the City!<br />

Phew! It is HOT outside! As summer comes to a calendar<br />

close, we Floridians know there is still a lot of heat coming<br />

our way. <strong>August</strong> is typically our hottest month of the year<br />

and most of us can’t wait for it to be over…which brings<br />

me to – it’s Back to School! Whoo hoo! While our school aged kids<br />

are probably struggling with an end to carefree no homework days,<br />

I’m sure they are also full of anticipation and excitement to see their<br />

friends again. And parents, let’s be honest – we love it when the kids<br />

are back on a regular routine.<br />

Now that the kids are headed back to school, take a little time and<br />

get back to you! You’ve been entertaining them and possibly family<br />

and friends all summer – it’s time for some TLC and self-care. Delray<br />

has many options for treating yourself (or your spouse) to some<br />

well deserved me time. Start an exercise program, begin a healthy<br />

eating regimen, visit a spa, change your hairstyle. Visit one of our<br />

Our City Person this month is Delray Police Officer Danny Pacheco<br />

that didn’t stop him from personifying the American<br />

Dream. He worked every job he could to save<br />

enough money to go to university, with a<br />

double major! But that is just the tip of the<br />

iceberg – he also serves our community<br />

Trail in Boca Raton. All proceeds will benefit ACCF programs, serving more than 500<br />

local children and families.<br />

Farmer’s Table Executive Chef Bruce Feingold will feature his culinary skills for<br />

attendees, by teaching the art of charcuterie; demonstrating which items pair best,<br />

and how to make the board look delectable. Event tickets are $75.00, and include:<br />

two complimentary beer or wine per person; light bites; and an ACCF-branded apron.<br />

is hosting “Goodstock”,<br />

a community-wide day<br />

of music, crafts and<br />

charity on <strong>August</strong> 13,<br />

outside at The Oasis at<br />

Milagro Center, 340 SW 6th <strong>Ave</strong>nue in Delray Beach.<br />

“Goodstock” will feature non-stop activities from 12:00pm – 5:00pm including<br />

a craft fair with 25 vendors, a special “Showcase of Milagro Talent”, the headlining<br />

band, “Strawberry Lane” from 2:00pm – 4:00pm, Karaoke, food trucks, a drum circle,<br />

the Delray Beach Party Truck, The Boca Pointe Clowns on Call face painting, and so<br />

much more! The event will be free to the public with a $5 suggested donation.<br />

During the event, Milagro Center will be distributing new school uniforms and gift<br />

cards for school clothing that were donated by generous community partners to underserved<br />

youth to ensure that they are prepared for the upcoming school year.<br />

In preparation for the craft fair that will be held during “Goodstock”, Milagro Center<br />

is in the process of securing 20 local vendors to sell a variety of products from soaps<br />

