The story behind the story
CHILDREN’S FAIRY TALES AREN’T ALWAYS PRINCESSES, FROGS, CASTLES, AND A KNIGHT IN
SHINING ARMOUR - AND, AS LIFE GOES, THAT TOO ISN’T ALWAYS A BED OF ROSES. LICHFIELD
FIRST-TIME AUTHOR JAIME CRAVEN HAS WRITTEN AND CREATED A DIFFERENT KIND OF
CHILDREN’S BOOK, AS JASPREET SHERGILL DISCOVERS
JAIME’S CHILDREN’S BOOK
STEMS FROM HER OWN
TRAUMATIC CHILDHOOD
EXPERIENCE
Jaime Craven’s debut book, My Magnificent
Memories, may have been written for children - but
it definitely doesn’t have the typical fantasy storyline.
Instead, the book - which has already hit the Amazon
top ten bestseller list in its genre - looks at feelings of
grief within children, and how difficult topics can be
spoken about.
Although mum-of-three Jaime first started writing
her book 12 months ago, it was something she had
long wanted to do. The idea of writing a book had
stemmed from her own experience of a traumatic
event while she was on holiday as a youngster which,
she says, consumed her teenage years.
“When I was 13 years old, my family and I went on
holiday to Sri Lanka in 2004 for Christmas as we had
family living there,” explains Jaime. “We were on a
boat and the skipper realised that something wasn’t
quite right. We were in a remote part of Sri Lanka
and communication-wise, he didn’t really know how
to tell us what was happening.”
It was Boxing Day, and Jaime and her family were
caught up in one of the deadliest natural disasters in
recorded history.
A massive tsunami with waves up to 30m high, now
known as the Boxing Day Tsunami, devastated
communities along the surrounding coasts of the
Indian Ocean, killing an estimated 227,898 people in
14 countries.
“The skipper sailed us out as far as he could because
tsunamis actually travel on the seafloor so the further
out at sea we were, the safer we were,” says Jaime.
“The tsunami went straight underneath us, which
was an absolute miracle. But of course, I had seen
a lot of things that any 13-year-old should not have
had to see because of the impact the disaster had
caused.”
After travelling back home to the UK, Jaime said
she was able to deal with what she had experienced
and felt okay, mentally. But around five years later
she went travelling to Malaysia with her partner
and found that visiting that side of the world
again brought back thoughts and memories which
impacted her physical and mental wellbeing.
“Going to Malaysia just triggered something in my
brain and as soon as I got home, I had PTSD (posttraumatic
stress disorder),” explains Jaime.
“I had it for about a year and I just couldn’t shift it. I
couldn’t leave the house and I just felt frightened of
6 www.jaimemagazine.com

everything, it was just a feeling that I had. I learned
a lot about myself and my brain - grief, loss, guilt -
through all those years.
“And now I’m an adult and I can reflect on it a little
bit, I realise how little support there is for children
suffering with grief. You don’t really know what it
feels like to be a child going through grief unless
you’ve been that child, so I think that was a big
driving factor for me.”
With the support from loved ones and professional
help, Jaime found her path to recovery. Having
experienced this, she was able to notice and relate
to a younger family member who was also going
through a difficult period in their life.
“I’ve got a younger family member who’s been
through grief recently and I recognised in her some
of the things that I felt,” says Jaime.
“Although it was a different type of grief, I could
see the cycle that she was going through, and I’ve
done it. So, I told her this story because what used
to work for me was understanding why I felt the way
I did and that I wasn’t unusual and that it wasn’t
something that was going to be with me forever. It
was literally a trigger response to a trauma. It’s your
brain trying to protect itself, and it’s a very normal
and a very healthy thing for your brain to do.
“This story was me basically explaining to her,
through a child’s story, that an event will happen,
you’ll feel rubbish for a bit, then you’ll feel better
because you’ll start to heal from the trauma with
your friends, family and your memories. And then
once that cycle is finished, you’ll realise how much
better you’ve become as a person, how much you’ve
JAIME CRAVEN’S DEBUT BOOK, MY
MAGNIFICENT MEMORIES, IS A DIFFERENT
KIND OF CHILDREN’S BOOK
learned and if this was to happen again, you would
know how to handle it, you can grow through these
terrible things; although they are terrible, they don’t
define you.”
Jaime had carried the effects of her history and
past experiences throughout her life. She no longer
wanted them as reminders and writing a book was
a way for her to channel that energy into creating
something positive to help others.
“My past was rubbish, and I was fed up with it being
like that,” Jamie says. “I knew that I always wanted
to do something and when this family member of
mine went through this difficult period as a mother
who has a young daughter of a similar age, I really
felt for her and that’s what triggered it off. It was me
sitting with her and saying ‘I know what you’re going
through’ and that is the story that is in the book, My
Magnificent Memories; it’s exactly the same story I
told her.”
Themes of feelings are represented throughout My
Magnificent Memories, which are broken down in a
way for a child to have a better understanding of the
experiences they may be going through and a way to
deal with it and process it.
“I explained it as having a castle in your brain
and then when something happens in your castle,
everybody living in your castle is going to feel a
little bit on guard which is the anxiety you feel,”
says Jaime. “You may be a little bit worried about
things, and normal things that you would do every
day can make you feel worried because of what has
just happened. Then it turned into this story, and it
helped her at the time, and she felt better. It was my
husband that said you should write this story down.”
