Cod tends to soak up and lock-in flavours like a sponge,<br />

so by adding different types of delicious ingredients, we<br />

can create so many yummy dishes. The herb butter in this<br />

recipe will elevate the cod to a whole new level leaving<br />

it to pair perfectly with our crisp, slightly oaked, English,<br />

Lyme Bay Chardonnay, with its medium-body, moderate<br />

acidity, and creaminess from the oak. However, our love<br />

of cod as a nation, has greatly depleted supplies by overfishing,<br />

so please bear in mind that there are alternatives,<br />

such as pollock, pouting or coley which will be equally<br />

delicious with this English beauty.<br />

Top tip: If you do eat cod, ensure it is clearly labelled as<br />

coming from a properly managed, sustainable fishery<br />

(with the MSC or ASC blue tick).<br />

Tabasco and garlic are the punchy flavours in most<br />

tasty prawn tacos, so pairing with a wine may be slightly<br />

challenging for some. We recommend our Selong Letang<br />

Viognier, a full-bodied, aromatic white wine renowned for<br />

complimenting bold (but not too bold) flavourings. It’s<br />

oily texture and low-to-medium acidity means that it can<br />

walk hand-in-hand with this dish without detracting or<br />

adding to the taste profile of the ingredients . A bit like a<br />

cup of tea and a digestive biscuit, what’s not to love.<br />
