Instructions<br />
1. To makethe blini, first warm themilk, being carefulnot to boil it.<br />
2. Mix the flours and addthe yeast and thecreme fraiche, then stirin<br />
the milkand the egg yolks. Beat together well.<br />
3. Warm the butterand addhalfofittothe mix,incorporating well<br />
(keep the other half to fry the pancakelater).<br />
4. Whiskthe eggwhites to stiffpeaks andfoldthem in to the mixture.<br />
5. Next, heat afrying pan and addthe remaining butter, thenadd<br />
the batter and fry one side on alow heat for3-4 minutes. When<br />
bubbles appear on thetop and around thesides of thepan, flip it<br />