After writing the initial story, there were many
changes made along the way because Jaime wanted
www.jaimemagazine.com
to ensure that the story was written for children. So
her 6-year-old daughter Mila had her creative input -
which was exactly what Jaime needed.
“Because it’s a story about grief I didn’t want it to be
too sad and I had to be careful around the wording
that I used because of the age range and I rewrote
it quite a few times,” says Jaime. “I’ve got three
children and two businesses, so we did a lot of this in
the evenings - and my husband has heard this story a
million times!
“My daughter had a big input with the characters,
and she’s got such a good imagination. I think we
write something that we think that a child is going
to perceive as brilliant, but actually a child’s input
is exactly what you need when you’re writing a
children’s book because my daughter would think
about things like the fact that the character Amelia
has a pet hedgehog and that’s something that I
perhaps wouldn’t have thought of. My daughter was
very involved, and she loved it.”
After getting the story just right, it was time to bring
the vision to life, Jaime wanted to include a little
piece of her own life experience which had a deeper
connection to her as the author of the book - and
representation was at the heart of it.
“The character Amelia has got a hearing aid and I
wanted to include this because I used to be a sign
language interpreter and deaf communities do not
get represented very often, so I wanted to make sure
that if I was going to do something, they would be
represented in my book,” Jaime says.
Jaime had initially planned to give
the published book as a present to her
young family member who was the root
of inspiration to write the story. But she
soon found out that it wasn’t only her
shelf the book was about to be sitting
on.
“My young family members’ birthday
was very close to the publication date,
she knew that the story was based on
her and she gave me the inspiration and
I wanted to make sure that she had that
book for her birthday,” says Jaime. “I
wrote a message in the book that when
it’s World Book Day, you’ll be able to go
as yourself because the book is based
on her. So, my goal was that she would
realise how fantastically amazing she is
and hopefully it would help her through
anything she went through and that she
could go as herself on World Book Day
because that’s all she needs to be.”
Since the release of My Magnificent Memories, it
has reached number seven in the Amazon best sellers
list within its genre and Jaime has received a lot of
support around it.
“I didn’t really think that I would get the support that
I have,” she admits. “It started out as a book that
would be on my family members’ and daughter’s
shelf, I didn’t really think about it, and it was literally
one of those bucket list things to write a children’s
book. I hadn’t planned for it to be like this at all, but
it’s been great.”
Moving forward, Jaime said that she would like to
write another book purely out of passion, but for
now, if there is something that people can take away
from My Magnificent Memories, then this is it:
“I feel responsible, as a child that went through grief
- that grief is normalised for our children. When
I went through the tsunami, at that time, mental
health was not talked about, and I was ‘the tsunami
girl’ which made me feel different to everybody else
and I hated it. What happened to me was not my
fault, and how my brain reacted to that was not my
fault - and this happens to children everywhere and
there is not enough in our day-to-day life to support
children with those absolutely ginormous feelings.
There isn’t enough, so this is my contribution, and
I would hope that any child that reads the book
would realise that grief, guilt and loss are a part
of everybody’s life and there are days past the
darkness.”
P R O P E RTY
The big property question
SHOULD YOU BUY OR SHOULD YOU STAY? AWARD-WINNING MIDLANDS
ESTATE AGENTS CHOSEN HOME EXAMINE THE 2023 PROPERTY MARKET
It’s fair to say that the last few months of
2022 tossed both house buyers and sellers
alike into turmoil as they watched interest
rates climb and scanned scaremongering
headlines about plummeting house prices,
leaving us all in a state of ‘what do I do?’
limbo.
With thousands of us starting 2023 with a
‘new year, new home’ mindset, Chris Stuart,
area manager at Chosen Home, says the
crucial thing to consider when evaluating the
housing market is that 2020 and 2021 were
abnormal years that cannot realistically be
used as a real-time comparison for year-onyear
house price figures.
“When the pandemic hit us and the UK
went into lockdown in March 2020, the
general consensus was that the property
market would tank. Agents weren’t able to
conduct viewings and everything stalled.
In reality, spending months confined to our
homes threw everything into perspective and
far from tanking, the market went absolutely
crazy!” said Chris.
“We have seen many gloomy headlines
in the last few months, but in reality, the
property market is performing better than
it was at the end of 2019 – the last realistic,
non-pandemic timeframe we have to use
as a comparable. In fact, there’s a four per
cent increase in demand for new homes, so
these doom laden forecasts that house prices will fall
significantly in the coming months are inaccurate –
unfortunately for buyers. We remain very much in a
sellers’ market, but the activity we’ve seen over the
past three years, with house prices increasing by five
and six per cent each month, is behind us: it simply
wasn’t sustainable,” he added.
“2023 will be an exciting year for the housing
market. There are going to be far more opportunities
for people who simply haven’t had an opportunity
in the past couple of years, but they shouldn’t be
CHOSEN HOME’S AREA
MANAGER CHRIS STUART
holding out for a mythical 20 per cent drop in asking
price. At Chosen, we’re finding that demand is still
strong for high-value homes in desirable locations
and I don’t see that changing.
“The question I’ve been asked more than any other
over the past couple of months is ‘Should I hold off
on viewing or putting an offer in on this house in
case it comes down in price…’ and my answer is an
emphatic NO: if you see the home you like, don’t
risk missing out, put in an offer and enjoy living in it
rather than waiting for a price reduction that might
never materialise,” he advised.