Conservation Participates<br />

in “MAD” Week<br />

The Institute for Regional Conservation (IRC) participated in<br />

Make A Difference (MAD) Week again this year by hosting<br />

events in both Palm Beach and Miami-Dade counties. This is<br />

an annual week-long event with a global impact hosted by the<br />

Society for Ecological Restoration (SER). SER is a global nonprofit<br />

organization that works to advance the science, practice,<br />

and policy of ecological restoration to sustain biodiversity,<br />

improve resilience in a changing climate, and re-establish an<br />

ecologically healthy relationship between nature and culture.<br />

In Palm Beach County, volunteers joined IRC for a restoration<br />

volunteer day at South Beach Park in Boca Raton on June<br />

11 as part of IRC’s Restoring the Gold Coast program. Together,<br />

they removed two large patches of non-native, invasive Scaevola<br />

taccada (beach naupaka) to make room for native species.<br />

They also removed over 70 pounds of trash from the beach<br />

and planted 10 federally endangered Jacquemontia reclinata<br />

(beach clustervine). IRC appreciates the support of the City of<br />

Boca Raton and all of their wonderful volunteers for making<br />

events like this possible!<br />

According to George Gann, Executive Director for IRC and International<br />

Policy Lead for SER, “We appreciate the opportunity<br />

to facilitate local restoration action that has a global impact<br />

through events like Make a Difference Week. Only by working<br />

together at all scales will we be able to restore native ecosystems<br />

988-dialing code, in addition to the existing toll-free number,<br />

1-800-273-TALK. On July 16, the U.S. officially transitioned to<br />

using the 988-dialing code.<br />

988 is an easy-to-remember number for crisis response regarding<br />

mental health, substance use, and suicide. Therefore,<br />

the volume of mental health, substance use, and suicide crisis<br />

calls to 988 is expected to significantly increase with the implementation<br />

of this number. The new number, however, will not<br />

replace other community numbers such as 911 or 211.<br />

988 is a direct connection to compassionate, accessible care<br />

and support for anyone needing behavioral health-related crisis<br />

response – whether they are experiencing thoughts of suicide,<br />

or mental health or substance use crisis. People can also<br />

dial 988 if they are worried about a loved one who may need<br />

crisis support.<br />

The National Suicide & Crisis Lifeline is a national network<br />

of approximately 200 locally operated crisis centers, many of<br />

which are also 211 network centers.<br />

“A call to 211 or 988 provides immediate access to someone<br />

trained in crisis response, who can provide immediate support.<br />

211 Broward is proud to continue its partnership with<br />

the National Suicide & Crisis Lifeline and to work with key<br />

mental health partners in the local community, including mobile<br />

crisis response teams.” says Sheila Smith, President/CEO<br />

of 211 Broward.<br />

Senior Dogs at the<br />

Pet Cottage Fetch a<br />

Non-Profit Grant<br />

Old dogs have something<br />

to wag about this summer,<br />

as The Grey Muzzle Organization<br />

announces the recipients<br />

of its annual grants,<br />

and dogs at The Pet Cottage<br />

are among the winners.<br />

The Pet Cottage in Jupiter<br />

is one of 77 animal welfare<br />

groups chosen from 266 applicants nationwide to receive a<br />

grant to help local senior dogs and they were awarded $5000.<br />

The winning groups received a total of more than $616,000 in<br />

grants to help save or improve the lives of at-risk older dogs<br />

in their communities.<br />

“This grant will help us give senior dogs like 15-year-old Grover<br />

the veterinary and dental care he needs to live out his best<br />

life,” said Wendy Derhak, Executive Director of The Pet Cottage.<br />

her leadership in Boca Raton and<br />

Delray Beach, it turns out Eileen’s hunch was<br />

right.<br />

NY: The Early Years<br />

Eileen grew up in Long Island and graduated<br />

from the New York Institute of Technology<br />

with a degree in business administration.<br />

Fresh out of college she worked for an entertainment<br />

company in Manhattan but quickly<br />

grew frustrated by the limited opportunities<br />

for advancement.<br />

Craving a career with greater flexibility and<br />

limitless potential, Eileen also knew she<br />

wanted to raise a family and help others<br />

succeed. Real estate provided the opportunity<br />

to have it all.<br />

Eileen recalls, “I signed up for a real estate<br />

salesperson’s course that same week that I<br />

bought my fourth house and joined Prudential<br />

Long Island Realty (now Douglas Elliman)<br />

after passing the test,” Eileen continues,<br />

“I loved that I could be an entrepreneur and<br />

be in charge of my own destiny. My first year<br />

in the business, 1986, I was “Rookie of the<br />

Year” with 38 closed transactions. Subsequently,<br />

I was also Top Producer of the year.”<br />

The Florida Move<br />

“In 2002, my husband and I moved to Boca<br />

Raton with three young children in tow,” Eileen<br />

continues. “I always stayed active in sales<br />

but my most cherished prize are my three<br />

children, all grown up now.”<br />

Eileen opened Realty Home Advisors in<br />

Boca Raton in 2017 and credits her daily<br />

presence in the office as one of the primary<br />

reasons agents love working at RHA.<br />

“As an owner, I wake up every day feeling<br />

gratitude that I can be there to help my<br />

agents and be their biggest cheerleader. I am<br />

very hands on for a broker and I think the<br />

agents appreciate that personal touch, the<br />

one-onone. I am always there for them 24/7.”<br />

Eileen notes Realty Home Advisors also<br />

offers a growing number of learning opportunities<br />

for agents, veterans and rookies alike,<br />

that really help retention and growth. “We<br />

do business planning, coaching, role playing,<br />

consulting, contract guidance and disputes,”<br />

Eileen explains. “Every Wednesday we have<br />

a team call at 9:30 am where I will pick a<br />

different topic to discuss followed by a Q&A<br />

session afterwards.” Last year, Realty Home<br />

Advisors sales volume was $512 million, and<br />

according to Eileen, <strong>2022</strong> seems to be on a<br />

similar pace with families flocking to the east<br />

coast of Florida from the Northeast. Not one<br />

for the spotlight, Eileen is quick to give credit<br />

to her hard-working team for RHA’s success.<br />

Leading with A Personal Touch<br />

“Today is the first day of the rest of your life.”<br />

“I was always fascinated by the real estate market and bought my first house<br />

when I was 25… I actually owned four houses myself by the time I was 28.”<br />

Eileen McNamara Vecchio recalls. “I rented the houses out… and while looking<br />

for investment property, I remember thinking I could be good at this.”<br />

“I couldn’t do this without my amazing<br />

staff… All the right people are in place<br />

and agents often remark how everything is<br />

running like a welloiled machine. We have six<br />

Personal Business Coordinators that manage<br />

the REALTORS® transactions and every<br />

agent is paid within 24 hours of closing.”<br />

When pressed for details as to why she thinks<br />

her agents stick around, Eileen points out<br />

there’s absolutely no red tape at her brokerage.<br />

Eileen says, “I try to listen to my agents<br />

when they express a need and adjust accordingly.<br />

I know my agents also enjoy the fact<br />

that we are an independent brokerage; we can<br />

be flexible when needed without having to go<br />

through layers of management… I can make<br />

the decision right there on the spot.”<br />

When Eileen isn’t at her desk, she enjoys<br />

traveling, being in nature and spending time<br />

with her family and three kittens, two of<br />

whom she rescued. Eileen plans to eventually<br />

scale back her time in the office to focus on<br />

her family, but she never plans to stop doing<br />

what she loves – helping others succeed.<br />

With a father who is also a real estate broker,<br />

a son who is a practicing real estate attorney,<br />

and a daughter who is a commercial property<br />

manager, Eileen would not be surprised if one<br />

of her children eventually took over RHA.<br />

“When they were growing up, my kids heard<br />

me on the phone talking about real estate all<br />

day long because I was doing sales back then,”<br />

Eileen laughs. “So we shall see… but that would<br />

be wonderful if it all works out some day.”<br />

Eileen looks forward to cheerleading from<br />

her broker desk and offers some sage advice<br />

to owners and agents alike: “It’s always<br />

important to have a business plan and to set<br />

goals, have a great attitude and live every day<br />

with a schedule to achieve those goals.”<br />

On the 10th anniversary of empowering women and children,<br />

Suits, Stilettos & Lipstick Foundation will award eight deserving<br />

women the Heidi Dennis Wonder Woman Scholarship<br />

Suits, Stilettos and Lipstick (SSL) Foundation will be celebrating<br />

SSL Day with its annual Scholarship Awards Ceremony and Cocktail<br />

Reception on <strong>August</strong> 25 at the Pelican Grand Beach Resort from<br />

Hi everyone. My name is Brooke Marquez, Permanent<br />

Makeup Artist. I am thrilled to tell you I’ve joined<br />

the staff of Changing Faces Makeup & Spa. I<br />

come from Baltimore with 3 plus years of experience and<br />

7 certifications under my belt. After attending the <strong>Ave</strong>da<br />

Institute DC for esthetics in 2009 I ventured off to New<br />

York City and worked as a makeup artist. I had success<br />

in getting my work featured in books and magazines and<br />

worked in fashion week. With my love of tattoos, make up,<br />

and skin care, Permanent Makeup was the obvious next<br />

step for my career and I have been knocking it out of the<br />

Like a Big Town. Delray has it all. With a bustling downtown, Pineapple<br />

ELLIE’S 50’S DINER<br />

Everyone’s Happy Place Says Goodbye<br />

Ellie’s Diner has always been a<br />

place where you could shut the<br />

curtain on the present and live in<br />

the past – specifically the 50s.<br />

Waitresses dressed up in 50s garb complete with<br />

poodle skirts and bobby socks, and a life-size statue<br />

of Marilyn Monroe stood tall at the entrance to the<br />

Marilyn room.<br />

But Marilyn is gone now – and so is the constant swirl of<br />

servers who glided along the black and white check linoleum<br />

floor with plates of comfort food.<br />

Many of the customers at Ellie’s were in an unspoken club<br />

– that of Superfan. Tricia Behn has been eating at Ellie’s since<br />

it opened, and had her son’s 16th birthday party there (he is<br />

now 44). The Simon family held court for the past 32 years<br />

and Fifth <strong>Ave</strong>nue Grill founder Tom Blum was also a regular.<br />

