FROM HOME TO SUPPORT CANCER PATIENTS
AND THEIR FAMILIES
Thanks to our amazing customers and colleagues, we raised over £17.5 million for Young Lives
vs Cancer over the last 5 years.
This year, we’re opening Jack’s House, a brand new Home
from Home in Manchester. A Home from Home provides a
free and comfortable space for families to stay near to where
their child is having hospital treatment. Jack’s House has nine
bedrooms, as well as relaxing communal living areas and
bathrooms which allow the families to enjoy the comforts
of home close to the hospital ward.

Jack’s House has been named after 13 year old Jack Thompson, who was diagnosed with a

Chocolate Liqueur Truffles
Moreish dark chocolate truffles flavoured with your partner’s
favourite drink are a romantic gift and delicious dessert in one.
Makes
20 truffles
Ingredients
300g plain chocolate
300ml double cream
25g butter
4 tbsp brandy, or rum,
or whisky, if preferred
4 tbsp clear honey
50g cocoa powder,
to dust
Total time required 45 mins
Preparation time: 40 mins
Cooking time: 5 mins
Method
1. Break the chocolate into individual squares and place in a
large heatproof mixing bowl with the cream, butter, brandy
(or rum or whisky) and honey.
2. Place the bowl over a pan of lightly simmering water and
heat, gently stirring, until the chocolate has melted and
you have a smooth glossy mixture. Cool, then chill until the
mixture thickens.
3. Using clean hands, take teaspoonfuls of the mixture and
roll into balls between the palms of your hands. You will
need to keep rinsing your hands occasionally as it can get a
bit messy. Arrange onto a clean tray and chill for a further
30 minutes. Dust generously with cocoa powder, then pop
each truffle into individual paper cases. Keep chilled and eat
within 1 week.

Asparagus and Herb Risotto
Asparagus is such a versatile vegetable, whether it's steamed,
stir-fried, roasted or barbecued it's delicious! Add a sprinkle of
Italian flavour to the dinner table with this risotto recipe.

Ingredients
250g asparagus, cut into
2.5cm lengths
2 tbsp olive oil
1 onion, finely chopped
1 clove garlic, crushed
1 lemon, grated zest
1 tbsp fresh thyme leaves
350g Arborio rice
150ml dry white wine
1 litre vegetable stock
3 tbsp fresh herbs, e.g.
parsley, mint, chives
25g parmesan
Total time required 35 mins
Preparation time: 10 mins
Cooking time: 25 mins
Method
1. Cook the asparagus in boiling water for 2-3
minutes, drain and set aside.
2. Fry the onion and garlic in oil for 3-4 minutes.
3. Add the lemon zest and thyme and cook for
another minute.
4. Add rice and stir into the hot oil.
5. Pour in wine and stir until most of the liquid
has evaporated.
6. Add a ladle of stock and stir until almost all
liquid has evaporated. Continue like this until
it’s finished and rice is tender. You may not
need to use all the liquid.
7. Stir in asparagus and herbs and season before
spooning into bowls.
8. Use a potato peeler to shave Parmesan over
the risotto and serve.