I N T E R I O R S
Timeless
style
AS the heart of the home - and often the busiest and
most-used space - the kitchen sees a lot of use. From a
place to cook and eat - obviously! - to a space which needs
to accommodate work, play, rest and entertainment, we’re
demanding ever more of our kitchen.
So if you’re planning on renovating, remodelling, or even
just reconfiguring your existing space, there are many
elements to take into consideration along the way.
The biggest impact, both visually and when it comes to
how the space feels, is your choice of colour. Recent years
have seen a penchant for darker and more dramatic hues,
with navy, dark grey, forest green and even black taking
the spotlight. But as we step into 2023 with a greater eye
on sustainability and longevity than ever before, a timeless
white kitchen is always a wise choice.
With such a shift in how we want our homes to feel and
function post-pandemic, the brighter and lighter feel of a
white-on-white kitchen plays into that aesthetic perfectly.
Fresh, energising and with the ability to make a space
feel more, well, spacious than it is, it’s no wonder white
kitchens are seeing a resurgence.
A family legacy
LICHFIELD STALWARTS TATLOW CARPETS ARE CELEBRATING AN IMPRESSIVE HALF-
CENTURY IN BUSINESS AS THE GO-TO NAME FOR FLOORING IN THE AREA
Ken Tatlow started his eponymous flooring
business back in 1972; today, some 50 years
later, his daughter Jayne Beard and grandson
Tom carry on the family legacy.
Tatlow Carpets started life based at City
Arcade in the heart of Lichfield, offering
flooring sales and fitting. Initially working
by himself, Ken would be in the showroom
selling during the day, and fitting orders for
customers in the evenings. As Ken got busier,
his wife Anne started to work some days in
the showroom, and after a year the company
had enough business to employ two fitters.
As a business with family at its heart, Ken’s
children soon became part of the team.
Ken’s son Stephen joined aged 22, training to
become a fully-fledged fitter and also working in the
estimating and measuring side of the business, then
five years later Ken’s daughter Jayne joined at the
same age to work in sales and accounts.
Over the years, Tatlow’s became the name for
flooring in and around Lichfield, providing all
floorings for the home and light commercial areas.
The company offers a wide selection to suit all needs,
styles and budgets, from wool and man-made carpets
from leading names such as Axminster, Ulster,
Cormar and Crucial Trading among others, to
luxury vinyl tiles such as Karndean, Distinctive and
Project Floors, sheet vinyls, laminate, and natural
and sisal carpets.
Rugs are another Tatlow speciality, with plenty
of choice in store covering wool and man-made,
modern and contemporary styles. Rug and runner
binding is also done in-house, while Tatlow’s stock a
variety of accessories including indoor and outdoor
mats, rug stop, cleaning products and protectors.
Tatlow’s are also one of the only flooring companies
in the Midlands that provide the full start-to-finish
service, from free estimating and samples, written
quotes, to uplift and disposal of existing flooring,
moving furniture, bespoke door bars and thresholds,
and door easing.
TOM BEARD, JAYNE BEARD AND
DAVID HATTON MAKE UP THE
TATLOW TEAM TODAY
In August 2004, Ken’s son Stephen suddenly passed
away due to a rare condition called sudden adult
death syndrome (SADS). This devastating, lifechanging
event left a huge hole in both the family
and the business, meaning the team had to adapt and
overcome the tragedy.
The business relocated out of the city centre in 2013
to Britannia Enterprise Park at Lichfield Trent Valley,
where they remain to this day. Ken Tatlow sadly
passed away a year after the move, being very much
involved in the business right until the end.
Ken’s legacy lives on in his daughter Jayne and
grandson Tom, who joined the business in 2018.
Jayne, Tom and David Hatton, head estimator and
sales who’s been with Tatlow’s for more than 15
years, make up the team today.
Tom said: “We are so proud to say we have reached
50 years of Tatlow’s, and would like to take this
opportunity to thank all of our customers for their
support over the years. It’s incredible when we visit
homes and they say ‘Your grandfather fitted this’ or
‘Your uncle screeded that’.
“We can’t tell you enough how we love what we do
and will continue to do.”
To keep up with all the latest from Tatlow Carpets,
F O O D & D R I N K
A twist on a classic
AWARD-WINNING MIDLANDS STREET FOOD FAVOURITES THE ENGLISH INDIAN ARE
DELIGHTING DINERS WITH A SERIES OF MONTHLY POP-UP WEEKENDS AT THEIR LICHFIELD
HOME. AMY NORBURY POPPED OVER TO GIVE THEIR NEWLY EXPANDED MENU A TRY
Fish and chips. When it comes to food, fish and chips
are a national staple. The traditional Friday treat
at the end of a working week, the ultimate comfort
food and (whisper it quietly) one of the healthier
options when it comes to takeaways. It’s just about as
classically British as you can get. Until it isn’t.
If you thought the good old fashioned British fish
and chips couldn’t be improved upon, then you’ve
probably never sampled The English Indian’s fine
fayre. And if you haven’t, it’s probably high time you
did.
Lichfield street food favourites, The English Indian
burst onto the foodie scene back in 2016 with their
decidedly spicier twist on a takeaway classic. Taking
the teatime staple and infusing it with a heady dollop
of Indian spices created a foodie phenomenon so
good they were named People’s Choice at the British
Street Food Awards just a year after setting up.