There were 50s inspired concerts in the Flamingo Ballroom<br />

and classic-car nights that heralded the slick yet sweet innocence<br />

of the 50s with the cool level heads of engine expertise.<br />

As a way to say goodbye, and pay homage to their loyal customers<br />

(like former assistant Fire Chief Mike Widerson) Bob<br />

Bob, owner, with his cousin Bob and Linda Wellman<br />

and Ellie had one last party.<br />

Most of the customers sat at large round tables quietly absorbing<br />

the demise of their favorite local haunt, while Florida<br />

newcomer Robin Schultzer twirled joyfully on the dance floor.<br />

Others feasted at the buffet of burgers, hot dogs, pasta and<br />

whatever was left in the kitchen.<br />

We say goodbye to Ellie’s with tears in our eyes and joy in<br />

our hearts. Goodbye Bob and Ellie (and of course Marilyn).<br />

We’ll miss you!<br />

In Sony’s action movie Bullet Train, Brad Pitt stars as “Ladybug,”<br />

an unlucky assassin determined to do his job peacefully after<br />

one too many gigs gone off the rails. Fate, however, may have<br />

other plans, as Ladybug’s latest mission puts him on a collision<br />

course with lethal adversaries from around the globe – all with<br />

connected, yet conflicting, objectives – on the world’s fastest<br />

of the joint. In most cases, this dysfunction is caused by<br />

spastic muscles. When the muscles on one side of the jaw are in<br />

spasm and one side is not, the joint will not move properly causing<br />

pain, popping or clicking.<br />

How does someone get TMJ-D or TMD? Excessive jaw movements,<br />

yawning, and chewing gum with abnormal movements<br />

can erode the disk. Whiplash injuries or traumatic blows to the<br />

head have been shown to be associated with both TMD and neck<br />

pain. People suffering from arthritis such as Rheumatoid arthritis<br />

are shown to have some TMJ issues. Poor posture in the cervical<br />

and thoracic spines has been shown to be associated with TMD.<br />

Treatments for TMD can be very simple to very complex. TMJ.<br />

org states that conservative reversible treatments should be exhausted<br />

prior to any surgery. What is a conservative treatment?<br />

Well, anything that doesn’t involve surgery or puncture the skin.<br />

With that being said, your first step should be to seek out a dentist<br />

that specializes in TMJ. Get a night guard made. Don’t chew<br />

gum. Do not try to make the jaw click or pop by causing excessive<br />

opening. Find a chiropractor. Yes, find a chiropractor who knows<br />

how to work on the TMJ. Chiropractors have an education that<br />

extends further than just the spine. Chiropractors are trained on<br />

the proper motion of not only the spine, but all the joints in the<br />

body. They are also trained on how to get those joints to move<br />

properly. If the muscles are in spasm, there is swelling from associated<br />

dysfunction of the joints. Chiropractors can get those<br />

muscles loose which allows proper movement of the joints.<br />

Proper movement of the joints and the mechanoreceptors of<br />

the joints send signals to the brain that everything is working<br />

as it should. Chiropractors can also adjust your cervical spine<br />

(neck) and help with the muscles and joints related to posture.<br />

Proper motion in the joints equal proper function!<br />

Class IV cold laser therapy has also been shown to reduce inflammation<br />

in the TMJ as well as calm down any associated nerve<br />

pain that may be coming from the area. Once you have exhausted<br />

all of these options, and they have not worked, then it may be<br />

time to consider something more invasive.<br />

The moral of the story is: Don’t wait. If you’re suffering from<br />

TempoMandibular Disorder (TMD) there are specialists ready to<br />

help alleviate your pain and discomfort.<br />

Summer has come to a close and now it’s back to the<br />

school year grind. Summer is a time for loose schedules…<br />

aka missed workouts, family vacations…lots of extra<br />

calories and kids to entertain. No time to yourself!<br />

Although fun and exciting, all these summer activities can wreak<br />

havoc on the body and make getting back on track that much<br />

harder. There is no better time than now to make your fitness<br />

regime part of that “grind.” Here are a few tips to get back on track,<br />

feeling good and beat those summer blues.<br />

The first and most important component of getting back on track<br />

is to have a “fitness” plan and to set a goal for yourself. Setting a fitness<br />

plan could be as simple as saying you’re going to get to the gym<br />

3x per week. Make sure it’s at a time that will not be interrupted and<br />

a time that will work for you. Next up is to set a small goal. Having a<br />

“specific” goal will allow you to focus on training and give you extra<br />

motivation to exercise. It’s a lot easier to make it to the finish line if<br />

you have an attainable goal in sight. Whatever this goal may be, write<br />

it down and put it somewhere where you will be reminded of it everyday.<br />

Committing your goal to paper and seeing the written words are<br />

more powerful than just having a thought or talking about it.<br />

Next order of business would be for you to get your eating in check!<br />

I highly recommend keeping a daily food log of exactly everything that<br />

you are consuming…the good, the bad and the ugly! This will help you<br />

easily pinpoint your strengths and weaknesses. Make sure to get in<br />

the proper mix of lean protein, complex carbohydrates, healthy fats<br />

and of course lots of veggies. Skip anything that is processed and stick<br />

to all homemade prepared meals (yes, with preparation and thought…<br />

you can do it!) The other nutrition component is water! Your body<br />

can not properly burn fat if it is dehydrated. It’s such a simple thing<br />

many people don’t do. Aim for 1oz of water per pound of bodyweight.<br />

Drinking proper amounts of water will also help to keep you feeling<br />

full, flush out toxins and help de-bloat you faster than you may realize.<br />

So get out that gallon and start your chuggin!<br />

The last step to help you get back on track is to find an accountability<br />

partner. Surely you can find someone…a friend, the neighbor,<br />

your dog (just kidding!) who is looking to get in shape or even just<br />

live a healthier lifestyle. An accountability partner will help keep<br />

you on track and honest. I see greater fitness retention when friends<br />

pair up. Think about it….you’re much less likely to skip your workout<br />

if someone is meeting you and it gives you someone to call when<br />

you’re ready to throw in the towel.<br />

If you follow these three principles it should help you get back on<br />

track in no time! My last piece of advice, don’t do the old…”I’ll start<br />

on Monday!” There is no better time to start than now! Come up with<br />

a plan, set a goal, clean up your eating, grab a friend and get moving!<br />

You’ll be glad you did.<br />

Supplies on a Budget<br />

It is possible to get your kids stocked<br />

up on their essential school supplies<br />

on a budget, it just takes a little bit of<br />

homework, planning, and preparation.<br />

The month of <strong>August</strong> can be expensive!<br />

Kids starting back to<br />

school, particularly if you have<br />

more than one, can be overwhelming<br />

with everything you need to buy. A little<br />

bit of planning and online research<br />

can help minimize those costs and take<br />

away some of the headaches.<br />

Let’s get started with ‘stationery’<br />

requirements. It’s best to check out<br />

what your child’s teacher/school suggest<br />

they bring with them on their<br />

first day. This will usually be posted on<br />

the school website and can be slightly<br />

different depending on which grade.<br />

My first suggestion is to check your<br />

home stock, you might be surprised!<br />

See what you have that can fulfil the<br />

schools’ requirements and save $$$.<br />

I know that my office is full of pens,<br />

pencils, paperclips, notebooks and more. Re-use and repurpose binders and folders, even adding stickers<br />

to make them look refreshed. Clean and fix up older backpacks and pencil cases that you have,<br />

maybe even dye them a bright new color to give them a new lease of life and another school year!<br />

It is not usually essential to send everything on the teachers ‘wish list’ in to school on day<br />

one. Try spreading the cost by buying some things next month. I’m pretty<br />

sure they don’t need 3 boxes of tissues on the first day of school.<br />

Now onto the research. This is an especially important step in<br />

getting the best deals for those essential back to school items that<br />

you do not already have at home! Florida offers a ‘back to school<br />

tax free holiday,’ a perfect time to save an instant 6% if you buy in<br />

this timeframe. This year it is July 31st through <strong>August</strong> 9th, so be<br />

