping me make the pavlova and I had to<br />

physically wrestle the sugar off her. She’s got a sweet<br />

tooth like her mama. We’re cake and biscuit mad in<br />

this household.<br />

You’re back as Sassy in Ted Lasso. Ted famously<br />

P<br />

brings biscuits for the boss. Can Jason Sudeikis<br />

bake?<br />

I have no idea. I’ve never tried a biscuit, so I<br />

E<br />

don’t know what they’re like. I’m sure he can<br />

whip up a biccie or a cookie as they’d say in America.<br />

He’s a multi-talented man. I’ve no idea who actually<br />

bakes them.<br />

P<br />

If you could have tea and cake with anyone, who<br />

would you choose?<br />

Oh, Victoria Wood. That would’ve been lovely.<br />

E<br />

that I knew it at the time, but looking back. She was<br />

one of the only women on TV who was silly and she<br />

liked playing with words. I really love playing with<br />

language in my stand-up and writing and being a<br />

wally…<br />

P<br />

Victoria showed you could make a living out of<br />

those things…<br />

Yeah. I loved Dinnerladies. At University, I<br />

E<br />

was studying English Literature and writing<br />

and performance and remember buying all the<br />

Dinnerladies scripts. It was lovely to pore over them<br />

and see how they were constructed. They’re perfectly<br />

crafted. Her precision with language! I didn’t get to<br />

meet her, but I was in the same room as her once in<br />

Edinburgh. I wasn’t brave enough to say hello and I<br />

wish I had. She was amazing.<br />

P<br />

What are your plans for the rest of the year?<br />

I’m doing some more acting at the moment. It’s<br />

E<br />

sort of a comedy, but it’s action. There’s a lot<br />

more stunt work than Bake Off needed. I didn’t need<br />

a stand-in for tasting. I’m happy to eat all my own<br />

cake. I’ve got fight scenes. I’m learning all that, I<br />

don’t know how I’ve managed to start doing action<br />

roles when I’m getting on for 40, but I just thought:<br />

‘Oh, why bloody not?’<br />

Dining experiences are always<br />

improved by great food and wine<br />

pairings. The general rule is that<br />

foods high in salt and acidity are<br />

a good match with most wines.<br />

They’re great for enhancing the<br />

flavours of wines as they temper<br />

the acidity and give them more<br />

roundness. If handed a dubious<br />

glass of wine, a good tip is to<br />

search out some crisps! But the<br />

most important thing to consider<br />

is to match like with like, a<br />

delicate dish needs a delicate<br />

wine and most important of all<br />

is personal preference. If you<br />

don’t like something, the chances<br />

of you suddenly becoming a<br />

fan of it because it’s paired with<br />

something else is highly unlikely.<br />

There are a lot of classic pairings<br />

out there that work well; big, fullbodied<br />

red wines and steak, or<br />

Port and stilton cheese. Yet there<br />

are many fantastic and slightly<br />

less conventional pairings that<br />

work equally well. Here are some<br />

of my favourites:<br />

SHERRY<br />

As a sherry fan, I would happily<br />

pair the Spanish wine with lots of<br />

dishes. Perhaps to many people’s<br />

surprise sherry is one of the<br />

world’s most gourmand wines<br />

with more molecular compounds<br />

in common with food than any<br />

other wine! A simple, yet very<br />

satisfying pairing is a very dry<br />

and savoury Fino or Manzanilla<br />

with sushi. This style of sherry<br />

is one of the most umami styles<br />

of wine and pairs extremely well<br />

because of its tangy and salty<br />

nature. Mushroom based dishes<br />

also compliment sherry due to<br />

their umami nature.<br />

CHAMPAGNE<br />

Champagne or other dry<br />

sparkling wines are often seen<br />

as something to sip and savour<br />

by themselves, but this is a big<br />

mistake. That’s because the very<br />

high acidity of the drink is great<br />

for cutting through grease and<br />

fat. Salty, deep fried chicken<br />

with chips is an incredible<br />

pairing with Champagne. The<br />

salt really brings out the flavours<br />

of the wine, some of which tend<br />

to be a touch savoury which<br />

compliments the food. Fish and<br />

chips also work really well with<br />

the likes of English sparkling<br />

wine.<br />

ORANGE WINES<br />

For something seriously unusual<br />

you could try an orange wine<br />

with a dish that has a touch of<br />

heat and fragrance. Thai red<br />

curries or sizzling plates with a<br />

dash of chilli heat pair very well.<br />

Orange wines are more textured<br />

than most white wines and<br />

tend to have a slightly aromatic<br />

quality, which both compliments<br />

and enhances the flavours in<br />

spicy foods.<br />

MADEIRA<br />

Madeira is one of the finest<br />

fortified wines out there and<br />

desperately overlooked. It’s<br />

often seen as something to<br />

cook with rather than to drink<br />

alongside food, or as a digestive.<br />

The grape varieties Sercial and<br />

Verdelho, which are displayed<br />

on the bottles, will give you a<br />

touch of sweetness, fresh bright<br />

acidity and complex flavours of<br />

walnuts, citrus peel, caramel and<br />

fruit cake. These flavours pair<br />

so beautifully with hard nutty<br />

cheeses, such as more mature<br />

Comté, cheddars and Gouda. The<br />

high acidity breaks through the<br />

fat of the cheese and the salty<br />

quality of the cheese enhances<br />

the wine’s flavours on the palate.<br />