A firm fixture on the UK’s festival list, you can find
The English Indian touting their wares everywhere
from huge occasions like Glastonbury and Latitude,
to local festivals too - not to mention an array of
street food events and dining clubs around the
country.
And during the pandemic lockdown they brought
a little bit of cheer to those dismal dining days
when they popped up with their trusty van around
Lichfield and the surrounding areas.
The English Indian have gained a loyal band of
foodie followers over the years, so when the news
came last October that they would be opening up
their Lichfield unit once a month for a pop-up dining
event, it was greeted with great delight.
Ever since encountering The English Indian at
Lichfield Food Festival many moons ago, team
J’AIME have been fans of their small but perfectly
formed selection of dishes. And with the promise of
an expanded menu featuring brand new treats to try,
we couldn’t resist checking it out.
Now, the location of the pop-up isn’t exactly
glamorous - they’re based on an industrial estate just
off the Birmingham Road, after all - but when we
arrived we discovered the unit had been transformed
into a rustic yet bustling dining space. Fairy lights
and foliage aplenty gave the space a quirky, inviting
vibe while music added to the convivial atmosphere,
alongside the large wooden tables and benches for
communal dining.
A bar stocked with prosecco, craft beers and plenty
of soft drink options means you can enjoy a cheeky
beverage or two while you dine.
The set-up is a casual affair; simply pop to the
counter and place your order, then take a buzzer
We managed to grab a drink and a seat before our
order was ready, not much more than five minutes
later.
As a huge fan of The English Indian’s signature fish
and chips, my hubby stuck to what he knew - and he
wasn’t disappointed. Beautifully firm fish in a crispy
batter with a hint of spice, a pile of moreish chaat
masala chips, unctuous Indian chip shop curry sauce
and those delectable chilli and mint garden mushy
peas are a match made in heaven. This is next-level
fish and chips which delivers in spades on flavour.
I’d heard good things about the new Kashmiri
chicken burger and couldn’t resist eschewing my
usual fish-and-halloumi combo for something
different. And I was so pleased I did. The chicken
was succulent and tender, in a delicious spiced
coating, laden with poppadom, cheese, lettuce, red
onion, sweet chilli, spicy mayo and coriander. It was
a behemoth of a burger, spilling out of its brioche
bun, and with an accompanying heap of chaat
masala chips, it was a hearty meal indeed - although
so tasty I polished it off in its entirety. I did miss those
exceptional mushy peas - but for £1 extra you can
order a portion on the side.
Not wanting to miss out on the fried chicken, my
husband also ordered a side portion of Kashmiri
chicken strips, topped with spicy mayo, sweet chilli,
red onion and coriander, which he found just
delicious. It meant that I didn’t have to share my
burger either, so a win all round.
With vegetarian halloumi wedges and a vegan
artichoke ‘vish’ option, the menu may be small, but it
really does cater for everyone.
And when it comes to delivering on dietary
requirements, one of the other attractions
of The English Indian is that their entire
menu - with the sole exception of their
pop-up special, that Brummie favourite
the chicken balti pie - is entirely, and most
often naturally, gluten-free. The pakora
batter which coats the fish, artichoke and
halloumi wedges is made - as traditional
Indian pakoras are - using chickpea-based
flour, while the new Kashmiri chicken
burger boasts a gluten-free breading and
a specially-sourced gluten-free brioche
bun. I’ve got several friends with gluten
intolerances, and being able to eat from the
same menu without compromises is a rare
treat - while as a non-gluten-free diner, I
noticed absolutely no difference in taste.
In fact, as we arrived at the pop-up, one
of my gluten-free friends was just leaving,
over the moon at finally having found a
fully gluten-free chicken burger of such
deliciousness and quality.
The English Indian’s monthly pop-ups are
currently scheduled to run in February,
on Friday 9 and Saturday 10, and March,
again on Friday 9 and Saturday 10, after
which festival season kicks back in, taking
the team all over the country once more. So
if you haven’t already paid them a visit on
their Lichfield home turf, the time is now.
F O O D & D R I N K
For the love of plants
WITH PLANT-FOCUSED MENUS WHICH ARE NOTHING SHORT OF CULINARY WIZARDRY,
BIRMINGHAM RESTAURANT LAND IS ENOUGH TO TEMPT EVEN THE MOST ARDENT
MEAT-EATER TO GO VEGAN, AS AMY NORBURY DISCOVERS
Every time January rolls around, I’m
tempted to take on the Veganuary
challenge. But with a committed
meat-eater for a husband, and two
kids who’d happily eat their own
bodyweight in ham, bacon, sausages
and the like, my attempts to foist
entirely vegetable-based meals upon
them more often than not go down like
the proverbial lead balloon.
Me, well I enjoy a good fillet steak as
much as the next person, but I’m often
just as happy with vegetarian options.
Although I’m less of a fan of things
masquerading as meat; I’d rather just
enjoy veggies for veggies’ sake. So a
fine-dining restaurant which offers purely plantbased,
seasonal tasting menus sounded right up my
street.
Based in Birmingham’s pretty Great Western Arcade,
Land bills itself as a ‘modern, plant-focused, casual
dining restaurant’. Taking inspiration from around
the world, Land’s menus showcase the very best
produce from, well, the land.