on the lookout for doorbusters, bulk buying, sales and coupons,<br />

where many a deal can be found. Lots of retailers are offering<br />

great bargains this time of year.<br />

Now let us look at their school clothes/uniforms. We<br />

know that kids grow way too fast and very often don’t<br />

wear out their clothes. Why not make a visit to your<br />

local thrift store? Jackets, jeans, shorts, shoes, and<br />

sneakers can often be found at a fraction of the store<br />

prices. If your local thrift stores are not coming up<br />

with the goods, then try Facebook or Nextdoor. Interact<br />

with fellow moms in your area or create a group<br />

where you can do a clothing/backpack/lunchbox exchange.<br />

Where your child was once into Paw Patrol or<br />

Lion King, they now may like Star Wars or Spiderman -<br />

and in an exchange everyone wins!<br />

From High-SCHOOL TO College<br />

One Huge Step for Students and<br />

One Giant Leap for Parents!<br />

If you have a child going off to college this <strong>August</strong>,<br />

based on my experience, you are in for a roller<br />

coaster of emotions. But it does get easier, I promise!<br />

My son was heading off to FSU (Florida State University) in<br />

the summer of 2018. It was something I had kept parked<br />

towards the back of my mind in the buildup to <strong>August</strong> of<br />

that year. I really did not want to face the emotions that I knew<br />

were brewing inside me and I knew could boil over at any time.<br />

First of all, this would be the first time he would be living away from<br />

home and secondly IT WAS SO FAR AWAY!<br />

We did lots of preparing. The dorm room was chosen, the dorm<br />

friends agreed, the mattress topper had arrived, two sets of sheets<br />

and the comforter were all ready to go. We had invested in an air<br />

purifier to keep him and his roommate as germ free as possible.<br />

We purchased a TV, cables, a fan, a lamp, new towels, clothes, and<br />

bathroom supplies, especially cleaning wipes!!<br />

I was forever making and adding to lists and I think this is what<br />

kept my mind quiet. I was busy preparing for my sons’ ultimate<br />

departure and doing everything to stop me from dwelling on the<br />

ever-looming day!<br />

I added things to those lists that I don’t think he has ever used in<br />

his three years at college, but I wanted to make sure he was<br />

man, when will he ever use an air freshener spray, an umbrella<br />

or toilet cleaner?<br />

We booked our accommodation in Tallahassee ahead of<br />

time as we planned to be there for the whole weekend… Just to<br />

eke it out as long as possible and to keep the ‘Goodbyes’ at bay.<br />

A week or two before our ‘parting’ day I was beginning to<br />

become a bit weepy. As almost all planning was complete, I<br />

had nothing else to focus my mind on except that he would<br />

soon be gone. I tried to stay strong and composed in front of<br />

my son as he seemed to be coping so well. He was confident<br />

and excited and ultimately this was the day we had been preparing<br />

him for his whole life.<br />

With our cars loaded, my husband, daughter, son-in-law, son<br />

and myself made our way to Tallahassee, which from South<br />

Florida is at least a 6-hour drive. So far, so good! We made it<br />

to Tally in good time considering it was move in week for all<br />

colleges in Florida. We all stayed together the first night and<br />

were up bright and breezy on the Saturday morning to start<br />

the move-in process. It all went well. I tried to get the place as<br />

clean as possible as that is a “mom” thing to do but as my son<br />

didn’t want anything fancy in his dorm, he was settled within<br />

a few hours, and that is a “son” thing!<br />

We were all done by midday and the next 24 hours were a<br />

blur and a mixture of eating out and finding our way around<br />

Tallahassee. However, our farewells were imminent. I could feel<br />

myself getting choked up and the tears were never far away.<br />

I have to say that our goodbye on Sunday was a relatively<br />

quick affair, for which I am thankful. No point dragging it out<br />

and upsetting my son.<br />

I cried on and off for a few days. At first, grocery shopping<br />

was hard, seeing his favorite foods that I no longer needed to<br />

buy, and the house seemed so quiet without him. A part of us<br />

was missing, but slowly, we have adjusted to our new normal. I<br />

have been extremely fortunate that our son has chosen to keep<br />

in touch on a regular basis, so I don’t feel like I am harassing<br />

him. I still fret the whole time he is driving to or from Tally and<br />

I still get upset whenever he leaves to head back up north but, it<br />

has become a lot easier - and once he arrives back at college our<br />

lives resume to our new ‘normal.’<br />

On paper, Bob Costin<br />

and I shouldn’t have<br />

been friends.<br />

He was tall. I’m short. He loved the Red<br />

Sox, I love the Yankees. He was a Republican,<br />

I’m a Democrat. He wasn’t keen on<br />

Chinese food and loved lobster. I live for orange<br />

chicken and can’t even look at a lobster.<br />

Bob Costin was 30 years older than me when we<br />

lost him last week. He lived a long and very good<br />

life but losing him sure does hurt. He’s family.<br />

Diane and I love Bob and his lovely wife Sonya.<br />

We are not alone. Everyone who knew Bob<br />

- and there were many - loved him. He was warm,<br />

funny, optimistic, smart, sensitive, caring, openminded<br />

and lived one heck of a life.<br />

Bob and Sonya owned Costin’s Florist in downtown<br />

Delray for decades and Bob became president<br />

of FTD, rising to the top of his profession. He<br />

travelled the world for FTD and was famously in<br />

Iran when the Shah was overthrown. He and his<br />

contingent had to run through the airport to escape<br />

when the country fell to the Ayatollah.<br />

He told stories with gusto and wit, and we<br />

hung on every word. I will miss those stories.<br />

And I’ll miss the calls when we discussed the news<br />

of the day. We were different people from different<br />

generations, but we always found common ground.<br />

Diane grew close to Bob when he served as a<br />

CRA commissioner. He was a really good CRA<br />

commissioner and very supportive of staff and<br />

his fellow commissioners. He would later run for<br />

and serve a term on the City Commission. I had<br />

the pleasure of sitting next to Bob on the dais. We<br />

called him the “high commissioner” in deference<br />

to his 6’5” height.<br />

I relied on Bob. I truly did. I valued his experience<br />

and his commonsense wisdom. He was the<br />

opposite of me in terms of temperament, and I<br />

needed his quiet mentoring. He was calm, I was<br />

high strung. He had decades of perspective; I was<br />

still a young man in my 30s.<br />

Having Bob on the commission gave us confidence and I knew he<br />

had my back. He had a sparkle in his eye when he looked at you that<br />

put you at ease even during the tensest of moments.<br />

I knew he believed in what we were doing and that gave me comfort.<br />

He had a gentle way of framing issues and injecting humor and<br />

common sense into the conversations we were having with each other<br />

and with the community.<br />

We were change agents. We were moving things forward, making<br />

noise, pushing ideas, and driving hard and fast. But we were also having<br />

fun—largely because of Bob.<br />

He set the tone. And he calmed the waters too.<br />

Bob would amble over to The Green Owl every morning where<br />

there used to be a table of civic fathers (all men, no women) who sat<br />

and held court. I liked all the men who sat at the table—Ernie Simon,<br />

Mayor Leon Weekes, Charlie Gwynn, Ken Ellingsworth, Bob Miller, and<br />

a few others. All civic giants; all long-term players.<br />

I think most were OK with me, but I wasn’t a peer. I wasn’t one of<br />

them. Bob was. And if they had a beef with a decision we made, Bob<br />

explained the rationale behind the vote and smoothed the waters. He<br />

knew how to lead with grace. Even when he disagreed with you; he<br />

was affable. He showed respect for others, and he was respected by<br />

all as a result.<br />

Bob Costin was old school. A flip phone. No email. When we would<br />

comment on the large volume of emails we were getting on a hot issue,<br />

Bob would smile. “I didn’t get any,” he would say. “My modem must be<br />

down.” And then he would laugh, that big, garrulous, wonderful and<br />

warm laugh. I wish I had a dollar for every time he used the “modem”<br />

line which was always followed by that laugh.<br />

I liked so much about Bob, but I loved three things the most.<br />

First, his hunger for knowledge and his ability to keep an open<br />

mind. Sometimes people of a certain vintage get a reputation of being<br />

closed off to change. Not Bob. He was willing to try things. Willing<br />

to take a leap. “We have to keep up with the times,” he’d say. “People<br />

will understand.”<br />

I also loved how much he was devoted to Sonya, a teacher who<br />

ended up working alongside Bob at the florist. They were quite a pair,<br />

married for 65 years. They did so much together. Travel, RV adventures,<br />

a dream lake house in Georgia and an occasional Red Sox game.<br />

Ugh, those Red Sox. Bob would call me if the Sox beat the Yankees and<br />

rub it in. I was not above giving it back to him.<br />

When we invited Bucky Dent to get a proclamation on the 25th anniversary<br />

of his epic home run to beat the Sox at Fenway in 1978, Bob<br />

whipped out a Red Sox cap as Bucky came to the mic. It was an epic<br />

Bob when he was president of FTD AT the White House with BeTTY Ford.<br />

He was a calming influence on the DAIS.<br />

moment. And everyone, including Bucky, laughed. They traded some<br />

good-natured barbs, and a special moment was made immortal.<br />

Bob used to joke that he lived on Federal Highway before living on<br />

Federal Highway was cool. The Costin’s had a cottage on U.S. 1 where<br />

Putt N’ Around now sits. He lived there before the townhomes made<br />

the neighborhood fashionable. His cottage was moved and is now an<br />

office in the Old School Square Historic Arts District. I drive by it frequently<br />

and last week when I passed by, I got a lump in my throat.<br />

I remember Bob calling from Georgia and asking about his house<br />

after a hurricane. Would I go by and check on it? Sure, Bob. Of course,<br />

I would tell him that it was gone, trying my best to sell that story, but<br />

all I heard was that laugh.<br />

“You know Jeff,” he would say. “I would’ve emailed you, but my modem<br />

is down.”<br />

Bob served two years on the commission, opening a seat for Rita<br />

Ellis to secure. Rita would follow me as Mayor.<br />

We continued to stay in touch, often going to dinner—but never Chinese.<br />

“Next time, Jeff,” he would say. So, we kept going to Longhorn and<br />

a few times to Il Girasole.<br />

We talked Delray. We talked national news. We met up at a wedding<br />

in Italy. We met Bob and Sonya’s RV friends and we avoided Chinese<br />

food and email. And we talked about my kids.<br />

And that’s my third favorite thing about Bob. He was genuinely concerned<br />

for your kids and family. He adored Commissioner Jon Levinson<br />

and his wife and their three daughters and attended many a dinner<br />

at their home, including holidays.<br />

When I got Covid, Bob, who finally got a smart phone, texted me<br />

encouraging words. Every single day. Don’t give up. He wrote. You’ll be<br />

ok. He texted. And I didn’t. And I was. Eventually.<br />

Lately, Bob was sick.<br />

Diane and I went to see him. He smiled. He looked different but still<br />

had that wonderful voice. His last words to us were “I love you guys.”<br />

We said it back.<br />

And now that he’s gone, I realize something. Bob’s modem was<br />

never down. A modem is a device that is used to transmit and receive<br />

information.<br />

That was our Bob. He brought us information from a place of goodness,<br />

kindness, and love.<br />

Love for people, love for community, love for Delray Beach.<br />

We will miss this man. He was the high commissioner, a wonderful<br />

man, and a friend to so, so many.<br />

We love you Bob.<br />

A Fantasy Trip<br />

Around Ring Road<br />

The entire country is about the size of Maine, but with volcanoes,<br />

icebergs, mountains, black sand beaches, and majestic<br />

fjords, there is much to see and savor. The sea in all its colors<br />

and turbulence is always steps away.<br />

To see Iceland at its best, take the Ring Road. This is a circumference<br />

road that circles the entire country. By renting a car, or for<br />

those who wish more adventure by renting a camper, you can take<br />

Ring Road around the island and catch the true flavor, cuisine, cities,<br />

farms, and people in all their splendor.<br />

I recommend you take the Ring Road counterclockwise for<br />

two reasons. One, you will be traveling the most beautiful parts<br />

of the country first giving you the option to stay in a place longer.<br />

You may not have the time if you wait until the end of your trip.<br />

Two, you run counter to most of the tourists and will encounter<br />

less congestion.<br />

Renting a 4X4 will give you access to the entire country, especially<br />

if you want to make a side trip off Ring Road. If you camp,<br />

there are campgrounds in every town and city at a nominal cost.<br />

Whatever you’ve heard, whatever you’ve read, whatever pictures or<br />

videos you’ve seen, they cannot capture the raw, stunning beauty of<br />

Iceland. The best time to visit is the summer and the breathtaking<br />

countryside is just outside of Reykjavik, the capital city.<br />

though, with permission, some farmers will allow ‘overnighting’<br />

for a fee - but it is essential, and etiquette demands, you get permission<br />

first. If you don’t camp, there are lovely hotels and inns at<br />

every juncture on Ring Road.<br />

When hiking in Iceland you can cross glacier fields, even in<br />

summer, with Shangri-La vistas of enchanted valleys and spectacular<br />

mountain ranges, unworldly to Florida eyes. Rugged<br />

mountain trails can often lead to isolated crystal-cold pristine<br />

waterfalls, over ice caps, or through green lush, mountain meadows<br />

with views that stun. Nowhere on earth will you see volcanoes<br />

and the wild sea, thermal pools, and an almost bare lunar<br />

landscape just miles apart.<br />

On the south coast approximately 6 miles west of the town of<br />

Vik is Dyrholaey (deer-lay) on Ring Road. From the high plateau<br />

above the ocean you will find towering black basalt obelisks that<br />

have withstood the petulant sea.<br />

The cliffs at Dyrholaey are home to the colorful <strong>Atlantic</strong> Puffin<br />