Leading culinary critic Jay Rayner - you know, the
one who puts the MasterChef contestants through
their paces - called Land’s offerings ‘vegan cooking to
file under thrilling.’ Which boded well for a meatfree
meal to write home about. In an age where
wild mushroom risotto too often still represents the
heights of vegetarian culinary excellence - and god
help you if you’re vegan and want more than a plate
of salad! - Land’s offerings could be classed as a
veggie manna from heaven.
So when J’AIME was invited over late last year to
give plant-based a go, I was all for it. The hubby,
a rather more carnivorous sort, was less enthused
about seven courses of plants, but remained open to
having his mind changed. So off we went.
Overflowing with Victorian charm,
Great Western Arcade is home to an
array of small independent shops and
boutiques, eateries and bars, making a
lovely destination for an evening out in
the heart of Birmingham, yet away from
the hustle and bustle of the city centre.
Land itself is an intimate, stylish affair
with an open kitchen at the back where
you can spy head chefs Adrian Luck and
Tony Cridland working their magic.
We arrived for an early Friday evening
slot to find the restaurant already in full
swing. The welcome was warm and the
32 www.jaimemagazine.com

vibe relaxed as we were shown to our table
- a prime window seat perfect for watching
the world go by. Rather than paper, the
menu was a QR code which zapped you
straight to Land’s website - to ensure
the best seasonality, the menu changes
frequently so going paper-free is the sound
environmental choice.
If the menu is designed to take you on
a culinary journey, the wine list, too,
encourages diners to step out of their
comfort zone, offering alternative grape
selections for popular choices.
The tasting menu started with a couple of
delightful chef ’s snacks; a miniature feast
of mushrooms snuggled in the crispest
of pastry shells which packed a wonderfully earthy
punch, and a delicate celeriac remoulade atop a
seaweed cracker which was just divine.
The standard was set, and what followed was course
upon course of breathtaking deliciousness.
A rice porridge fragrant with onion and thyme
and adorned with beautifully iron-rich spinach
was the perfect winter warmer; hearty, robust and
deeply satisfying. A terrine of squash, wonderfully
sweet, balanced with a fair whack of chilli and
accompanied by sunflower seeds transformed into
an indulgent cream with a liberal sprinkling of seeds
adding a bit of crunch. Just delightful.
And then there was the potato. Oh, how the
humble potato was transformed. In a pool of dashi
buttermilk broth with salty samphire and sweet, crisp
green grapes, it was nothing short of majestic. I’d sail
through Veganuary in a breeze fuelled by this dish
alone. No word of a lie.
The main course, so to speak, was a riff on a
massaman curry, with silky aubergine ribbons,
crunchy peanuts and an almost sculptural fried
rice noodle adornment. Perfectly spiced, perfectly
balanced.
The final savoury affair arrived, and it was the turn
of that British favourite, the carrot, to receive the
five star treatment. Generous hunks of sweet roasted
carrot perched on a slather of indulgent almond
cream - nuts doing all the heavy lifting of a dairy
addition nicely. A generous dressing of zhoug, the
Middle Eastern cousin of Argentinian chimichurri
packed fragrance and heat, while delicate charcoal
crisps brought the umami goodness.
Desserts of banana and coffee creams with sweetly
tangy tamarind, and a beetroot cake with rich oat
ice-cream and cherry, were delightful, as was the
wonderful roast on the coffee for a perfect flat white.
Jay Rayner called Land’s cooking ‘thrilling’ and I
can only concur. It was a meal which surprised and
delighted with every morsel, leaving huge question
marks over what meat would actually bring to the
table when plant-based cooking can be this good. It
was, I’d go so far as to say, a strong contender for our
best meal of 2022 - what a way to
round out the year in style.
And at just £45 a head for a
seven-course tasting menu, it
represents superb value for money;
a superlative culinary experience for
not much more than your average
three courses of good pub grub.
So if you’re inspired by Veganuary
to go more plant-based in 2023,
then Land should be right at the
top of your list. And if you’re a
dedicated meat eater then get out of
your comfort zone and go anyway;
we guarantee you won’t regret it.
Discovering the seasons
LICHFIELD CHEF JACK DUBBERLEY, OF DUBBERLEY DELICIOUS, TAKES A LOOK
AT SOME OF THE BEST SEASONAL PRODUCE AVAILABLE RIGHT NOW - AND HOW
TO MAKE THE MOST OF NATURE’S LARDER
Since opening his unique fine dining chef ’s table
in Lichfield back in May 2021, Jack Dubberley
has cemented his place as one of the city’s top
foodie finds. Offering bespoke fine dining menus
from his tiny space in a cabin at The Plant
Plot garden centre, Jack’s not-a-restaurant -
Dubberley Delicious - has earned rave reviews
for its innovative approach to fine dining.
Jack has begun 2023 with the exciting
announcement that he is moving his eponymous
chef ’s table experience into Lichfield city centre
- with the new restaurant due to open in spring.
The larger space, in the heart of Lichfield on
Tamworth Street, will remain a private fine
dining experience, but will allow Jack to cater for
larger parties than his current maximum of ten.
Key to Jack’s success has been his passion
for produce, using only the finest in-season
ingredients - including many he has foraged
himself. Preserving foraged ingredients for yearround
use is particularly important to Jack - with
techniques including pickling, fermenting and
turning produce into oils all ways in which Jack
gets the most from his bounty.