- with luck you will see one waddle across the sea-sky and come<br />

to rest close by on the cliffs. The colorful top-heavy Puffin is too<br />

heavy to fly, but doesn’t know it. They feed on the rich sea life, doing<br />

their unique flying waddle as their gull cousins slash over the<br />

waves or sail high above the rugged cliffs.<br />

In Vik, just a short walk from the downtown shops and gas stations<br />

is the long and broad black volcanic sand beach. Caution<br />

needs to be exercised here. The waves are unpredictable and have<br />

fatally latched on to a victim or two. There are wonderful short<br />

day and half-day hikes in the heights above Vik and its beach.<br />

The national park system in Iceland is breathtaking and something<br />

Icelanders are truly proud of. One of the largest National<br />

Parks in Europe is Vatnajokull National Park which was formed<br />

from two earlier parks to preserve an icecap. The hiking here is<br />

spectacular.<br />

Heading further around Ring Road on the north coast is the city<br />

of Akureyri where whale watching tours can be arranged.<br />

While traveling Ring Road, every few miles there is another scenic<br />

wonder. There are many scenic jewels and towns to visit as<br />

one makes the circuit around Iceland.<br />

Completing the Ring Road circle, you enter the capital, Reykjavik.The<br />

city is sophisticated and charming, easy to navigate with<br />

great restaurants and fine shopping. It has all the amenities of any<br />

capital in Europe without the congestion or pollution. It is a gem<br />

on this island nation.<br />

SAFETY TIPS FOR TRAVELING IN ICELAND<br />

Iceland is not sunny south Florida and there are essential words<br />

of caution for the traveler. Do not be lulled into complacency. The<br />

weather and other conditions in Iceland can be treacherous, but if<br />

you exercise caution your trip will be a once in a lifetime experience<br />

to a land of raw, untouched beauty.<br />

The wind of Iceland is dangerous and unpredictable. Weather<br />

conditions, even during the best of the summer months, can<br />

change with no warning and become treacherous. The velocity of<br />

the wind on a cliffside fjord can carry one off a cliff, and hypothermia<br />

at upper elevations can take a hiker’s life.<br />

Tourists from warmer climates need to be aware and take necessary<br />

precautions. Before setting out on a hike or trip always<br />

check the weather and road conditions. There is a nationwide<br />

emergency number in English (112) available 24 hours a day.<br />

There is also a weather phone number and website in English<br />

with on-going weather reports and alerts. When hiking, stay on<br />

designated paths - warning signs are sparse in the country and a<br />

fall while off trail can lead to an injury, or worse. It is easy to get<br />

lost and a night stranded in the mountains can be fatal. Always,<br />

hike with a partner, never alone.<br />

Vegetation grows slowly in Iceland and the environment in this<br />

sub-artic country is fragile. It takes many years to build up substantial<br />

growth and Icelanders are careful of it.<br />

There are many thermal pools in Iceland. Some are dangerous,<br />

often not marked as hazardous. The wrong thermal pool can severely<br />

burn.<br />

Respect the Icelandic ocean, it can pull you from the shore with<br />

a surprise killer wave that can sweep you into the unforgiving,<br />

freezing sea.<br />

When traveling in the outback, register your itinerary with<br />

SafeTravel.Is. If you become lost, rescue can be arranged. It is<br />

smart to let this service know where you are going.<br />

Earthquakes, volcanic eruptions and road washouts are Icelandic<br />

facts of life. Check road and safety conditions in the area you<br />

are traveling. Travel advisories are always on TV - also, check the<br />

website or call the weather number.<br />

If you follow these simple rules your summer travel to Iceland<br />

will bring you memories of a beautiful nation with open, warm<br />

friendly people, who live surrounded by the power and forces of<br />

Exciting Projects and a<br />

New School Year on the Horizon<br />

Delray Beach Receives $19M for Stormwater<br />

PROject and STATewide PROgram Excellence Award<br />

I am thrilled to announce that our city was awarded $19.8 million<br />

in state funding to assist with the design and construction of the Tropic<br />

Isle Neighborhood Stormwater Project. The funding will help our<br />

Public Works team complete improvements for more reliable underground<br />

stormwater systems and elevated roadways, which will help<br />

reduce the potential for flooding caused by hurricanes, King Tides,<br />

and projected sea-level rise. Thanks to the hard work of our city staff,<br />

Delray Beach has been awarded over $22 million in state funding for<br />

several stormwater projects for the coming year.<br />

In June, our city received the Statewide Program Excellence Award<br />

for Stormwater Programs from the Florida Stormwater Association.<br />

Only one stormwater program is chosen each year, and it’s an honor to<br />

receive this award. Our team is working hard to make our city resilient<br />

to climate change and sea level rise and doing an amazing job!<br />

In addition to these successful efforts, there are several projects<br />

that are in the running for funding through FEMA’s Hazard Mitigation<br />

Grant Program, including the Thomas Street Stormwater Pump Station<br />

and Marine Way projects. If you would like more information on<br />

Before taking on the role of Public Works Director, Missie spent several<br />

years at a private engineering firm, specializing in major roadway<br />

construction, and almost 20 years with the South Florida Water Management<br />

District (SFWMD). During her time with the SFWMD, Missie<br />

served as a liaison to other state and federal agencies, along with local<br />

county and municipal governments.<br />

Thank you, Missie, for leading our Public Works team and for helping<br />

to ensure our city remains resilient for years to come.<br />

Back to School Safety Tips<br />

The first day of school in Palm Beach County is <strong>August</strong> 10, <strong>2022</strong>, and<br />

the Delray Beach Police Department has shared some helpful safety tips.<br />

Safety Tips for Drivers<br />

• Buckle up and DON’T text and drive.<br />

• Stay alert and watch for children, especially near school zones and<br />

bus stops.<br />

• Prepare to slow down in school zones and obey signals from<br />

school crossing guards.<br />

• Drive or park only in designated areas for school drop off or pick up.<br />

• Stop a safe distance away from busses. Red flashing lights and an<br />

extended stop arm signal indicate children will be getting on or off.<br />

You may proceed after the red lights stop flashing and the bus arm is<br />

withdrawn.<br />

Safety Tips for Students<br />

• Look both ways before crossing the street and make eye contact<br />

with your bus driver before walking in front of a bus.<br />

• Wait for your bus a safe distance from the road and do not sit on<br />

the curb.<br />

• Stay away from bus wheels and never walk behind a bus.<br />

• Take note of your surroundings and NEVER accept rides from<br />

strangers.<br />

• Listen to the crossing guard’s directions when crossing the street.<br />

• Carry a flashlight while walking to and from home if it’s dark outside.<br />

<strong>August</strong> 1st, 1838 and 1944<br />

• Over 300 years since it was first introduced to the island,<br />

slavery was officially abolished in Jamaica. A little less than thirty<br />

years later, the United States would follow in its footsteps.<br />

• The last diary entry of Anne Frank was penned.<br />

Three days later she and her family were arrested<br />

by the Nazi regime and sent to concentration<br />

camps. Anne died at the Bergen-Belsen<br />

camp the following year, aged 15.<br />

<strong>August</strong> 2nd, 1776<br />

• A parchment copy of the Declaration<br />

of Independence was signed by most<br />

of the 55 members of the Continental<br />

Congress.<br />

<strong>August</strong> 3rd, 1492<br />

• The explorer Christopher Columbus set sail from Spain with<br />

the ships Nina, Pinta, and Santa Maria. His voyage, searching for<br />

a western route to the Far East, saw him discover a number of<br />

Caribbean Islands, and paved the way for the exploration of the<br />

1965 into law. The Act was designed to counter the Jim Crow laws<br />

that had become commonplace in the South and looked to expand<br />

voting rights for disenfranchised African Americans.<br />

• The Soviet Union declared war on Japan, sending troops into<br />

Japanese-held Manchuria.<br />

<strong>August</strong> 9th, 1945 and 1974<br />

• The second atomic bombing of Japan took place as the United<br />

States dropped the atomic bomb on the city of Nagasaki, looking to<br />

force the Japanese into surrender.<br />

• Richard Nixon resigns as President of the United States and<br />

Vice President Gerald Ford swears the oath of office to take his<br />

place as the 38th US President.<br />

an escaped slave,<br />

Role Model, Police Sergeant, and Inspiration<br />

Danny Pacheco Jr. is a dreamer.<br />

He’s also a doer.<br />

The Sergeant in the Delray Beach Police Department has humble<br />

roots, but used every obstacle to grow faster than a weed<br />

in fertile ground.<br />

He was born and raised in Peru by a single mother, who worked<br />

hard to raise her children and instill in them a work ethic that Warren<br />

Buffet would be proud of.<br />

“My mother Rosita taught me that everything in life is possible and<br />

not to ever let anyone crush your dreams. She is a woman of great faith.”<br />

Faith is a concept that has wrapped itself around Pacheco like a<br />

garden snake. He grew up with dreams of becoming a police officer,<br />

yet he didn’t speak English and had no money.<br />

He moved to Queens, New York (at age 21) and found work in fast<br />

food restaurants and as a day laborer in construction. “I distributed<br />

flyers along the streets in NYC and stood on a corner for hours waiting<br />

for a contractor who needed a set of hands willing to do hard<br />

manual labor.”<br />

Pacheco saved his money and put himself through East Stroudsburg<br />

University in Pennsylvania. He studied Criminal Justice and Sociology<br />

with a minor in French. He also spent a year studying French<br />

at the Sorbonne Université in Paris.<br />

Soon afterwards Pacheco found his way to South Florida. “I<br />

couldn’t believe how great the sun felt on my face and how beautiful<br />

the palm trees were. It was a big difference from the winters in New<br />

York and Pennsylvania.”<br />

This revelation set the stage for a new life – not only one of environmental<br />

warmth, but one of a heart felt nature.<br />

His first job was as a Probation and Parole Officer with the State of<br />

Florida. He enjoyed the work and his colleagues, but was still searching<br />

for his North star.<br />

Twenty years ago, he found it.<br />

“I was so fortunate to start my career with the Delray Beach Police Department.<br />

I always wanted to be a police officer because as a child in Peru<br />

I saw how they helped victims of crime and people in the community.”<br />

His dream was realized on the streets of Delray Beach. Not as a<br />

conceptual theory, but one rooted in reality.<br />

It all started when Pacheco was patrolling the streets of Delray.<br />

“It didn’t take me long to realize there was a large Latino and Haitian<br />

population living in Delray. I discovered that these communities<br />

were culturally distant from the Police Department and had no real<br />

connection or dialogue with them.”<br />

In 2003, Pacheco put together the first community event between<br />

the Police Department and the Latino and Haitian communities.<br />

This successful event helped build a bridge for better communication<br />

and partnership.<br />

Pacheco was also a Narcotics Agent who worked with local, state<br />

and federal agencies to reduce drug activity in South Florida. He received<br />

an award of appreciation from the U.S. Drug Enforcement Administration<br />

for “exceptional service, leadership, and contributions.”<br />

But that was not his only contribution to making life better for<br />

those in Delray. “As Delray Beach opened up after the Covid pandemic,<br />

I was saddened and disheartened by the number of kids in the<br />

streets with nothing to do and no direction.”<br />

So, Pacheco created a solution to a problem that has plagued underserved<br />

neighborhoods for generations. He started a soccer team<br />

for children (ages 8 to 15) called Delray Kicks. The team was highlighted<br />

in local and national media, garnering them financial support<br />

and needed resources.<br />

It was soccer that gave Pacheco solace and security as a child,<br />

and it is soccer that has added muti-dimensional goodness to local<br />

minority children. Police Chief Javaro Sims has seen these benefits<br />

close up. “Officer Pacheco has become that safe place for kids in his<br />

program. He provides support, teaching, coaching, and structure in<br />

their lives. He provides them with necessary social and communication<br />

skills they need for future growth.”<br />

You bet he does. The soccer team has become a surrogate family<br />

for the kids. It helps them form relationships with their peers, offers<br />

them clothing and uniforms, and when their families need help Pacheco<br />

and his peers get whatever is needed for them.<br />

But it was not easy at the beginning. “When I met with kids to share<br />

what I was putting together, I was met with suspicion and sometimes<br />

animosity. This drove me to work harder to earn their trust.”<br />

It’s not just children that Pacheco helps. When a member of his<br />

community was diagnosed with cancer (and couldn’t afford treatment)<br />

Pacheco organized an event to raise money. Shortly afterward,<br />

the person started cancer treatments.<br />

Pacheco’s kind heart and giving nature are obvious to those who<br />

know him. “Danny genuinely cares for everyone, no matter their<br />

background. He’s a family man, a great teacher, and an amazing<br />

coach. You cannot say the name ‘Danny Pacheco’ without thinking<br />

community and love,” said officer Rodner Guillaume.<br />

It’s not just his good deeds that has everyone in awe of this gentle<br />

giant, it is his sense of responsibility. He is raising his 16-year-old<br />

son, and his mother lives with him as well. His fiancé Kimberly also<br />

sees the jewel in the fiber of his being.<br />

“Danny is a kind-hearted man who is very giving, patient, and generous<br />

with his time and resources. He wants to show the kids they<br />

too can be leaders in the community, and anything is possible if you<br />

are dedicated, work hard, and have opportunities.”<br />

Pacheco is also always looking to learn and grow. He got a Masters’<br />

Degree in Business Administration from FIU and a real estate license.<br />

He runs in marathons for charity (and for fun) and loves to travel.<br />

If there is one person who influenced Pacheco the most it’s his<br />

mom Rosita. “My mother told me to be punctual, and no matter what<br />

job you have, do it well or don’t do it.”<br />

Sergeant Pacheco is a good listener.<br />

Homemade Food That Delights The Senses<br />

It doesn’t mean that life is perfect all the time. But you can feel the<br />

difference when those around you have a passion for what they do.<br />

Michel Menna is one of those people. The owner-chef of Il Contadino<br />

in Pineapple Grove is driven to perfection behind the scenes<br />

in the kitchen. You can feel it the moment you dive into one of his<br />

specially prepared dishes. It’s apparent that his passion has infused<br />

your plate with greatness.<br />

You might feel like licking the plate (go ahead, we won’t look) because<br />

of the incredible flavor in the nightly specials. Take the fresh<br />

Branzino with caramelized Campari tomatoes in a light wine sauce<br />

with roasted potatoes and a bit of cheese. The dish comes decorated<br />

with tulips and roasted zucchini. It’s easy to make good seafood dishes<br />

with a creative flair, but there is something extra special about a<br />

dish that makes you want to jump for joy.<br />

Cooking has been at the forefront of Menna’s consciousness since<br />

he could reach the table (maybe before that). “This is what I have<br />

done my entire life. I would create special creations and my parents<br />

would come home and ask who catered this meal. I could barely<br />

reach the stove yet I loved cooking as a child. It’s my creative outlet.”<br />

And what an outlet he has. Like spark plugs on a car, Menna ignites<br />

his passion for combining ingredients like a pro. You can tell by the<br />

taste of the dishes set before you. The sauces are light – which we<br />

think is important – and the flavors are artfully combined like a synchronized<br />

symphony.<br />

Apparently, the word is out.<br />

Just recently Menna hosted 40 guests for an elaborate brunch usually<br />

only seen at 5-Star hotels. Everything on the menu was homemade<br />

and food flowed from inside and outside on the European-style<br />

patio. There were baked frittatas with spinach and vegetables or<br />

with meats such as sausage, bacon and ham. There was also corned<br />

beef hash, eggs Benedict with spinach, sculptured fruit bowls, roasted<br />

potatoes, house cured salmon, flowing mimosas and more.<br />

Dorothy Hernandez hosted this feast. “My cousin was celebrating<br />

his 90th birthday and Il Contadino was the perfect venue for our<br />

weekend of gastronomic pleasures. The frittatas, French toast, bacon,<br />

potatoes, great coffee, juice, fruit, pastries, and more - were all<br />

terrific. We especially liked the smoked salmon, which was personally<br />

prepared by Michel...it was so-o-o-o delicious! We were all delighted<br />

with the meal. Chef Michel did an excellent job and surpassed<br />

my expectations.”<br />

Alicia Feldman from Scarsdale recently attended a dinner party for<br />

25 at Il Contadino in honor of Lyndsey Roth’s Bat Mitzvah. She felt<br />

the same way as Hernandez.<br />

“I felt like we were in Tuscany. The ambiance at Il Contadino was<br />

beautiful and the food was even better. We had baked Ziti, Penne<br />

Vodka, Chicken Piccata, Buffalo Mozzarella and meatballs. The<br />

creamy baked Ziti and flavorful Meatballs were the best I’ve ever had.<br />

Everything was delicious,” said Feldman, who declared Il Contadino<br />

a ‘must try.’<br />

The reason for this fanfare and delight is because the food at Il Contadino<br />