Jack says: “One of my favourite chefs Tommy Banks
talks about ‘the hunger gap’, which is the difficult
PARTNER TO WHITE FISH,
SUCH AS THIS TURBOT
time early in the year when very little fresh produce
can be harvested in the UK.
“To get through this, as we go through the year and
ingredients come into season we can make
the most of them by preserving things for
later use. It’s particularly useful when you get
to this time of year and there’s not so much
fresh, seasonal produce around.”
The first big target in Jack’s foraging
calendar is wild garlic, which usually comes
into season in February - weather permitting.
There are plenty of good garlic foraging
spots around Lichfield, where the plant
grows in abundance. One of Jack’s signature
dishes is his wild garlic popcorn, which he
serves year-round - meaning he needs to
stock up and preserve as much wild garlic as
he can when the time comes.
“I have to make around 40 to 50 litres of
OILS SUCH AS JACK’S WILD GARLIC OIL,
ARE A GOOD WAY TO PRESERVE FORAGED
INGREDIENTS FOR LATER USE
wild garlic oil to last me the year,” says Jack. “I use it
for popcorn mostly, but you can use it to dress a dish,
to make a mayonnaise to go with langoustines, there
are so many uses for it.
“You can also ferment the leaves, which gives a really
intense flavour. With wild garlic you also have the
buds before the plant starts flowering, the flowers
themselves which you can use as a fresh garnish,
and then a few weeks after the flowers have died the
garlic capers come out.
“You have to be there at exactly the right time to get
the capers though; and if it’s windy then you can
find they’re all gone. The capers are great though;
you have to salt them down for a couple of weeks
because they’re really hard, just like normal capers,
and then pickle them. They just explode with flavour,
you can use them in a beautiful sauce for fish, or to
add to a salad - they’re great if you really like garlic!”
When it comes to pickling, Jack mostly prefers to
use a neutral rice vinegar to let the flavour of the
produce shine through.
“For me, rice vinegar has the least amount of flavour
to it; it’s not overpowering. If you use something like
sherry vinegar it’s really tangy and can be too much.
“I use rice vinegar for most of my preserving. A
lot of chefs will have their own pickle recipes with
combinations of vinegar and aromats but, for me, I
feel it often masks the flavour of the ingredients.”
In the land-locked Midlands, Jack says after wild
garlic season is finished you should be on the lookout
for elderflower and cherry blossom - both of which
are perfect for making cordials. However, he says,
you need to be careful when foraging elderflower as
it has a near-identical appearance to a member of
the nightshade family.
“Elderflower grows everywhere but it has a similar
appearance to a nightshade plant so you need to
be careful; elderflower has an unmistakable scent
though, so if you’re unsure just smell it!”
While seasonal vegetables are thin on the ground
at this time of year, Jack says that a couple of lesscommon
root veggies are good to try right now.
“Jerusalem artichokes are great to use now; they’re
similar to a potato and are particularly great as a
delicious puree - I featured a Jerusalem artichoke
puree with some Jerusalem artichoke crisps on our
New Year’s Eve menu. You can also just roast them
whole, scoop out the flesh and cook it down with
some shallots, onion, garlic, then dry out the skins
and fill them back up like loaded skins. It’s really
versatile.”
Jack’s other top tip to try is kohlrabi, a member of
the turnip family which works particularly well with
white fish. The earthy flavour is brought out by using
plenty of butter in the cooking process - one of Jack’s
favourite ideas is to top and tail the kohlrabi and peel
with a knife before roasting in a pan with plenty of
butter then cooking slowly in a low oven until soft.
Jack’s top
seasonal tips:
Forage for: wild garlic - a great
addition to so many dishes, and perfect
for preserving in oils
Cook it now: Jerusalem artichoke
and kohlrabi - both delicious root
vegetables which can be used as an
alternative carb source to potatoes
WHEN: FEBRUARY 14 TO 18
The powerful bestselling courtroom thriller that inspired a multi Academy Award-nominated
mother. Smelling a cover up, he instead takes the case and the entire legal system to court...
This phenomenal and gripping courtroom thriller has been a huge success at theatres across
the UK and Ireland. With a cast led by Jason Merrells, known to millions for his roles in
Agatha Raisin, Emmerdale, Casualty, Waterloo Road and many more, it is one not to be
missed. To book tickets visit www.lichfieldgarrick.com
Wealth Matters
A MONTHLY REVIEW OF THE WORLD OF FINANCE FROM
LICHFIELD FINANCIAL ADVISER JEAN LAMB DipPFS
HOW DO YOU BUILD AND MAINTAIN WEALTH
IN TIMES OF RECESSION?
The term ‘recession’ has been bandied about a lot over
the last few months and I doubt that we have seen the end
of it yet. It is a depressing term, but one that few really
understand. Rather than go into the complexities of how
a recession is measured by economists, suffice to say it
is a downturn or shrinking of a country’s economy over
a period of time, and the reality of it is – it’s happened
before and it’s reasonable to assume it will happen again.
KEEP CALM AND CARRY ON
Therefore, it’s important to be prepared to deal with
a downturn in our financial lives. So think about how
to handle your short and long-term needs and, when
necessary, don’t be afraid to seek expert advice.
Market volatility can be unsettling, but is by no means
unusual, so keep your longer-term goals in mind and don’t
let it distract you away from them.
While speaking to your adviser is always a good idea
no matter what is going on in the wider world; during a
recession it becomes even more important. Watching stock
markets turn into rollercoasters can prompt some investors
to make rash knee-jerk decisions that could cause serious
damage to their long-term plans.
Fundamentally, it’s important to think about time in the
market, not timing the market.
HOW CAN WE MANAGE THROUGH A
RECESSION IN 2023?
There are actions you can take which may help smooth
your journey.
In a higher interest rate and higher inflation environment,
consider reducing any debt you have if you can; especially
if you have expensive credit card debt. You should also
look at increasing your emergency savings to avoid
you needing to access your ‘nest egg’ monies held in
investments for any emergencies.
If you have time on your side and money available to
invest, then market volatility can be beneficial. Falling
stock prices can be considered a buying opportunity. Fund
managers are well aware of this and will seek to find the
‘bargains’ on offer. Trying to time the very bottom of the
market is rarely a good idea. It’s having your money in
the market riding out any short term volatility that makes
most sense.
A way of potentially reducing risk is drip-feeding money
regularly into the markets over time to benefit from
‘pound-cost averaging’. This means that by investing the
same amount each month into a fund or market, when
prices are high you buy fewer units, but when prices are
low you buy more. As markets recover, the assets held
will average out, smoothing the volatility you would have
suffered had you put all your investment into the market in
one go.
When reviewing investments with clients at times like
these, I consider the most important actions to take are:
• Review your portfolio to ensure your investments are
well-placed to benefit from recovery. Then sit tight.
• Do not expect things to turn around overnight. If you
are lucky they just may do that, but history and common
sense tell us that the greatest likelihood of success rests in
being able to take the longer-term view and having the
patience to do so.
IN CONCLUSION
After nearly 33 years of investing and advising clients
on their investments, I have learned that whilst the song
may say ‘The Only Way Is Up’ in reality this is not true
for most investments on a day-to-day basis. However,
accepting this fact, taking the longer term view and
adopting a sensible approach should stand you in good
stead to reap the rewards investing can offer.
The value of an investment with St. James’s Place will be
directly linked to the performance of the funds you select
and the value can therefore go down as well as up. You
may get back less than you invested.
Sole mates
AS TEMPERATURES PLUMMET, MAKE SURE YOUR FEET STAY COSY AND
WARM IN THIS SEASON’S HOTTEST BOOTS, SAYS AMY NORBURY
WINTER boots. An undisputed wardrobe hero.
Your go-to footwear solution from the first frost,
right until the first shoots of spring start to
appear. When it comes to your winter wardrobe,
those boots are second only to your big coat, so
choosing the right pair is crucial. After all, you’ll
be seeing a lot of each other over the next few
months.
But with so many boots to choose from, which
way do you go? Ankle, knee or even thigh-high?
Everyday casual or fancy and fabulous?
Well, if chunky and platform shoes weren’t
already leading the way for footwear trends,
they will be imminently as this season’s winter
boots are all about the sole. Forget your stilettos
and leave your skyscraper block heels at home,
because for AW22, heels are minimal. Chunky
track soles were the hot ticket at many AW22
shows, with designers including Chloé, Bottega
Veneta and Jimmy Choo opting for fierce
footwear.
Chunky soles made an appearance on
everything from rain-friendly gumboots to
Chelsea-style boots, adding a trendy twist to a
selection of footwear favourites. So if you’re
going to invest in just one pair of hero boots this
season, make them chunky.
At least this trend is practical for the winter, as
snow, sleet, and salted roads call for shoes that
can stand up to the elements. While still looking
stylish, of course.
Biker and combat styles, too, are proving to be
particularly on-trend this year - with amped-up
soles, of course. So look out for the addition of
straps and tough embellishments like studs. Wear
with your everyday litany of jeans and leggings,
or give pretty dresses a 90s grunge-era twist by
pairing with statement boots.
B E AU T Y
Is being vegan good for your skin?
MORE AND MORE OF US ARE GIVING UP MEAT AND DAIRY FOR ALL MANNER OF REASONS – WHETHER
THAT’S ETHICAL, ENVIRONMENTAL OR HEALTH. IN FACT MORE THAN 620,000 PEOPLE SIGNED UP TO TAKE
THE 31-DAY VEGANUARY CHALLENGE LAST YEAR, UP 100,000 ON 2021. BUT CAN A VEGAN DIET BENEFIT
YOUR COMPLEXION? HEAVEN SKINCARE FOUNDER DEBORAH MITCHELL EXPLAINS
ON THE PLUS SIDE …
One of the benefits of a healthy – and I stress,
healthy – vegan diet is that it can be great for your
skin because it encourages you to eat more fruits
and vegetables. Because plant-based foods are rich
in antioxidants and bioactive compounds – such as
vitamin C, vitamin E and beta carotene – they lower
inflammation, promote blood flow and boost the
structural support of the skin.
Meat can have a toxic effect on our complexion,
especially when teamed with too much alcohol over
Christmas and New Year. So giving it up – even for
a couple of weeks – allows our bodies to detox in
a healthy way. When we detox, changes take place
in our skin: the jaw line becomes more defined as
fluid is released; and the under-eye area becomes
less swollen as the high salts in animal protein are no
longer present to retain water.