is prepared fresh on the spot with tender loving care. Nothing<br />

is pre-made or frozen and all dishes are custom made to perfection.<br />

The specials of the day will really astound you. Served in large platters,<br />

that are almost as big as the table – these feasts are reminiscent<br />

of the ancient Greek gastronomy food orgies. One of our favorites is<br />

the Double Cut Pork Chops pounded thin and breaded. It was topped<br />

off with baby greens, red onions, Kalamata olives and tomatoes. It<br />

was lightly breaded, tender and flavorful beyond our expectations.<br />

Joe Cantina was wowed by this light, yet hearty dish. The newcomer<br />

to Il Contadino was elated at the taste and lightness of the<br />

dish with its fresh and concise preparation. “This dish is wonderful.<br />

The breading doesn’t overwhelm the pork chops and the greens<br />

and dressing soaked into the pork making it flavorful beyond belief.<br />

I never eat Pork Chops, but this tasted so much like veal I couldn’t tell<br />

the difference. This is really a great restaurant.”<br />

There are other supersized superb specials as well. There’s a<br />

5-pound cowboy Ribeye Steak on a platter with onions, Hollandaise<br />

sauce, mushrooms, red onions, homemade mashed potatoes with<br />

gorgonzola cheese and fresh floral adornment.<br />

House cured Salmon<br />

But it’s the cured salmon that really has everyone swooning. “The<br />

House cured salmon was out of this world – nothing like I’ve tasted.<br />

It whetted my appetite for what was to follow. It was all excellent,”<br />

added Cantina.<br />

James of Delray Beach had a similar experience. “This is my favorite<br />

restaurant in South Florida. Michel the Chef/Owner has the largest<br />

wine selection in any Restaurant I’ve been to. The food is all made<br />

to order and is the best in Delray. If you’re ever in Delray you owe it to<br />

yourself to stop in and have dinner at Il Contadino. Want something<br />

you don’t see on the menu? No problem. Michel will prepare anything<br />

you want, any way you want it. Michel is a most gracious host<br />

and goes out of his way to make your dining experience memorable.”<br />

The desserts are also special. The Cookies and Milk was an elaborate<br />

combination of a thick chocolate chip cookie-muffin immersed<br />

in milk with cookies surrounding the glass.<br />

Come to Il Contadino. The food is fresh, and the dining experience<br />

is top notch. Call ahead if you want a special dish.<br />

The intimate European style patio is just icing on the cake of perfection.<br />

Michel welcomes all to experience his culinary passion.<br />

Here are some easy, healthy, packable lunch ideas that will get an A+,<br />

Turkey Pinwheels<br />

1 carton (8 oz) spreadable garden vegetable cream cheese<br />

8 flour tortillas (8 inches)<br />

4 cups fresh baby spinach<br />

1 pound sliced deli turkey<br />

directions<br />

Spread cream cheese over tortillas. Layer with<br />

spinach and turkey. Roll up tightly; if not serving immediately,<br />

cover and refrigerate. To serve, cut rolls<br />

crosswise into 1-in. slices.<br />

Flatten each biscuit into a 3-in. circle and press into a<br />

greased muffin cup. Combine the tomato sauce and Italian<br />

seasoning; spoon 1 teaspoonful into each cup. Top each<br />

with a slice of pepperoni and about 1 tablespoon of cheese.<br />

Bake at 425° until golden brown, 10-15 minutes. Serve<br />

immediately or store in the refrigerator.

These special lunch boxes are available everywhere (Amazon, Walmart, Target)<br />

and make packing all kinds of lunches so much easier!<br />

Vegetable Sushi or Onigiri<br />

Using leftover rice and cooked fish from a previous meal,<br />

packing sushi for the family can be as easy as making<br />

sandwiches — especially if the kids feel like helping.<br />

4 ounces thinly sliced smoked salmon<br />

3 cups cooked short-grain rice, hot (See how)<br />

2 tablespoonstoasted black sesame seeds<br />

1/4 teaspoon salt or less, if needed<br />

1 sheet toasted nori, cut in 4 strips<br />

directions<br />

1. Heat a well-seasoned cast iron skillet or nonstick<br />

pan over medium-high heat. Lay the salmon<br />

slices in the pan and cook until opaque and lightly<br />

browned, 15 to 30 seconds per side. Flake fish<br />

with a fork and mix with the rice and sesame<br />

seeds. Taste the mixture and add salt if needed.<br />

2. Place a bowl of water nearby and use it moisten<br />

your hands frequently while forming the onigiri,<br />

so the rice doesn’t stick to them. Place one quarter<br />

of the rice mixture (about 3/4 cup) in<br />

your hands and squeeze together firmly.<br />

Rotate and squeeze until it forms a<br />

circular cake that holds together securely.<br />

Wrap a strip of nori around the<br />

middle. Repeat with remaining rice<br />

mixture.<br />

3. Serve immediately or wrap in<br />

plastic wrap to eat later. Most people<br />

Hummus and Pita Plate<br />

ingredients<br />

1 (15-ounce) can chickpeas (do not drain), or<br />

about 2 cups drained, cooked chickpeas<br />

3 tablespoons extra-virgin olive oil<br />

3 tablespoons tahini<br />

1 1/2 tablespoons freshly squeezed lemon juice<br />

(from 1/2 lemon), plus more as needed<br />

1 small clove garlic, coarsely chopped<br />

1 teaspoon salt<br />

1/2 teaspoon freshly ground black pepper<br />

directions<br />

1. Drain the chickpeas into a strainer, reserving<br />

the liquid from the can. If time<br />

and patience allow, pinch the skins<br />

from each of the chickpeas; this will<br />

make your hummus smoother.<br />

2. Combine the chickpeas, olive<br />

oil, tahini, lemon juice, garlic, salt,<br />

and pepper in the bowl of the food<br />

processor fitted with the blade attachment<br />

or blender.<br />

3. Blend hummus until smooth, at least 5<br />

minutes. Process the hummus continuously<br />

until it becomes very smooth, about 5 minutes.<br />

Scrape down the sides of the bowl as<br />

needed to integrate any large chunks.<br />

4. Taste and add more of any of the ingredients<br />

to taste. If your hummus is stiffer than<br />

you’d like, blend 2 to 3 tablespoons of the<br />

reserved chickpea liquid to thin it out and<br />

make the hummus creamier.<br />

5. Scrape the hummus into a bowl and<br />

serve with pita chips or raw vegetables.<br />

How Do I Get My Pet to<br />

Like Its New Food?<br />

One of the most popular questions we get when we do a<br />

health and nutritional consult is “How do I know if my pet<br />

will “like” it?” In today’s instant gratification society, we<br />

have expectations that are devoid of the realities of nature and real<br />

life. The switching of foods and diets is both simple and complicated.<br />

It is complicated because processed food often is laced with<br />

a myriad of excitotoxins that not only are addictive but also create<br />

confusion for the body. The solution is really easy, and we are here<br />

to show you the path.<br />

First and foremost, it is not about “like.” “Like” is an emotion<br />

that humans have tagged onto our pets when the reality is animals<br />

are essentially a creature of conditioning. They learn that if<br />

they beg, bark, or meow, they will be rewarded with a treat, that<br />

little something extra. They learn that when you get home after<br />

your long day that they will get fresh water or food. Humans have<br />

created and mislabeled these unnatural behavior responses. In<br />

the wild, water and food are natural resources that were available<br />

for them to find. If the body is free of these excitotoxins, natural<br />

instinct and cravings prevail.<br />

Our dogs and cats are carnivorous creatures that we have<br />

plucked from their natural state, bred, to reflect our preferred appearance,<br />

and now want to feed convenient, processed foods that<br />

are not natural or healthy. We have created this nightmare! The<br />

chemicals that are added to foods today destroy the cells in the<br />

digestive tract and also alter the reactions of the taste buds that<br />

confuse the whole body.<br />

The reason our pets are reluctant to eat is that we create an ongoing<br />

upset to their gastric system. The non-living, over cooked and<br />

chemically treated food ingredients in many of our high-tech, scientifically<br />

misbalanced formulated foods create a gastric rebellion<br />

that your pet cannot express verbally. It instead appears as disease<br />

that manifests itself in many different ways. Food refusal, finicky<br />

eaters, irritable bowel, diarrhea, vomiting, and other issues are the<br />

symptoms. This is what the food industry has inadvertently created<br />

for our special family members.<br />

The main deterrent is to start your carnivore pets on a real food,<br />

animal sourced rotational diet at the earliest age. This will allow<br />

the body to balance the creation of the proper digestive enzymes,<br />

hormones, and gastric bio-bloom from the beginning. If this is not<br />

the start, then we have to realize that we are rebuilding the gastric<br />

system at a cellular level, which takes time, literally months, and<br />

sometimes years depending on the damage that is already there.<br />

One smoothie does not heal a human so why do you expect your<br />

pet to heal in a day, week, or even months? It requires an understanding<br />

that YOU must be patient and tough in the detoxification<br />

and additional interdiction that you, as a pet guardian were most<br />

likely never advised of. Stop the junk and convenience foods and<br />

commit to the healthiest, species appropriate foods, diet plans, and<br />

lifestyle to give your special four-legged family member the best life<br />

they can experience.<br />