If you’re not ready to give up meat entirely, you
can instead ditch diary, especially if you suffer
from eczema or acne. There are many plant-based
alternatives readily available and almond milk, for
example, is naturally free of cholesterol, lactose
and saturated fat, while being rich in calcium and
essential vitamins A, D and E.
ON THE DOWNSIDE …
You do need to be aware of the negative impact
when opting for such a restrictive diet. Simply
replacing meat with carbohydrates, bingeing on
sugary snacks or eating the same processed meals
day in day out means you’ll miss out on healthy
nutrients and protein. This can lead to breakouts and
sensitivity issues; while a lack of iron and vitamin
B12 can cause dark circles under eyes as well as
brittle hair and nails.
MY ADVICE …
Maybe try a vegan diet for a month to start with, but
promise yourself you’ll combine it with a varied diet,
exercise and an effective skincare regime. In a couple
of weeks you’ll notice healthier, brighter skin and you
may even lose a few pounds too. Win win!
If you’re already a fully-fledged vegan or thinking
of going meat-free you can introduce these plantpowered
Heaven Skincare essentials into your daily
routine.
Nettle Venom Anti-Ageing Cream:
Traditionally, vegan ingredients haven’t made very
effective anti-ageing creams but with the patented
NETTATOXIN® the power comes from the skin’s
own rebuilding system to tighten and renew. With
regular use the skin continues this healing action,
smoothing lines as it does so.
Nettle Venom Eyes: When you apply around the
delicate eye area the body’s natural defence starts
to heal; of course there’s no damage but the skin is
tricked into thinking there has been. By using it daily,
it tackles dark circles and fine lines.
Nettle Venom Serum: Designed to be used
morning and evening as part of your regular skincare
routine, a little goes a long way; simply apply one or
two drops to your face and neck. Alternatively, you
can add a small amount to the Nettle Venom Anti-
Ageing Cream for supercharged results.
Nettle Venom Shoots: The leaves and roots of
nettles contain a wide range of nutrients, including
vitamins A, C and K, as well as several B vitamins.
They also contain calcium, iron, magnesium,
phosphorus, potassium and sodium. Together,
these act as antioxidants inside your body to defend
against damage from free radicals, which affect the
development and survival of cells.
Nettle Venom Polish: This potent exfoliator scuffs
away dead cells and clears pores, working effectively
on the upper layer of your skin to improve texture.
With its clever blend of phytotherapy ingredients
– including nettle leaves, echinacea and maple sap –
it’ll help alleviate fine lines and lighten pigmentation.
Nirmal explained that they are specialists in children’s
child’s vision fully and recommend the best solutions
possible if they need corrective eyewear.
“One of the most common childhood vision
problems is called myopia, also known as shortsightedness.
Myopia occurs when children’s eyes
grow more than they should. When this process
doesn’t stop, we call it myopia progression.
“Today most myopic children wear glasses with
standard ophthalmic lenses. These lenses correct
myopia and allow children to see clearly. However
their myopia might still be worsening. This means
that as children grow, their myopia may progress,
requiring stronger prescriptions. The more the
correction grows, the more they are dependent on
increases. High myopia is a major concern nowadays,
with almost one billion people worldwide expected
to be affected by it by 2050. This is important
because high myopia can increase the risks of vision
impairment later in life.”
Myopia control lenses are used for slowing down the
progression while Eyeland also offer ‘Misight,’ a daily
Varis says: “My passion
for building comes
from my dad, who was
a reputable builder
and taught me much
about construction. I
completed my Civil
Engineer degree at
university in Riga. I did
about five years in a
managing position in a
well-known development
company before I
decided to change my
native country (Latvia,
Riga) and permanently move to the UK.
“I have been trading in the Sutton Coldfield area
under the name AVM Construction Services -
www.avmconstructionservices.co.uk - for
more than ten years. I started as a self-employed
builder with an excellent managing background
in construction and gradually grew into a limited
company with an outstanding reputation. With my
knowledge and close attention to detail and quality,
I started with simple projects, and now we cooperate
with exceptional architects and build attractive,
complicated projects.
“The idea of garden rooms has something we had
been looking at for a while. I was always very excited
that we could deliver to our clients a high-quality
project in cooperation with exceptional designers and
engineers. And then the pandemic triggered this new
business venture for us as many people discovered
the benefit of this type of building.
“The main advantages of the garden rooms are
that they add more space to the property, as well as
adding to the house’s value. Once the project is built,
clients can transform it into anything they like.
“We thoroughly pick top-quality materials from
our suppliers with proven long-lasting durability—
most of the materials come with up to 30 years of
manufacturer’s warranty. We designed our rooms to
be maintenance-free and can be used all year round
because of the quality insulation we calculate and
use for each project.
“This type of building is getting more and more
popular, and we are receiving a lot of enquiries
about creating offices, gyms, chill-out rooms, cinemas
and more.
“We have an excellent team to design, manufacture
and develop any bespoke type of room. Clients can
use it for personal needs or as an individual business
premise. We often help our customers complete the
project by connecting it to the primary power source,
broadband or intelligent system.
“Last year we became an official distributor of
the innovative Controll4 smart home system,
which we successfully integrated into some of our
completed projects, including garden rooms. We can
build anything from high-quality cinemas to fully
equipped gyms in cooperation with leading brands
and reputable local installation companies. Our
team constantly works on new designs and product
improvements, and I am very excited and have high
expectations for this business’s future.”
